        This study aimed to evaluate the changes in the content of functional components and antioxidant activity of rice and barley according to the milling process used. A considerable amount of γ-oryzanol was observed in unmilled rice and barley. However, γ-oryzanol was not detected in the rice and barley after the milling process. The highest content of γ-aminobutyric acid (GABA) was observed in the unmilled Keunalbori-1-ho barley. The contents of biotin in all samples also decreased in the milled grains compared to the unmilled grains. The highest content of total polyphenols and flavonoids was observed in the Heuksujeongchal barley, and the highest radical scavenging activity was also found in this grain. The milling process led to a decrease in the content of functional components, including γ-oryzanol, GABA, biotin, polyphenols, and flavonoids in both rice and barley. These results may be useful in the development of processed foods using cereal grains.

        This study attempted to establish an ultra performance liquid chromatography (UPLC) analysis method for standard determination of silymarin as a health functional food material in Silybum marianum extraxt (milk thistle). UPLC was performed on a Waters Acquity BEH C18 (50×2.1 mm, 1.7 μm) column using a gradient elution of distilled water and methanol at a flow rate of 0.21 mL/min and detection wavelength of 288 nm. The UPLC method showed high linearity in the calibration curve at a coefficient of determination (r2) of >0.9999, and limit of detection and quantitation for 6 flavonolignans were 0.0167-0.2469 and 0.1648-1.2931 μg/mL, respectively. The recovery of each flavnolignan was in the range of 99.96-100.81%, and the relative standard deviation for precision of each flavonolignan was less than 1.0%. The UPLC method established in this study was more specific for the quantitative determination of silymarin than the HPLC method. Also, since the UPLC method is shorter in the equipment operation time and smaller in the amount of used solvent than the HPLC method, UPLC is expected to have higher energy efficiency and lower environmental impact compared with HPLC.

        복분자를 개별인정형 건강기능식품 기능성 원료로 개발하기 위하여 지표성분 표준화를 위한 ellagic acid의 분석법 설정과 분석법에 대한 검증(validation)을 실시하였다.그 결과 ellagic acid의 검량선은 R2=0.9999으로 좋은 선형성을 보였으며, 검출한계 0.6µg/mL, 정량한계는 1.9µg/mL였다. 회수율을 측정한 결과에서는 89.0-100.0%로 나왔고, 상대표준편차(RSD)는 0.05-0.14%를 보였으며, 일내와일간 분석에서 RSD는 각각 0.28-1.96%와 0.69-2.49%로나왔다. 따라서 본 연구를 통해 복분자 추출물의 지표물질인 ellagic acid의 분석법은 적합한 시험법임이 검증되었다.

        본 연구에서 당근에서 제조한 CG의 기능성 화장품 소재로서의 응용성을 SCP와 비교 검토하기 위하여 CG와 SCP를 적용한 각각의 기능성 크림을 제조하였다. CG와 SCP를 적용한 각각의 기능성 크림에서의 변색, 변취 및 크리밍 현상이나 응집 등의 관능검사와 pH, 점도 등의 물성 변화는 5℃, 25℃에서 매우 안정하다. 피부에서의 수분손실량 및 수분 함유량의 변화를 측정한 결과에서도 CG의 보습작용이 우수한 것으로 나타났다. 이러한 결과를 토대로 CG를 함유한 크림은 SCP를 함유한 크림과 마찬가지로 피부에 보습 효과가 우수하여 주름개선에도 큰 영향을 줄 것으로 예상된다.

        Background: In the present study, we established an HPLC (high performance liquid chromatography)-analysis method for the determination of marker compounds as a part of the material standardization for the development of health-functional foods from Salvia plebeia R. Br. extract. Methods and Results: The quantitative determination method of hispidulin as a marker compound was optimized by HPLC analysis using a YMC hydrosphere C18 column with a gradient elution system. This method was validated using specificity, linearity, accuracy, and precision tests. It showed a high linearity in the calibration curve with a coefficient of correlation (r2) of 0.999995. The method was fully validated, and was sensitive, with the limit of detection (LOD) at 0.09 ㎍• ㎖−1 and limit of quantification (LOQ) at 0.27 ㎍• ㎖−1. The relative standard deviation (RSD) values of the data from intra- and inter-day precision were 0.05 - 0.22% and 0.32 - 0.42%, respectively, and the intra- and inter-day accuracy of hispidulin were 99.5 - 102.3% and 98.8 - 101.5%, respectively. The average content of hispidulin in Salvia plebeia R. Br. extract was 3.945 ㎎• g−1 (0.39%). Conclusions: These results suggest that the developed HPLC method is very efficient, and that it could contribute to the quality control of Salvia plebeia R. Br. extracts as a functional ingredient in health functional foods.

        Amaranth(Amaranthus spp. L.) and quinoa (Chenpodium quinoa Willd.) are old crops from South, Central America and Central Asia and their grains have been identified as very promising food crops because of their exceptional nutritive value. Squalene is an important ingredient in skin cosmetics and computer disc lubricants as well as bioactive materials such as inhibition of fungal and mammalian sterol biosynthesis, antitumor, anticancer, and immunomodulation. Amaranth has a component called squalene (2,6,10,15,19,23-hexamethyl-2,6,10,14,22-tetraco-sahexaene) about 1/300 of the seed and 5~~8~% of its seed oil. Oil and squalene content in amaranth seed were different for the species investigated. Squalene content in seed oil also increased by 15.5~% due to puffing and from 6.96 to 8.01~% by refining and bleaching. Saponin concentrations in quinoa seed ranged 0.01 to 5.6~% . Saponins are located in the outer layers of quinoa grain. These layers include the perianth, pericarp, a seed coat layer, and a cuticle like structure. Oleanane-type triterpenes saponins are of great interest because of their diverse pharmacological properties, for instance, anti-inflammatory, antibiotic, contraceptive, and cholesterol-lowering effects. It is known that quinoa contains a number of structurally diverse saponins including the aglycones, oleanolic acid, hederagenin, and phytolaccagenic acid, which are new potential in gredient for pharmacological properties. It is likely that these saponin levels will be considerably affected by genetic, agronomic and environmental factors as well as by processing. With the current enhanced public interest in health and nutrition amaranth and quinoa will most likely remain in the immediate future within the realm of exotic health foods until such time as agricultural production meets the quantities and qualify required by industrial food manufacturers.
