In order to screen the antagonistic bacteria which inhibit the growth of the apple pathogen, Penicillum expansum, we isolated an effective bacterial strain and investigated into the antifungal activity of the antagonist and it's identification. The eleven strains of bacteria which strongly inhibited P. expansum were isolated from the nature, and the best antagonistic bacterial strain designated as CH142, was selected. The antagonistic strain CH142 was identified to be the genus Bacillus subtilis based on morphological and biochemical characterization. The CH142 showed 55.9% of antifungal activity against the growth of P. expansum. By the treatment of the culture broth and the heat treated culture filtrate of it, the B. subtilis CH142 showed 90% and 15% of antifungal activity, respectively.

To control the pepper anthracnose caused by Colletotrichum acutatum, antifungal bacterium strains which was selected among bacterium from natural soil, was tested the antimicrobial activity against various pathogens and its control efficacy on anthracnose disease in the fields. We confirmed that antagonistic activity of CAB13001 strain to pathogens such as Sclerotinia cepivorum, Sclerotinia sclerotium and Botrytis cinerea including Colletotrichum acutatum was remarkable superior with the dual culture method in the artificial medium. In vitro bioassay using the green pepper fruit, CAB13001 strain suppressed the lesion development of Anthracnose disease, and its control value compared to the untreated one was 82.4% on pepper fruit in field test. These results suggested that CAB13001 strain could be a very useful biological control agents to anthracnose disease caused by air born plant pathogens of pepper. By the way, analysis of nucleotide sequence of the gene 16S rDNA, antagonistic bacterium CAB13001 strain used in this study was identified as Burkholderia lata.

The antifungal activity against cheese fungi by lactic acid bacteria isolated from kimchi was investigated. Eight fungi were isolated from cheese in the cheese ripening room. Two of them were identified as Penicillium and Cladosporium via ITS-5.8S rDNA analysis. Twenty-two species of lactic acid bacteria with antifungal activity were isolated from kimchi. Two of them were identified as Lactobacillus and Pediococcus via 16S rRNA sequence analysis. Of the 22 lactic acid bacteria species, six were selected (L. sakei subsp. ALJ011, L. sakei subsp. ALI033, L. sakei subsp. ALGy039, P. pentosaceus ALJ015, P. pentosaceus ALJ024 and P. pentosaceus ALJ026) due to their higher activity against the eight fungi isolated from cheese in the cheese ripening room; and among the six species, the P. pentosaceus ALJ015 and P. pentosaceus ALJ024 isolates from the Jeonju area kimchi and the L. sakei subsp. ALI033 isolate from the Iimsil area kimchi had higher antifungal activity than the other lactic acid bacteria. The minimum inhibitory concentration (MIC) of L. sakei subsp. ALI033 against the eight fungi isolated from cheese in the cheese ripening room was 62.5 ㎍/mL.
