        In an attempt to find natural sources of antioxidants and whitening agents, Comparisons of the antioxidative and tyrosinase inhibitory activities of various ethanol extracts of Astragali Radix, Atractylodis Rhizoma Alba and Acanthopanacis Cortex were carried out. Comparison of the four ethanol extracts revealed that, Astragali Radix had the highest electron-donating ability(72.5%) and the highest SOD-like ability(26.1%). The xanthine oxidase experiment exhibited a hindrance effect of 88.5% in Atractylodis Rhizoma Alba, 81.1% in Acanthopanacis Cortex, 75.8% in Astragali Radix. A tyrosinase inhibitory activity assay was conducted to evaluate the whitening effects of the extracts, The tyrosinase inhibitory activity was 42.1% in the Acanthopanacis Cortex, 37.2% in the Atractylodis Rhizoma Alba, 6.0% in the Astragali Radix. Based on these results, we suggest that the ethanol extracts of Astragali Radix, Atractylodis Rhizoma Alba and Acanthopanacis Cortex can be used as food and cosmetic ingredients.

        The principal objective of this study was to assess the antioxidative activities of Petasites japonicus against oxidative stress in bovine brain tissue . Petasites japonicus is found with a relatively widespread distribution, and is cultivated as a culinary vegetable in Korea. Petasites japonicus samples were dried either by freeze-drying or by hot air-convection drying (80℃), then evaluated for their antioxidative activity by measuring 1-dipheny-1,2-picrylhydrazyl (DPPH) radical scavenging, and by measuring thiobarbituric acid-reactive substances (TBARS) in brain homogenates subjected to Fe2+ -mediated lipids with or without the addition of botanical extract. Hot air convection-drying resulted in a slight increase in the extraction yie1d as compared with freeze-drying. However, total phenol and flavonoid contents in freeze-dried Petasites japonicas were significantly higher than those of hot air convection-drying. Freeze-drying increased the free radical scavenging activity of Petasites japonicas, leaves, and stems by 52.6, 28.6, and 248.0%, as compared with hot air convection-drying. Additionally, the IC50 values measured by TBARS in hot air convection-dried Petasites japonicas, leaves, and stems were increased by 36.0, 31.6, and 15.9%, as compared to those of freeze-drying. Although antioxidative activity was reduced slightly by heat processing in Petasites japonicas, freeze-drying for each portion of Petasites japonicus was the most appropriate for use as a functional food and pharmaceutical material.

Comparing for three ethanol extracts, the highest electron donating ability was found at Polygonati Rhizoma (86.6%), but, the highest SOD-like ability, at the Ephedrae Herba (47.8%). Xanthine oxidase experiment exhibited 95.7% of hindrance effect in Ephedrae Herba, and 84.0% in Polygonati Rhizoma. A tyrosinase inhibitory activity assay was conducted to evaluate the whitening effects of the extracts, The tyrosinase inhibitory activity was 6.5% in the Polygoni Multiflori Radix, 32.6% in the Polygonati Rhizoma, 64.0% in the Ephedrae Herba. Based on these results, we suggest that the ethanol extracts of Polygoni Multiflori Radix, Polygonati Rhizoma and Ephedrae Herba can be used as food and cosmetic ingredients.

Comparing for three ethanol extracts, the highest electron donating ability was found at Poria Cocos (81.2%), but, the highest SOD-like ability, at the Coptidis Rhizoma(58%). Xanthine oxidase experiment exhibited 23.3% of hindrance effect in Pueraria Radix, and 79.3% in Poria Cocos. To evaluate at the whitening effect, tyrosinase inhibitory activity was conducted. Tyrosinase inhibitory activity was detected at 17.9% in the Puerariae Radix, 5.2% in the Poria Cocos and 83.3% in the Coptidis Rhizoma. From these results, we suggest that the ethanol extracts from Pueraria Radix, Poria Cocos, and Coptidis Rhizoma can be used for cosmetic ingredients.

        선학초 메탄올 추출물을 유기용매를 이용하여 분획하고 각각의 분획별 항산화 및 항암 활성을 조사하였다. 항산화 활성으로 총페놀, 전자공여능, 아질산염 소거능을, 효소 저해 활성으로 XOase 저해 활성을 조사하였으며, 암세포인 HT-29, SNU-1, HeLa 세포에 대한 성장 저해 활성을 조사하여 기능성 식품으로의 개발 가능성을 알아보고자 하였다. 총 페놀 함량은 EtOAC와 BuOH 분획에서 39.89%, 39.56%로 가장 높았고, 전자공여능 또한 EtOAC 분획에서 92.90% (500 μg/ml), 94.47% (1000 μg/ml), BuOH 분획에서 93.77% (500 μg/ml), 92.90% (1000 μg/ml)로 90% 이상이었다. 아질산염 소거능도 1000 μg/ml의 농도에서 50% 이상이었으며, XOase 저해활성은 93.06% (EtOAC) 와 91.73% (BuOH)로 높은 활성을 보였다. 암세포 성장 저해활성을 측정한 결과 hexane 분획에서 가장 높았고 HT-29에 대해 11.63%-90.07%, SNU-1에 대해 16.84%-95.11%, HeLa에 대해 4.44%-96.40%였다. 이상의 결과에서 선학초의 EtOAc, BuOH 분획물은 항산화 활성이 있는 기능성 식품으로의 개발이 가능할 것으로 생각되며, hexane, chloroform 분획은 위암, 대장암과 자궁경부암 치료보조제로서의 개발을 위한 추가적인 연구가 필요하다고 생각된다.

        돌나물 수집종간 생육특성과 비타민 C함량 및 항산화활성을 비교하기 위하여, 13 지역종을 포장에 삽목재배하였다. 금산, 부천, 용인, 포천 지역종은 줄기가 가늘고 초장이 길며, 잎은 좁고 긴 타원형으로 다른 지역종들과 형태적 차이를 보였으며, 완주와 군산 지역 종은 초장과 절간장이 짧고, 개화기에도 꽃이 피지 않았다. 비타민 C 함량은 407.8-434.4mg·kg-1의 범위로 광양, 부안, 완주, 군산 지역종에서 높았으나, 수집종간 유의한 차이는 보이지 않았다. 항산화 활성을 나타내는 전자공여능(EDA)은 생체추출물(45.0~66.5%)에서보다 동결건조 추출물(61.3~66.5%)에서 높았으며, 광양, 순천, 완도 지역종들이 다른 지역종에 비하여 높은 항산화 활성을 나타내었다. 비타민 C함량 및 항산화 활성은 광양 지역종에서 가장 높았다.

        This study was done to investigate the antidiabetic and antioxidant effects of Lycii fructus in Streptozotocin (STZ)-induced diabetic rats. Diabetes was induced by intravenous injection of STZ at a dose 45mg/kg.b.w. dissolved in citrate buffer(pH4.5). The ethanol extract of Lycii fructus was orally administrated once a day for 7 days. The contents of serum glucose, total cholesterol were significantly decreaed (p<0.05) in Lycii fructus treated group compared to the those of STZ-control group, also content of Triglyceride (TG), Altherogenic index (AI) were decreased, but not statistically significant. But high density lipoprotein (HDL)-cholesterol and HDL-cholesterol/total cholesterol ratio (HTR) were increased in Lycii fructus treated group compared to the those of STZ-control group. The content of hepatic glycogen and activities of glucose-6-phosphate dehydrogenase(G-6PDH), glutathione-s-transferase(GST), superoxide dismutase(SOD) were significantly increased(p<0.05), glucose-6-phos-phatase(G-6pase)was significantly decreased(p<0.05) and The glutathione(GSH), glucokinase(GK) were increased. But not statistically significant In Lycii fructus treated group compared to the those of STZ-control group These results indicated that ethanol extract of Lycii fructus would have antidiabetic and antioxidant effects in STZ-induced diabetic rats.

        본 연구 결과 동결건조된 감귤과피 70% 메탄올 추출물의 총 폴리페놀 함량은 836.8 ㎎%였으며 감귤과피 추출물 0.01, 0.02와 0.1%의 EDA는 각각 89.6, 86, 81.3%로 높았으며 아질산염 소거능은 pH 1.2에서 34.4%, pH 7.0에서 19.5%를 나타내어 산성 영역에서 높은 소거작용을 보였다. 또한 이들 추출물의 항산화효과는 옥배유의 경우 TBHQ 〉 BHT 〉 TOC 〉 ChEx 〉 EaEx 〉 EtEx 〉 WaEx 〉 Control 순이었고, 채종유의 경우 TBHQ 〉 ChEx 〉 EaEx 〉 BHT 〉 EtEx 〉 WaEx 〉 TOC 〉 Control 순이었다. 두 유지모두에서 에틸아세이트추출물(EaEx)과 클로로포름추출물(ChEx)이 에탄올추출물(EtEx)과 물추출물(WaEx) 보다 항산화 효과가 높았으며 첨가농도가 증가함에 따라 항산화 효과도 증가하는 경향을 보였다. 그리고 감귤과피의 각 용매별 추출물의 공액이중산가도 에틸아세테이트추출물(EaEx)과 클로로포름추출물(ChEx)이 높았으며 이들의 항산화 효과는 TBHQ보다는 낮았으나 BHT, tocopherol과 비교하였을 때 거의 유사하거나 좀 더 높은 경향을 보였다. 한편 감귤과피 추출물은 우수한 항균력을 보여주었고 농도가 상승함에 따라 항균효과도 상승하였으며 이 효과는 그램 양성, 음성균주에서 고르게 나타나 천연 항균소재로서의 이용가능성을 확인하였다. 이상의 결과에서 감귤 과피는 총 폴리페놀 함량과 전자공여능 활성이 높아 항산화효과와 항균효과가 우수하게 나타나 감귤 과피의 기능성 이용도가 매우 높을 것으로 생각되며 감귤 가공 후 생기는 부산물들의 식품산업에서의 유용성도 높을 것으로 사료된다.

        Astaxanthin is a kind of carotenoid compounds, having a antioxidant and anti-inflammatory activities. The antioxidative mechanism by which carotenoid scavenge free radicals has been clearly elucidated, but has not tried for the development of mammalian preimplantation embryo. This study was conducted to investigate the antioxidative effect of astaxanthin on in vitro development of porcine in vitro fertilized embryos. Porcine embryos derived from in vitro fertilization (IVF) were cultured in 5% CO2 in air at 38.5℃ in PZM-3 medium supplemented with different dosages of astaxanthin (0, 1, 5 and 10 M) and taurine (0, 1, 2.5 and 5 mM) as a positive control, and execute to compare the effects of various antioxidants such as taurine, melatonin and asculatin on in vitro development. The proportions of embryos developed to the blastocyst stage were increased when 1 and 5 M of astaxanthin (26.6 and 23.4%, respectively) and 1 and 2.5 mM taurine (25.8 and 26.4%, respectively) were supplemented, compared to controls (p<0.05). Also, various antioxidant-treated groups were significantly higher rates of blastocysts (astaxanthin, 27.4%; taurine, 29.1%; melatonin, 26.8%; aesculetin, 27.9%, respectively ) than control (18.8%). There was no difference in mean cell number of blastocysts between antioxidants and control. This result indicates that astaxanthin has an antioxidant feature when porcine IVF embryos were cultured in vitro.

        In this study, physicochemical properties and the antioxidative activity of whey protein isolate(WPI) for com germ oil were measured. The pH of WPI was 6.26, and the titrable acidity was 0.18%. The WPI’s moisture content was 5.2% and each of the other element content such as lactose, crude protein, crude ash and crude fat was found to be 0.8%, 90.7%, 2.7% and 0.6%, respectively. The amounts of active SH group in WPI 9 μ M-g and total colony counts of bacteria was 5.9 × 103 CFU-g. α-Lactalbumin, β-lactoglobulin and bovine serum albumin(BSA) were shown in WPI as major protein by electrophoresis. The antioxidative effect of WPI and other antioxidants on com germ oil used as substrate was determined by peroxide value(POV) and conjuqated dienoic acid value(CDV). By these results, the order of antioxidative effects could be defined as BHT 0.02%〉ascorbic acid 0.1%〉WPI 0.1%〉WPI 0.02%〉ascorbic acid 0.02%〉control〉tocopherol 0.02%〉tocopherol 0.1%, respectively. Also the induction period of com germ oil added with WPI was longer by 1.6 times than that of control(none added any antioxidant). Therefore the fact suggested that WPI could be utilized as a good antioxidative agents.

        The purpose of this study was to investigate the antioxidative effect and quality characteristics of cookies made with Sea tangle powder(STP). The cookies were at 30℃ for 45 days. The 3% STP had higher pH value compared to the other groups and control. As more STP was added, the L-value and b-value decreased, and the a-value increased for the color values. The results of sensory evaluation and acceptance test showed that the cookies with 3% STP was significantly more preferable in overall acceptability than the others. The acid value, peroxide value, and thiobarbituric acid value were lower in cookies with 3% and 6% STP than in those cookies made 9% STP and the control cookies.
