대두 저장 단백질의 glycinin(11S globulin)과 β-conglycinin(7S globulin)은 대두 가공식품의 품질을 결정짓는 핵심 인자이다.
Glycinin (11S globulin) and β-conglycinin (7S globulin), the major storage proteins in soybeans, are key determinants of the quality of processed soy food products. This review examines the analytical evolution from conventional methods—such as analytical ultracentrifugation (AUC), SDS-PAGE, densitometry, perfusion reversed-phase high-performance liquid chromatography (perfusion RP-HPLC), enzyme-linked immunosorbent assay (ELISA), and the Dumas method to recent reversed-phase ultra-performance liquid chromatography (RP-UPLC) using a peptide-dedicated column, which achieves complete separation and quantification of the ten major subunits (11S: G1, G2, G3, G4, and G5; 7S: α’, α, and β) within 18 minutes. Furthermore, by elucidating the relationships between the 11S/7S fractionation ratio, individual subunit compositions, and the processing suitability of tofu, soymilk, and plant-based meats (PBMs), this review suggests that precise subunit profiling serves as a valuable tool for raw material selection and tailored molecular breeding to enhance the quality uniformity and development of processed soy foods.
