        미생물 위해성 평가의 용량-반응 모델은 생물학적 모델과 경험적 모델로 나눌 수 있다. 생물학적 모델은 미생물의 분포형태, 미생물에 대한 숙주의 감수성, 감염을 일으킬 수 있는 미생물 수에 대한 가정을 바탕으로 성립된 모델로서, 대표적으로 Exponential model과 β-Poisson model이 있다. 경험적 모델은 주로 화학물질의 독성을 나타내는데 이용되어 온 모델로, Weibull-Gamma model 등이 있다. 여러 용량-반응 모델 중에서 실험 데이터에 적합한 모델을 선정하는 데에는 deviance function(Y)을 이용하며, 현재 일부 식중독균에 대해서는 사람과 실험동물에서의 용량-반응 모델이 연구되어 있다.

        최근 수입이 급증하고 있는 김치에 대하여 중금속 안전성을 평가하였다. 결과 납과 카드뮴이 국산에서는 0.2964 mg/kg와 0.0637 mg/kg, 수입산에서는 0.3557 mg/kg과 0.0656 mg/kg으로 나타났으며, 통계적으로는 차이가 없었다. 기존 문헌과 비교해 본 결과 채소류나 엽채류에 비해 높은 수준의 중금속이 검출되어, 여러 채소로 이루어진 김치의 오염도가 더 높음을 알 수 있었다. 식이섭취량은 평균과 시뮬레이션 결과 모두 PTWI 이하로 나타났으나, 식품종류에 따른 전체적인 평가가 필요할 것으로 생각된다.

        미생물학적 위해성 평가(Micribial risk assessment: MRA)에서 노출평가시 확률적 접근방법은 식중독 발생에 관련된 많은 위해 미생물의 다양성과 변이성 그리고 불확실성에 대한 분석이 가능하고 과적의 접근방법인 point estiamte 보다 훨씬 더 현실성이 반영된 결과를 제공할 수 있어 현재 MRA의 노출평가에서 가장 효과적인 방법으로 인정되고 있다. 본 연구는 MRA 방법론 중 노출평가에서 이용될 수 있는 수학적 확률분포 모델을 이용하여 위해 미생물의 발생수준을 추정하는 방법론을 제시하고, 이를 바탕으로 국내 식육에서의 Listeria monocytogenes에 대한 오염수준을 추정하였으며, 그 결과 국내 식육에서의 L. monocytogenes의 오염수준은 평균 (50_(th) percentile) -4.08 Log CFU/g이며, 최소 (5_(th) percentile) -4.88 Log CFU/g, 최대 (95_(th) percentile) -3.56 Log CFU/g의 범위를 갖는 것으로 추정되었다.

        순환식 펄라이트 고형배지경에서 토마토의 영양과 환경특성을 고려한 생육단계별 최적 배양액을 개발하고자 일본 야채시험장표준액(야시액)을 2 수준(l/2, 1.0 배액)으로 하여 실험을 하였다. 전반적으로 일본 야시액 1배액에서 생육이 좋았으며 식물체내 무기이온함량도 적정치로 나타났다. 따라서 1배액의 양수분 흡수율에 의해 토마토 순환식 고형배지경용 배양액을 조성 하였고 그것을 SCUT 배양액으로하였다. 생육단계별로 육묘기. 영양생장기 및 결실기로 나누어 양수분 흡수율(n/w)을 계산한 결과, 육묘기에 N 13.5, P 3.3, K 7.0, Ca 7.0 및 Mg 3.5 me.L-1이었고, 영양생장기에는 N 14.2, P 3.3, K8.0, Ca 7.5 및 Mg 4.0 me.L-1, 결실 비대기에는 N 10.0, P 3.0, K 7.0, Ca 6.0, Mg 3.0 me.L-1로 조성하는 것이 적합한 것으로 나타났다. 생육단계별로 조성된 시립대 순환식 토마토 배양액(SCUT)을 네덜란드의 순환식 배양액 (PBG)과 함께 비교실험을 수행한 결과 근권내 pH 와 EC변화는 저농도구인 1/2배액에서 변화가 크게 나타나지 않았다. 근권내 무기이온함략 변화는 시립대액에서는 생육단계별로 조성배양액을 바꾸어 공급하면서 실험한 결과 1/2배액에서 근권내 N, p 함량이 적정수준이하로 나타났고 2배액에서는 근권내 N, K, Ca, Mg 함량이 집적되어 고농도로 되는 경향을 보였다. 반면에 1배액에서는 전반적으로 근권내 무기양분이 적정수준을 유지하고 있었으며 특히 시립대 배양액에서 토마토의 생육, 수량 및 품질이 높게 나타났다.

        본 실험은 벌꿀이 흰쥐(Sprague-Dawley, ♂)의 당대사에 미치는 영향을 구명하기 위하여 설탕, 아카시아, 붉나무 그리고 잡화벌꿀을 각각 10%와 20%의 수용액으로 만들어 7주간 투여한 후 벌꿀의 효과를 비교한 바 다음과 같은 결론을 얻었다. 벌꿀식이에 의한 혈액 중 glucose함량은 증가되었으나 붉나무꿀 용액에서만 예외적으로 낮았다. 벌꿀식이군은 정상식이군, 대조군, 설탕식이군 보다 혈청중 fructosamine 함량을 증가시켰고 그 순서는 설탕용액<붉나무꿀<잡화꿀<아카시아꿀 순으로 증가되었다. 정상군과 대조군에 비하여 설탕식이군과 벌꿀식이군의 pyruvate, lactate 함량을 감소시켰다. 정상군과 대조군보다 설탕식이군과 벌꿀식이군에서 혈청중 β-hydroxybutyrate 함량이 증가하였다.

        This study was carried out to propose the way to give substantial education for the students of Departments of Food and Nutrition in Junior College. Ouestionaries were gathered from the professors of the Departments of Food and Nutrition in Junior Colleges. The results of this study could be summarized as follows. 1. The professors and assistant teachers appointed in Department of Food and Nutrition in Junior Colleges were insufficient in number showing the sufficiency proportion of 35.8% and 61% respectively. 2. Part time lecturers took charge of lectures on major subject up to 27%. 3. The academic backgrounds of all professors were above a master`s degree, and the number of professors who were in the doctor`s course and who had got doctor`s degree amounted to 31.5% and 27.9% respectively. 4. The number of professors who had majored in the course of Food and Nutrition at university or at graduate school was the most and that of Food Engineering ranked the next. 5. The number of professors having careers in the fields of food and nutrition before the appointment to professor amounted to 32%. 6. The number of professors having domestic training managed by the Education Ministry amounted to 67.8%, but those having foreign training amounted to only 8.3%. 7. The number of domestic scientific journals subscribed by one professor was on an average 2.8, but that of foreign was only 0.8. 8. Each professor associated on an average 2.7 kinds of academic society, and published 3.6 pieces of thesis in the last three years. 9. The professors were comparatively satisfied with their present occupations, but they were dissatisfied with such points as deficiency of educational postulates, insufficient income, low level in intellectual faculties of their students and lack of social understanding.

        Background: This study was aimed at evaluating the growth, yield, and carbohydrate content in the whole Allium hookeri plant with shading treatment in hot summer. Methods and Results: Different shading rate, including 0 (control), 35 or 55%, was employed from the June 21st to August 31st. Daily average air and soil temperature, which were approximately 2.5℃ and 3.8℃ lower, respectively, were observed with both 35% and 55% treatments in July and August, with no significant difference in daily maximum air temperature. Dry weights were high, approximately 40% and 48% for the shoot and 20% and 12% for the root, with the 35% and 55% treatments, respectively, 8 weeks after shading. Division number was increased by 13% and 19.8% with the 35% and 55% treatments, respectively. The mortality rates of 150 plants were 9.1%, 4.0%, and 1.3% with the 0 (control), 35% and 55% treatments, respectively. At 4 weeks after shading, the highest and lowest sucrose levels in both shoot and root were observed with the 35% and 55% treatments, respectively. At 8 weeks after shading, there was no significant difference in the sucrose content in the shoot among the treatments. Conclusions: The highest plant growth rate and yield with the 55% treatment may be related with the decrease in both air and soil temperatures, resulting in reducted leaf respiration and thus compensate net photosynthesis.

        Background:This study was aimed to determine the optimal vine induction method for growing of Korean schisandra (Schisandra chinensis), by comparing plant growth and fruit yields between plants grown with either fence-type (U-type) or A-type induction.Methods and Results:Plants were transplanted on August 17, 2014, and the plant height, stem node number and weight were measured every two weeks, six times from June 17, 2017. The plant height, stem node number, and leaf length and width were higher with the A-type than with the U-type induction, by approximately 37.0%, 49.1%, 27.6%, and 12.7%, respectively. Although there was no significant difference between the photosynthesis rates of plants grown with the two vine induction method, the leaf area and leaf number per plant were higher in the plants grown with the A-type than the U-type, by approximately 23.7% and 46.0%, respectively. The number of green-color pixels, in a defined area of digital camera images of creeper leaves from the inducted vines, was significantly higher in the plants grown with the A-type than the U-type. The number of fruit clusters per plant was approximately 26 and 36, under the U-type and A-type, respectively. A two fold higher total fruit weight per plant was observed in the plants grown under the A-type (250 g/plant) than the U-type (120 g/plant).Conclusions:The A-type vine induction method is optimal for cultivation of Korean schisandra.

        Background : Haskap berries commonly refer to fruits of Lonicera caerulea L., recognized by the Japanese aborigines as the “The elixir of life.”. Due to their recent arrival on the North American market, haskap berries have not yet been positioned among other berries and compared in terms of their phytochemical content. And haskap berries have higher ascorbic acid and anthocyanin content than other berries known for their health-promoting benefits, such as blueberries. However, no study has reported on the antioxidant and anti-cancer activity of Lonicera caerulea stem. The purpose of this study is to present the current research on the chemical content, antioxidant and anti-cancer activities of Lonicera caerulea stem. Methods and Results : The stem of Lonicera caerulea L. ware dried in the shade at room temperature and extracted with 100% methanol. The extract was suspended in deionized water and partitioned sequentially with n-hexane, chloroform, ethyl-acetate and butanol (water saturated BuOH) fractions. Antioxidant activities were measured by determination of antioxidants, DPPH (2,2-diphenyl-1-picrylhydrazyl). Cell viability was determined by the MTT [3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyl tetrazolium bromide] assay. All cell lines were purchased from the Korean Cell Line Bank (Seoul, Korea). All results were performed with three replications were processed statistically. By DPPH assay, the Lonicera caerulea L. the highest activity was obtained from the ethyl-acetate fraction (IC50=15.46 ㎍/㎖). By MTT assay, the chloroform fraction showed a significant growth inhibiting effect on MCF-7 (Human breast cancer, IC50=225.91 ㎍/㎖), COLO 205 (Human colon cancer, IC50=179.55 ㎍/㎖), but on AGS (Human stomach cancer) and other fractions it did not show effect. Conclusion : We demonstrated that Lonicera caerulea L. stem extract and fractions has antioxidant and antiproliferation activity in vitro. Further studies should identify the active constituents in Lonicera caerulea L stem to evaluate the potential in vitro antioxidant and antiproliferation activities of the extract.

        Background : Astilboides tabularis (Hemsl.) Engl. is a perennial herbaceous plant, distributed in the northern high mountains of the Korean peninsula and China. It is an excellent ornamental plant currently at risk of overharvesting and therefore, is designated as an endangered wild plant Class II by the Ministry of Environment. Physiological research on A. tabularis has not be reported. Therefore, in this study, using A. tabulari extracts, antioxidant and Anti-inflammatory effects were determined. Methods and Results : The antioxidant and free radical scavenging activities of A. tabularis extracts were evaluated using DPPH (2,2-diphenyl-1-picrylhydrazyl) assay. The results showed that the ethyl acetate fraction of A. tabularis possesses potent DPPH radical scavenging activity (2.90±0.08㎍/㎖), similar to the scavenging activity of ascorbic acid (2.19±0.06㎍/㎖), and better than the powerful antioxidant α-tocopherol (10.60±0.40㎍/㎖) as well as BHA (butylatedhydroxy anisole)(6.12±0.27㎍/㎖). The ethyl acetate fraction possessed a significantly higher concentration of total phenolic (549.70±2.72㎎GAE/g) and flavonolic content (154.58±1.04㎎QE/g). It was also found that the ethyl acetate fraction exhibited high reducing power and inhibition of ROS (Reactive Oxygen Species) formation. Different fractions of A. tabularis were tested for anti-inflammatory activity using LPS stimulated Raw 264.7 cells. The n-hexane and ethyl acetate fractions exhibited a high inhibitory effect on NO (Nitrite oxide) production (22.43±1.06%, 19.30±0.45%, respectively) at 200㎍/㎖ concentration. The mRNA of IL-1β, iNOS and COX-2 gene expression was decreased by treatment with the ethyl acetate fraction. These results showed that A. tabularis extracts can be used as natural substances to control inflammation. Conclusion : These result showed that A. tabularis extracts can be used in a variety of antioxidant and other functional product research and development processes as valuable natural materials.

        This study was conducted to investigate the influence of hydrophilic polymer (HP) mixture ratio (Control, 1.0%, 2.5%, 5.0%, and 10.0%) on growth of eggplant (Solanum melongena) for lower maintenance urban agriculture via green roofs. Although it was not statistically significant (p > 0.05), substrate temperature was decreased as hydrophilic polymer mixture ratio were increased. High substrate water content (95%) was found consistently in growing media under elevated hydrophilic polymer mixture ratio at over 5% during the entire growing period. Substrate electronic conductivity was increased as hydrophilic polymer mixture ratio were increased. Growth index was decreased as hydrophilic polymer mixture ratio was increased. It was reduced about 1/3 and 1/5 compared to that of Control in HP5.0 and HP10.0 treatment plants, respectively. Number of leaves, leaf length, and leaf width were decreased in following order: Control> HP1.0> HP2.5> HP5.0> HP10.0 treatments. There numbers were significantly lower in HP5.0 and HP10.0 treatment plants. Dry weight of shoot and root were decreased as hydrophilic polymer mixture ratio was increased. They were reduced by 1/4 compared to those of Control treatment plants. In addition, visual value was decreased as hydrophilic polymer mixture ratio was increased. Plants grown in HP1.0, HP2.5, and HP5.0 treatments all survived. However, plants grown in the HP10.0 treatment had the lowest survival rate (56%) after 3 months of growing. These results indicate that the advantage of adding hydrophilic polymer to green roof growing media may greater during dry periods. However, the proper mixture proportion of hydrophilic polymer should be determined according to different characteristics of growing media and plant species.

        Background : We studied the anti-oxidant activity and anti-inflammatory effects of Rhododendron lapponicum (L.) Wahlenb. var. parvifolium (Adams) Herder extract (RLE). Methods and Results : The RLE was prepared using methanol. The antioxidant effects of RLE was evaluated for its DPPH (1,1-diphenyl-2-picrylhydrazyl) free-radical scavenging activity, reducing power. Subsequently, using the RAW 264.7 cells, the cell viability of RLE was evaluated with or without LPS (lipopolysaccharide), and the anti-inflammatory effects of RLE was also estimated by nitric oxide (NO) and using real-time polymerase chain reaction (RT-PCR). The extract showed antioxidant activity (DPPH free-radical scavenging activity) with RC50 value of 57.67 ㎍/㎖. The reducing power of the extract was Abs 0.77 at 250 ㎍/ ㎖. The result indicated that RLE would have significantly high anti-oxidative effects. Cell viability was determined using the MTT (3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide) assay. To evaluate anti-inflammatory activity, we examined the inhibitory effects on LPS-induced NO production in RAW 264.7 cells. The NO inhibition rate was 85.44% at 200 ㎍/㎖ RLE. At the same concentration, the expression of pro-inflammatory genes such as inducible nitric oxide synthase (iNOS) and cyclooxygenase (COX)-2 also decreased. In RLE 50 ㎍/㎖ concentration showed the highest decrease. Conclusion : This result suggest that RLE is a novel resource for the development of foods and drugs that possess anti-oxidant and anti-inflammatory activity. Also, RLE can be developed as an inflammatory agents for cosmetic bases in the future.

        Background : This study aimed to investigate the antioxidant and anti-inflammatory activities of water chestnut (Trapa japonica Flerow) extract. Methods and Results : The antioxidant and anti-inflammatory activities of 100% methanol extract of water chestnut were investigated. The methanol extract was evaluated for its total phenolic and flavonoid content, DPPH•(1,1-diphenyl-2-picrylhydrazyl) free-radical scavenging activity,reducing power, andeffect on nitric oxide (NO) production and cell viability using real-time polymerase chain reaction (qPCR). The total phenolic content was 438.31 ㎍ allic acid equivalent (GAE)/㎎ extract and the total flavonoid content was 61.40 ㎍ quercetin equivalent (QE)/㎎ extract. In addition, results revealed the extract possessed antioxidant activity (DPPH• free-radical scavenging activity) with IC50 value of 5.28 ㎍㎖ The reducing power of the extract was assayed spectro photometrically and showed Abs of 0.71 at 100 ㎍㎖ Furthermore, extracts of water chestnut exhibited no cytotoxicity in RAW 264.7 cells. In addition, the NO assay revealed that LPS-induced NO production was significantly inhibited following treatment with water chestnut extracts. The expression of pro-inflammatory proteins such as inducible nitric oxide synthase (iNOS) and cyclooxygenase (COX)-2 decreased in a concentration-dependent manner. The water chestnut extract also decreased tumor necrosis factor α (TNF-α) release. Conclusion : Therefore, the present findings provide scientific evidence for the nutritional potential, chemical composition, and biological activities of Trapa japonica Flerow anddemonstrate its potential use as a functional food forapplication in the pharmaceutical industry

        Background : We studied the anti-oxidant activity and anti-inflammatory effects of Spiraea fritschiana Schneid extract (SFSE). Methods and Results : The SFSE was prepared using methanol and was evaluated for its total phenol and flavonoid content, DPPH (1,1-diphenyl-2-picrylhydrazyl) free-radical scavenging activity, reducing power, and effect on nitric oxide (NO) production, and cell viability by using real-time polymerase chain reaction (PCR). The total phenol content was 212.78 ㎍• gallic acid equivalent (GAE)/㎎ and the total flavonoid content was 66.84 ㎍• quercetin equivalent (QE)/㎎. The extract showed antioxidant activity (DPPH free-radical scavenging activity) with RC50 value of 76.61 ㎍/㎖. The reducing power of the extract was Abs 0.58 at 250 ㎍/㎖. Cell viability was determined using the MTT 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide assay. To evaluate anti-inflammatory activity, we examined the inhibitory effects on lipopolysaccharide-(LPS)-induced NO production in RAW 264.7 cells. The NO inhibition rate was 90% at 200 ㎍/㎖ SFSE. At the same concentration, the expression of pro-inflammatory genes such as inducible nitric oxide synthase (iNOS) and cyclooxygenase (COX)-2 also decreased. Conclusions : Our results suggest that SFSE is a novel resource for the development of foods and drugs that possess anti-oxidant and anti-inflammatory activity.

        This study was aimed to determine effects of soil organic amendment as plant growing media component on restoration of planting ground. The changes of soil physical and chemical properties and germination and growth of kentucky bluegrass (Poa pratensis L.) were investigated. For treatments, soil was excavated at depth of 0-50 cm (referred as S1) and at depth of 50-100 cm (referred as S2). Then the half amount of S1 soil was mixed with the soil organic amendment (coir dust 40% (v/v), bottom ash 25%, leaf mold 25%, vermiculite 5%, carbonized rice hull 5%) at a rate of 6% (v/v) (referred as S1CC) and also the half amount of S2 soil was mixed with the soil organic amendment at a rate of 6% (v/v) (referred as S2CC) on pot in a 16 cm diameter and 14 cm height. The experiment was replicated 3 times with 3 pots per replication in randomized block design, and 100 seeds were planted per pot. In results, there was no significant difference in soil pH among the treatments with a slight decrease in soil hydraulic conductivity. However, in the S1CC treatment, positive increases in soil chemical properties, including electrical conductivity, organic matter, phosphoric acid, total nitrogen, exchangeable cation, and cation exchange capacity. Also, the germination rate, plant height, and number of leaves were higher in the S1CC treatment than those in other treatments. These results suggest that the addition of organic amendment to the soil at depth of 0-50 cm might be proper for restoring planting ground.

        The objectives of this study were to assess plant growth of the flowering shrub species for adapting to growing on hanging baskets in the vertical greenery system with different cover materials and substrates for low maintenance effectively utilizing rainfall. Water amount taken up by the fabric cover was higher than that by the plastic film cover. Evaporated water amount from the fabric cover was much slower than that from the plastic cover. A higher ratio of hydrophilic polymer to the substrate resulted in higher substrate water content within the same cover material. The relative growth rates of plant height, leaf width and stem diameter were higher when the Cotoneaster horizontal was grown in the vertical greenery system with the fabric cover, whereas the leaf number and survival rate were higher with the plastic film cover. The relative growth rates of plant height, leaf width and leaf number and the survival rate was higher when the Euonymus fortunei ‘Emerald n Gold’ was grown in the vertical greenery system with plastic film cover than those with both fabric cover and hydrophilic polymer treatment. In contrast, the stem diameter of Euonymus fortunei ‘Emerald n Gold’ was higher in the plants grown in the vertical greenery system with the fabric cover at a 1.0% ratio of hydrophilic polymer to substrate than that with plastic film cover. The highest stem diameter of Spiraea × bumalda ‘Gold Mound’ was observed in the plant grown in the vertical greenery system with fabric cover and at a 1.0% ratio of hydrophilic polymer to substrate, while there was no significant difference in the plant height. The leaf number was decreased with increase in the ratio of hydrophilic polymer to substrate, while the leaf width was decreased. The survival rate of Spiraea × bumalda ‘Gold Mound’ was higher than 80% regardless of treatments. In particular, the highest survival rate was observed in the plastic film cover treatment after overwintering.
