        In this study, the antioxidant activity of methanol extracts of wheat sprouts grown in wild fields and cultivated fields and harvested at various times were analyzed to compare the quality characteristics of the wheat sprouts as a function of their cultivation and harvest time, as well as for the development of functional materials. The total polyphenolic and flavonoid content, as well as antioxidant activity of the wheat extracts, were subsequently analyzed. The ABTS radical scavenging activity of the wheat extract increased from 16.97 mg TEAC/g sample on cultivation day three in cultivated field wheat sprouts to 25.99 mg TEAC/g sample after seven days of wild field cultivation. The total polyphenol content increased from 17.08 mg GA eq/100 g in cultivated field wheat sprouts grown for three days to 28.70 mg GA eq/100 g after seven days of wild field cultivation. In addition, the flavonoid content increased from 7.02 mg catechin eq/100 g (7 days) to 8.47 mg/g after 12 days of wild field cultivation. Notably, the activity subsequently decreased. These results suggest that the wheat sprouts with higher biological activity were those produced from the wild field after 20 days.

        The Sasa quelpaertensis Nakai is a white band on the edge of the leaf, the branch is not split, the stem is small, and the shape of the node is different from that of the inland bamboo (Sasa borealis Makino). It is known as a plant that is highly likely to be used as a resource plant. Various efficacy studies such as antioxidant, anti-obesity, antibacterial and antidiabetic activities have been conducted and developed as functional cosmetics and beverage products. Unfortunately there is little research on the suitability of the product. In order to use S. quelpaertensis as a raw material for food or health functional food, S. quelpaertensis leaves were collected monthly for one year to prepared 70% ethanol extract(SQEP) and water extract(SQWP). After, the content of index component(p-coumaric acid) in SQEP and SQWP was analyzed by HPLC. For the study of the processing properties, the SQWP was prepared considering the content of the index component and extraction yield(%). Also, the stability of index component according to pH(2.5, 4.0, 6.0, 8.0, 10.0) condition and stability of index component according to temperature condition(25℃, 35℃, 40℃) were studied. Through this process ability(properties) study, we suggest that the SQWP may be used as a product material of health functional foods.

        본 연구는 해발 750m 이상의 고랭지에서 재배된 양배추의 정식시기 및 수확 시 기상환경이 품질에 미치는 영향과 수확 후 저장 중 품질변화를 조사하기 위해서 수행하였다. 수확 된 양배추의 품종 별 구중은 정식시기 및 수확시기가 늦으면 구중이 감소하는 양상을 보이며 상품성이 낮았다. 반면 8월 23일(3차)에 수확된 양배추 품종은 정식시기 및 수확시기가 8월 3일(1차)과 8월 13일(2차)에 비해 늦었음에도 불구하고 수확기의 기상환경이 좋아 경도 및 가용성 고형물의 함량이 높았다. 가용성 고형물의 함량은 수확 전후의 기상환경에 영향을 받아 수확 전 3일 이상 강우가 없을 때 수확하는 것이 높게 유지하였고, 경도는 늦은 정식시기가 경도를 낮추는 것으로 나타났다. 양배추의 색도는 수확기에 따른 변화는 일정한 경향이 없었으며, 품종간에도 유의적인 차이는 보이지 않았다. 공시품종 중 수확 시 품질은 'Speed king'과 'Minix 40' 품종이 가장 우수하였다. 양배추 저장은 8월 3일(1차), 8월 23일(3차), 그리고 9월 10일(4차)에 수확된 양배추를 상온(25℃, 60% RH)과 저온(3℃, 85% RH)에 각각 저장하여, 수확시기와 수확기의 기상환경이 상온 및 저온저장에 미치는 영향을 확인하였다. 양배추의 생리장해는 수침, 시들음, 냉해가 저장기간 4일경부터 발생하여 상품성을 상실하였다. 양배추 6개 품종의 저장기간은 수확 시 기상환경에 따라 상온저장의 경우 3~5일, 저온저장의 경우 9~10일 정도 가능하였다. 특히 8월 3일(1차)에 수확한 양배추는 수확일 전후의 열악한 기상환경으로 실온 및 저온 저장기간이 가장 짧아 실온 2일 그리고 저온은 4일의 저장기간을 보였다.

        This study was investigated the effect of immature rhizome production according to harvest times-based treatment method for seed production of Gastrodia elata. The results revealed that when the tuber weight of G. elata harvested in spring (GEHS) was ≥ 100 g, the rate of artificial fertilization, protocorm formation, and immature rhizome formation was 90.9%–94.8%, 3.1%–5.4%, and 10.1%–15.3%, respectively. When G. elata harvested in fall (GEHF) was treated at a low temperature for 4 weeks or more, the rate of artificial fertilization, protocorm formation, and immature rhizome formation was 70.4%–87.6%, 2.2%–2.6%, 8.7%–9.5%, respectively. Therefore, to produce seeds and immature rhizomes, GEHS must have tubers of more than 100 g, whereas GEHF requires breaking dormancy by low-temperature treatment for 4 weeks or more. Compared with those of GEHS, the rate of artificial fertilization, protocorm formation, and immature rhizome formation was lower in GEHF; however, it was higher than those in the natural germination state. Thus, it can be expected that G. elata can be produced throughout the year by ensuring that the seeds and immature rhizomes of G. elata are produced using a constant tuber weight and by breaking dormancy with low temperature treatment.

        Dendropanax morbifera Leveille (Araliaceae) is an endemic species growing in the south-western part of South Korea that has been used in folk medicine and health functional food. In this study, we investigated an extract of quercetin in Jeju D. morbifera by varying different parts (fruit, sprouts, leaves, sprigs, and branches), harvest times, and extraction solvents. In addition, we aimed to establish a simple and reliable HPLC/UV analytical method to determination of quercetin for the quality control and base line data of the Jeju D. morbifera extract as a health functional food ingredient. The analytical specificity was determined with retention time and photo diode array (PDA) spectrum by analyzing quercetin using HPLC and comparing the results to those of extracts. This analytical method for quercetin was validated for its limit of detection (LOD), limit of quantitation (LOQ), precision, and accuracy. A high linearity in the standard calibration curve was obtained, with a coefficient of determination (R2) of 0.9996. Also, the LOD and LOQ values were found to be 0.28 μg/mL and 0.85 μg/mL, respectively, and the recoveries of quantified compounds ranged from 97.91% to 104.10%. Furthermore, the relative standard deviation (RSD) values of data from the intra- and inter-day precision analyses were less than 1.36% and 3.65%, respectively. As a result, the highest quercetin content among the extracts of Jeju D. morbifera leaves was found to be 20.14 mg/g, which was extracted at harvest in May (cultivation period 10 years) with 60% EtOH. All in all, we believe that the results obtained would be helpful in the development of nutraceutics and natural medicines and for the quality control of D. morbifera.

        본 연구는 2015년과 2016년에 ‘상주둥시’ 감의 수확시기 를 달리하여 수확 후 PE필름, 1-MCP 및 AVG를 처리가 저온저장동안 과실의 품질에 미치는 영향을 조사하였다. 2016년 과실 수확시기는 2015년에 비하여 10일 빠른 조기 수확을 실시하였다. 과실의 에틸렌 발생 정도는 조기수확 한 과실들에서 현저히 낮았고, 과실의 경도는 저온저장동안 1-MCP 처리구들이 다른 처리구의 과실에 비하여 높게 유지되었다. 과실의 감모율은 수확기를 달리한 모든 과실 들에서 PE 필름 처리 과실들에서 현저히 억제되었다. 성숙기에 수확한 과실은 저온저장 중 과실의 꽃받침 부위과 경와부의 과피색(L* 및 b*) 변화를 보면 무처리와 PE필름 처리구에 비하여 1-MCP 처리구들이 그 변화정도가 낮았다. 과실의 부패와 연화정도는 PE필름 처리 과실들에서 높게 나타났지만 AVG 처리구들에서는 부패과 발생이 없었다. 그리고 조기수확한 과일은 성숙기에 수확한 과실에 비하여 경도가 높게 유지되었고, 과피색의 변화가 낮은 경향을 보였고, 성숙기에 수확한 과실들은 당도, 과피의 적색 (Hunter a 값) 발현 및 호흡율이 높게 나타났다. 따라서 감 과실의 저장성 향상을 위해서는 조기수확이 중요한 요인으로 작용하고 또한 수확 후 1-MCP 처리가 과일의 경도를 높게 유지하고 과피색의 변화를 억제하였으며, 과실의 감 모율은 PE 필름 처리에 의해 현저하게 억제됨을 확인하였다.

        Background : Recently, there have been dynamic researches conducted on stevia as natural sweetener subtitute for sugar, However, Researches related to harvest period and parts of plant in stevia are few. Therefore, this study was conducted to select optimum harvest time and parts by measuring the natural sweeteners contents and analyzing antioxidant materials and activity according to harvest times, parts of plant. Methods and Results : Stevia was cultivated in plastic house, The leaves were harvested from April to October and the stem were only harvest in July and September. Stevia leaves and stems were extracted using high temperature and pressure extraction: Dried stevia leaves of 5g were added by 100ml of distilled water equivalent to 20 times of dry weight, and the mixture were extracted by autoclave at 121℃ for 15min. The contents of Rebaudioside A and Stevioside of stevia leaves harvested from April to October showed a tendency to increase gradually from July to October as the temperature increased, but the contents of rebaudioside A and stevioside decreased slightly in August due to excessively high temperature. The extraction yield of stevia leaves were highest in October and September, and there was no significant difference in the other period. In the stevia stems, the extraction yield was lower than that of stevia leaves in general regardless of harvest time. Total phenolic contents and flavonoid contents according to harvest time showed little difference among treatment. Conclution : stevia leaves were better than stevia stems regarding the use of rebaudioside A and stevioside as natural sweeteners. Also, it was confirmed that the stevia leaves of July, September and October, except for the high temperature period of August, had superior in quality and quantity.

        경남 남해군에 자생하는 고유품종으로 품종보호 등록된 섬애약쑥의 채취시기와 건조방법에 따른 이화학적 특성과 항산화활성을 평가하였다. 섬애약쑥은 5, 6, 7월에 동일한 재배지에서 수확한 후 각각을 12일 동안 음건(SD) 및 60℃에서 7일간 숙성한 다음 90℃에서 220분간 저장하여(AD) 건조하였다. 전처리방법을 달리하여 건조한 섬애약쑥의 유리당을 분석한 결과 glucose만이 검출되었으며 함량은 0.42±0.02~0.43±0.01 g/100 g과 0.41±0.02~0.47±0.04 g/100 g이었다. 총 페놀화합물의 함량은 AD(1.29±0.08~2.90±0.08 g/100 g)와 비교하여 SD(1.85±0.09~3.45±0.14 g/100 g)에서 더 높았다. 물 추출물을 31.5, 62.5, 125, 250, 500 μg/mL의 농도로 제조하여 항산화활성을 평가한 결과 DPPH와 ABTS 라디칼 소거활성은 SD 5월 시료와 AD 7월 섬애약쑥 추출물의 활성이 가장 높았으며, FRAP도 이들 시료에서 여타 시료에 비해 유의적으로 활성이 높았다. β-Carotene에 대한 탈색 저해활성도 SD의 5월과 AD의 7월 시료에서 각각 25.53±2.85~81.43±2.56%, 35.98±2.22~79.00±1.42%로 가장 활성이 높았다. 이상의 결과 섬애약쑥은 5월 채취하여 음건하였을 때와 7월에 채취하여 숙성 가공하였을 때 유용성분의 섭취가 더 용이하며, 높은 항산화활성을 나타내어 기능성 식품 소재로 활용도가 높을 것으로 생각된다.

        Gastrodia elata Blume is a achlorophyllous orchid plant that has been used in traditional medicine to treat many human illnesses, such as vertigo, hemiplegia, and epilepsy. It contains three major pharmacological substances; gastrodin, ergothioneine, and vanillyl alcohol. Here we investigated the quantitative changes in those functional components by cultivation conditions and harvest times. The content of ergothioneine was different with cultivation areas, while gastrodin accumulated the higher levels than vanillyl alcohol regardless of cultivation areas. The smaller tubers contained the higher concentrations of gastrodin and the lower concentrations of ergothioneine than did the larger tubers. The cultivation under sun shade screen increased the concentrations of both gastrodin and vanillyl alcohol but decreased the levels of ergothioneine. We also determined the contents of functional substances depending on the harvest times. The concentration of gastrodin was higher in October than in April, while the level of ergothioneine was higher in April than in October. Interestingly, the use of sexually propagated seed tubers produced 1.9 times higher levels of gastrodin compared to vegetatively propagated seed tubers. In this study, we found that three major functional substances in G. elata tubers altered depending on various cultivation practices, which might be important to increase the economic values of G. elata tubers.

        1. 수확시기에 따른 도정수율은 메벼의 적기수확시기보다 5일정도 늦게 수확하는 것이 높았으며 품종에 따라서는 보석찰벼와 해평찰벼가 도정수율이 높았다. 2. 찹쌀의 특징인 불투명한 유백색은 수분함량 14.0%이상부터 점차 소실되기 시작하여 15.0%대에 마치 멥쌀이 섞인 것처럼 보이다가 16.0%이상에 도달될 경우는 거의 대부분이 멥쌀과 같은 외관을 나타냈다. 3. 수분 증가에 따른 찹쌀의 유백색 소실은 조기에 수확된 벼에서 더 민감하게 나타나기 때문에 가능한 수확시기를 적기 이후로 정하는 것이 건조효율이나 찹쌀 수율 측면에서 더 유리하다고 판단된다. 4. 찹쌀 고유의 유백색 발현을 최대로 하기 위해서는 찰벼 건조수분의 critical point은 13.5%이하였다.

        This experiment was conducted to investigate the changes of harvest index and the relationship between harvest index and yield determination factors by different planting times in the determinate soybean cultivars, Shinpaldal and Danbaeg. Optimum planting were 23 May in 1995 and 1996. Late planting were 13 June in 1995 and 6 June in 1996. Growth period from planting to physiological maturity (R7) was shortened as planting time was delayed in two cultivars due to shortening of reproductive growth period in Shinpaldal, and of vegetative growth period in Danbaeg. Stem weight was distinctly decreased in late planting compared to optimum planting, but seed weight of both cultivars was not different between planting times. Also, seed number per pod and harvest index were significantly increased in late planting and the high correlation was found between two factors. It was suggested that increase of harvest index in late planting would be related with high assimilate use efficiency due to increase of sink capacity. The results of correlation and principal component analysis for yield determination factors showed that main factor on yield determination was pod number per plant at R5 stage associated with dry matter accumulation during early reproductive growth period, seed number per pod and harvest index were the second factor, and one hundred seed weight was the third factor. The result of this experiment indicated that yield determination in soy-bean was dependent mainly on pod number per plant related to dry matter accumulation by early reproductive growth period, and the increase of seed number per pod and harvest index could compensate for yield decrease by shortening of vegetative growth period in late planting. Such result suggests that optimum planting date can be delayed from mid May to early June in improved soybean cultivars in Korea
