        This study aimed to determine the anti-obesity effect of adding Wolfiporia extensa Ginns (W) to fermented pollack skin products in an obesity-induced animal model. The experimental groups were the normal diet group (C), high-fat diet group (HF), dried pollack skin (H1), fermented pollack skin (H2), and W of 0.1 (F2-WL), 0.3 (F2-WM), and 0.5 (F2), respectively. It was confirmed that adding W to fermented pollack skin reduced blood triglycerides, total cholesterol, and LDL levels, while increasing HDL levels. Wolfiporia extensa Ginns was effective in controlling weight and improving blood lipids in a dose-dependent manner. In histological analysis, findings of fatty liver induced by a high-fat diet were improved by the addition of H2 and W. Size and density of fat globules in the epididymis were decreased. In addition, the concentration of TNF-α was increased in the high-fat diet group, but decreased by the addition of fermented pollack skin and W. In conclusion, adding fermented dried pollack skin and Wolfiporia extensa Ginns was effective for weight control and blood lipid improvement. Thus, the use of by-products in functional foods is expected to have a high value in the future.

        This study investigated the anti-obesity effects of Coriandrum sativum L. ethanol extracts in a high fat diet-induced obesity model (DIO). We confirmed the anti-obesity effects by analysing the expression of the related proteins, weight gain, dietary intake, dietary efficiency, blood biochemistry, histological analysis and western blot analysis. After oral administration of Coriandrum sativum L. ethanol extracts at concentrations of 250 and 500 mg/kg, a significant improvement in dietary efficiency, reduction in weight gain, triglycerides, total cholesterol and LDL-cholesterol in blood lipid was observed for 8 weeks. In addition, improvement in blood glucose and metabolism confirmed through glucose tolerance test was observed. Further, the concentration of alanine transaminase (ALT) in blood was significantly decreased, which improved the fatty liver caused by high-fat diet intake as confirmed by liver tissue analysis. This phenomenon was confirmed to decrease the expression of fat accumulation-related PPARγ and FAS protein in the liver tissue. Especially, it is believed that FAS, a liposynthetic enzyme, has a stronger inhibitory effect than PPARγ. Therefore, Coriandrum sativum L. ethanol extract is thought to improve obesity by reducing blood lipids levels, improving glucose metabolism and inhibiting synthesis of the fat that accumulates in the liver in high-fat diet-induced obesity animal models.

        In this study, the physical and sensorial properties of the meat analog were studied for the purpose of improving sensory preference and mimicking animal meat. The meat analog was made with different types of liquid materials such as oil, water, lecithin, polysorbate 80, or the emulsion of these components. At the aspect of density, the sample mixed with oil was higher than the sample mixed with water. Cooking loss value was higher at the sample with water than the sample with oil and this was the result opposite to the liquid holding capacity analysis. Also, texture profile analysis result showed that the samples with medium chain triglycerides (MCT) oil only showed the highest values in all attributes except for adhesiveness. Principal component analysis was carried out to analyze sensorial properties and it showed that the overall acceptance was high when the juiciness and softness increased. This result was highly related with the addition of emulsion. Therefore, emulsion technology can be a good candidate for improving the quality of meat analog and for mimicking the taste of animal meat.

        Diesel vehicle is regulated EURO 5 and will be apply to EURO 6 in 2014. Thus, researches have been performed to meet the strict emission regulations. We have obtained that the results of engine performance operated by lard biodiesel at various engine load and speed was slightly decreased, but brake specific energy consumption (BSEC) at using animal biodiesel below 15% was better than diesel fuels. When the mixing ratio of biodiesel increased, NOx was a slight increase. But PM and CO was a significantly reduced. Therefore, that the biodiesel of animal fats is available for eco-friendly fuel of diesel engine was confirmed.

        The demand of energy is increasing around the world due to the high dependency of our society on energy. So the worldwide recognition of the limited supply of fuels has led to a large scale effort in search of alternative energy sources. Biodiesel has been considered as an alternative fuel to the petroleum diesel in compression ignition engines and is receiving more and more attention. Biodiesel can be obtained by the transesterification of methanol with triglycerides, with glycerin as by- product. This paper introduces the transesterification reaction of lard oil with methanol in the presence of hexane as solvent and potassium hydroxides as catalyst. Different from other researches, a new method to analyze the reaction process in this research was developed by starting with the by-product, crude glycerin. This new method was verified and the effects of various parameters such as solvent, molar ratio of methanol to oil (3:1-12:1), catalyst concentration (0.5-4 wt%) on the traneseterification process were investigated. Molar ratio of methanol to oil was optimized and identified to be 8:1, catalyst concentration of 2 wt% with hexane as solvent and at a temperature of 57℃ were found to be optimum for the reactions. Under this condition for 4 hours, the production yield can be 96.95%.

        Pretreatment of eliminating FFA is needed to make biodiesel from animal fat recovered from leather wastes because its acid value is high. This study was carried out to investigate the influence of 4 different pretreatment methods, which are heterogeneous catalyst method, ion exchange resin method, low pressure.high temperature method, and alkali method on the eliminating FFA and fatty acid composition. The results showed that the rate of eliminating FFA increased in the order of alkali method > catalyst method > low pressure high temperature method > ion exchange method. In the case of pretreatment of alkali method using NaOH, the rate of eliminating FFA appeared more than 86% regardless of acid value. Therefore, it was considered that alkali method using NaOH was the most effective in the view of economical and productive aspects, taking it into account that the acid value of animal fat recovered from fleshing scrap generated during leather making processes was 7 to 8.
