        살리실산은 식물의 생장 및 발달, 항산화 방어기작, 광합성 작용 그리고 생물적 및 비생물적 스트레스 조건에서 다양한 생리적 기능을 조절하는 물질로 알려져 있다. 본 연구에서는 고온・건조 스트레스 조건에서 살리실산 경엽처리가 고추의 생육, 광합성 특성 및 항산화효소 활성에 미치는 영향을 구명 하고자 하였다. 광합성 특성 측정결과 광합성 속도, 기공전도 도 및 증산 속도가 증가하였고, 3회차 처리에서 가장 높았다. 세포내 MDA와 H2O2 함량은 살리실산 3회차 처리에서 현저 하게 감소하는 경향을 보였다. APX, CAT, POD 및 SOD 활 성이 현저하게 증가하였으며, 무처리 대비 최대 247, 318, 55 및 54% 증가하였다. 고추의 생육 특성은 무처리구와 유의한 차이를 보이지 않았으나, 상품 수량은 15% 정도 증가하였다. 이러한 결과들을 종합해 볼 때, 살리실산의 경엽처리는 고추 의 광합성 특성과 항산화효소 활성을 증진시켜 고온・건조 스트 레스에 의한 피해 경감에 긍정적 효과를 유발함을 확인하였다

        본 연구에서는 쥐참외뿌리 추출물의 항산화 활성 및 미백, 항염증 활성에 대한 생리활성 효과와 기능성 소재로써의 활용 가능성을 확인해 보고자 하였다. 쥐참외뿌리 추출물의 DPPH 라디칼 소거 활성을 통한 항산화 활성, 멜라닌 세포인 B16F10 melanoma 세포에 대한 멜라닌 생성 억제능을 통한 미백 활성 효과, 대식 세포인 RAW 264.7 세포에 대한 NO 생성 억제능을 통한 항염증 활성 효과를 확인해 보고자 하였다. 연구결과, 쥐참외뿌리 추출물은 농도 의존적으로 DPPH 라디칼 소거활성이 확인되었으며, 양성 대 조군인 Ascorbic acid와 비슷한 DPPH 라디컬 소거활성이 확인되었다. 100 nM α-MSH로 유도된 멜라닌 생성 억제 활성과 LPS 1 ㎍/mL로 유도된 NO 생성 억제능을 유의하게 억제 하는 것을 확인되었다. 이에 따라 쥐참외뿌리 추출물은 항산화 및 미백, 항염증 효과를 가진 기능성 소재로써의 활용 가능성이 있음이 사료되어 진다.

        The purpose of this study was to confirm the possibility of using Korean purple yam (Dioscorea alata) as proximate composition, material, and antioxidant activity. In the proximate composition of the freeze-dried purple yam powder, the carbohydrate content was the highest at 86.67%, and in minerals, potassium showed the highest content at 1,765.69 mg/100 g. To study the antioxidant activity of purple yam, distilled water and 70% ethanol were used as extraction solvents. The total polyphenol, total flavonoid, and total anthocyanin contents were 1.3~1.6 times higher in 70% ethanol extract, than in the distilled water extract. As a result of ORAC, DPPH and ABTS radical scavenging activity, SOD activity, and reducing power, the 70% ethanol extract showed higher antioxidant activity than the distilled water extract in all results. As a result of freeze-drying purple yam and measuring antioxidant activity by extraction solvents, it is concluded that purple yam can contribute to the food industry as a natural antioxidant and health functional material.

        The study investigated the chemical components, antioxidant activities, and glucose-regulating enzyme activities of red chicory (Cichorium intybus L.). On a dry weight the contents of moisture, crude protein, crude fat, crude ash, crude fiber, and carbohydrate were 7.36, 28.0, 4.33, 19.63, 10.84 and 40.52%. The contents of mineral were Na (772.39 mg/100 g), K (5,686.03 mg/100 g), Mg (307.48 mg/100 g), Ca (804.94 mg/100 g), Fe (8.61 mg/100 g), and P (1,145.24 mg/100 g). Chlorophyll a, Chlorophyll b, total chlorophyll (793.80, 363.06, 1,156.86 mg/100 g,), total carotenoid (171.82 mg/100 g), and anthocyanin (79.49 mg/100 g) contents were measured. Antioxidant activities were analyzed for water and 70% ethanol extract. The polyphenol contents 23.67, 32.58 GAE mg/g, and flavonoid contents were 18.15, 28.76 RE mg/g, respectively. The DPPH scavenging activity IC50 was 694.48, 76.12, μg/mL, and the ABTS scavenging activity IC50 1,154.90, 566.00 μg/mL, respectively. In reducing power, the 70% ethanol extract showed a higher reducing power. In α-glucosidase and α-amylase inhibition activity IC50, the 70% ethanol extract (5.87, 17.91 mg/mL, respectively) showed a higher than water extract (8.87, 100 < mg/mL, respectively). This study is expected to provide basic data for developing functional food ingredients for red chicory.

        This study examined the quality characteristics and antioxidant properties of fruit and vegetable jellies mixed with Boswellia. Jellies were prepared with 0, 2, 4, 6, and 8% Boswellia, sugar and konjac. As a result, the pH of Boswellia jellies decreased to 5.19, 5.05, 4.94, and 4.84, respectively (p<0.001). Their L-value, a-value, b-value, and hardness increased significantly with increasing levels of added Boswellia (p<0.001), while individual phenolic compounds increased significantly with increasing levels of added Boswellia. Free sugars and organic acid contents had the highest bw10. The total phenolic compounds had the highest BW5 (112.9 mg TAE/g), BW10 (99.41 mg TAE/ g), and while the ABTS activities showed higher values than the control group. Overall, Boswellia can be used to produce high-quality jelly, which is expected to help develop excellent functional jelly products.

        Sprouts have various health benefits. Specifically, wheat sprouts are rich in bioactive compounds, such as vitamins and polyphenols. Elicitation induces and enhances secondary metabolite biosynthesis in plants. Therefore, in this study, we investigated the effects of sodium chloride (NaCl) treatments on the growth profile, free amino acid content, and antioxidant activity of germinated wheat (Triticum aestivum). Wheat seeds were germinated at 20℃ for 10 days and treated with 0, 2, 4, 7.5, and 10 mM of NaCl 10 days before harvesting. Treating the soil bed with NaCl increased the nutritional component amounts, such as free amino acids and γ- aminobutyric acid. The chlorophyll a and b concentrations were the highest in the hydroponic system treated with 7.5 mM NaCl. In addition, the polyphenol and flavonoid contents of sprouts treated with 2 and 7.5 mM NaCl were 1.94 and 1.34 times higher than that of the control sprouts (0 mM NaCl, water only), respectively. These results suggest that 2 to 4 mM NaCl treatments improve the nutritional and food quality of wheat sprouts more than water only.

        This study investigated optimal extraction conditions for applying Capsicum annuum L. leaf as a functional food resource. Capsicum annuum L. leaf was extracted at different extraction solvents (water and 95% ethanol), extraction temperatures (80oC and 100oC), and e xtraction times ( 30, 60, and 9 0 min), a nd t he extracts were e valuated for extraction yield, luteolin content as a major flavonoid component, antioxidant activity, and α-glucosidase inhibitory activity. The extraction yield, luteolin content, DPPH and ABTS radical scavenging activities, and α-glucosidase inhibitory activity of the hot water extract were higher than those of the ethanol extract. In evaluating the extraction temperature of Capsicum annuum L. leaf, the antioxidant activities were similar, but the extraction yields, luteolin contents, and α-glucosidase inhibitory activities were higher at 100oC extraction. In evaluating the extraction time of Capsicum annuum L. leaf, extraction yield increased as the extraction time increased, but antioxidant activity and α-glucosidase inhibitory activity were the highest at 60 min of extraction. These results suggest that the optimum extraction conditions of Capsicum annuum L. leaf are hot water for 60 min at 100oC, and the extracts can be used as a functional food resource.

        This study was undertaken to examine the quality characteristics of nonblanched carrots (CON) and carrots blanched in distilled water, 2% NaCl water and 2% citric acid at 100oC for 3 minutes. This moisture contents of CON was the highest at 85.91%, whereas NT had the lowest moisture at 83.92% (p<0.01). Compared to CON values the L values of pretreatment groups were decreased whereas the b values were increased (p<0.001) A comparison of true retention (TR), revealed that NT had the highest TPC TR 101.04% and TFC TR 91.59% (p<0.001). β-Carotene contents were determined to be higher in NT (1.98 mg/100 g) and CT (1.94 mg/100 g) than in other groups, with highest levels obtained in NT (106.64%) (p<0.001). Examination of the DPPH and ABTS+ radical scavenging activities revealed that the NT group had maximum scavenging activity. The total bacterial count was determined to be 3.37 log CFU/g in the CON, whereas no microorganisms were observed in all the pretreatment groups. Our study indicates that blanching in 2% NaCl water is the most desirable in order to increase the biochemical content and nutrient preservation rate of carrots, and to inhibit the growth of microorganisms.

        Omija seed oil was extracted from Omija seeds, a by-product of Omija, using an eco-friendly pressed extraction method. Physicochemical properties and antioxidant activities of 12 extracts using different combinations of seed moisture content (5, 7.5, and 10%) and extraction temperature (25, 49, 75, and 100℃) were then investigated. The highest extraction yield was 31.33% at moisture of 5% and temperature of 75℃. The lowest acid value was 4.18±0.25 at moisture of 5% and temperature of 49℃ or moisture of 7.5% and temperature of 25℃. Peroxide value, iodine value, and saponification value were the lowest at 0.64±0.56 meq/kg, 159.38± 6.03, and 57.60±9.40, respectively, at moisture of 5% and temperature of 25°C. The content of total polyphenolics was the highest at 4,413±125 mg TAE/100 g when the moisture content was 10% and the extraction temperature was 25℃. DPPH radical scavenging activities of oil extracts at 20~100 mg/mL were 28.68±7.30~87.65±2.20%. The maximum antioxidant activity and IC50 were 87.65±2.20% and <20 mg/mL, respectively, for extract obtained at moisture of 10% and temperature at 100℃. As a result, the extraction yield, acid value, peroxide value, iodine value, saponification value, and so on were excellent at moisture content of 5% and extraction temperature of 25℃ or 49℃. However, the content of total polyphenolic compounds and antioxidant activity were the highest at moisture of 10% and extraction temperature of 100℃. In conclusion, extracting Omija seed oil from Omija seeds, a by-product of Omija, is effective with a pressed extraction method.

        백출(Atractylodes japonica)은 국화과(Compositae)에 속하는 다년생 식물로 한국에서 이뇨 작용, 수렴작용, 항알러지, 신경보호, 항암, 면역증강 및 위장관 보호효과 등으로 민간요법에서 널리 사 용되고 있다. 백출의 열수 및 70% 에탄올 추출물에 대한 DPPH 및 ABTS 자유라디칼 소거능으로 항산 화 활성을 측정하였다. 게다가 NO 생성, iNOS와 COX-2 단백질 발현을 웨스턴 블롯으로 측정하였으 며, 염증성 사이토카인의 발현을 RT-PCR 방법으로 측정함으로 항염증 효과를 측정하였다. 열수 및 70% 에탄올 추출물들의 항산화 활성은 농도-의존적인 효과를 보였지만, 추출용매에 따른 차이는 나타 나지 않았다. 70% 에탄올에 의한 백출 추출물에서 매우 강한 NO 활성 억제효과를 보였다. 백출 열수 및 에탄올 추출물은 NO 생성에 관여하는 iNOS 및 COX-2 단백질의 발현을 현저히 감소시켰다. 열수 및 70% 에탄올 추출물 모두 염증성 사이토카인인 IL-6 및 IL-1b는 현저히 억제시키지만, TNF-α의 발현은 약하게 억제시키는 결과를 얻었다. 본 연구를 통하여 백출 70% 에탄올 추출물이 NO 생성을 현 저히 억제하며, 염증성 사이토카인의 발현을 현저히 감소시키는 효과를 보이므로 염증성 질환 치료 및 개선에 널리 사용될 수 있으리라 생각한다.

        In this study, soybean pods of 45 soybean landraces (or varieties) were classified as yellow (19 samples), black (23 samples), or black in green (3 samples) based on soybean seed coat color. Total polyphenol and flavonoid contents were measured, and antioxidant, anti-inflammatory, anti-obesity, and estrogen-like activities were assessed. Total polyphenol and flavonoid content ranges were 24.13-108.03 mg GAE/g and 3.31-72.02 mg CE/g, respectively, and were highest in the black group followed by the yellow group and were least in the black in green group, while ABTS and DPPH activities followed the order black in green > black > yellow. Estrogen-like and estrogen receptor-α activity ranges were 29.06-35.58 pg/mL and 7.05-10.13 pg/mL and were followed the order yellow > black > black in green and black in green > yellow > black, respectively. Nitric oxide (NO) inhibitory and UCP-1 activities followed the same order as estrogen receptor-α activities. Our findings suggest that soybean pods are excellent sources of antioxidants and high-quality functional materials.

        This study was conducted to find out the optimal solvent extraction method [Distilled water (DW), 70% ethanol, 99% ethanol] of mushrooms, including Pleurotus ostreatus (Jacq.) Que, Pleurotus eryngii and Flammulina velutipes and improve their usability as natural antioxidants. To analyze antioxidant activities in each mushroom, total polyphenol, flavonoid contents, 2,2-Diphenyl-1-picrylhydrazyl (DPPH), 2,2?-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) cation radical (ABTS+) and fluorescence recovery after photobleaching (FRAP) were measured. All mushrooms showed the highest total polyphenol contents in DW mushroom extract (p<0.001). Total flavonoid contents were the highest in P. eryngii and F. velutipes DW and 70% ethanol mushroom extracts (p<0.05). All mushrooms showed the highest activities using DPPH and FRAP assays in the DW extraction method (p<0.001). P. ostreatus (Jacq.) Que and P. eryngii showed the highest ABTS+ radical scavenging activity in the DW extraction method, and F. velutipes showed the highest activity in the 70% ethanol extraction method (p<0.001). As a result of comparing IC50 values of DPPH and ABTS+ radicals and FRAP EC50 values, the DW P. ostreatus (Jacq.) Que extract showed high antioxidant activities (p<0.001). Pearson's correlation between total polyphenol contents and antioxidant activities showed a positive correlation in all mushrooms (p<0.01). Therefore, extraction of the mushrooms with DW can enhance the extraction of effective bioactive substances and antioxidant activity.

        본 연구에서는 기능성 식의약품 소재로써 갈색 느티만 가닥버섯(Hypsizygus marmoreus)의 이용 가능성을 조사하기 위해 갈색 느티만가닥버섯의 부위별, 추출 용매별 항산화 활성을 조사하였다. 열수 추출물 갓과 대의 총 폴리페놀 함량은 17.15±0.19 mg GAE/g과 7.37±0.16 mg GAE/g이었으며 에탄올 추출물 갓과 대의 총 폴리페놀 함 량은 각각 10.23±0.14 mg GAE/g과 3.76.±0.19 mg GAE/g 으로 에탄올 추출물에 비해 열수 추출물의 폴리페놀 함량이 높게 나타났고 대에 비해 갓의 폴리페놀 함량이 높게 나타났다. 또한 갈색 느티만가닥버섯 추출물의 DPPH, ABTS, ORAC 지수, 환원력도 10 mg/ml의 농도에서 에탄올 추출물에 비해 열수 추출물에서 높게 나타났고 대에 비해 갓에서 높게 나타났으며 흰색 느티만가닥버섯에 비해 갈색 느티만가닥버섯의 총 폴리페놀 함량, DPPH, ORAC 지수, 환원력이 높은 것으로 나타났다. 추출물의 세포독성 은 WST-1 assay (4-[3-(4-iodophenyl)-2-(4-nitrophenyl)-2H- 5–tetrazolio]-1,3-benzene disulphonate)를 이용하여 열수 추출물의 처리 농도에 따른 대식세포주 RAW 264.7의 세포 생존율로 확인하였으며 갈색 느티만가닥버섯 열수 추출물 처리구에서 대식세포주 RAW 264.7의 세포 생존율이 증가하였기 때문에 세포독성은 없는 것으로 판단된다. 이상의 결과를 종합하면, 느티만가닥버섯은 품종에 따라 항산화 활성에 차이가 있고, 갈색 느티만가닥버섯은 다른 버섯보다 항산화 활성이 높기 때문에 기능성 식의약품 소재로서 이용 가능성이 있다고 판단된다.

        This study was conducted to analyze the antioxidant and antidiabetic activities of acorns according to the types of Quercus serrata Thunb (QST) and Q. acutissima Carruther (QAC). The total polyphenol contents of the extracts from QST and QAC were 220.59 and 320.96 mg GAE/g, respectively. The content of total polyphenol of QAC was higher than that of QAC (p<0.001). DPPH (2,2 Diphenyl 1 picrylhydrazyl) radical scavenging activity, reducing power and superoxide dismutase (SOD)-like activity were increased in a concentration-dependent manner by both acorn extracts, and QAC showed high activity in all antioxidant experiments (p<0.05). The inhibitory activities of α-glucosidase and α-amylase were also increased in a concentration-dependent manner, and QAC showed higher inhibitory activity than QST (p<0.05). Our study indicates that QST and QAC are functional food materials with high antioxidant and antidiabetic activities. In addition, QAC has a higher physiological activity than QST.
