        This study was conducted to examine contents of total acid and free amino acids in the Demi-glace with added quantity of Omija extracts. Firstly, The level of Total acid content of Demi-glace sauces was 1.08~1.89% and Omija extracts was 2.77~7.24%. The more Omija extracts added, there was the higher total acid contents. Sauces and extracts of 5% Omija was the highest. Secondly, Total free amino acids contents of control was 2518.52mg%, and Omija sauces was 2261.52~2894.14mg%. 2% Omija sauces was the highest among them. Hydroxyproline of total 34 free amino acids was the highest, and Glutamic acid 158.42mg%, Proline 78.90mg% was next in order. Arginine was the highest with 27.40~34.40mg% among 9 essential amino acids contents. Glutamic acid was the highest contents with 123.18~158.42mg%. Compared to control's(0.41mg%), Omija added group was 20.63~27.82mg% and it was the highest increase. While other 15 amino acid was analyzed, Hydroxyproline was the highest contents with 1,737.22~2,205.80mg%. Compared to control group(15.63mg%), proline was 57.01~78.90mg% Omija added group and it was increased with the highest contents. In essential amino acid, flavor enhancing amino acid and other amino acid were increased and the highest contents with 2% added Omija sauce. Thirdly, sensory characteristics of Demi-glace sauces based on overall preference, It was find that 2% added Omija was the best. 2% added was the best for color, flavor, taste, texture, overall acceptability(P〈.001). In terms of Demi-glace sauces' gender preference, male and female people liked 2% added Omija color, flavor, taste, texture, overall acceptability. It was find that there was no significant differences between male and female.

        This study was conducted to standardize the cooking methods of Omija-Pyuns and to investigate the effect of different starch densities (6% 7%, 8%, 9%) on the texture and taste of Omija-Pyuns. The results of these studies were as follows: 1) It was better for Omija to soak for 18 hours. The most favorite Mungbean starch density of 7% of Omija-Pyuns has the degree of lightness of 18.90, the degree of redness of 19.18, and the degree of yellowness of 3.98. 2) The Brix of syrup used for Omija-Pyuns was 49.4%. 3) As a result of the measurement of texture through Instron, if Mungbean starch density is increased, its hardness also increase. Each of the Omija-Pyuns (6%, 7%, 8%, 9%, in density) has showed its effection (p<0.05). 4) The result of the sensory evaluation showed that the Omija-Pyuns produced with Mungbean starch density of 7% was most preferred in appearance and overall taste, but it did not show the statistical effection (p<0.05) from the Omija-Pyuns produced with Mungbean starch density of 8%. The flavour was highest in Omija-Pyuns of 6%, and as the density was increased, the flavour decreased.

        This study was done to evaluate the effects of various gelling agents on textural properties of omija pyon. As a gelling agent, mungbean starch had been used in traditional omija pyon. In this experiment, gelatin and pectin were also tried for better texture. The results of this study were as follows; 1) One percent pectin addition showed desirable textural properties in both starch and gelatin jelly. 2) No significant effect on rheological values was found according to various sugar concentration(10, 15, 20%). 3) There was a saving effect of sugar concentration when adding 1% pectin to starch jelly, comparing textual properties as sensory scores.

        We have studies fatty acid composition of water extracts of parts of omija (Schizandra chinensis Baillon) and antioxidant activities of fractionated omija parts (fruits, endocarps, seeds) were determined by DPPH methods and by in vitro hepatic microsomal lipid peroxidation system. Fatty acid composition was not different by parts of omija and major fatty acids are linoleic, oleic, and palimitic acids, among fatty acids is water extracts of parts of omija, linoleic acid was highest in content. Methanol and buthanol fractions of seeds and ethyl acetate fraction of endocarps showed stronger antioxidant activities by DPPH methods. Methanol and buthanol fractions of seeds also showed on inhibitory effect on in vitro liver microsomal lipid peroxidation.

        The effect of water extract in fruits of Omija (Schizandra chinensis Baillon) on alloxan-induced diabetic rats were determining the contents of metabolites and enzyme activities in the liver and serum of rat. The treatment with water extract in fruits of Omija showed increased in contents of protein, glycogen, and activity of glucose-6-phosphate dehydrogenase and a decreased in pyruvate content in the hepatic tissue from the alloxan treated group. These treatments were decreased contents of glucose, urea nitrogen, free fatty acid and activities of GPT, GOT, LDH.

        To assess the effects of water extracts in fruits of Omija (Schizandra chinensis Baillon) on alcohol metabolism, rats were orally administrated with alcohol (25% alcohol, 0.75g/200g B.W., 40% alcohol, 0.8g/200g B.W.). The level of metabolites and enzyme activities of the serum and liver were unchanged by the 25% ethanol or 40% ethanol treatment with acute orally administration. Blood alcohol level was markdely decreased by the treatment with water extracts in fruits of Omija. The serum level of Urea nitrogen, Free fatty acid, GPT and LDH were tended to decreased, level of GOT was unchanged. Contents of hepatic microsomal protein, glycogen, pyruvate in the liver were increased by water extracts in fruits of Omija. In conclusion, the present study clearly demonstrates that water extract in fruits of Omija promotes the overall metabolism and detoxication of alcohol.

        The effect of water extract in fruits of Omija (Schizandra chinensis Ballion) on liver function in expermental liver injuries induced by CCl4. The levels of GPT, GOT activities in serum were decreased apparently on the dosage of water extract in fruits of Omija correspond to raw Omija 1g compared to control group. The levels of Microsomal protein, glycogen, and pyruvate in liver and of Urea nitrogen, GPT, GOT, LDH in serum showed a trend toward restoration of normalization. No effective of levels of hepatic G6P DH activity and serum free fatty acid by water extract in fruits of Omija.

        The compositions of total and free amino acids in parts of Omija were investigated. The most abundant amino acids in fruits, endocarps, and seeds were arginine (50.80%), lysine (14.37%), glutamic acid (14.22%), respectively. Since the amino acid scores of fruits, endocarps, and seeds were 9.4, 11.9, and 16.7, respectively, the limiting amino acid of each part were S-compound amino acids. In the composition of free amino acids, contents of lysine were highest one such as 51.78, 57.00 and 32.88% in fruits, endocarps and seeds, respectively. The contents of histidine from free amino acids were 23.62% in fruits, 22.37% in endocarps, and 26.41% in seeds.

        This study was carried out to investigate the compositions of free sugars, lipids, and nonvolatile organic acids in parts of omija. The major components of free sugars in each part of omija were fructose and glucose. The contents of those were similar in fruits and endocarps, however, the content of glucose was 1.5 times as much as that of fructose in seeds. The content of lipids in endocarps was 2.4 times as much as that in seeds, and major composition of lipids was neutral lipid. In the contents of nonvolatile organic acids, the content of citric acid that content was 61 to 68% depend on each part of sample was highest among other components, and that of malic acid being 25 to 30% was followed. The contents of nonvolatile organic acids of water extract were 74.5, 55.9, and 69.2% as high as those of original sample in fruits, endocarps, and seeds, respectively. The content of oxalic acid in seeds was lower than that of it in original sample.

        This study was carried out to comparison of the contents of general and mineral components between the original sample and water extract in each part of omija. The content of Carbohydrate was highest in endocarps, and that the crude protein and crude lipid in seeds. The contents of K and Mn in the fruits, endocarps, and seeds were all higher than those of the other cations. The content of K and Zn in endocarps were three to four times as much as those of seeds. and the content of Na, Ca, and Cu in endocarps were 1.5 to 1.75 times of seeds. Mineral contents by water extract in each part were ordered as K, Mg, Ca, and Fe. As the percentage of each ion in water extract on the basis of original sample, Fe was the highest ratio of behavior, and Mn was lowest.

        Background : Korea ginseng root has been traditionally used as a tonic as it is stated to have the capacity to normalize body functions and strengthen systems that are caused by various stresses. But, white ginseng (WG) has lower antioxidant activity than other medicinal crops. Omija (Schisandra chinensis Baillon) has various physiological functionalities such as anti-cancer, anti-inflammatory, and antioxidant activities, which have the effective components of Omija are lignans (schizandrins and gomisins), and this components were contented mostly in seed part on Omija. Physiological characteristics of WG extracts were investigated by adding Omija to enhance functionality. Methods and Results : WG extract were prepared by adding 0, 20, 40, 60, 80 and 100% of Omija to the weight of WG. Physiological characteristics of WG extracts were investigated DPPH radical scavenging activity, FRAP, and nitrite scavenging activity. As the amount of Omija added increased, DPPH radical scavenging activity of WG extract increased proportionally. IC50 of 10 times water extracts were 0.455, 0.028 and 0.041 ml/ml on WG (100WG), WG added 50% Omija (50OM50WG), and Omija (100OM0WG), respectively. On the other hand, FRAP of extracts decreased slightly with increasing amount of Omija. Nitrite scavenging activity of Omija extract were significantly more active than WG extract, exhibited to 88.89% and 72.65% on WG extract added with 40% Omija (40OM60WG) and non added (100WG), respectively, pH 1.2. and then, to 33.45% and 1.38% with 40OM60WG and 100WG extract, respectively. Conclusion : From the above results, we may suggest that WG extracts by adding Omija increased the DPPH radical scavenging activity, nitrite scavenging activity and the preference degree on taste.

        Background : Schisandrae Fructus (Omija) has been widely used for medicinal herbs because it is known for its various medical functions and antimicrobial activities. This study was conducted to investigate the antimicrobial activities of extracts from Schisandrae Fructus against six foodborne pathogens (Bacillus cereus, E. coli, Listeria monocytogenes, Salmonella enteritidis, Staphylococcus aureus, Vibrio parahaemolyticus) and figured out the efficient extraction methods. Methods and Results : Traditionally, Schisandrae Fructus is soaked or boiled in water when people drink it like tea. In this study, we extracted Schisandrae Fructus by soaking in water and ethyl alcohol for 24 hours, ultrasonicating in methyl alcohol and water for 60 minutes, and boiling in water for 30, 60, 90, 120 minutes. Each extract used for paper disc test that estimates antimicrobial activities by measuring the inhibition zone. The blank discs that absorbed with extracts were placed on the agar plates that smeared with each foodborne pathogen, then incubated overnight at 37℃ incubator. Then, antibacterial extracts formed clear zones around the disc. In this study, Vibrio parahaemolyticus was the most sensitive to the all kinds of extracts and methyl alcohol extracts that were obtained by ultrasonicating showed the most strong antimicrobial activities against six foodborne pathogens (23, 12, 29, 18, 23, 28 ㎜). Hot water extracts and soaking extracts in water showed the similar results, and the extracts that was boiled for 60 minutes was the best results (13, 8, 21, 10, 13, 17 ㎜) against all the pathogens. Conclusion : The extracts from Schisandrae Fructus inhibited the growth of six foodborne pathogens. Soaking and boiling in water are good methods for drinking Schisandrae Fructus like tea because they showed antimicrobial activities in the paper disc test. According to this study, the best boiling time for effective antimicrobial activity is 60 minutes.

        The Omija (Schizandra chinensis Baillon) is a fruit native to northeast Asia that is cultivated in South Korea and China. Using 1,938 valid patents of 6 group countries, we analyzed the patent trend based on year, countries, applicants, and technology. The technologies are categorized the 10 sub-technologies such as medicine, quasi-drugs, food, feed, cosmetics, cultivation, genome, manufacture, preprocessing, and etc. The technology level and competitiveness are analyzed using patent index such as cites per patent, patent impact index, patent family size and technology strength. In Korea, patent number rapidly increasing and individual technical level is lower than other countries. However, overall technical competitiveness is estimated high due to multiple patents. We suggest that cosmetics and cultivation fields are most likely to be developed in future omiza technology development in Korea. Our study will provides to the information of technical trend to support performing of new projects for Omija plant.

        해마다 대기업을 중심으로 브랜드 가치를 높이기 위해 막대한 마케팅 비용을 투자하고 있지만 정작 브랜드 인지도가 낮은 중소기업이나 지자체 농수산 브랜드들은 체계적인 브랜드 관리가 어려운 실정이다. 특히 농산물 브랜드는 브랜드 가치가 거의 생성되어 있지 않은 상태에서 소비자와 최우선 접점에 있기에 그 중요성은 더욱 절실하다고 할 수 있다. 지금까지의 연구가 대기업의 브랜드 가치와 인지도를 분석하는 마케팅적인 부분에 편중된 반면 실질적으로 브랜드를 나타내고 표현하 는 브랜드 아이덴티티 구성요소에 대한 연구는 많이 부족한 실정이다. 본 연구는 브랜드 가치가 제대로 형성되어 있지 않는 국내 지자체 오미자 브랜드들을 케빈 레인 켈러(Kevin Lane Keller) 의 브랜드 아이덴티티 선택모델에서 브랜드 인지도와 연상을 강화시켜주는 구성 요소를 토대로 국내 대형 포털사이트에서 활발히 판매되고 있는 20개의 오미자 브랜드들을 구분하고 정리하였다. 이를 바탕으로 디자인전공 2~30대 대학생 및 대학 원생 100명을 선정하여 각 브랜드별로 선택기준에 맞는 브랜드를 선택하게 하였다. 그 결과 브랜드 아이덴티티 구성요소를 충족한 4개의 브랜드를 선별하였으며, 브랜드 아이덴티티 구성요소의 선택기준을 적용 하였다. 이 자료를 기초하여 새로운 오미자 브랜드 패키지 디자인을 개발하였다. 추후 브랜드 아이덴티티의 구성요소를 분석한 자료를 기반으로 지자체 농수산 브랜드의 보다 효과적이고 실질적인 지원과 활성화 방안의 자료로 쓰이기를 기대 한다.

        Omija-cheong, concentrated extracts from sugar-treated Omija fruit (Schisandra chinensis Baillon), is produced by traditional manner in Korea. The quality characteristics of Omija-cheong processed at low temperature with a pilot-scale were investigated to optimize the incubation time. With increasing incubation time in processing Omija-cheong, the pH level of Omija-cheong remained constant, while titratable acidity and organic acids increased. Fresh Omija fruits contained citric, malic and succinic acids, most of which were extracted into concentrated extracts after 37 days of incubation and reached to the stable concentration after 47 days of incubation. Titratable acidity in Omija-cheong gradually increased from 1.18% to 2.71%, and also was correlated with total concentration of organic acids. About 80% of supplemented sucrose for manufacturing Omija-cheong was converted into glucose and fructose until 68 days of incubation, and the composition of free sugars was maintained to be stable up to 138 days of incubation. The contents of total flavonoids and phenolic compounds in Omija-cheong were 24.1 mg-GAE/L and 1,635 mg-QE/L at 57 days of incubation, which were more than 9 and 5 times higher than those in Omija fruits, respectively. From the quality characteristics in processing Omija-cheong by low-temperature incubation, more than 60 days of incubation is required for the constant quality and value-added beverage.

        오미자 열매를 이용하여 기능성물질인 GABA를 강화시 킨 오미자 젖산발효음료를 개발하기 위해서 L. plantarum EJ2014에 의한 젖산발효 최적화를 수행하였다. 오미자 열 매 추출액을 젖산 발효시킨 경우 발효 2일 동안 생균수 4.0×107 CFU/mL수준을 유지하면서 젖산균 증식이 미비하 였지만 영양성분 YE와 MSG를 함께 첨가한 경우 50배 정도 증가된 2.2×109 CFU/mL생균수를 나타내었다. 특히 젖산발 효 3일 동안에 대조군, MSG, YE를 각각 첨가군에서 초기 pH 3-4 수준에서 유지되었다. 반면에 YE와 MSG를 함께 첨가한 발효물은 pH가 증가되면서 pH 5.0 이상을 나타내었 으며, 초기 산도 1.74%에서 발효 3일에 0.56% 수준으로 감소하였다. 오미자 열매 추출물인 대조군과 2% MSG 또는 0.5% YE만을 첨가한 조건에서는 GABA로 소량 전환되는 것으로 나타났다. 반면에 MSG와 YE를 함께 첨가한 경우 젖산발효 1일째부터 GABA가 생성되면서 3일째에는 MSG 2%를 거의 소진하는 것으로 나타났으며, HPLC 정량분석 으로 0.92% GABA 생성이 확인되었다. MSG와 YE함께 첨가한 발효조건에서는 젖산발효 1일째부터 발효물은 붉 은 색이 퇴색되면서 황색으로 변화하였으며, 발효 초기에 적색을 나타내는 a값이 15.74에서 발효 후에 5.39로 크게 감소하는 것으로 나타났다. 색, 맛, 향 등을 포함한 전반적인 기호도를 나타낸 관능평가에서 오미자 착즙 원액과 발효물 100%인 실험군에서 점수가 각각 4.50, 4.33을 기록하여 상 대적으로 낮은 기호도를 나타낸 반면에 발효물 50% 첨가한 실험군이 6.33으로 가장 높은 기호도 점수를 나타내었다. 오미자 열매 추출액에 오미자 발효물을 50% 첨가함으로서 기호성이 우수하며 고농도 GABA와 probiotic을 함유한 오 미자 발효음료의 제조가 가능하였다.

        In order to investigate the utilization of the Omija (Schizandra chinensis Baillon) extract as a natural coagulant for manufacturing soybean curd, the quality characteristics of white (Baktae) and black (Seoritae) soybean curds, coagulated by the Omija extract or MgCl2, were evaluated. Crude protein (6.14±0.30 and 6.25±0.18%, respectively) and crude lipid (10.86±1.74 and 11.29±1.69%, respectively) contents of white and black soybean curds coagulated using the Omija extract were higher than those coagulated using MgCl2. Black soybean curds coagulated using the Omija extract showed higher L, a, and b values than those using MgCl2. The most abundant amino acid in white and black soybean curds coagulated using the Omija extract was arginine (3.74 and 3.71 mg/100 g, dry basis, respectively). The amounts of Ca, K, Mg, and Na were the highest in both soybean curds prepared with the Omija extract. The sensory evaluation (color, flavor, taste, texture, and overall preference) showed that white and black soybean curds coagulated using the Omija extract were more preferred than those produced using MgCl2. The results suggested that using the Omija extract as a natural coagulant agent could improve the quality and sensory characteristics of soybean curds.
