In order to extend the shelf-life of red chili pepper, MA and CA technology were used. In MA storage, red chili peppers(Jinmi and Jangkun) were packaged in 0.03 mm PE film bags(3 kg/bag) having two holes(2~3 cm) at 2~3C or 7~8C. In CA storage, red chili peppers(Jinmi) were stored on following gas composition; 5 or 10% CO in combination with 2 or 5% O at 2~3C, respectively. The changes of weight loss and decay rates during MA storage were less in Jinmi than in Jangkun and less at 2~3C storage(except O 5%, CO 10% condition) while in CA it decreased after 40 days of storage. Red chili peppers would be stored for 30 days when stored in MA conditions(0.03 mm PE film bag) and for 60 days when srored in CA condition on O 2%, CO 10% based on overall quality of sensory evaluation.
Changes of free sugars and sugar alcohols of fresh shiitake were measured during storage. Shiitake were stored at 1 and -4, with non-packaging, wrapping, 0.03mm polyethylene(PE)film packaging(unpunched and punched, unprecooled and precooled before storage), 0.05mm PE film (vacuum packaging). Chanties of glycerol, arabitol and arabinose contents were not marked during storage. The content chanties of -rhamnose, fructose, glucose, mannitol, sucrose and maltose were the smallest until 40days storage and were increased significantly after 40 days and then decreased significantly after 50days. Content of -rhamnose during storage when was treated unprecooling, 0.03mm PE film punched and unpunched at -4 was the highest 25.08% and 34.86%, respectively in 50~60days. Content of mannitol was not changed at -4.
물쑥을 유용화하기위해 물쑥의 화학성분을 수집 종쑥과 분석비교한 결과는 다음과 같다. 1. 일반성분중 수분, 조회분 및 조섬유의 함량은 물쑥이 수집종쑥보다 높았다. 2. 비타민함량에 있어서는 thimain, riboflavin 및 ascorbic acid의 함량은 물쑥이 수집종쑥보다 약간 낮았고 niacin함량은 약간 높았다. 3. 식이섬유소함량은 물쑥이 40.91%, 수집종쑥이 38.42%이었으며 물쑥이 수집종쑥보다 hemicellusose, cellulose의 함량이 높았고 lignin함량은 낮았다. 4. 무기질함량중 K함량이 물쑥 5206.7mg%, 일반 쑥 4166.7mg%로 가장 높았고 Na, Fe 및 Mn의 함량은 물쑥이 수집종쑥보다 2배이상 높았으며 Cu함량만 물쑥이 수집종쑥보다 낮았다. 5. Phenolic compound 의 함량은 수집종쑥보다 물쑥이 약간 높았다.
