        Aster koraiensis Nakai (A. koraiensis) which has been used as a food and medicinal plant in the past, is valuable as functional food material. Therefore, the aim of this study was to determine the antioxidant properties and major phenolics of A. koraiensis extracts with different ethanol concentrations (0, 50, 70, and 100% aqueous ethanol solution). When ethanol concentration in the extraction solvent was increased, extraction yield decreased; 34.2, 23.2, 21.0, and 5.5% in 0, 50, 70, and 100% ethanolic extracts, respectively. Total phenolics content and antioxidant activities of extracts were increased in an ethanol concentration-dependant manner. The major phenolics in the extracts were chlorogenic acid (21.264~58.666 mg/g), isochlorogenic acid A (10.432~145.353 mg/g), and isochlorogenic acid C(0.239~13.148 mg/g), and these phenolic contents were higher in 70 and 100% ethanolic extracts than other extracts. Significant correlations were observed between ethanol concentration of extraction solvent, antioxidant properties, and major phenolics. These results indicated that the optimal ethanol concentration for extraction was 70%.

        In this study, we aim to evaluate the phenoilcs profile of fresh freeze dried whole crop rice (FWCR) sample by HPLC–DAD analysis. Firstly, the fresh whole crop rice (before heading stage) was dried using liquid nitrogen and then powdered sample was extracted using methanol-water. The extract was quantified phenolics and flavonoids content by HPLC-DAD. HPLC-DAD analysis showed that the FWCR contained six phenolic acids including; caffeic, p-coumaric, ferulic, and chlorogenic acid, prophyl gallate in addition to five flavonoids; rutin, vitexin, luteolin, qurecetin and kaempferol. Results indicated that ferulic and p-coumaric acids were the major soluble phenolic acids in FWCR, and their concentrations were 3.1 and 2.65 mg/g DW. It can be summarized that the presence of phenolic and flavonoids in FWCR enhance the palatability and feed intake of ruminants.

        A cultivar (Malus domestica cv. Fuji) of apple was selected to make apple peel (AP) powder by three different powdering methods. Frozen AP was thawed and subsequently was dried or ground without drying. After AP was dried by hot-air drying at 60°C or freeze-drying, the dried AP was ground using a conventional blender. Separately, the thawed AP was powered by using a cryogenic micro grinding technology (CMGT). The ground AP and three types of AP powder were extracted using deionized water, 20, 40, 60, 80, or 100% methanol, followed by vacuum evaporation. The total phenolics contents (TPC), total flavonoids contents (TFC), DPPH, and ABTS radical scavenging capacities of each extract were compared to determine an efficient powdering method. Lyophilized AP powder extract using 60% methanol showed the highest TPC and DPPH radical scavenging capacity. In contrast, 60% methanol extract of the powder by CMGT, resulting in the smallest particle, exhibited the highest TFC and ABTS radical scavenging capacity. This study suggests that the extraction yield of bioactive compounds from AP may be varied according to different powdering methods and that a new powdering process such as CMGT may be applicable to develop functional foods efficiently.

        Anti-neurodegenerative activities of aqueous extract from propolis were investigated. The aqueous extracts showed strong antioxidant activities in malondialdehyde (MDA) assay, and it effectively inhibited lipid peroxidation. In addition, the aqueous extract presented protective effects against H2O2-induced neurotoxicity in a dose-dependent manner. Our study verified that the aqueous extract has strong antioxidant activity and neuronal cell protective effect which is correlated with its total phenolics (290.75 mg GAE/g) including p-coumaric acid, vanillic acid and gallic acid. These phenolics of propolis may reduce the risk of neurodegenerative disorders, and can be utilized as effective and safe resources of functional food.

        This study was conducted to compare the antioxidant activities of fermented soy products such as chungkukjang, meju and doenjang with soybeans. Total phenolic, flavonoids contents and antioxidative activities of the methanol extract of soy and fermented products were compared with specific reference to alpha-diphenyl-2-picryl-hydrozyl (DPPH) radicals scavenging effects, ferric /reducing power (FRAP), inhibition of conjugated diene formation and tyrosinase activities. Total phenolic and flavonoids contents increased in soybeans after fermentation. Fermented soy products also displayed enhanced antioxidative activities in comparison with the non-fermented soybeans. There were linear relationships between total phenolic and flavonoids contents and ferric reducing/antioxidant power of the samples. Overall, the fermented soy products showed a better antioxidant activity than soybeans. Among the 3 kinds of fermented soy products, chungkukjang, meju and deonjang, doenjang exhibited the highest levels of DPPH-free radicals scavenging activity, ferric /reducing power, inhibition of conjugated diene formation and tyrosinase activities. The fermented soy products with longer fermentation time demonstrated the higher antioxidant activities as well as higher total phenols and flavonoids in the order of doenjang > meju > chunghlkjang> soybeans.

        The aim of this study was to analyze antioxidant activity, total phenolics, and vitamin C content in unripe and ripe jujube cultivar and to investigate correlation between antioxidant and chemical constituents including total phenolics and vitamin C. The antioxidant activity was measured by the DPPH radical scavenging activity, ABTS radical scavenging activity, and reducing power. Although, the weight, diameter and soluble solids of Zyziphus jujuba fruit were increased with the progress of ripening, antioxidant activity and total phenolics were decrease during ripening. The highest free-radical scavenging activity (at 2.5 ㎎/㎖) and reducing power (at 1 ㎎/㎖) in fruit were 81.75% (Bokjo, unripe) and 0.80 (Mudeung, unripe), respectively. The highest total phenolic content in unripe fruit of Mudeung was 62.50 ㎍/g. A linear correlation (r=0.911) was shown between DPPH radical scavenging activity and total phenolic content.

        Background : Phenolic compounds were isolated from the twig of Broussoneita Kazinoki. Their structures were established on the basis of extensive spectroscopic (MS, 1D , and 2D NMR) data analysis and by comparison with the spectroscopic data reported in the literature. Methods and Results : The twig of B. Kazinoki were extracted 60% aqueous ethanol for 3 days at room temperature. The extract was filtered and concentrated by vacuum evaporator. And then, extract was partitioned using hexane, methylene chloride (MC), ethyl acetate (EtOAc), n-butyl alcohol (BuOH) and H2O, successively. The extraction was separated by using prep-HPLC, and the structure was analyzed by Mass spectrometry (MS) and 1H-, 13C-, 1H-1H COSY, HSQC, HMBC NMR data. Conclusion : These compounds were identified as chlorogenic acid (1), ferulic acid (2), p-coumaric acid (3), taxifolin (4), marmesin (5), 5-methoxy marmesin (6), pinoresinol (7), syringaresinol (8), quercetin (9), broussonin A (10), broussonin B (11), broussoflavonol A (12), broussoflavonol B (13), kazinol A (14), and 5,7,3',4'-tetrahydroxy-3-methoxy-8,5'-diprenylflavone (15).

        The antioxidant activities and total phenolics of four Rosaceae species Pourthiaea villosa (Thunb.) Decne, Sorbus commixta Hedlund, Sorbaria sorbifolia var. stellipila Maxim and Pyrus pyrifolia (Burm.f.) Nakai were determined. Phenolic content (polyphenol and flavonoid), radical scavenging activities [2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2-azino-bis (3-ethylnezthiazoline-6-sulfoic acid) (ABTS)] and ferrous ion chelating effect were evaluated. Total polyphenol and flavonoid contents were highest in Pourthiaea villosa (Thunb.) Decne and lowest in Pyrus pyrifolia (Burm.f.) Nakai. Phenolic contents of Pourthiaea villosa (Thunb.) Decne was 331.45±7.78 and 90.4±3.5 mg·g-1. DPPH and ABTS radical scavenging activities were found to be lowest in Sorbus commixta Hedlund whereas Sorbaria sorbifolia var. stellipila Maxim and Pourthiaea villosa (Thunb.) Decne showed relatively good DPPH and ABTS radical scavenging activities. Ferrous ion chelating effect was highest in Pyrus pyrifolia (Burm.f.) Nakai (1.05±0.04 mg·ml-1) and lowest in Sorbus commixta Hundlund (4.22±0.71 mg·ml-1).

        Anthocyanins are very important constituent of human diet. In recent years, they have gained much attention due to their antioxidative properties. As the radish (Raphanus sativus L) has rich content of anthocyanins, the study is aimed to develop increased functional radish from selected radish varieties. ‘Bordeux’ is a hybrid variety of breeding between one accession derived from ‘Oharu’ as a maternal variety and ‘Chungpihongsim’ as a paternal variety. In this study, we investigated the new varieties of radish commonly consumed in Republic of Korea for their total phenolic content (TPC) and antioxidant activities using three (DDPH, FRAP and CUPRAC) different assays. The selected radish varieties like ‘Bordeux’, ‘Chungbok’, ‘3209’, ‘Chungwoon’, ‘Oharu’, and ‘Chungpihongsim’ were procured from the company Syngenta Korea. Among the selected radish varieties, ‘Bordeux’ (289 μg/g FW) and ‘Chungpihongsim’ (276 μg/g FW) revealed maximum amount of phenolics; whereas ‘3209’ (103 μg/g FW) and ‘Chungwoon’ (166 μg/g FW) showed the lower amount of phenolics content, respectively. Extracts from these studied radishes showed good to moderate antioxidant activities. The varieties ‘Chungpihongsim’ and ‘Bordeux’ revealed maximum antioxidant activity for all assays as demonstrated. However, some varieties like ‘3209’ and ‘Oharu’ exhibited the lowest antioxidant activity in all the tested assays, viz; DPH, FRAP and CUPRAC in μg TE/g FW, respectively. The antioxidant activities may be attributed to the higher phenolic acid contents as a linear relation was observed between the two components and the antioxidant parameters.

        새싹재배기에서 7일간 재배된 동부 새싹나물의 부위별 생육, 폴리페놀 함량, 플라보노이드 함량, 항산화성 및 항산화효소 활성 차이를 검토하였다. Folin-Denis방법에 따른총 페놀 함량은 동부나물 자엽의 메탄올 추출물(48.8 mg kg-1)이 가장 높았으며, 그 다음이 뿌리(30.8 mg kg-1), 하배축(22.2 mg kg-1) 순으로 나타났다(p < 0.05). 한편, 총 플라보노이드 함량은 총 페놀 함량과 같은 경향을 보였으나 더 낮은 함량이 검출되었다. DPPH 라디컬 소거능은 추출물 농도가 증가할수록 높은 활성을 보였으며 동부나물 자엽의 추출물(82.5%)에서 가장 높았으며, 그 다음이 뿌리(52.6%),하배축(35.0%) 순으로 나타났다(p < 0.05). 항산화효소 활성은 APX와 CAT 활성은 하배축에서 가장 높았고 POX와SOD 활성은 뿌리가 가장 높은 활성을 보였다. 이런 경향은재배 후 5일과 7일째 동부나물에서 같게 나타났다. 따라서상관분석에 따르면 총 페놀 함량이 총 플라보노이드 함량보다 항산화성과 항산화효소 활성에 더 높은 관련성이 있는것으로 나타났고 그 생리활성물질 함량과 그 활성 정도는부위별로 다르게 나타났다.

        대두, 녹두, 및 동부 종자로 7일간 재배된 새싹나물의 생육, 폴리페놀 함량, 플라보노이드 함량, 항산화성 및 항산화효소 활성 차이를 검토하였다. 작물별 새싹나물의 총 신장은 녹두와 콩이 동부보다 유의적으로 컸으며 생체중은 오히려 콩과 동부가 녹두보다 유의적으로 높게 나타났다. Folin-Denis방법에 따른 총 페놀 함량은 콩나물의 메탄올 추출물(82.2 mg kg-1)이 가장 높았으며, 그 다음이 동부나물(32.2 mg kg-1), 녹두나물(24.5 mg kg-1) 순으로 나타났다(p 〈 0.05). 한편, 총 플라보노이드 함량은 총 페놀 함량과 같은 경향을 보였으나 더 낮은 함량이 검출되었다. DPPH 라디컬 소거능은 추출물 농도가 증가할수록 높은 활성을 보였으며 전체적으로 낮은 활성이었으나 동부와 녹두 추출물(44와 42%)이 콩나물(25%)보다 비교적 높은 활성을 보였다. 항산화효소 활성은 APX와 POX활성은 동부가 가장 높았고 그 다음이 녹두, 콩 순으로 나타났고, CAT와 SOD 활성은 콩나물이 동부와 녹두나물보다 높게 나타났다. 따라서 본 연구는 총 페놀 함량(r2 = 0.53 ~ 0.90)과 총 플라보노이드 함량(r2 = 0.47 ~ 0.94)은 항산화성과 항산화효소 활성에 높은 연관성이 있으며, 그 함량과 활성은 작물별로 다르게 나타남을 확인하였다.

        Proximate composition, total phenolics and total flavonoids level, DPPH radical scavenging activity, and cytotoxicity were determined in the methanol extracts of different plant parts of Youngia sonchifolia at reproductive growth stage. Crude protein and crude fat were present as the highest amount in flowers, and crude fiber in the stems and roots. The highest content of phenolics [mg ferulic acid equivalents (FAE) kg-1dry weight (DW)] was found in flowers (highest) and followed by leaves, stems and roots (lowest). Flavonoids [mg rutin equivalents kg-1 DW] level, however, showed the highest in leaf extracts and lowest in root extracts. The antioxidant potential of the methanol extracts from the plants dose-dependently increased DPPH (1,1-diphenyl-2-picrylhydrazyl) free radical scavenging activity (%). DPPH radical scavenging activity were highest in root extracts (IC50 = 1,135.6 mg kg-1) and followed by leaf, stem and flower extracts. By way of MTT (3-(4,5-dimethylthiazol- 2-yl)-2,5-diphenyl tetrazolium bromide) assay, methanol extracts of roots showed the highest anticancer activity on human cancer cell line Calu-6 for human pulmonary carcinoma (IC50= 196.3 mg kg-1) and HCT-116 for human colon carcinoma (IC50=623.6 mg kg-1)

        This study investigated the functional substances, including phenolics, tocopherol compounds in rice (Onnuri, Nampyeong, Dongjin, Deuraechan, Hopum, Iksan-515, Iksan-526) that were cultivated in Iksan region. Specially, Iksan-515 and Iksan-526 were produced resveratrol rice. Resveratrol is health-beneficial compound with strong antioxidant activity. Iksan-515 and Iksan-526 were contained resveratrol compound while, other rice varieties did not showed resveratrol. The total phenolic compounds showed similar concentrations in 7 rice varieties. Especially, Iksan-526 revealed 273.3 ㎍ g-1 and Iksan-515 was 264.8 ㎍ g-1. In this study, we analyzed vitamin E contents of 7 varieties of rice. The total tocopherols revealed 418.3 ㎍ g-1 in Iksan-526, 401.2 ㎍ g-1 in Iksan-515 and 413.3 ㎍ g-1 in Hopum. We determined 4 tocopherols (α-, β-, γ-, δ-) and 4 tocotrienols (α-, β-, γ-, δ-). Among the all samples, β-tocotrienol showed higher average concentrations (101.3 ㎍ g-1) than other compounds and, γ-tocotrienol revealed second higher concentration (94.5 ㎍ g-1). On the other hand, δ-tocopherol was not detected in all rice samples.

        The aim of this study was to determine total phenolics (TP) content, total flavonoids (TF) level, and antioxidant activity of methanol extracts from leaf parts of 15 Vietnamese wild plants. TP content showed the highest amount in methanol extracts from Altenanthera sessilis (409.7±1.4 ppm), and followed by Eclipta prostrata (183.6±3.8 ppm) and Cassia tora (159.3±5.7 ppm). The highest TF level also was found in A. sessilis (156.3±1.7 ppm), followed by E. prostrata, and C. tora, showing similar tendency to TP. Methanol extracts of A. sessilis, E. prostrate and C. tora at 1000 ppm exhibited the highest DPPH radical scavenging activity by 94.5, 92.6 and 92.7%, respectively. The methanol extracts from A. sessilis showed the highest ABTS and nitrite scavenging activities by 97% and 92%, respectively. The highest correlation coefficient (r2) was 0.9522 between TP and TF, and followed by 0.8919 between DPPH and ABTS activities. However, polyphenols and antioxidant activities showed low correlation coefficients, ranging from r2=0.4114 to 0.4826. It was concluded that Vietnamese wild plants contain polyphenol compounds with antioxidant activities depending on plant species.
