An agricultural waste, pomegranate (Punica granatum L.) peel is known to be rich in total phenolics, which are flavonoids having strong antioxidant effects. In this study, pomegranate peel sponge cakes were prepared with varying ratios of freeze dried pomegranate peel powder (0, 1, 3, 5, 7% (w/w)) to examine their effect on quality characteristics, retrogradation and antioxidant activities. The specific gravity and moisture contents of 3, 5, and 7% pomegranate peel powder showed higher values than the control and 1% group. Addition of pomegranate peel powder increased the batter yield, while there was a significant decrease in baking loss. Increasing pomegranate peel powder content significantly decreased the lightness (L) (from 75.03 to 57.04) and pH values, whereas redness (a), yellowness (b) and ΔE were increased. Increasing concentration of the peel powder also increased the hardness and chewiness, while the springiness and cohesiveness decreased. Considering the Avrami equation, Avrami exponene (n) decreased from 1.8055 (control) to 0.9199 (7% pomegranate peel powder). Time constant (1/k) was lowest in control (at 17.64) and highest in the 7% group (39.84). Total polyphenol, flavonoid content, DPPH and ABTS radical scavenging activities significantly increased with increments in the content of pomegranate peel powder. A sensory evaluation by the 7-point scaling method showed that the sponge cake containing 7% pomegranate peel powder had the highest scores in color, flavor, sweetness, chewiness and overall acceptability. Hence, it is considered that sponge cake supplemented with 7% pomegranate peel powder is the most appropriate for quality characteristics, retrogradation and antioxidant activities.

To prolong the shelf-life of strawberry, samples were treated with gel packs containing slow-released chlorine dioxide(ClO2) gas at 3~7 ppm for 6 days at room temperature. The weight loss and decay ratio as well as changes in pH, color and texture properties of the treated samples were investigated. The weight of the control and ClO2 gas treated samples decreased slightly, but the weight of the control changed faster than those of the ClO2 gas treated samples during the storage period. The decay ratio of control was higher than those of the ClO2 gas treatments since 4 days of storage. The pH and acidity in the control and in the ClO2 gas treated samples were no differences during storage period. The lightness of strawberry decreased during storage, but there was no difference in lightness among the treatments even when storage time was extended. The redness and yellowness of the control showed higher change than those of the ClO2 gas treatments during 6 days. The firmness of the control changed more rapidly than those of the ClO2 gas treatments during 6 days. Especially, the samples treated 3 and 5 ppm ClO2 gas were the least changed. And the scores for appearance, firmness and overall acceptance control and 7 ppm ClO2 gas treatment decreased more rapidly than those of 3 and 5 ppm treatment.

This study investigated the quality characteristics and volatile flavor components of aronia wine (Aronia melanocarpa (0~100%)). After 12 days of fermentation, the alcohol contents of aronia wines ranged between 9.0~12.0%. The pH level and total acidity of aronia wines were 3.20~3.68 and 0.57~0.76 g/100 mL, respectively. The organic acid analysis of wine containing 100% aronia, revealed malic acid content at 3.70 mg/mL, followed by tartaric acid, lactic acid, and citric acid. As the aronia content increased, both the total polyphenol content and the antioxidant activity (the DPPH radical scavenging activity) also significantly increased. The total polyphenol content was the highest in the wine with 100% aronia (461.33 mg%), and the antioxidant activity showed the highest values in the wine with 100% aronia (91.91%). Volatile flavor component analysis of aronia wines identified 8 alcohols, 12 esters, 4 ketones, and 7 other compounds. In the sensory evaluation, the color, flavor, and taste of wine with 20% aronia showed higher values than other aronia wines. Based on the results of the present study, we suggest that 20% aronia is most beneficial in improving the quality as well as sensory characteristics of the wine.

This experiment was carried out to enhance the availability of blackberry. Since it is difficult to use blackberry as a fresh fruit, we investigated the quality characteristics of blackberry powder obtained by various drying methods (freeze drying and hot-air drying at 40~80℃). The L- and b-values of freeze-dried powder was higher than hot-air dried powder. The pH (3.2) was lowest and the acidity (14.4%) was highest in freeze-dried powder. In freeze drying, the brix degree was 65.7 °Bx, but it increased from 54.7 °Bx to 68.5 °Bx with increasing temperature during hot air drying. The total polyphenol and flavonoids contents were the highest in freeze-dried powder, at 9.3 and 6.2 mg/g, respectively. The levels increased as temperature increased in hot air drying. Anthocyanin content in freeze-dried powder was 8.51 mg/g, while it sharply decreased to 1.17~2.45 mg/g in hot-air drying. Vitamin C content in freeze drying (979.4 μg/g) was higher than that in hot-air drying (48.3~303.2 μg/g). The sample concentration required for 50% reduction of DPPH free radical scavenging (RC50) was 79.7 μg/mL in freeze drying, and showed high antioxidant activity. Also it decreased from 122.4 μg/mL to 87.7 μg/mL with temperature increase during hot air drying. We therefore conclude from the above results that freeze drying is more suitable for the production of blackberry powder, because this method showed high value of chromaticity, total polyphenol, flavonoid, anthocyanin content, vitamin C and antioxidant activity.

The purpose of this study was to investigate the intake of energy drinks and awareness of caffeine among middle school students. The subject was 313 middle school in Incheon area. The questionnaire respondents are consisted of 133 male students and 180 female students. The recognition result that allowed multiple responses to energy drink types was recognized by hot six at 28.9%, followed by red bull 24.3%, monster energy 13.8%, wolf energy 8.0% and taurine soda 6.9%, respectively. There was a significant difference in the experience of energy drink intake, intake reason, intake time and place (p<0.05), but there was no significant difference in intake frequency and place (p>0.05). There were significant differences in experience and frequency of energy drink intake (p<0.05), but there was no significant difference in intake reason, choice criteria, intake time and place (p>0.05). The result of the perception of energy drinks according to gender was 2.25 points for male students and 2.61 points for female students in the question 'caffeine is also present in tea, green tea, cola and chocolate'. There was a significant difference between male and female students (p<0.05). As a result of the recogniton of energy drinks, "the appropriate amount of caffeine is cleared and the concentration improves." When asked, "low body weight is 2.24 points, normal 2.27 points, overweight 1.89 points, obesity 2.46 points (p<0.05). There was a statistically significant difference in body mass index (BMI) between the two groups (1.95 for low body weight, 2.10 for normal body weight, 1.62 for overweight and 2.43 for obesity). Regression analysis showed that R2=0.007 and F=2.798, respectively. Significant differences were found at the significance level of p<0.05. Energy drink consumption expenditure(β= 0.121, p<0.05), sleep time(β=0.130, p<0.05), and caffeine perception(β=-0.162, p<0.05) were significant determinants of energy drinks intake.
