        버섯은 우리나라를 비롯한 전 세계적으로 널리 이용되고 있는 식품 중의 하나로 최근 다양한 생리 활성 효과 등 다양한 분야에서 활발하게 연구가 진행되고 있다. 본 연구는 여러 다양한 버섯 중에서 우리나라에서 식용으로 널리 이용되고 있는 새송이 버섯과 팽이버섯 추출물의 항산화 활성 및 세포독성 효과를 살펴보고자 하였다. 실험결과, 새송이버섯과 팽이버섯추출물의 총 페놀 함량은 각각 19.60±0.10 mg/g 과 22.28±1.10 mg/g으로 나타났으며, 플라보노이드 함량은 각각 15.21±1.31, 20.51±4.52였다. 2.5, 5.0, 7.5, 10.0 mg/mL 농도에서의 DPPH radical 소거능은 새송이버섯과 팽이버섯 각각 2.5 mg/mL의 농도에서 7.98±0.58, 8.71±0.45였고, 10 mg/mL 농도에서 각각 35.35±0.52, 39.39±0.26으로 고농도에서 높은 DPPH 라디컬 소거능을 보여주었다. 환원력은 10 mg/mL의 농도에서 각각 1.417±0.011, 1.171±0.006으로 시료의 농도가 증가할수록 흡광도 값도 증가하여, 높은 환원력을 보여주었다. 새송이버섯 추출물과 팽이버섯 추출물의 인간 정상 신장세포 HEK293으로 본 정상세포에 대한 세포독성을 측정한 결과에서는 새송이버섯, 팽이버섯 추출물 모두 80%의 생존력을 나타내어 독성이 없는 것으로 보여진다. 한편, 위암세포, 유방암세포 및 간암세포에서 암세포 성장억제율이 높게 나타나 항암 효과의 가능성을 보여주었다.

        Platycodon grandiflorum have been used as a traditional remedy and food source. This study was performed to investigate the immunomodulating effects of Platycodon grandiflorum in mouse, using ex vivo experiments. Six to seven-week old mice were fed ad libitum on a chow diet, and water extract of Platycodon grandiflorum was orally administrated at two different concentractions (50 and 500 ㎎/㎏ B.W./day) every other day for four weeks. In ex vivo experiments, the highest proliferation of splenocytes and levels of cytokine (IL-1β, IL-6, TNF-α) production were observed in 500 ㎎/㎏ BW/day supplementation group for all three cytokines stimulated by LPS. In conclusion, this study suggests that Platycodon grandiflorum extracts may enhance the immune function by regulating the splenocytes proliferation and cytokine production capacity by activating macrophages in mice.

        Corn has been used for a long time as a traditional remedy, as well as a food source. We previously reported that in vitro supplementation of corn water extracts enhanced the proliferation of splenocytes, compared to the control group. In this study, we examined the immunomodulative effect of a water extract of corn. Seven to eight weeks old mice(Balb/c) were fed an ad libitum chow diet, and were orally administrated a water extract of corn every other day, for four weeks, at two different concentrations(50 and 500 ㎎/㎏ B.W). Cytokine production(IL-2, IL-10 and IFN-γ) by macrophages stimulated with LPS or not stimulated with LPS was detected by ELISA assay using the cytokine kit. In an ex vivo study, the cytokines IL-2, IL-10 and IFN-γ were detected at 500 ㎎/㎏ b.w. supplementation group with LPS stimulation in all cases. Also, the ratio of IFN-γ to IL-10 was in the range of 0~3 with mitogen stimulation, such as con A and LPS. In conclusion, this study suggests that in mice, corn extracts may enhance immune function by regulating the cytokine production(IL-2, IL-10 and IFN-γ) of the activated macrophages.

        Bacillus cereus is widely distributed on various foods and is known to cause clinical infections, food poisoning toxin induced diarrhea and vomiting. In this study, B. cereus group detected and analyzed rice, rice bran, and biofilm characterization of B. cereus confirmed. B. cereus was identified in approximately 34.6% of brown rice and 50.0% of rice bran. B. thuringiensis was detected in 3.9% of brown rice and 23% of rice bran, and B. mycoides was isolated from rice bran. The microtiter plate assay detected differences in biofilm-forming ability among B. cereus group isolates. Biofilm of B. cereus seemed to increase the MIC values of antimicrobial agent and antibiotic compounds compared with planktonic cells. Therefore, sufficient attention should be given to good manufacturing practice and good agriculture practice to avoid contamination of B. cereus group raw material including rice.

        This present study was performed to analyze the efficiency and volatility of a porous film containing Chamaecyparis obtusa extract as a method to effectively package food compounds. Phytoncide was contacted the state of gas and showed effective antimicrobial properties. Limonene can be distilled without decomposition as a relatively stable terpene and was one of the extract components. Chamaecyparis obtusa essential oil. The optimal solvent composition was a ratio 5:20:0.3 of T-500:ethanol:hardener to effectively manufacture film containing phytoncide essential oil and the minimum antibacterial concentration was 2%. The films were made under different conditions(A-50LF1, A-25SF2, B-50SF1, C-50LF1, C-25SF2 and D-50SF1) containing phytoncide and the amounts of limonene inside the 1-L reaction chamber depending on storage were measured by gas chromatography-mass selective detention. The results showed that the 25SF2(width, 25 ㎜; length, 20 ㎝) revealed more amount of limonene compared with 50LF1(width 50 ㎜, length 20 ㎝). We confirmed that the gas emission amount showed a better layer on the film side than on the internal film. An effect of film thickness on phytoncide emissions was observed in that the amounts was less than the expectation for a thicker film at the beginning time, but the emitting amounts increased with increasing storage periods. In the storage testing of various films at 35℃ and 70% humidity for 14 days, 25SF2 showed longer preservation compared with that of 50LF in the case of bread. C. obtusa essential oil is a useful fresh ingredients, hence, analysis of limonene emission kinetics from various film was helpful to develop films with an optimal antimicrobial effect, and will allow application of such films in food packaging systems.

        The purpose of this study was to compare the effects of service failure magnitude on perceived justice, positive emotion, and revisit intention at restaurants between a collectivist culture(Korea) and an individualistic culture(United States). The results showed that the higher a customer`s perception of service failure magnitude, the lower the perceived recovery justices in both cultures. The distributive, procedural, and interactional justices had a favorable effect on positive emotions in both cultures. Other findings revealed that interactional justice was the best predictor of revisit intention in Korea, while distributive justice was the best determinant of revisit intention in the United States. This research suggests that global restaurant managers need to understand how cultural orientation influences consumer perceptions of service failures in order to develop a highly targeted and effective service recovery.

        The purpose of this study was to investigate the quality of sugar-snap cookies containing various types and mixture ratios of sugar. The characteristics of sugar-snap cookies prepared with fructose, high-fructose corn syrup and invert sugar were examined through physical properties measurement and sensory evaluation. Results of the investigation suggest significant differences in the cookies made with various sugars. High-fructose corn syrup was better than others for making sugar-snap cookies. The quality of cookies baked with high-fructose corn syrup was improved compared to cookies baked with invert sugar or fructose. Varying the formula, with high-fructose corn syrup had little or no effect on the quality of the final product. Using different quantities of invert sugar and high-fructose corn syrup significantly affected the physical properties of the cookies. Sugar-snap cookies containing invert sugar had an extremely positive effect.

        Smilax china L. rhizome extract(SCE), called ``Tobokreung`` in Korean traditional medicine was investigated the influence on heavy metal contents(particularly Pb, Cd, As, and Hg) in Sprague-Dawley rats for 3 weeks. The test groups were divided into 4 group, normal, control, and SCE feeding groups, SC1(13 ㎎/㎏) and SC2(26 ㎎/㎏), respectively. The three group except normal group, were fed heavy metal such as Pb, Cd, As, and Hg. Body weight gain and the weight of target organs (liver and kidney) were determined and had not shown significant differences. Pb, Cd, and As contents in the kidney of SCE feeding groups were tended to decrease after 3 weeks, and SC2 group showed remarkably decrease of them. In the liver, the 3 heavy metal contents except Cd of SC2 group, were decreased rather than that of control group. Pb contents in the serum and the hair of the SC2 group showed significantly decreasing. All the taken together, we investigated the effect of SCE on the 4 heavy metal contents in rats for 3 weeks, and found out that more dosage of SCE made lower heavy metal contents in vivo, for the first time.

        This study investigated the effects of mulberry fruit extract on antioxidant activities and the alleviation of an alcoholinduced hangover, which was measured with alcohol dehydrogenase(ADH) enzyme activity. The antioxidative capacity of each mulberry extract was measured by total phenolic compounds, electron donating ability, superoxide dismutase-like ability, thiobarbituric acid reactive substances, and nitrite scavenging ability. The 60% methanol extract yielded the highest total phenolic compounds. The electron donating ability of the 40% ethanol and 40% methanol extracts were 68% and 67%, respectively. The superoxide dismutase-like abilities of the 40% methanol and 40% ethanol extracts were 30% and 28%, respectively, when extracts were assayed at 2.5 ㎎/㎖. The nitrite scavenging ability of the 60% ethanol and 40% methanol extracts were 98% and 97%, respectively. The 60% ethanol extract yielded the highest ADH.

        The purpose of this study was to evaluate the optimum ratio of coffee waste to chocolate for the preparation and investigation of the sensory characteristics of coffee chocolates. Color values(L-value, redness, and yellowness), total flavonoids, radical scavenging activity, and sensory characteristics of coffee chocolates made with various concentrations of additives were measured. The coffee waste powders were added at weight percentages of 0, 1, 2, 3, and 4%. As the ratio of coffee powder to chocolate increased, total flavonoid content and radical scavenging activity increased. In sensory evaluation, significant differences(p<0.05) were shown in taste, bitterness, texture, and overall acceptability depending on the amount of coffee waste powder added. The optimal ratio for sensory acceptability of coffee chocolate was 2% added coffee waste powder.

        Peeled chestnuts were stored at different temperatures(-10℃ and -20℃) and for different times(0, 10, and 20 min at 90℃) for blanching over a 6 month period. Analyses were conducted for moisture content, total sugar content, browning index, polyphenol compounds, PPO activity, and SEM. Moisture content and PPO activity were increased by storage time. The increments for the samples stored at -20℃ were lower that for the samples stored at -10℃. The Browning index was increased by storage time, and increments for the samples stored at -20℃ were lower that for the samples stored at -10℃. Scanning electronic microscopy(SEM) studies were performed on peeled chestnuts. Results showed that the wrinkle structure of the cell wall was enhanced by storage time, and the level of enhancement was higher at -10℃ than at -20℃.

        This study was conducted to investigate the quality characteristics of soybean curd prepared with Opuntia ficus-indica fruit, freeze-dried Opuntia ficus-indica fruit powder, or heat-dried Opuntia ficus-indica fruit powder, without addition of a coagulant. The yield rates of the soybean curd were slightly decreased for the three curds containing Opuntia ficus-indica fruit; this was accompanied by a significant decrease in pH. Furthermore, the hardness and springiness of soybean curds coagulated with added freeze-dried Opuntia ficus-indica fruit powder or heat-dried Opuntia ficus-indica fruit powder were higher than the hardness and springiness of the coagulated controls. However, the cohesiveness and brittleness of two soybean curds were lower than for the controls, while the gumminess of the four soybean curds containing control fruit was the same. In terms of overall acceptability, the preferred soybean curd was the curd containing freeze-dried Opuntia ficus-indica fruit powder.
