        Sustainable and healthy diet is a challenge in recent world. Despite the global depletion of water resources, Korea has no system for controlling its water footprint. This study established the water footprint tables of Korean food using the Water Footprint Network databases, and applied them into two meal plans for 19~64 year-old adults recommended in the Dietary Reference Intakes for Koreans 2020. Nut, oil, and meat’s water footprints were higher and those of fruit and vegetable were lower. Sesame oil had the highest water footprint of 21,793 L/kg and pineapple had the lowest domestic water footprint of 102 L/kg. Water footprint of one serving size of beef was 925 L, that of chicken was 260 L, and those of soybean were 43 L in global and 81 L in domestic. The water footprint of the recommended 2,400 kcal meal plan was 2,882 L, and that of 1,900 kcal meal plan was 1,915 L. The water resources can be saved by choosing food with lower water footprint. The results of this study can be used in the further researches for more sustainable and healthier Korean diet.

        Unhealthy dietary behavior such as insufficient calcium intake can be one of risk factors of osteoporosis and chronic diseases in older people. This study evaluated the recent trends in dietary calcium intake and the food source in Korean adults aged 50 years or older using the Korea National Health and Nutrition Examination Survey (KNHANES, 2015-2019) data. This study used 24-hour recall survey data to investigate the calcium intake, the major food groups and main dishes contributing to the calcium intake. The mean calcium intake was 479.55-506.81 mg/day. The major food groups that contribute to calcium intake were vegetables, milks and fishes. Dairy and frozen desserts and kimchi were the major dish groups that contributed to the calcium intake. Calcium intake from milk in dairy and frozen dessert group has been high in last 5 years (50-64 years old: 34.71-47.68 mg, 65-74 years old: 29.72-43.65 mg, over 75 years old: 22.91-42.93 mg). In addition, baechu-kimchi is the most contributed to the calcium intake in kimchi group (50-64 years old: 35.10-41.47 mg, 65-74 years old: 29.62-34.96 mg, over 75 years old: 23.79-29.13 mg). In conclusion, various source of calcium needs to be recommended to increase intake calcium in over 50 years, which may reduce chronic diseases and improve quality of life.

        The intake of processed foods containing high levels of sugar increases the incidence of chronic diseases, including obesity, diabetes, and metabolic syndrome. Limiting sugar intake is important for a healthy life at all ages. Therefore, this study analyzed food sources and sugar intake by the different age groups based on the 7th Korea National Health and Nutrition Examination Survey (KNHANES). We used 24-hour recall survey data to investigate the daily sugar intake and the major food groups and main dishes contributing to sugar intake. The mean sugar intake was 58.9-66.8 g/day. The three major food groups contributing to sugar intake were fruits (15.2-19.9 g/day), beverages (10.7-12.4 g/day), and milk and milk products (7.6-7.8 g/day). Teas and other non-alcoholic beverages (14.7-17.3 g/day), fruits (12.5-16.2 g/day), and dairy products (7.0-7.6 g/day) were the major food groups that contributed to the sugar intake. Carbonated drinks, apples, and milk were the top sources of sugar intake in each group. In conclusion, the sugar intake of Koreans is mainly from carbonated drinks, fruits, and milk. These results provided the basic data for nutrition education and nutrition program development according to the different age groups of the Korean population.

        지난 수세기 동안 진행된 인구증가 비율을 넘어서는 금세기 인구 증가 비율은 2050년 100억을 넘는 기록적 통계치를 보이고 있으며 이에 따른 식량문제, 수자원 부족, 환경오염 문제를 야기하고 있다. 증가하는 인구와 서구화에 따른 현대인의 육류소비 증가 요구에 맞춰 날로 거대화 되어 가는 축산물의 대량 밀집사육은 토지와 수자원의 오염, 황폐화를 가속화 시키고 있으며 자본주의 시장경제로 인해 식품의 빈익빈 부익부 현상이 심화되면서 식량안보 라는 새로운 국가 간 문제로 비화되고 있다. 량사육에 따른 생태계 파괴는 야생동물과 인간이 가진 최소한의 접점지역 조차 무너트리며 바이러스에 따른 전염병을 발생시키기 이르렀으며 이는 먹이 피라미드의 최상위 포식자인 인류에서 기아, 질병, 나아가 종의 존망 자체에 대한 위험성으로 고스란히 돌아오고 있다. 이러한 식량부족 현상, 특히 대체단백질원의 시급함은 2009년 UN 총회에서 알려지게 되며 2012년 FAO 총회에서 미래 대체 식량 이라는 주제로 세계의 주목을 받게된다. 10여년 간의 리써치 끝에 좁혀진 미래 단백질원으로 “식용곤충(Edible Insect)”이 발표되면서 전세계 식량연구자들 및 관련 업계 연구자들의 주목을 받기 시작한 식용곤충식 연구는 네덜란드, 미국, 영국, 프랑스, 노르웨이 등 선진국을 중심으로 확산되기 시작하였으며 대한민국 역시 농림축산식품부를 중심으로 연구 및 상업화에 박차를 가하는 추세이다. 본 발표자는 국내 식용곤충을 활용한 식품산업의 현 주소와 발전상황 그리고 앞으로의 식용곤충 산업의 전망을 현재 국내 유일하게 운영 중인 식용곤충 전문 레스토랑&디저트 카페 “빠삐용의 키친”을 Case 로 설명하고자 하였다.

        This study was conducted to develop a Han-sik database as well as to assess the effects of Han-sik on dietary quality among Koreans. The Han-sik database was developed by a focus group composed of food and nutrition specialists considering the results of Han-sik perception surveys conducted in previous studies for frequently consumed dishes. Among the 1,322 dish items identified in the 4th (2007-2009) Korea National Health and Nutrition Examination Survey (KNHANES), 973 items (73.6%) were classified as Han-sik. Han-sik usage was defined as the percentage of Han-sik items of all individually consumed dish items in the dietary data of 22,113 subjects who participated in a 24-hour diet recall in the 4th (2007-2009) KNHANES. Dietary quality was evaluated based on adherence to the Korean Food Guidance System (KFGS), which was calculated as the percentage of the number of servings consumed in each food group out of recommended servings according to age and sex. Mean usage of Han-sik was 80.1% and was higher in older age groups, rural areas, as well as in households at the lowest income level. Han-sik usage was also higher on weekdays as well as for breakfast. Adherence to the KFGS was significantly higher for grains, meat · fish · egg · beans, vegetables, and fruits (p<0.001) but lower for milk · dairy products and oils · fats · sugars (p<0.001) across the quartiles of Han-sik usage. The results of this study indicate that Han-sik usage is high among Koreans. Further studies are needed to update the Han-sik database as well as investigate the association between health-related factors and Han-sik use.

        The purpose of this study was to investigate the effects of eating habits and food preferences on the adoptive behavior of children with intellectual disabilities. Survey questionnaires were distributed to six special education schools located in the Daegu-Kyungbuk area, and data were collected from 552 families and teachers with intellectually disabled students. Identification of eating habits began with a factor analysis, and the results were a five-factor solution. Among the five patterns, factors 1 and 2 were significantly related with behavior problems of intellectually disabled children. Further, food preferences of the children were significantly related with adoptive behavior problems. The findings of this study clearly indicate that eating habits as well as food preferences are important factors in identifying adoptive behavior problems in intellectually disabled children. Based on the findings of this study, similarities and differences in eating habits are discussed, and implications for children are provided.

        The consumption of a wide variety of food groups is considered one of the key components of nutritional adequacy. The 2005 Dietary Guidelines for Koreans includes the consumption of a variety of foods from diverse food groups as a component of a normal diet. A survey was conducted to evaluate the relationship between the dietary diversity of food groups and nutrient intake in elderly patients (age 65 and above) at a rural area in Korea (Inje). 296 subjects (111 male and 185 female) were probed in a 3 day 24-recall dietary survey. Subjects were grouped according to food group intake frequency, based on six food groups (grain, meat/fish/legume/egg, vegetable, fat/oil, dairy, fruit). Nutritional quality was evaluated according to the numbers of nutrients under EAR (Estimated Average Requirements), and MAR (mean adequacy ratios). The frequency of elderly subjects consuming a meat/fish/legumes/egg food group less than once per day was 29.4%. The frequency of elderly subjects consuming fat/oil food group less than once per day was 65.8%. The percentage of subjects who did not eat dairy food was 88.8%, and that of subjects who did not eat fruit was 57.5%. A stepwise multiple regression analysis was used to develop models relating nutritional quality to possible food group intake frequency factors. Using the number of nutrients under EAR as a dependent variable, the meat/fish/legume/egg food group intake frequency explained 9.9% of variance, followed by the grain group, fat/oil group, dairy group, and vegetable and fruit group (Model R2=0.260). For mean nutrient adequacy ratio as a dependent variable, the model R2 was 0.326. The results of this study suggest that a highly varied diet in elderly might be associated with better nutritional quality, as assessed by nutrient intake. Accordingly, dietary guidelines should take into consideration nutritional characteristics in order to improve intake from all major food groups and to provide a variety of foods in the diet.

        Due to the continuous change of socio-economic circumstances and dietary pattern, the need to change recommended dietary allowances and the basic food groups has been required. Consequently, there have been six revisions of the Korea RDAs, the national recommanded dietary allowances. I reviewed the six sequences of revisions concerning the basic food groups. Up to the fifth revision, the ranks of the basic food groups were based upon the dietary needs of the people of the perspective era. However, in the sixth revision, there was no rank associated with the food groups, but the food groups were portrayed in a food composition tower that explained their importance and their necessary consumption amounts. I could indirectly observe the dietary pattern of each era by analyzing the basic food groups and the representative foods of each food group. I also studied information of pictorial representations of the basic food groups and compared the items of the representative foods with nutrient analysis table. By observing nutrient analysis table, I analyzed whether the clarified representative foods of the basic food groups are indeed foods that were eaten frequently by people daily.

        본 연구는 한국과 일본에서 매년 실시하고 있는 국민영양조사 결과를(일본은 1950년-1988년, 한국은 1969-1988년) 바탕으로 양국의 식생활 변화 양상을 비교하여 미래의 한국 식생활의 지침이 되고자 하였으며 그 결과는 다음과 같다. 식품군별 섭취량에서 섭취총량은 일본은 1973년을 기점으로 감소하였으며 한국은 증가와 감소를 되풀이하며 전반적으로 증가 경향을 나타내었다. 한·일 모두 식물성 식품의 섭취는 감소하고 있고 동물성 식품의 섭취는 증가하고 있는데 1988년에는 동물성 식품 섭취 비율이 5% 정도 일본이 한국에 비해 많았다. 식물성 식품은 곡류의 경우 양국 모두 감소 경향을 보였고 1988년의 경우 한국이 일본에 비해 70g 정도 많이 섭취하였다. 한국은 감자류, 두류, 과실류는 1980년 이후 증가 경향이나 군별 섭취총량은 일본에 비해 낮은 수준이었다. 일본은 과일, 야채류의 섭취가 감소 경향이고 두류, 감자류는 변화가 거의 없으며 안정된 추세를 보였다. 동물성식품의 경우 일본은 우유 및 유제품, 육류는 증가 경향을 나타내었고 어패류, 난류는 1975년 이후 거의 평형 상태를 유지하였으며 한국은 육류, 어패류의 섭취 증가가 뚜렷하였다. 1970년 이후 양국의 신장, 체중의 연차추이를 보면, 1970년에서 1980년까지 한국인의 신장 증가가 현저하였으며(1970년 ; 150.3cm, 1980년 ; 160.2cm), 체중도 이와 유사한 경향을 나타냈다.
