This paper examined farmers’ perceptions and preferences for improved varietal traits in the Wenchi and Offinso North Municipalities of Ghana. Data from 306 randomly selected tomato farmers were analyzed using perception indices, Kendall’s Coefficient of concordance and the Poisson regression model. The results show that tomato farmers are willing to adopt an improved variety with long shelf life, good fruit quality and large fruit size. The study further indicates that tomato farmers lack requisite skills in pest and disease management. The number of varietal attributes preferred by farmers was positively influenced by sex of farmer, education, experience in tomato cultivation, household size, access to credit, FBO membership, extension contacts farm size and off-farm income. These factors and attributes need to be carefully considered by breeders and policy makers in the development of an improved tomato variety to enhance its uptake. The major constraints identified in tomato production include limited access to capital followed by low commodity prices coupled with low demand with the least constraint being access to tractors for land preparation. The potential of adoption of improved tomato varieties in Ghana will be augmented through paragenetic measures towards addressing these constraints.

This study was designed to explore effective techniques to be used in IERW (Integrated English Reading and Writing) classes for college students. The study last for 15 weeks and included 457 students and 11 instructors at E University. The participants were freshmen who were taking a compulsory English reading and writing class, and the instructors were seven native English speakers and four Koreans. To ensure the effectiveness of IERW classes, it is important to identify what teaching activities are being used and which activities students prefer. To address these issues, the instructors were interviewed regarding their teaching activities in IERW classes. From the interview results, a survey was made that asked students which class activities they consider useful. The results show that most students responded positively to the activities that the instructors were using, with a preference of around 70 percent. Notably, pair or group activities were rated as less favorable than other activities, with a score of under 50 percent. Some implications of the findings and suggestions for teaching activities for IERW classes are provided.

This study examined the eating habits and preferences of foods according to the age of children with autism spectrum disorders and identified the nutritional needs of parents to support their healthy eating habits and provide basic data for the development of educational programs. A survey of 100 parents of children with autism spectrum disorders was conducted on their children’s snack intake, food preferences, and parents’ nutrition education needs. As a result, there were four times more boys than girls, and the body mass index differed according to age (p<0.001). Most children ate snacks more than once a day, and parents found that they wanted to develop nutritious snacks that could replace high-protein, low-calorie meals with the minimal use of additives. For the food preference, there was a significant difference in grains and starches, vegetables/seafood and fruits, milk and dairy products (p<0.05), fats and sugars, and Korean fermented pastes (p<0.01) between the two age groups. Regarding whether nutrition education was required, many parents had a high demand for nutrition education (4.24±0.70), and the intention to participate was 3.62±1.09. The most important content to be dealt with in parent education was ‘Inducing a change in bad eating habits and behaviors’, which was the highest (63%), and mostly face-to-face education was preferred. In conclusion, young children require diet education, and older children need to focus on weight control and obesity.

The purpose of this study is to analyze consumer preference for fish farm HACCP certification using conjoint analysis. This study used raw flatfish product to evaluate the fish farm HACCP. In this study, 500 consumers were surveyed using panel survey and stratified sampling. In the recognition analysis, the farm HACCP certification system was found to be highly recognized by consumers. It can be seen that the brand assets accumulated by existing food and agricultural HACCP certification were transfered to the fish farm HACCP and absorbed. Consumers perceived fish farm HACCP certification as similar one with existing food and agricultural HACCP. Conjoint analysis evaluated three levels factors. The attributes and levels evaluated were : price(25,800 won, 28,400 won, 31,000 won), certification(fish farm HACCP, seafood traceability, and non certified), and origin(domestic, JEJU, and WANDO). The important levels were in order of price(40.8%), certification(30.2%) and origin(29.0%). We found that consumers give higher utility to fish farm HACCP certification compared with non certified and seafood traceability certification. Market simulation results showed that the fish farm HACCP product has 12%p higher market share than non certified products. Seafood traceability certification showed 4.6%p higher market share than non certified products.

In this study, 594 questionnaires administered to men and women residing in the capital metropolitan area who work night shifts were analyzed in order to study the effect of health information cognition on healing needs in accordance with the type of food selection criteria of the night worker. The results of confirmatory factor analysis in deriving food selection type identified four categories, a safety seeking type, a food exploratory type, a habitual seeking type, and a rational type, and the cognition types on health information were classified into physical cognition and psychological cognition. The need for healing, which was the investigated factor, was found to have a high correlation between questionnaire items with high reliable consistency. The results of this study were as follows. First, the food selection types of safety seeking type and habitual food seeking type had significant positive effects on the cognitive level of physical health information, and food exploratory type and habitual seeking type had significant positive effects on the cognitive level of psychological health information. In addition, it was shown that food exploratory type and rational type had significant positive effects on healing needs. As a result of this study, it was found that the cognition level of physical and psychological information was different according to food selection type, and the higher the cognitive level, the higher the healing needs. In particular, the result that the level of psychological health information significantly affected healing needs signifies that there is a demand to develop programs and menus that satisfy various needs related to healing and recovery from fatigue. In addition, further interest and study on the health and healing of night workers are required.

The paper presents consumer taste preferences of Indonesian coffee based on consumers’ EEG recording as biological response to elicit preferences towards several coffee products. The study employs applications of neuroscience methods to analyze the physiological choice process. Coffee consumers were asked to evaluate several Indonesian coffee products by using wireless EEG headset with 5 channels to collect EEG signals from participants’ brain areas that can give us a measure to estimate consumers’ preferences. Introduction Coffee is one of the most widely consumed beverages in Indonesia. Earlier, Irfan Anwar, Chairman of the Association of Indonesian Coffee Exporters and Industries (AICE), said domestic coffee consumption in Indonesia grows by an average of 8 percent per year. In 2017 total consumption may reach 350,000 ton. Coffee consumption is estimated to grow in Indonesia in the 2017/2018 season from 3.1 million bags of (60 kilogram) coffee to 3.3 bags of coffee. This growth is attributed to the establishment of new cafes and coffee corners (usually in the business centers and malls in the bigger cities) as well as the increasingly popular "coffee-drinking lifestyle" among the nation's expanding middle class segment. In Indonesia, Coffee ranks third in the table of food and beverage categories in terms of annual turnover and the value of the coffee market is growing rapidly. This results in increased competition on the market, as well as an increasingly extensive product offer. This, in turn, means that the consumer is often spoilt for choice when choosing one product from among many available on the market. The final decision as to the selection is determined by a complex set of factors such as the quality of the product, its brand, convenience and the method of preparation, as well as the price. “We are now drinking more quality coffee and we now have a better understanding of the quality that’s consumed in the developed world,” Irfan (Chairman of the Association of Indonesian Coffee Exporter - AEKI) said. When selecting among the coffee products , consumers are guided by their subjective evaluation, they rely on their own senses, experience, knowledge, trend and similar vague criteria. Therefore, the main objective of the article is an analysis of consumer taste preferences on several indonesian coffee in Indonesia market. Understanding their preferences will make it possible to develop a marketing strategy and product development for coffee industry in Indonesia market. To investigate the consumer’s taste preferences of several indonesian coffee, there is consumer neuroscience the emerging interdisciplinary field in marketing, that combines psychology, neuroscience, and economics to study how the brain is physiologically affected by stimuli (Lee, Broderick, & Chamberlain, 2007). The human brain activity as biological response of consumers will be monitored and provided evidence of how product cues related with sensory inputs (taste) can affect consumer’s attitude and offer the hope of characterizing choice process in coffee consumers (Ohme, Reykowska, Wiener, & Choromanska, 2009). Literature Review The Sense of Taste The beverage companies should create the products that appealing to the sense of taste. These impulses transmitted with sensory nerves to the relevant centers in the brain and interpreted. The taste of sense varies according to cultures, lifestyles, habits etc. (Carter, et al 2013). Human Brain The human brain is the command center for the human nervous system. It receives input from the sensory organs and sends output to the muscles. One way to address whether taste as stimuli can affects consumers’ preferences towards several indonesian coffee based on consumers’ brain response is to record from multiple brain regions simultaneously while subjects perform choice tasks (Lee et al.,2007). In this research we will focus on frontal lobe, temporal lobe, and parietal lobe area that can draw consumer attitude through sensory system process. Electroencephalography EEG is an emerging research tool for evaluating sensory responses to stimuli. It provides important insight into the electrical activity of the brain cortex that reflects true emotions and feelings during coffee product consumption (Knutson et al., 2007). Methodology For coffee taste preference, 30 participants were involved in this study by using non probability judgmental sampling. The participant, are coffee consumers and purchasers of coffee product. They must have normal vision, never had neurological nor psychiatric disturbances and right handed. Sample Preparation And Serving The sample preparation is using the SCAA method. Samples are roasted 24 hours before cupping and allowed to rest for at least 8 hours. The coffee samples are created according to the size of one serving cup and placed on the ziplock plastic packaging immediately so that the aroma does not subside. The sample should remain on the ziplock packaging until the brewing process. The particle grind size should be slightly coarser than normally used for paper filter with ratio of 8.25 grams of coffee per 150 ml of water. Following the rules from SCAA, cupping glasses is tempered glass with size between 207 ml to 266 ml, with a diameter of up to between 76-89 mm. The temperature of the water approximately 93℃ when poured into the ground coffee, water must wet the whole coffee grounds. Wait in about 8-10 minutes until the sample temperature reaches 71℃, then the evaluation should begin. Data Collection To test Neural Response of the participants who were conducting experimental tasks by Emotiv EPOC Neuro Head Set International 10/20 System (Figure 1). EEG was recorded for 3 minutes. Before the testing session, each subject received detailed instructions regarding the experiment. They were instructed to minimize body and brain movement as possible and asked to remain relaxed throughout the experiment. In order to ensure subjects understood the task requirements, pre-experiments were given to practice. During the EEG recording session, the subjects were seated in a comfortable chair in a quiet room. To start the session, using a click for warning signal, and 3 seconds later we used another click as imperative signal to order the experimenter inject the stimulus (Table 1). Everyone will try the coffee by cupping in accordance with the SCAA rules. The subject tastes the stimulus for 3 seconds. Stimulus was manually injected into the subject’s mouth via a hand-held syringe connected to a tube in quantities of 20 ml each time to know until the after taste of coffee. Each stimulus was repeated 3 times with the inter block interval 10-15 minutes. The data then recorded using OpenVIBE 0.13.0 and EPOC Panel Control software and then analyzed using MATLAB R2015a which complemented with EEGLAB. The electrodes were placed on F3 - F4 and P7 - P8 sites. All participants were instructed not to consume any food or beverage other than water min 12 hour before testing to minimize time-of-day effects by reducing pre-experimental activity. Result & Discussion The respondents were consists of 80% males and 20% females, their age were 18-63 years old. Majority of the respondents (85 %) spend between Rp 1.000.000 and Rp 20.000.000 per month, 9% of them spend less than Rp 1.000.000 per month, while the remaining 6% spend more than Rp 20.000.000 per month. Most of respondents were university students (81%) while the rest (19%) were private employee and entrepreneurs. Based on cross tabulations test, we found that age (X2=8.351, p=0.017<0.05) and monthly expense (X2=9.266, p=0.034<0.05) affects the Korean food consumptions, while gender and occupation were not. This results supported Ton Nu et al. (1996) and Saba (2001) findings that was shown food habits and taste preferences are mostly related to age. The primary aim of the current study was to expand the previous research by examining the effect of taste on cognitive performance for investigating taste of several indonesian coffee. We test 10 Indonesian coffee with different origin, roasting level, and post harvest process. Coffee origin: (1) Java Preanger; (2) Aceh Gayo; (3) Toraja Sapan; (4) Bali Kintamani, and (5) Wamena Papua Roasting level: (1) Light; (2) Medium; and (3) Dark Post Harvest Process: (1) Wet Method; (2) Semi Wet Method; (3) Dry / Natural Methods; and (4) Honey Method The results showed some electrophysiological reactions and the most preffered coffee was Bali Kintamani coffee with honey process and dark roasting level (p=0.02; p>0.00) and the least preffered coffee was Toraja Sapan Coffee with washed process and dark roasting level(p=0.00; p>0.00). Different coffee stimulus had shown different interest, relaxation, and stress level. The highest interest level coffee had shown an increase in relaxation level. And it was determined that slowing down on brain waves parallel to that case and participant keeps away the stress. In the other hand, when they drink interested coffee an increasing had been determined on their brain activity and wave changing connected to stress. According to these data, they felt relaxation when thay drink the liked coffee but they felt stress at the opposite. Conclusions The results of this study indicate that different coffee stimulus had shown different interest, relaxation, and stress level. Most of coffee consumer like Bali Kintamani coffee with honey process and dark roasting level. Since this study was a pilot, we would extend such investigation to further more participants having various food preferences.

The study examines physiological and neuronal processes of 26 inexpert wine drinkers in order to understand how consumers judge and choose wines during product experience. We analyzed if an increase in the beta band activity can be related to reward process and individual preference for a wine. We predicted that tasting different wines influence participants' preferences and beta band activity. We also hypothesized that high beta band activity would be related to preferences for a wine. The results confirmed that 1) tasting different wines modulate individual preferences and beta band activity and 2) the higher preferences for a wine corresponded to a stronger decrease in beta band oscillations.

Introduction Can the background colors of products on an online shopping site affect consumers’ haptic perceptions and evaluations? When shopping online, consumers cannot obtain a product’s haptic information by touching it directly and usually rely on visual information such as the product’s image and description. Nevertheless, consumers sometimes use haptic information to judge whether to purchase a product and marketers aim to engage consumers’ haptic preferences. Currently, researchers in the field of sensory-marketing research are interested in the interaction of multiple senses. Although previous research has demonstrated the interaction between visuals and haptic perception (e.g. Xu & Labroo, 2014), there is still considerable opportunity for further research on consumers’ haptic perception of products they cannot touch directly, such as through online shopping. In this study, we focus on how the background colors of product images affect consumer’s haptic perceptions and evaluations of the products. Theoretical Background Krishna & Morrin (2008) indicate that the interaction among plural senses is caused by perceptual transfer. When an individual perceives a sense, it is associated with previous experiences with other senses, which may cause perceptual transfer (Piqueras-Fiszman & Spence, 2015). For instance, Harrar, Piqueras-Fiszman, & Spence (2011) found that the color of the bowl affected consumers’ perceptions of taste when eating popcorn. In this study, when consumers ate popcorn in a red bowl, they associated the color with mature fruit and evaluated the popcorn as sweeter. Consumers who ate popcorn from a blue bowl evaluated the popcorn saltier because they associated the color with the sea. Based on these results, we predict that the background colors of products will affect consumers’ haptic perceptions and product preferences. Babin, Hardesty, & Suter (2013) show that red and orange induce the perception of warmth. Thus, an orange background color causes consumers to perceive products as warmer. Zwebner, Lee, & Goldenberg (2014) demonstrate the influence of physical warmth on consumers’ behavior and they focus on the anthropomorphic characteristics of products. They mention that consumers tend to perceive inanimate products as anthropomorphized so when they percept warmth to products, they feel emotional warmth and it induces their intention to purchase them. From their findings, we predict that the effect of warm background colors is restricted to anthropomorphized products. Additionally, warmth is strongly associated with softness (Tai, Zheng, & Narayanan, 2011). Hence, we also predict that warm background color might affect consumers’ perception of softness of the products. H1: The color orange is perceived as warmer than white (control). H2a:When the background color is orange (vs. white), anthropomorphized products are evaluated with more familiarity. H2b: When the background color is orange (vs. white), anthropomorphized products are evaluated more favorably. H2c: When the background color is orange (vs. white), there is greater intention to purchase anthropomorphized products. H3a:When the background color is orange (vs. white), anthropomorphized products are perceived as warmer. H3b: When the background color is orange (vs. white), anthropomorphized products are perceived as softer. H4: The perception of the warmth of products affects the perception of softness of products. H5: The influence of “H2a” mediates the perception of warmth of products. Methods We conducted two studies to research the hypotheses above. Warm and soft inanimate products are anthropomorphized (Horowits & Bekoff, 2007), and we researched this hypothesis by comparing warm and soft products with cold and hard products in study1. For the purpose of identifying warm and soft products (anthropomorphized products) as well as cold and hard products (non-anthropomorphized products), we conducted a pretest. For the study1 pretest, we chose a teddy bear, futon, and scarf as anthropomorphized products and a garbage can, ice pop, and glass as non-anthropomorphized products. In study2, we used hand watches, which are considered cold and hard. However, a watch indicating 10:10 is recognized as a smiling human (Labroo, Dhar, & Schwarz, 2008). Hence, we compared watches set to 10:10 and 12:00. For study1 and study2, we conduct a 2 (orange vs. white) × 2 (anthropomorphized products vs. non-anthropomorphized products) between-subject test on the participants. Participants answered a questionnaire on a website. They evaluated the color and products on a 7-point Likert scale. For both study1 and study2, we recruited participants via the Internet. They received a point worth 3 JPY (approximately 0.03 USD) for participating in the study. Results Study1 We used a t-test to compare the averages of warmth to the background colors. It showed a significant difference between Group orange and white (t=32.329, df=916.938, p< .001). For H2a to H3b, we conducted the two-way ANOVA of 2 (background color: orange, white)×2(anthropomorphic characteristics of products: anthropomorphized, non-anthropomorphized). The results showed no interactions. Hence, we used t-tests (See Table1). The results supported H2a to H3b. In addition, we conducted a path analysis on the influence of the perception of products’ warmth toward the perception of products’ softness. The influence was significantly positive (β=0.776, p<.001). In comparison, the path from the background colors to the perception of products’ softness was not significant (p= .142). Hence, H4 was supported. Study2 We used a t-test to compare the averages of warmth to the background colors. It showed a significantly positive difference between Groups orange and white (t=22.206, df=323.539, p< .001). Therefore, H1 was supported again. Aside from the above analysis, the results supported H2a to H3b (See Table2). Furthermore, to test H4, we conducted a path analysis on the influence of the perception of products’ warmth towards the perception of products’ softness. Results showed that the influence was significantly different (β=0.823, p<.001). In comparison, the path from the background colors to the perception of products’ softness was not significant (p= .142). Thus, H4 was supported again. Moreover, to test H5, we ran the mediation model by using the PROCESS macro (Model 4, Hayes, 2013). For anthropomorphized products, bootstrapping tests with 2,000 bootstrapped samples revealed that the effect of background colors on familiarity was mediated by the perception of the warmth of the products(a×b=0.09, 95%CI=0.058 to 0.478 excluded 0). The direct effect c’ (0.15) is significant (p= .045), although c (0.06) is not significant (p= .385). On the other hand, for non-anthropomorphized products, the regression analysis revealed that the direct effect c’ (-0.03) is not significant (p=0.711). Hence, H5 was supported. Discussion and Conclusion We demonstrated that warm background colors affect the perception of products’ warmth and softness and increase consumers’ intention to purchase products. We also found that the effect of warm background colors is restricted to anthropomorphized products. This research showed that the effect of warm background colors on the familiarity of anthropomorphized products was mediated by the perception of the products’ warmth. Based on these results, we also demonstrated that the perception of products’ warmth influenced the perception of their softness. Our findings might help to apply Zwebner et al. (2014)’s findings regarding online shopping sites where consumers cannot touch products directly and marketers cannot control consumers’ room temperature.

This study was conducted to investigate changes in organoleptic properties and taste components including free sugar, organic acid and free amino acid with addition of walnut. Changes in total nitrogen were insignificantly different with addition of walnut. Amino type nitrogen content was decreased in proportion to supplemental level of walnut. Content of organic acids, of which three kinds were detected, such as citric acid, malic acid and lactic acid increased more than two times with addition of walnut. Contents of free sugar and amino acid were decreased with addition of walnut. The proportion of essential amino acid was 40.6~41.4 percent. Glutamic acid in total amino acid was increased in proportion with addition of walnut. The highest sensory evaluation score was recorded in soy sauce with addition of 2 percent walnut. Together, it was expected that 2 percent addition of walnut to soy sauce has a positive effect on the taste of soy sauce.

The consumption of high-salt foods is an independent risk factor for increased hypertension. Thus, evaluating the relationship of taste sensitivity and pleasantness of high-salt foods such as Korean jang products, would help contribute to an understanding of salty food eating behaviors of the Korean rural elderly. This study aimed to verify the association between taste sensitivity and salinity of Korean jang products, and the preferences of food groups and nutrient intake in the rural elderly. We studied 269 elderly persons (males 83, females 186) aged above 65 years, residing in the rural area, Sunchang gun Jeonbuk. For each subject, a recognition threshold of 4 basic tastes and pleasant concentrations of NaCl were estimated using the sip- and–spit method. Taste preferences, frequency of intake of food groups, nutrient intakes, and salinity and sweetness of Korean jang products (Doenjang, Ganjang, Gochujang) were assessed. No association was found between salt taste recognition threshold and optimally preferred concentration of salt and salinity of Korean jang products. However, the sweet taste recognition threshold was positively related to the sweetness of Korean jang products. Also, the salinity of Doenjang positively correlated with the frequencies of food groups and nutrient intakes. That is to say that the sweet taste sensitivity was related to the sweetness of Korean jang products, but was not sensitive to the salty taste. The salinity of Doenjang correlated with the consumption of food and nutrient intakes. Taken together, these findings suggest the need for appropriate intervention and education to reduce the salinity of Doenjang, which is an important modifiable factor contributing to reducing sodium intake in the rural elderly.

The purpose of this study was to investigate preferences and satisfaction levels in maternity and nursing brassiere. A questionnaire was conducted on 302 women from their 20s to 40s who had breastfeeding experience. The questionnaire included questions on participant demographics, purchase behavior, and design preference and satisfaction levels. The majority(98.0%) of the participants had had experience using maternity/nursing brassieres. More than 90% of the participants agreed with the need for maternity/nursing brassieres distinct from regular ones. Shopping online was the most common means of purchasing them. The most and second-most owned fastener types were the detachable shoulder belt type and inside-cup type, respectively. The most selected reason for purchasing or wearing a maternity/nursing brassiere was the convenience of donning and doffing the brassiere during breastfeeding. Participants had lower satisfaction levels with how well maternity/nursing brassieres support and center the breasts, and with the variety of designs available on the market. Respondents indicated that fasteners for breastfeeding should be developed to provide comfort and convenience for breastfeeding. Wearing comfort was reported as the most important factor in purchasing selection, both during the pregnancy and breastfeeding periods. No-wire, back closure, full-cup, U-shape wing, and skin color were the most preferred design styles.
