        Brown rice has various health benefits; however, it is more difficult to cook and has a harder texture as compared to milled rice. In this study, the effect of the sous-vide cooking method on starch retrogradation and textural properties of brown rice was investigated by comparative analysis with conventionally cooked brown rice based on moisture content assay, evaluation of the textural property analysis, and differential scanning calorimetry (DSC). The results of the study are as follows: First, the moisture content of sous-vide cooked brown rice was higher than in the conventionally cooked brown rice. Second, the sous-vide cooked brown rice has lower hardness, higher adhesiveness, and lower retrogradation enthalpy during storage than conventionally cooked brown rice. Finally, the retrogradation properties of cooked brown rice during storage were analyzed by DSC. The enthalpy increased more rapidly in the case of conventional cooked brown rice, reaching 1.58 J/g after 3 days of storage. This indicated that sous-vide cooking is effective in preventing retrogradation of rice during storage.

        The purpose of this study was to investigate the changes in the content of functional components and the antioxidant activity of cooked rice and porridge composed of selected grains. The results of the study showed that brown rice and oat contained considerable amounts of γ-oryzanol (78.099~238.566 mg/100 g). However, cooked rice showed a decreased content of the same. The highest content of γ-aminobutyric acid (GABA) was observed in brown rice from Samgwang. The contents of biotin in all samples also decreased in cooked rice compared to raw cereal grains. The highest content of total polyphenols and flavonoids were observed in Heukjinmi rice, and the highest radical scavenging activity was also found in this variety. The cooking process led to a decrease in the content of functional components including γ-oryzanol, GABA, biotin, polyphenols, and flavonoids versus the corresponding raw cereal grains. These results may be useful in the development and application of home meal replacements using cereal grains.

        본 연구에서는 13종의 밥류, 11종의 면류, 그리고 15종 의 소스류에 함유되어 있는 수용성 비타민 B1 (thiamin), B2 (riboflavin), 그리고 B3 (niacin)의 함량을 확인하였다. 실험 결과에 대한 신뢰도를 확인하기 위해 검출한계(LOD) 와 정량한계(LOQ)를 확인하였으며, 표준인증물질(SRM 1849a)을 통한 결과의 정확도를 확인하여 우수한 지표를 나타내었다. Thiamin에서 밥류의 경우 잡채밥이 가장 높은 함유량을 확인하였고, 면류의 경우 막국수, 그리고 소스류의 경우 토마토 스파게티소스가 가장 높은 함유량을 확인하였다. Riboflavin은 밥류의 경우 짜장밥, 면류의 경우 비빔국수, 소스류의 경우 강황카레 약간 매운맛에서 가장 높은 함유량을 확인하였다. Niacin에서는 밥류, 면류, 그리고 소스류에서 각각 치킨볶음밥, 잔치국수, 짜장 소스에서 가장 높은 함유량을 확인하였다. 한국인 성인 남녀의 수용성 비타민 1일 섭취권장량에 대하여 식품에 함유되어 있는 양을 확인한 결과 강황카레 약간 매운맛에서 가장 높은 riboflavin의 함량이 남자의 경우 217.40%, 여자의 경우 271.75%로 가장 높은 함량을 확인하였다. 본 연구를 통해서 밥류, 면류, 그리고 소스류에 함유된 수용성 비타민에 대한 영양성분 데이터베이스를 구축하고, 1일 섭취권장량에 대한 식품에 함유된 수용성 비타민의 함량 확인을 통해 국민 식생활에 필요한 자료를 제공하고자 한다.

        This study was designed as the precedent research to develop improve the HMR type flavored cooked rice, by analyzing the consumer perception and purchase pattern. This will in turn provide base data to that will help in the development of products that meet consumer’s convenience and quality demands. An online survey of 247 people (63.5%) in the age of 20 to 60 was conducted on January 2019. For the primary reason of buying those products, the survey respondents chose a convenience of 71.7%. They are likely to buy 1~2 times a month (40.5%) in hypermarkets (63.6%). The channel choice showed meaningful difference between segments (p<0.01). 89.1% of respondents replied that they are willing to purchase frozen flavored cooked rice in the future. The Key Purchasing factor appeared to be the flavor (5.80), while nutrition (4.89) was chosen as the least important factor. For flavor preference, sea food received the highest score (5.05), while radish kimchi flavor received the lowest (4.02) with a meaningful difference by gender and age (p<0.01). Consumers who sought nutrition, convenience and adventure in HMR products had higher willingness to re-purchase. Developing healthy, flavorful, sensory, and enjoyable HMR products will be critical in the fulfillment of diverse consumer needs.

        Various rheological methods to measure the hardness of instant cooked rice by a texture analyzer were investigated and compared. Specifically, instant white rice samples with a wide range of hardness were subjected to four different rheological tests with disk, cylinder, rod, and cone probe whose results were inter-correlated. All the measurements demonstrated that the hardness of instant rice was reduced with increasing moisture content and showed negatively linear relationships. Out of the four tests applied in this study, the highest coefficient of correlation (R2 = 0.9268) was observed distinctly in the cone probe test, where both compressive and shear forces can be applied to deform individual rice grains. However, the cylinder probe test had the lowest coefficient of correlation (R2 = 0.7247) because it may be ineffective in causing direct deformation of individual rice grains. Furthermore, when the hardness values (N) were converted to stress (Pa), highly linear correlations (R2 ≈ 0.99) were observed between the tests with similar probe geometry and force application.

        재가열에 따른 쌀의 품종별 물리적 특성을 관찰하기 위하여 고품질 밥쌀용으로 개발된 쌀(다보, 대보, 삼광, 수광, 신동진, 진수미, 하이아미)을 취반 후, 24시간 냉장, 냉장 후 재가열에 따른 물리적 특성을 분석하였다. 텐시프레셔를 이용한 품종별 식감특성을 분석한 결과, 경도는 삼광이 가장 낮았으며, 대보, 하이아미가 가장 높았다. 부착성, 탄력성, 찰기는 신동진이 가장 낮았다. 품종에 따라 밥을 취반한 다음 취반 직후, 취반 후 24시간 냉장보관, 냉장보관 후의 색도, 물성, 미세구조를 관찰하였다. 색도 분석결과, 취반 후 냉장 및 재가열에 의해 밥의 명도가 떨어지는 경향을 보였다. 취반한 후의 물성 분석 결과, 하이아미가 다른 품종에 비해 모든 항목에서 가장 높은 값을 보였다. 취반한 후 24시간 냉장 보관하였을 때는 경도, 점착성 및 씹힘성이 증가하였으며, 재가열에 의해 그 값은 다시 감소하였다. 주사전자현미경을 이용하여 밥의 미세구조를 관찰한 결과, 하이아미의 경우 취반 직후에 중앙부분의 입자가 치밀하게 뭉쳐 있음을 확인할 수 있었다. 냉장 저장 및 냉장 후 재가열에 의해 모든 품종에서 기공이 조금 더 명확하게 형성된 것을 확인하였다. 본 연구결과를 종합하여 볼 때, 벼 품종 특성에 따라 취반 후 재가열 및 보관에 따라 물리적 품질 특성이 달라지는 것으로 확인되었다. 추후 본 연구결과를 기초로 하여 취반 후 재가열 및 보관에 따른 이화학적 및 관능적 품질 분석 등과 같은 후속 연구를 통해 고품질 밥쌀용으로 개발된 쌀이 산업적 이용을 위한 응용연구가 지속적으로 수행되어야 한다고 판단된다.

        Palatability and texture analysis of nine Korean rice cultivars were investigated to select the most appropriate rice variety for the cooked-rice processing. The rice cultivars studied consisted of Samkwang, Seonpum, Wolbaek, Andabyeo, Dasan-1, Ilpum, Haiami, Jungsanggold and Chindle. They revealed the moisture, protein, amylose and starch contents of 10~12, 5~6, 12~19, and approximately 90%, respectively. Among the evaluated rice varieties, WB exhibited the lowest amylose content (12.7%) and Jungsanggold the next (17.2%). In the rapid-visco analyzer test, Jungsanggold, Chindle, Wolbaek and Seonpum revealed a low value of final and setback viscosities than other varieties. Using a toyo meter analyzer, Chindle, Haiami, Samkwang were selected as having high toyo palatability values, while Dasan-1, Wolbaek and Andabyeo revealed low values. Toughness and adhesiveness of all nine cooked rice varieties were highest in Jungsanggold, Chindle and Ilpum. Also, palatability of cooked rice was highest in the following order: Chindle (80.03) > Samkwang (76.21) > Jungsanggold (74.08). The results of this study suggest that Chindle may be effectively used to produce processed cooked rice.

        This study was carried out to analyze the pasting and antioxidant characteristics of cooked mixed grains consisting of germinated millet and rice with varying addition rates and cooking methods. In this study, we chose two foxtail millets: glutinous (‘Samdachal’) and non-glutinous (‘Samdame’), along with a glutinous proso millet (‘Ibaekchal’). Cooked mixed grain rice-added germinated millet was cooked by general and high pressure cooking methods, with and without fermented alcohol. The peak and trough viscosity of germinated millet were decreased significantly with increasing amounts of germinated millet. The phenolic compounds and radical scavenging activity of cooked rice-added germinated millet increased significantly with the addition of germinated millet (p<0.05). The total polyphenol contents of cooked rice-added germinated Samdachal, Samdame, and Ibaekchal were 127.74~194.11, 128.20~192.56, and 128.88~171.28 μg GAE/g, respectively. The total flavonoid contents were 13.79~30.23, 14.77~25.99, and 15.28~29.56 μg CE/g, respectively. DPPH and ABTS radical scavenging activities were 3.31~5.73 and 6.31~9.69 mg TE/100 g for cooked rice-added germinated Samdachal; 3.14~8.58 and 6.05~10.19 mg TE/100 g for Samdame; and 3.37~7.45 and 6.27~9.27 mg TE/100 g for Ibaekchal, respectively. In this study, phenolic compounds and radical scavenging activity of cooked mixed grain rice-added germinated millet with different addition rates and cooking methods can be used as basic data for manufacturing processed products.

        본 연구는 이미 진정효과가 뛰어나다고 알려져 있는 클래식과 함께 진정효과가 있다고 밝혀진 레게의 효과를 비교하고자 진행되었다. 연구에 사용된 실험견들은 실험을 잘 이해하고 있는 연구원들이 현재 키우는 반려견 4마리를 섭외하여 진행되었다. 섭외 된 반려견은 말티즈 2마리, 요크셔테리어 2마리이다. 진정효과를 알 수 있는 지표로는 Lori R. Kogan외의 ‘Behavioral effects of auditory stimulation on kenneled dogs’ 논문에서 사용한 지표를 일상에서도 확인하기 쉽도록 간소화하여 짖은 횟수, 서있는 시간, 서있지 않은 시간, 수면시간의 평균을 냈다. 그 결과 짖는 횟수 외의 큰 차이는 보이지 않았고, 진정효과만은 확실한 것을 확인하였다. 다만 일상생활에서 실행하는 것과 실험견의 일정한 결과를 위해 각 가정에서 실행하여 정확도는 떨어질 수 있다. 주변 소음 등이 적은 가정에서 실행한다면 조금 더 정확한 결과를 얻을 수 있을 것이다.

        This study was carried out to compare the cooked and antioxidant characteristics with of cooked mixed grain rice with an addition rate (0, 5, 10, 15 and 20%) of proso millet and various cooking methods. Mixed grain rice with added proso millet was cooked by general and high pressure cooking methods with and without fermented alcohol. All pasting characteristics, except for breakdown viscosity, decreased with increasing the amounts of proso millet. Water binding capacity and swelling power significantly decreased when increasing the amounts of proso millet, however the water solubility index significantly increased. The palatability characteristics of rice with added proso millet showed similar results to rice without proso millet. Total polyphenol contents of rice with 20% proso millet and fermented alcohol added, cooked by general and high pressure cooking methods, were 184.33±2.69 and 179.80±5.22 μg GAE/g, respectively. Total flavonoid contents increased as amounts of proso millet increased. DPPH radical scavenging activities with and without proso millet added were 4.20~7.50 and 2.97~5.19 mg TE/100 g, respectively. ABTS radical scavenging activities with and without proso millet added were 14.36~27.92 and 14.07~15.83 mg TE/100 g, respectively. In this study, cooked and antioxidant characteristics of cooked mixed grain rice with added proso millet were expected to be used as basic data for manufactured processed products.

        The purpose of this study was to investigate the appropriate amount of oats to add to rice and the merits of oat meal. We analyzed the physicochemical characteristics, cooking properties, functional components, and sensory evaluation according to the amount of oats added in the cooked rice. Compared with rice, the oat showed higher level in protein, fat, total β-glucan and total polyphenol, but not for starch. Therefore, the amount of chemical and functional components was increased significantly with the increase in the amount of oats added. Water absorption and expansion were decreased with the increase in the amount of oat added. Oleic acid content was increased and linoleic acid content was decreased slightly. Unsaturated fatty acid content was greatly increased. The DPPH and ABTS radical scavenging activity were increased significantly according to the amount of oats added. As a result of sensory evaluation, the most appropriate amount of oat added was 20% and 30%. By the addition of oat, the β- glucan content of the cooked rice and the antioxidant activity could increase.

        The purpose of this research was to investigate the relationship between white rice consumption and dietary intake, the risk of metabolic syndrome in Korean based on 1st (1998), 4th (2007~2009), 6th (2013) KNHANES. This study included 25,799 subjects who were age 10 or over. Three groups(low, medium, high) were divided according to white rice consumption (per day). In the low group, the meat and oil intake were significantly higher than the high group. In the 1st survey year, the BMI, waist circumstances, hypertriglyceridemia and fasting blood glucose in the high group were higher than other groups, however the 4th and 6th survey year showed no significant results. In the 1st survey year the risk of waist circumstances was higher in the high white rice consumption group and also had high risk with hypertriglyceridemia. Since the lower white rice consumption in 4th than 1st survey year we found no significant results. But in the 6th survey year with the lowest white rice consumption the risk of high diastolic pressure was reduced in high group. Because continuously reduced white rice consumption meantime showed more intake of meat and oil, it can be concluded that defensive effects with the Korean health.

        본 연구는 냉동식품 형태의 별미밥 HMR 개발을 위한기초 데이터를 확립하고자 냉동 및 해동 조건에 따른 취반미의 물리화학적 특성의 변화를 비교하였다. 본 실험에서는 냉동방법으로 강제송풍방식과 저온에서 자연적으로 냉동하는 방식을 사용하였으며, 냉동 취반미는 전자레인지의출력세기를 200, 600 및 1000W로 조절하여 시료의 중심부 온도가 100oC에 도달할 때까지 해동하였다. 분석결과 냉동속도는 일반냉동을 하는 것보다 강제송풍식 냉동을 하는 것이 약 300배 이상 빨랐으며, 해동은 동결 속도가 빠르고 전자레인지 출력이 셀수록 시간이 단축되었다. 냉해동한 취반미의 수분함량 변화는 모든 조건에서 대조구보다낮은 함량을 나타내었으며, 특히 600W에서 해동할 경우수분의 손실이 많은 것으로 나타났다. 취반미를 냉해동 한후 색도의 변화에 있어서는 대조구보다 백색도와 적색도는감소, 황색도는 증가하는 경향을 보였으며 강제송풍식 냉동을 한 취반미가 전체적인 색 변화가 적게 나타났다. 물성의 변화는 일반냉동을 한 취반미의 경도가 높게 나타났으며, 특히 600W에서 해동한 처리구가 높게 나타났다. 점착성의 경우에는 대조구보다 모든 처리구에서 감소하는 경향을 보였으나 조건에 따른 유의적 차이는 나타나지 않았다. 강제송풍식 냉동을 한 취반미의 미세구조는 냉해동 과정에서 밥알의 중심부에 균열이 발생하였고, 1,000W에서해동한 처리구에서 중심부에 비교적 큰 기공이 형성되었으며 600W에서 해동한 처리구의 경우에는 표면의 두께가가장 두껍게 나타났다. 냉해동한 취반미의 물리화학적 변화를 전반적으로 보았을 때 냉동 속도가 빠르고 해동시 전자레인지의 출력이 1,000W일 때 대조구와 비교하여 가장변화가 적은 것으로 나타났다.

        The objective of this study was to investigate the total sugar content of cooked rice (e.g. Bokkeumbap, Deopbap,Bibimbap, Gimbap, Chobap) and side dishes (Jjigae, Kimchi, Jangajji) by using HPLC analysis. Samples were col-lected from six regions in Korea (Seoul, Gyeonggi-do, Chungcheong-do, Gangwon-do, Jeonla-do, Gyeongsangdo).In cooked rice, the total sugar content in Bibimbap (8.537g/100g), Jangeo-deopbap (3.207g/100g), and Saladgim-bap (2.394g/100g) was higher than that of other cooked rice. Also the analysis results showed that the total sugarcontent of cooked rice with spice and sauce added was a little higher than that of other kinds of cooked rice. Fromthe analysis of Jjigae, it was shown that Doenjang-jjigae (1.805g/100g) from the Jeonla-do region had the highesttotal sugar content while there was no difference in total sugar content from the other regions. In case of Kimchi,that from Jeonla-do and Gyeongsang-do was very sweet, salty, and spicy, and the total sugar content was higherthan that from the other regions. The highest total sugar content among the analyzed Kimchi was in Godeulppaegi-kimchi with a value of 8.188g/100g. In addition, the total sugar content in Jangajjie, as a pickle among side dishes,was shown to be higher than that of the other side dishes with the highest range among Jangajjie of 32.865g/100gto 41.846g/100g being found in Maesil-jangajji.

        Rice (Oryza sativa L.) is one of the most important staple foods in Korea and the consumption of brown rice is increasing annually. The objective of this study is to investigate the physicochemical, hydration and textural properties related to eating quality of cooked brown rice by using glutinous, semi-glutinous, four non-glutinous and four colored varieties. The moisture, protein and total dietary fiber contents of brown rice are shown in the range of 11.1~12.6%, 6.6~8.7% and 6.28~12.40%, respectively. The amount of water uptakes for brown rice during the hydration has shown significant differences. The glutinous variety of Boseogchal indicate the highest water absorption levels by reaching 0.38 gH2O/g. The hardness of hydration for Seolgaeng is distinctively lower than those of the other brown rice varieties. According to the textural characteristics of cooked brown rice when using the Tensipresser, the hardness of Boseogchal, Baegjinju and Seolgaeng all exhibit the lowest values out of ten varieties and the highest levels of adhesiveness.

        본 연구는 2010 국민건강영양조사 원시자료에서 식품섭취 조사를 실시한 대상자 8,019명 중 19~64세 연령의 성인 대상 자 4,556명(56.8%)의 원자료를 이용하여 19~64세 성인의 상 용음식(밥류, 면․만두류, 국․탕류, 찌개류) 1인 1회 섭취분 량에 대한 정보를 제공하고, 2005년 국민건강영양조사자료 를 이용하여 설정된 기존자료와의 비교를 통하여 한국 성인 의 주요 상용음식의 1인 1회 섭취분량의 변화 패턴을 알아보 고자 하였다. 밥류 중 가장 높은 섭취빈도를 보인 것은 쌀밥 이었고, 1인 1회 섭취분량은 265 ㎖로 2005년 자료로부터 설 정된 250 ㎖와 유사하였다. 두 번째로 높은 섭취 빈도를 보인 것은 잡곡밥으로 3,472의 빈도로 거의 흰쌀밥에 가까운 섭취 빈도였고, 1회 1회 섭취분량은 250 ㎖였다. 면․만두류 중 가 장 섭취빈도가 높은 음식은 라면이었고, 1인 1회 섭취분량은 500 ㎖로 기존에 설정된 400 ㎖에 비하여 25.0%의 증가를 보 였다. 칼국수와 짬뽕은 2005년 설정량에 비하여 40% 이상의 감소를 보였다. 국․탕류에서는 콩나물국의 섭취빈도가 가장 높았고, 가장 높은 섭취빈도를 보인 국은 콩나물국의 1인 1회 섭취분량은 250 ㎖로 기존 설정량과 동일하였다. 상용 음식 으로 설정된 39종의 국 종류에서 기존 설정량과 항목이 일치 하는 28종 중 11종이 1인 1회 섭취분량의 감소가 보였다. 섭 취 빈도가 가장 높은 찌개류는 된장찌개였고, 1인 1회 섭취분 량은 125 ㎖로 기존 설정량(175 ㎖)에 비하여 28.6%의 감소를 보였다. 다음으로 섭취빈도가 높은 찌개류인 김치찌개의 1인 1회 섭취분량은 200 ㎖로 기존의 섭취분량(250 ㎖)에 비하여 20.0%의 감소를 보였다. 이상의 결과에서 2010년 국민건강영 양조사 자료로부터 설정된 1인 1회 섭취분량은 밥류의 경우 큰 변화가 없었으며, 섭취빈도가 높은 주요 국과 찌개의 경우 는 감소, 면류의 경우 라면은 증가, 칼국수와 짬뽕의 경우는 감소를 나타내었다. 이러한 변화는 한국 성인 상용식품의 1 인 1회 섭취분량이 조금씩 변화되고 있음을 보여주고, 국과 찌개류 섭취량의 감소 추세는 나트륨의 저감화 정책 차원에 서 바람직한 변화로 사료된다.
