This study was conducted to investgate the effect of gamma irradiation on the lipid oxidation, olfactory properties, fatty acid isomer and volatile compound profiles of five different oil sources. Three plant oils, canola oil, corn oil and soy oil, and two animal fat, tallow and fish oil, were irradiated with 0, 5, 10, and 20 kGy level of dose by Co-60 as a radiation source. Lipid oxidation parameters, FFA, POV and TBARS, were determined according to the AACC and AOCS method. Olfactory property of irradiated oil sources was analyzed using electronic nose (FOX3000, AlphaMOS Co., France) with 12 metal oxide sensors and the result was interpreted using principle component analysis program. Fatty acid isomer profiles and volatile compound profiles of irradiated oils were also measured by GC and GC-MS, respectively. Although the free fatty acid level of oil were the highest by high dose level (20 kGy) of irradiation, changes of both TBARS and POV values by gamma irradiation were varied between oil sources and irradiation level of dose. Electronic nose analysis showed a distinct difference among dose levels of irradiation. Although there was no new volatile compound produced by gamma irradiation, amounts of each volatile compounds were increased by irradiation. Only cis isomer, 9c12c15c of linolenic acid was dose-dependently decreased as irradiation level increased but there was no difference among other isomer profiles of linoleic acid and linolenic acid by gamma irradiation. This study showed that changes in physico-chemical properties of both plant and animal oil were remarkable by gamma irradiation. Therefore, a further study should be needed to scrutinize the interaction among lipid oxidation, production of volatile compounds and off-flavor, and isomerization of fatty acid by gamma-irradiation.

A natural bio-deodorant was made using pine cone byproduct and microbes, and its efficiency of deodorization and effects on composting progress were evaluated in this research. The natural bio- deodorant was manufactured by mixing the pine cone byproduct with molasses containing mineral water and three microbes (Lactobacillus spp., Alcaligenes spp., Pasteurella spp.), and then incubating at 30℃ for 48 hrs. Usage of the bio-deodorant did not inhibit composting and reduced the production of malodor such as H2S, CH3SH, and NH3 gases. Although reduction of malodor was observed when pine cone byproduct was solely used, inhibition of composting was found in this case. The bio-deodorant induced active decomposition of organic matter during composting and conserved nitrogen by lowering the emission of ammonia.

The objective of current study is to determine antioxidant activities of Maillard reaction products (MRPs) obtained from Maillard reaction model systems with different combinations of 15 individual amino acids and 3 different sugars(glucose, fructose and lactose). Antioxidant activities of MRPs were determined using techniques of measuring DPPH and ABTS-radical scavenging activities. The results indicated that radical scavenging activities of MRPs were significantly increased compared to individually thermal treated amino acids and sugars. Among the model systems, the systems containing glycine or lysine + sugars (glucose, fructose and fructose) displayed the stronger DPPH and ABTS radical scavenging activities than other model systems. In addition, when the thermal treatment time was increased, radical scavenging activities of MRPs were increased in a reaction time-dependent manner. Further investigation using bioassay-directed fractionation was performed using two model systems (glycine+glucose, lysine+glucose) which displayed the strongest radical scavenging activities. The reaction solution were subjected to partition with a different polarity of solvent (hexane, ethyl acetate, n-butanol, and water) for evaluation of their radical scavenging activity. Among them, ethyl acetate fraction exhibited the strongest DPPH-radical scavenging activity in both model systems.

The purpose of the study is to derive the problems and characteristics on channel of pig shipping by farm in Cheorwon Region that has 40% of pig feeding in Kangwon Province. Farmsurvey and interview with men of affairs were carried out for the study. As the result, individual farm shipping has more income among shipping channel in Cheorwon Region. In order to manage pig farmto developmore through creation of stable income and exchange the various andmuch information, corporate body shipping, namely pig brand project, is needed. Although the pig farmers intended joining the project positively, they avoid joining the brand project because there is a problemto decide feed farm. Cheorwon Region should invest to guide various education programs for technology developing and provide fiscal aid.
