The purpose of this study is to reexamine the effects of natural materials on the stability of emulsion formulations and their destabilization mechanisms, and to present scientific and predictable natural cosmetic formulation design guidelines. Consequently, natural components are easily oxidized when exposed to oxygen, light or heat, which inhibits the stability of the formulation and produces free radicals. This phenomenon weakens the interfacial film as well as discoloration and deodorization of the formulation. From the DLVO theory point of view, natural organic acids and salts increase the ionic strength of the solution, compressing the electric double layer and weakening the electrostatic repulsion between particles. In addition, when an amphiphilic substance such as a protein reaches the isoelectric point (IEP) due to a change in pH, the absolute value of the zeta potential decreases, which promotes aggregation between particles, which can hinder the stability of the emulsion. Natural polymers, such as polysaccharides, provide stability by increasing the viscosity of the continuous phase at an appropriate concentration, but when the concentration exceeds this range, it causes depletion flocculation or bridging flocculation. This phenomenon can quickly collapse an emulsion. These interactions went through stages such as floculation, coalescence, and Ostwald ripening, and finally, a typical decay stage was confirmed in which the emulsion formulation proceeded to complete phase separation. The destabilization mechanisms presented in this study are expected to reduce empirical trial and error, promote the development of sustainable high value-added natural cosmetic formulations, and contribute to strengthening industrial competitiveness.
