The purpose of this study was to evaluate the satisfaction with school meal service and the food preference in elementary school students who are in their growth period. A total of 484 students (242 boys) participated and completed a questionnaire survey. The results indicated that the merit of school meals was the highest in ‘balanced diet’. 'Food hygiene' and 'delicious food' were the most important factors in school meals. Most of the students wanted ‘balance between eastern and western foods’ and ‘new dishes’ for the menu of school meals. For the distribution of meals, ‘various kinds of side dishes’ and ‘warmth of dishes’ were mainly required. The main problems of the current environment of school meals were ‘long waiting time’ and ‘noise of the cafeteria’. In satisfaction with the school meal service, the highest satisfactory factor was 'staffs’ cleanliness', following 'arrangement of furniture in cafeteria' and 'nutrition information-providing'; whereas, the lowest factor was 'staffs’ kindness'. In the preference of foods, students preferred ‘white rice’; whereas they did not like ‘bean rice’; and ‘fried rice' was preferred. In side dishes with meat and fish, most of the meats including ‘Tangsuyuk’ and ‘Bulgogi’ were preferred. For fish, ‘fried hairtail’ was preferred; whereas, ‘fried Spanish mackerel’ was not. In case of kimchi, ‘Chinese cabbage kimchi’ and ‘cubed radish kimchi’ were especially preferred. Considering these results, intensive improvement is required to increase school meal satisfaction by understanding the students' needs. An effort to allow the students’ preferences to be reflected in the menu is also needed
본 연구는 YorkshireⅹLandraceⅹDuroc(YLD), YorkshireⅹChester whiteⅹYorkshire(YCY), and YorkshireⅹBirkshireⅹDuroc(YBD) 삼원교잡종 목심의 육질특성을 비교하여 새로운 교잡종 생산을 통한 품종개량에 필요한 기초적 자료로 이용하고자 이화학적 분석 및 관능 평가를 실시하였다. 돈육은 출하체중 110-120kg의 규격돈으로서 교잡종 별로 10두씩 임의로 선택하여 도축 후 24시간 동안 0±1℃예냉실에서 냉도체를 만든 후 좌도체로부터 돈육 목심 부위를 발골 및 정형하여 진공포장 후 일반성분 분석, 이화학적 분석 및 관능검사를 실시하였다. 일반성분 분석결과, YLD 교잡종 목심의 지방함량이 다른 교잡종에 비해 높았다(p<0.05). 육색지수의 경우 YLD 교잡종 목심의 L*값이 가장 높았다(p<0.05). 가열감량의 경우 YBD 교잡종이 다른 교잡종에 비해 높았지만, 다른지표들은 낮았다(p<0.05). 저장기간별 YCY의 TBARS 수치가 저장 14일차에 다른 교잡종보다 가장 낮았다(p<0.05). 관능검사의 경우 YLD와 YCY 교잡종이 더 높은 값을 나타내었다. 따라서 본 연구결과를 통해 보수력이 뛰어나고, 전단력가는 낮으며, 지방함량은 높아, 결국 가장 훌륭한 관능검사 결과를 얻은 YLD 교잡종목심에 대한 선호도가 높을 것으로 판단된다. 본 연구 결과를 통해 세가지 형태의 삼원교잡이 육질에 영향을 미칠 수 있음을 확인하였다.
This study identified the sensory properties of samples of pizza dough at three pizza companies and three masonry oven pizzerias from Seoul, Korea and compared consumer acceptability among panels of university students. Six pizza dough samples were prepared (pan pizzas from Pizza Hut, Mr.pizza, and Dominos pizza, masonry oven baked pizzas from Appleteen, Mr.Lee’s, and Pizza factory). Consumer tests were employed involving 97 Korean consumers. Consumers evaluated overall liking (OL), liking of appearance (APPL), odor (ODL), flavor (FLL), and texture (TXTL), willing to try (WT), and willing to recommend (WR) for the samples using a nine-point hedonic scale. Analysis of variance (ANOVA) indicated that HutP, MrP, and DomP samples had significantly (p<0.05) high scores for roughness, porosity, crust color, grain size, brownness, dairy food aroma, savory taste, and yeast aroma, which had the highest OL, ODL, and FLL scores. LeeP, ATeenP, and PFacP samples had high elasticity, cohesiveness, and adhesiveness. Consumers favored the appearance characteristics and color, dairy product flavor, and savory flavor of the pan pizza and preferred cohesiveness, toughness, and stickiness of masonry oven baked pizza.
Chinese characters underwent the process of conversion of seal script to clerical script, transitioning from lines to strokes in composition. the degree of tokenization components increased markedly. Some characters could no longer be classified by radicals as explained under the “unified by form and meaning” principle described in Shuowen Jiezi (《說文解字》). Thus in the Ming Dynasty, Zihui (《字彙》) eliminated and combined many of the radicals in Shuowen Jiezi (《說文解字》), and adopted the principle of “classification under form and not meaning” for classification purposes. The Kangxi Dictionary (《康熙字典》) from the Qing Dynasty continued the tradition of 214 radicals included in Zihui (《字彙》). Though radicals were established and classified according to two principles: convenient perusal and being true to the meaning of characters created by ancients, the form and meaning of characters become disassociated after conversion of seal script to clerical script, though the original theory of character creation which linked external composition of character with internal meaning was passed on. As the two radical classification principles of classification through form and classification through meaning conflicted with one another, the book adopted the principle of radical classification through form to facilitate convenient perusal. Thus, some radicals were iconized, losing their function to convey meaning or sound in characters. From the perspective of the development of clerical script, clerical script from the Qin Dynasty (qinli) is also referred to as “ancient clerical script” (guli), an early form of clerical script during this transition period between ancient and modern characters. Development of clerical script reached maturation in the Han Dynasty, with the Eight Points (bafen) script. This paper attempted to organize the mark process that Chinese characters underwent during the conversion of seal script to clerical script, through utilizing ancient texts which have been unearthed, Han Dynasty steles, and texts from Qin and Han Dynasty bamboo and wooden slips unearthed in the past few decades as research material. The hope was to uncover the evolutionary process and original form of iconized radicals as they formed.
본 연구는 어린이 기호식품에 대한 초등학생들의 인식과 섭취 실태/행동을 알아보고, 또 성별 및 학년과의 연관성을 알아보고자 수행되었다. 일개 도시의 13개 초등학교 주변에서 무작위 추출된 초등학생 306명(남 188명, 여 118명)에 대하여 직접면담법에 의한 설문조사를 수행하였다. 전체적으로 20% 이상의 학생이 어린이 기호식품에 대한 지식이 없었으며 또 어린이 기호식품에 대한 정보원이 없었다. 또한 60% 이상의 학생이 1주일에 1~2회 이상 학교주변 어린이 기호식품 판매업소를 이용하는 것으로 나타났다. 어린이 기호식품에 대한 정보 습득 경로로는 학교가 37%로 가장 많고, 다음으로 가정 16%이었다. 어린이 기호식품에 대한 의식 및 행동을 나타내는 요인들 중에서 지식과 정보 습득 경로는 성별과 유의한 연관성이 있었다(p < 0.05). 또 지식, 정보 습득 경로, 태도, 섭취 이유에 있어 학년과 유의한 연관성이 있었다(p < 0.05). 남자 어린이가 여자 어린이보다 지식 수준은 높았으나(p < 0.05), 태도는 낮고 또 섭취 빈도가 높았다. 학년이 높을수록 어린이 기호식품에 대한 지식과 태도 수준이 높아지고 다양한 정보 습득 경로를 가졌으나(p < 0.05), 또한 섭취 빈도가 높았다. 이러한 결과는 조사대상자의 지식과 태도/행동의 불일치를 나타낸다. 그러므로 학생들의 주요 정보 습득 경로인 학교급식 프로그램과 학교 및 가정에서의 식품위생/안전교육이 더욱 향상되어야 함을 나타낸다. 더불어 학교주변에서 불량식품에 대한 규제도 강화되어야 할 것이다.
The purpose of this study was to examine the difference in nutritional knowledge and food preferences according to foodrelated lifestyle among 400 married women. Using the K-average clustering method, food-related lifestyles of subjects were categorized into three clusters: rational and diversity-oriented group, convenience-oriented group, and health-oriented group. The nutritional knowledge level and food preferences among three clusters were compared to each other using ANOVA test. The findings were summarized as follows: For the nutritional knowledge level, health-oriented group showed the highest mean score, whereas the lowest score was detected in the convenience-oriented group. The convenienceoriented group showed higher preferences for fish, meat, eggs, fruits, milk/dairy products, seaweed, grains, etc. among natural food than the other groups. Meanwhile, the rational and diversity-oriented group preferred legumes, and green vegetables, whereas the health-oriented group showed preferences for other vegetables. However, the convenience-oriented group reported more preferences for breads, noodles, pancakes, fried/stir-fried food, and processed food such as sausage, ham, and fast food, This study found that nutritional knowledge level and food preferences were significantly different according to food-related lifestyles of married women living in Seoul and Gyonggie areas. Thus, it is suggested that nutritional education targeting married women needs to be carefully designed by considering their food-related lifestyle.

Environment-friendly agricultural products are consumed widely, but little is known about consumers’ acceptability. The objectives of this study were to 1) determine consumers’ acceptability of cucumber when consumed raw, 2) determine differences in appearance liking between environment-friendly and conventionally grown cucumber samples, and 3) analyze the physicochemical properties of cucumber. White dadagi, gasi, non-pesticide mini cucumber, organic gasi, and organic Joseon cucumber samples were evaluated for consumers’ acceptability using a nine-point hedonic scale; White dadagi, organic Joseon, and organic gasi cucumber samples showed the highest acceptability scores. However, there were three consumer segmentations differing their degree of cucumber liking and preference. Consumers liked the appearance of organic gasi best. Consumers’ preference of cucumbers did not change upon evaluation of the acceptability of the appearance of whole fruit with and without a label indicating an environment-friendly status. Additionally, the physicochemical properties of the cucumbers—including color (skin and flesh), length, circumference, weight, water activity, brix, and texture (hardness and fracturability)—were measured. All measurements showed significant differences among samples, with the exception of water activity and hardness. White dadagi was 3.8 brix, which was the highest among cucumbers, followed by non-pesticide mini cucumber and organic Joseon. White dadagi, organic Joseon, and organic gasi showed greater fracturability than the other cucumber samples.
This study was conducted to investigate the eating habits and food preferences of elementary school children belong to multi-cultural families and ordinary families. The data were obtained by interview based on questionnaire from November to December in 2012. The subjects of multi-cultural families and ordinary families were 99 and 376 children, respectively. In comparison with eating habits, the ordinary children showed higher scoring in the items of eating proteins, green and yellow vegetables, and fruits or fruit juice than those of multi-cultural children. The ordinary children ate less midnight-meals than those of multi-cultural children (p<0.05). Furthermore, the ordinary children ate kimchi more frequently than the multi-cultural children. It was significantly different (p<0.05) on the items of ‘eating-out types’ dietary habits between two groups. Education of mothers correlated with the ordinary children’s eating habits more than multi-cultural families. In the investigation of the food preference to Korean foods, ‘beef and radish soup’, ‘pumpkin porridge’, and ‘wheat flakes noodles’ were more preferred by children of ordinary families than by those of multi-cultural families (p<0.05). To conclude, nutritional education for their parents should be done and maintained to keep a right eating habit of children of multi-cultural families even at home.
The purpose of this study was to investigate the perception and preferences relating to Korean fast food among students of the College of Hotel management in Germany and utilize the analyzed data as baseline data for globalization of Korean food. A total of 74 students with food-related majors were asked to complete a survey after cooking and tasting seven different kinds of Korean dishes themselves. Exactly 97.3% of students reported that even though they never tried Korean food before, that Korean food is uncomplicated and interesting to cook, very healthy with abundant vegetables and rice, and suits their palate. Regarding the seven dishes of Korean food, the students stated that Gimbab (김밥) is most suitable for fast food and sorted Japchebab (잡채밥), Gunmandu (군만두), Bulgogidubbab (불고기덮밥), Makjeok (맥적), Bibibguksu (비 빔국수), and Musaengche (무생채), in descending order, regarding globalization of Korean food. Gimbab (김밥) and Gunmandu (군만두) both received the highest scores for being the most preferred Korean food. As students indicated Korean food as a dish they would like to cook again, recommend to friends and familyies, and buy if sold in Germany, this survey suggests that Korean food can be a competitive fast food in Germany.

Soy sauce, red pepper paste, Vietnam fish sauce, and star anise were applied to samples for their familiar and exotic characteristics. Significant differences among samples were observed in odor, taste, and acceptance (p<0.001). Soy (Soy sauce sample), RPPaste (Red pepper paste sample), and Soy_FishS (Soy sauce and Vietnam fish sauce sample) samples scored higher than Soy_StarA (Soy sauce and star anise sample) sample. On the other hand, there were no significant differences in intensities of saltiness, sweetness, and hot spicy flavor (p>0.05). Liked attributes in samples were saltiness, sweetness, chicken flavor, potato flavor, moistness of chicken, hot spicy flavor, and color. Disliked attributes in samples were hot spicy flavor, saltiness, and ginger flavor. Significant differences among samples were observed in familiar intensity and willing to try again (p<0.001). Soy, RPPaste, and Soy_FishS samples scored higher than Soy_StarA sample. Panels considered taste (46%) and nutrition (45%). Higher familiar intensity of sample was associated with higher acceptance in samples. In other words, familiarity of food affects acceptance of food. Therefore, familiar ingredients such as soy sauce and chicken can be used for development of Korean menu items considering taste and nutrition with enhanced Korean food acceptance in school-aged children.

This research was conducted to examine the awareness and preference levels related to MSG (monosodium glutamate) according to well-being dietary life pursuit attitude factors as well as to improve opportunities to meet value conscious consumption of well-being-oriented customers. According to well-being dietary life pursuit attitude factors, respondents were divided to three clusters, indifference type, well-being-oriented type, and active health action type. Sensory evaluations were carried out on soybean paste soup (Doenjang-guk) and seasoned spinach with different levels of MSG. In the results, 74.4% of all respondents preferred Doenjang soup with 2% MSG, 65.4% preferred seasoned spinach with the same ratio of MSG, and 35.9% preferred seasoned spinach with 0.5% MSG. Regarding the acceptance level of MSG, addition of MSG to improve taste was acceptable to the indifference type (cluster 1). On the contrary, active health action type did not prefer MSG, wanted natural seasonings despite high prices, and preferred to dine at restaurants that serve MSG-free foods. Based on this study, restaurant companies should segment their customers on the basis of MSG usage and establish their positioning strategies according to their concepts.
Digital games are conducted by the interaction between players and characters. Even if it’s same in the MOBA games, the characters in these games are not the ones which players can bring themselves in. But they do occur player’s semiotic process by controlling them. To prove this hypothesis, this study analyzes the correlation between MOBA game player and game character based on the player’s consumption behavior. The two MOBA games, League of Legends and Heroes of the Storm have been selected for the study, by the reason of semiotic difference between the characters. As focusing on the particular structures of MOBA games, this study can confirm the characteristic of this game genre.
쌀밥 위주의 식사에서 곡류 또는 두류를 혼합한 잡곡밥의 섭취량이 늘고 있는 추세로 백미(대조군)와 혼합잡곡(혼합잡 곡 1), 혼합잡곡에 정미성분을 가미한 잡곡(혼합잡곡 2)을 제 조하고, 이들의 항산화 활성을 갖는 성분들의 함량 변화와 기 호도 변화를 측정하였다. Ascorbic acid의 함량에서는 백미의 경우, 6.68 mg%, 혼합잡곡군은 각각 18.23 및 21.84 mg%로 잡곡을 혼합하였을 때 높은 함량을 나타내었다. Tocopherol류 의 함량에서는 백미는 1.26 mg%, 혼합잡곡 1군은 19.24 mg% 이었고, 혼합잡곡에 정미성분을 가미한 혼합잡곡 2군은 39.32 mg%로 가장 높은 tocopherol류의 함량을 보였다. Polyphenol 화합물의 함량에서 대조군은 2.20 mg%, 혼합잡곡군은 각각 14.38 및 21.91 mg%로 혼합잡곡군이 높은 함량을 보였다. Flavonoid 화합물의 함량은 대조군에서는 검출되지 않았지만, 혼합잡곡 1군은 42.45 mg%, 혼합잡곡 2군은 32.54 mg%로 잡 곡 혼합 시 높은 함량을 나타내었으며, 이들 성분들은 메탄올 추출물에서도 유사한 경향이었다. 기호도에서는 맛, 향, 색 및 종합적 기호도에서는 모두 정미성분을 첨가하였던 혼합잡곡 2군이 가장 높은 기호도를 보였고, 잡곡밥, 백미의 순으로 백 미보다는 곡류 및 두류 및 정미성분을 혼합하는 것을 더욱 선호하였다.
This study was conducted to examine the physicochemical properties and consumer acceptability of commercial Gangjeong. The samples used in this study were nine different Gang-jeong as commercial products. To accomplish this research, the physicochemical properties of nine samples, including moisture, crude lipid, sugar contents, acid value, color values, and texture, were measured. In addition, consumer panels evaluated the overall acceptability, appearance, flavor, sweetness, and texture of samples using a 9-point Likert type scale as well as the perceived intensities of sweetness and rancid odor by a 9-point Just-About-Right (JAR) scale. All data were statistically analyzed using One-way ANOVA, Principle Component Analysis, Hierarchical Cluster Analysis, and Pearson's Correlation Analysis. All physicochemical properties were significantly different among the samples (p<0.001). Analyses of consumer acceptability and JAR ratings of the nine samples showed significant differences (p<0.001).
