        The purpose of the research is to discuss the product safety procedures for the food industry The producer and supplier of the products should satisfy the increasing consumer safety needs. To develop and produce safe products, the food industry must rigorously perform potential hazard findings and very thorough risk analysis to detect even the very minute potential danger. The ultimate product liability rests with the consumer safety and the manufacturer's capability which competes in the market places. This is especially important in the food industry. However, small to medium sized food producing companies are facing challenges in this area due to their overall capabilities. Therefore this research presents safety procedures which are relatively simple to implement.

        What is the most important in articles of food is hygienic safety. Because food Is the most common thing in our everyday life, however, the importance of its hygienic safety and other many problems caused by food may be easily neglected. What is more, food is can be dangerous as much as it is directly related to human life and accidents from the same cause may have different effects on the victims according to physical and environmental differences of individuals. Thus PL action for food requires more thorough prevention and measure. Korea has been enforcing 'the Product Liability Act' since the 1<SUP>1st</SUP> of July 2002. Product Liability (PL) is liability of the manufacturer or the seller of a product to compensate for the death or injury of consumers or the loss of properties caused by the defect of the product. This study surveyed consumers' response to and the effects of the enforcement of the Product Liability Act, investigated how consumers perceived the importance of food safety and the risk of defective food based on PL standards and their experience in damage by food through a questionnaire survey, and analyzed collected data through empirical analyses (reliability analysis, factorial analysis, regression analysis and ANOVA t-test) using SPSS 10.0. Based on the results of analysis, the researcher proposed strategies for coping with the Product Liability Act in the food industry

The purpose of Product liability rests finally with the consumer safety and the manufacturer's capability compete in the marketplace. Especially this is important for the food industry. But, our domestic middle and small food industries, it is relatively weak in this are. Thus this research would like to present a easily usable product safety procedures.

        It has been recognized that international food standards should be considered for a long time. The Codex Alimentarius programme initiated in the early 1960s has received valuable background documentation from the ICMSF (International Commission on Microbiological Specifications for Foods) and also from ISO(the International Organization for Standardization). There has been a considerable move towards international harmonization of standards and methods of analysis. Many foreign countries recommend the guidelines for food microbiological standards quantitatively. To complement microbiological limits and tolerance levels for permissible number of defective samples, allowances should be made for sampling and other variations in laboratory methods. It may be necessary for guidelines of domestic food microbiological standards to be established so that the domestic food standards can be harmonized with foreign food standards. Food safety related microbiological guidelines of ICMSF, EU (European Union), UK (United Kingdom), China (Hong Kong) and Japan were reviewed and shown in examples.

        This study was performed to investigate 172 samples of fried food in fast food store. The free fatty acid value of 22 samples exceeded standard of fried-food. These samples were 10 fried chickens, 6 fried potatoes and 5 fried onions. Fatty acid composition differed from each company. The correlation between free fatty acid value and double bond index was very low. New standard of fried food in fast food store is needed for thorough hygiene management, because of being not existed standard. The fried potato containing many carbohydrate and fat appeared higher calory than fried chicken containing many protein. The fried food had high fat comparatively, so that attention in regard to excess intake is demanded. The trace materials were included Mg, Ca, Mn, Fe, Zn, Cu and Cr in order of quantity, and the harmful heavy metals - Pb, Hg and Cd - were included small quantity.

        The articles of food is very important things to human. Since PL Law came into effect in July of the last year(2002) in Korea, many domestic firms have taken great interests in PL. And the purpose of PL Law is to provide a means for those injured by defective products to receive redress. Additionally, enterprises get to place more importance on the safety of the products, which led to improvement in competitiveness and enhancement in quality. Consequently customers can get better products. So, it aims not only to compensate the injured by defective products but also to act an incentive to maker/supliers of food to make their products more safe. Therefore, this study was aiming to analyze the expected risks to articles of food after the enforcement of PL Law, and to establish a defending plan.an.

        본 조사는 한국 소비자들의 식중독 경험여부, 식중독 원인균에 대한 지식 및 식품안전과 식중독 예방을 위한 행동에 있어서의 인식 정도를 알아보기 위하여 2001년 11월 일반성인 총 1,040명을 대상으로 전국적으로 전화조사를 실시하였다. 그 결과 12.4%는 연 1회 이상 식중독을 경험하고 있으며, 0.3%는 식중독으로 인해 병원에 입원하는 것으로 나타났다. 식중독이 발생한 원인장소로는 일반음식점에서의 음식 섭취가 37.2%로 가장 높게 나타났고, 가정에서의 부주의가 212.%등으로 나타났으며, 원인식품으로는 고기 등의 육류 및 가공품이 41.7%, 생선 등 어패류 및 가공품이 18.7% 등으로 나타났다. 식중독 원인균에 대한 인식에서는 콜레라(75.5%), 비브리오(73%), 이질(65.5%), 장티푸스(51.8%), 살모넬라증(47.5%)의 순으로 잘 알고 있는 것으로 나타났지만 리스테리아증(9.9%), 브루셀라증(8.3%)에 대해서는 대부분이 모르거나 음식물로 인해 발생하지 않는 것으로 인식하고 있는 것으로 나타났다. 한편, 조사자료를 바탕으로 3가지 모델로 구분 즉, Model 1은 식중독 원인균에 대한 지식, Model 2는 식품안전에 대한 인식, Mode 3은 식중독예방을 위한 행동에 대한 인식으로 구분하였고, 각 모델들은 조사자의 일반사항에서 나타난 변수와 식중독 경험여부 별로 다중회귀분석(Multiple regression analysis)을 수행하였다. 그 결과 식중독 원인균에 대한 인식(Model 1)은 여러 변수 중 교육수준(OR 0.536), 결혼상태(OR 0.529)가 영향요인으로 나타났으며, 특히, 과거 식중독 경험이 가장 중요한 영향요인으로 나타났다(OR 1.714). 식품안전에 대한 인식(Model 2)에서는 교육수준이 중요한 영향요인으로 나타났으며(OR 0.702), 식중독 예방을 위한 행동에 대한 인식(Model 3)에서는 교육수준(OR 0.816)과 성별(OR 0.650)이 중요한 영향으로 나타났으며, 과거 식중독 경험이나 식품안전에 대한 인식정도는 식중독 예방을 위한 행동에 대한 인식과는 상관관계가 없는 것으로 나타났다. 결론적으로 식품안전에 있어 경험과 지식은 실제 식중독 예방을 위한 행동에는 크게 영향을 미치지 않음을 의미하는 것으로 볼 수 있다.

        The purpose of this study was to analyze the problems arising from the actual conditions of the Foodbank, and to implement the HACCP system as a solution in terms of increasing the safety of donated food within the Foodbank. In order to apply HACCP system, the entire Foodbank working process such as preparation, collection, transportation, division, and distribution was considered and analyzed to decide the application point for CCPs. Donated foods mainly consisted of processed foods, raw materials, lunch boxes, and cooked foods from mass catering establishments, which dominated over the others in terms of quantity. Cooked foods were divided into three groups based on menu-types and processing methods. Temperature, pH, and aw were measured on cooked foods, and Total Plate Count, Coliforms, E. coli, Salmonella spp., Staphylococcus aureus, Listeria monocytogenes, and E. coli O157:H7 were conducted in order to apply a HACCP plan. From these experiments, temperature, pH, and aw of donated food were likely contributed to microbial growth. Donated foods before HACCP implementation showed high numbers in terms of total plate count and Coliforms, both well over the acceptable standard levels. By setting the CCPs on maintenance of donated food below 10℃ and using a 75℃ reheating method, microbiological hazard levels were able to be controlled and lowered. From these results, it is concluded that in order to guarantee food safety, foods donated to the Foodbank must not only maintain a reasonable level of initial microbiological growth, but also must be handled properly through time and temperature controls within the Foodbank system. Furthermore, in terms of implementing the HACCP plan within the Foodbank management structure, basic food safety and sanitation measures, such as reheating facilities and various cold chain systems such as refrigerated vehicle for food transportation are importantly needed. The training and education of Foodbank personnel and management in areas such as awareness of hygiene and safe food handling and practice are also required and necessary.

        This study examined the consumers' awareness and information need toward the irradiated foods and environmental hormones. The data were collected from 350 adults living in Daegu and Busan by the self-administered questionnaire. Frequencies and chi-square tests were conducted by SPSS. The results of the survey were as follows: (1) consumers' awareness regarding the irradiated foods and environmental hormones were low, while consumers' concerns for them were high, (2) the orders of the information needs for the irradiated foods are safety of irradiated foods, dose permitted for food irradiation, benefits of irradiated foods, kinds of permitted irradiated foods, and legislations of food irradiation, and (3) the orders of the information needs for the environmental hormones are harmfulness of environmental hormones, standards for contamination by environmental hormones, materials releasing environmental hormones, methods to prevent environmental hormones, and kinds of environmental hormones.

        This study was conducted to investigate the consumers' recognition and information need for food safety, especially focused on pesticide residues, foodborne illness, and food additives. The data were collected from 350 adults living in Taegu and Pusan by the self-administered questionnaire. Frequencies and chi-square tests were conducted by SPSS. The results of the survey were as follows: (1) the consumers' concerns about food safety were high, (2) many respondents worried about eating vegetables, fruits and grains in turn because of pesticide residues, and did not trust the results from food-safety tests, (3) the major factor for foodborne illness was regarded as unfreshed or contaminated food stuffs, (4) many consumers concerned highly about preservatives among food additives, and tried to consume food containing less food additives, and (5) many respondents wanted to get the information about harmfulness of pesticide residues in foods, method to choose fresh food, and safety of food additives.
