        The consumption of high-salt foods is an independent risk factor for increased hypertension. Thus, evaluating the relationship of taste sensitivity and pleasantness of high-salt foods such as Korean jang products, would help contribute to an understanding of salty food eating behaviors of the Korean rural elderly. This study aimed to verify the association between taste sensitivity and salinity of Korean jang products, and the preferences of food groups and nutrient intake in the rural elderly. We studied 269 elderly persons (males 83, females 186) aged above 65 years, residing in the rural area, Sunchang gun Jeonbuk. For each subject, a recognition threshold of 4 basic tastes and pleasant concentrations of NaCl were estimated using the sip- and–spit method. Taste preferences, frequency of intake of food groups, nutrient intakes, and salinity and sweetness of Korean jang products (Doenjang, Ganjang, Gochujang) were assessed. No association was found between salt taste recognition threshold and optimally preferred concentration of salt and salinity of Korean jang products. However, the sweet taste recognition threshold was positively related to the sweetness of Korean jang products. Also, the salinity of Doenjang positively correlated with the frequencies of food groups and nutrient intakes. That is to say that the sweet taste sensitivity was related to the sweetness of Korean jang products, but was not sensitive to the salty taste. The salinity of Doenjang correlated with the consumption of food and nutrient intakes. Taken together, these findings suggest the need for appropriate intervention and education to reduce the salinity of Doenjang, which is an important modifiable factor contributing to reducing sodium intake in the rural elderly.

        Stress has been associated with poor eating behavior and diet quality. Yet, the relationship between nutrient and food intake and perceived stress in Korean female adults has not been validated. The purpose of this study is to identify the relationship between nutrient and food intake and perceived stress in Korean female adults. This is a cross-sectional study based on the 2014-2015 Korean National Health and Nutritional Examination Survey data. This study investigated 2,010 female adults age 19~64. In this study, according to subjects' perceived stress, we classified subjects into very low-stress recognition group (VLSRG) (n=211), low-stress recognition group (VSRG) (n=1,223), high-stress recognition group (HSRG) (n=488) and very high-stress recognition group (VHSRG) (n=88). Daily nutrients and food group intake, food groups consumed (Dietary Diversity Score, DDS) were analyzed using data from the 24-recall method. The VHSRG had a larger proportion of subjects that were younger (p<0.0001), single (p<0.0001) and smokers (p<0.0001) compared to the VLSRG. Energy and food intake did not differ between the four groups. Percentage of subjects with protein (p=0.0322), vitamin A (p=0.0364) and vitamin C (p=0.0115) intake lower than the EAR (estimated average requirement) in the VHSRG were significantly lowest in the four groups. Also, food intake percentage from fruits and seaweed groups in the VHSRG were lower than other groups (p=0.0034, p=0.0015). DDS in the VHSRG (3.87) was significantly lowest in the four groups (p=0.0022). Results suggest that perceived stress in Korean female adults may by significant to consider in nutritional education programs.

        본 연구에서는 국민건강영양조사 1998년(제1기)부터 2008년(제4기 2차) 조사까지 총 5기의 식품섭취조사 자료를 이용하여, ‘들깻잎, 생것’, ‘들깻잎, 데친것’, ‘들깻잎, 찐것’, ‘들깻잎, 통조림’의 섭취자 및 섭취량에 대한 분석을 시행하였다. 특히, 국민건강영양조사의 식품 섭취량 자료로부터 합리적이고 객관적으로 들깻잎 섭취자의 수 및 섭취량을 산출할 수 있는 방법을 개발하였다. 들깻잎의 섭취량에 대한 분석은 국민건강영양조사의 전체 응답자의 평균 섭취량(응답자 평균 섭취량), 들깻잎 섭취자의 평균 섭취량(섭취자 평균 섭취량), 상위 5%의 극단 섭취자의 평균 섭취량(극단 섭취량), 남성 및 여성의 평균 섭취량, 20세 미만과 20세 이상의 평균 섭취량의 5가지의 항목으로 구분하여 분석되었다. 들깻잎 섭취자의 수 및 섭취량을 분석한 결과 들깻잎 섭취자의 수는 조사연도별로 균일한 분포를 나타내었으며, 1일 7-10명 중 1명이 들깻잎을 섭취한다는 결과를 도출하였다. 남성과 여성의 섭취자 비율은 여성이 남성에 비해 평균 1.22배 더 많았다. 응답자 평균 섭취량은 2.20 g이었으며, 섭취자의 평균 섭취량은 2005년에서 가장 높았고(21.40 g), 1998년과 2008년에 비하여 0.24 g 정도 증가하였다. 대부분의 조사연도에서 남성의 섭취량이 여성에 비해 높았고, 20세 미만의 섭취량은 전체적으로 20세 이상 섭취량보다 낮았다. 극단 섭취량 1998년에서 2005년까지의 섭취량이 평균 78.02 g으로 높았지만, 2007년과 2008년에는 평균 55.58 g로 낮아졌다. 들깻잎 섭취형태를 분석한 결과 ‘들깻잎, 생것’, ‘들깻잎, 통조림’, ‘들깻잎, 데친것’, ‘들깻잎, 찐것’ 순으로 응답자 수 및 섭취량 순위가 결정되었다. 그 중 ‘들깻잎, 데친것’, ‘들깻잎, 찐것’의 데이터가 충분치 않아 결과가 좋지 않게 나왔다. 또한 국민건강영양조사 식품 섭취량 데이터는 2007년부터 상시 조사를 시작하였으며, 그 이전에는 시행된 연도에 따라 조사 기간 및 계절이 1998년과 2001년에는 11-12월, 2005년에는 4-6월로 일관되지 않았기 때문에 연간 일일 섭취량을 판단하는 데 한계가 있을 것이라 생각된다. 본 연구의 결과를 확대하면 들깻잎 이외의 다른 농산물, 축산물, 수산물 및 이들의 가공품에도 적용할 수 있다. 이러한 식품의 섭취량에 대한 객관적인 정보는 농축수산물 및 가공식품을 통해 의도 또는 비의도적으로 섭취하는 화학 잔류물질의 위해성 평가를 위한 좋은 기초 자료가 될 것이다.

        This study was conducted to investigate the change in the anthropometric values, biochemical index, nutritional knowledge, food habits and nutrient intakes in obese children after a weight control program. The subjects of the study were 22 obese children with an obesity index over 120%. The children that participated in this study took nutritional education for weight control along with exercise once a week. The weight control program was conducted for 10 weeks. The BMI, WHR (Waist-Hip ratio), body fat (%) significantly decreased at the end of the weight control program. Total cholesterol and LDL cholesterol were also significantly decreased. The nutritional knowledge scores and knowledge score about obesity were slightly improved. Energy intake significantly decreased from 1768 to 1421 kcal. Intake of Ca, Na, K, vitamin A, vitamin B6, vitamin C and folate increased, while intakes of P, Zn, vitamin B1, vitamin B2, vitamin E and niacin decreased. The distribution of energy intake was significantly changed for the better. The percent fat consumed decreased from 26.5 to 19.7%. In addition, the distribution of energy intake in the meals was changed, where the percent calories consumed during lunch significantly increased from 31.4 to 40.1% and the calorie percentage consumed from snacks significantly decreased from 17.6 to 10.7%. In conclusion, the nutritional education in the weight control program, which was conducted for 10 weeks, was effective in improving the anthropometric values, biochemical index and nutrient intake although nutrition knowledge and eating behaviors only changed slightly. Thus, nutritional weight control programs for obese children should be continuously provided under the proper cooperation of a nutritional teacher at elementary schools.

        To determine the relationships between soybean food intake, dietary isoflavone intake, and osteoporosis incidence, questionnaire surveys, bone mineral density measurements, and dietary surveys by food record were performed with 19 postmenopausal women (57.6±7.3 yrs of age) in Daejeon city. The subjects were divided into two groups: an ‘osteoporosis group’ (OG, n=10) and a ‘normal group’ (NG, n=9). Mean age, height, and body weight were similar between the two groups but BMI was higher in OG than in NG. Mean age at menarche was not different between the two groups. However, mean number of childbirths was greater in OG than in NG and mean total period of lactation was shorter in OG. Mean exercise time per week was similar between the two groups, and mean time of sunlight exposure tended to be shorter in OG. Mean daily intake of calcium was lower in OG whereas sodium intake was higher in OG. Mean daily intakes of total soybean food (OG: 203.8±84.6 g/d, NG: 285.0±146.3 g/d) and total dietary isoflavone (OG: 29.1±14.3 mg/d, NG: 38.3±23.1 mg/ d) were not different between the two groups. However, greater intakes of soybean food and dietary isoflavone were associated with higher bone mineral density, respectively. The above results indicate that osteoporosis incidence tends to be influenced by BMI, maternal factors, dietary nutrient intakes, soybean food intakes, and dietary isoflavone intakes in postmenopausal women; although no significant differences in soybean food and dietary isoflavone intake were found between the two groups. This tendency implies that greater intakes of soybean food and dietary isoflavone lead to lower incidence of osteoporosis in postmenopausal women.

        The objective of this study was to investigate the consumption pattern of snacks-containing trans-fatty acid in adolescents living in the Kwang-ju area of Korea, and to analyze the relevance toward their eating behaviors, body composition, nutrient intakes, and consumption frequency of snacks-containing trans fatty acid. A survey questionnaire was developed in order to investigate general environmental factors, eating behavior, nutritional knowledge, and the consumption frequency of snacks-containing trans fatty acid. A total of 312 middle school students were surveyed. The collection rate was 97% and ultimately 282 cases were analyzed. Anthropometric measurements, body composition data, and nutrient intakes were also collected. The consumption frequencies for snacks-containing trans-fatty acid were negatively correlated with food behavior scores (p〈0.01) however, pocket money and snack intake frequency per day were positively correlated with consumption frequency. Also, snack consumption frequency had some correlation with the subjects' anthropometric measurements and body composition data such as total body water (p〈0.01), body protein (p〈0.01), body minerals (p〈0.01), and skeletal muscle mass (p〈0.01). Finally, the consumption frequency of snacks-containing trans fatty acid was significantly correlated with calcium intake (p〈0.05), it also showed correlations with vitamin A, retinol, β-carotene, and folic acid intake, although statistical significance was not verified.

        The purpose of this study were to investigate middle and high school students' food habits and food attitudes, and to assess student's nutrient consumption. A self-administered questionnaire was developed based on review of literature. The questionnaire consisted of three sections (food habits, food attitudes, and food consumption). The questionnaires were distributed to 4,050 students enrolled in 34 middle and high schools located in Seoul, Gyeonggi, and Gyeongnam provinces. A final response rate was 88.2% (3,570) excluding responses that had significant missing data. Data of the food habits and food attitudes were analyzed with descriptive analysis, 2-test, and t-test using SPSS WIN(ver.11.0). The student's self-reported food consumption data was converted into nutrient consumption using conversion factor. Many middle and high school students skipped breakfast and/or dinner. Approximately 29% of the students did not eat vegetables and fruits. Scores of the middle school student's attitudes(19.1) towards foods were significantly higher than those of the high school student's attitudes(18.7)(p〈.001). Student's nutrient intakes were estimated according to the student's self-reported food consumption data. The nutrient intakes were compared with DRIs(Dietary Reference Intakes: DRIs) for their age groups. The result of EAR(Estimated Average Requirement: EAR) cut-point method demonstrated 57.7% of middle school boys, 64.4% of middle school girls, 70.2% of high school boys, and 71.0% of high school girls did not meet EAR for Calcium. Additionally, it showed that 39.0% of middle school boys, 23.7% of middle school girls, 58.4% of high school boys, and 24.4% of high school girls did not consume EAR for Vitamin B1. 25.7% of middle school boys did not meet EAR for Vitamin B2, while 44.4% high school boys did not satisfy EAR for Vitamin B2.

        This study was conducted to investigate the food habits and dietary intakes of University students in Busan areas. The survey was carried out by self-questionnaires with 130 male and 156 female students. The results obtained were as fellows. 1. 95.3% of male and 76.4% of female students answered they are moderate or healthy. The rates of alcohol drinking in male and female students were 94.5% and 81.0% and the rates of smoking were 73.2% and 2.0% respectively 34.6% of male and 56.9% of female students didn't regular exercise. 2. 21.3% of male and 10.5% of female students were satisfied with their current body image and 74.3% of female students wanted thinner figure. Male students attempted to weight control by exercise and females did by exercise and fasting. 3. The average BMI of students were 22.60 in males and 19.53 in females respectively and 78.0%, of female students were underweight. 4. Breakfast was skipped in 79.5%, of male and 83.7% of female students and it appeared male students eat faster than female students. 5 Male students preferred beverage and noodles and females preferred bread, biscuit, snack and beverage as snack food and female students had a higher tendency to enjoy snack time. The frequency of eating out was higher in female students and the standard of food choice was preference > price > convenience > nutritional value. The favorite dishes were meats > poultry > fruits > fishes, cereals, noodles in male and fruits > meats > cereals > poultry > noodles > fishes in female students. 6. The average energy intake were 1715.70kca1 in male and 1588.71kcal in female students respectively and the intakes of Ca, vitamin A and B2 were lower than RDA in male and female students.

        This study was designed to investigate food consumption patterns and nutrient intakes of college students, divided into subgroups of normal weight men (no.=140), normal weight women (no.=101), and underweight women (no.=155) by body mass index. Frequency of food eaten, nutrient intakes from each meal, percentages of RDAs, and nutrient densities were analyzed using 24-hour recall records. It was very interesting in these results as follows. Normal weight men ate on the whole more frequently than other groups. Underweight women had higher intakes of nutrient than did normal weight women. However normal weight women consumed food of greater nutrient density than did other college students. Consequently, it is desirable to suggest nutrient density of food than learn RDAs for adequate diet in nutritional education programs.

        The purpose of the present study is to collect information in terms of the frequency and amounts in frequently consumed dishes. We conducted the secondary analysis from '93 Korean National Survey. Mainly informations about 2-day food records were used to investigate dish intakes and to compare different food patterns by area. Amounts of total daily intakes of dishes per capita are 1,741.46g in nationwide, 1,722.03g in large city, 1,712.46g in small city, 1,808.73g in rural. The dish consumed in largest quantities per capita per day is the rice which amounts is 481.67g, 27.66% of total intake. Fruits and cabbage were consumed in large quantities too. Kimchi made of cabbage have the highest number of frequencies. Number of frequencies in rice, fruits, and milk showed high, too. Dish groups are classified by the cooking method. Some dishes in several dish groups have small number of frequencies and small amount of quantities. Some dishes in the top list are not included in the 30 dishes list. There should be some studies about validity and reliability of the dish list, using individual dietary assessment methods.

        This nutritional survey was conducted from February 8 to March 10, 1994, in order to investigate the nutritional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of urban middle-aged women living in Daegu and Pohang district. The subjects of this survey were 164 urban middle-aged women living in Daegu and Pohang Area. The completely answered questionnaires were analyzed for nutritional knowledge, food habits, nutritional attitude, food preference and nutrient intakes of urban middle-aged women. The results obtained are summarized as follows: The subjects had a high level of perceived knowledge (82.9%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.1%. The average nutrition knowledge score was 8.26 out of possible 15 points, and food habit score was 5.50 out of 10 points. Most of the subjects belonged to 'Fair' or 'Good' food habit group, which is considered to be relatively good. With increasing age, the percentage of perceived knowledge, accuracy, and nutrition knowledge score were getting lower. But food habit score and nutritional attitude score were getting higher at 40's women than 30's women. The correlation between nutritional knowledge score and food habit score was low (r=0.0748). The correlation between nutritional attitude score and food habit score was low, too (r=-0.0653). Food preferences for kimchi, potato, cooked rice, beef, noodle, cabbage and milk were high. Average calorie and protein intake of the subjects were 1967.4±27.8 Kcal, 75.8±1.4 g respectively. Carbohydrate, protein and fat ratio on energy composition was 63.3%:15.5%:21.2%.

        The purposes of this study were to: (a) identify the changes in food patterns for last 20 years; (b) analyze the factors affecting on the changes in food patterns; (c) investigate the impact of changes in food patterns on nutritional composition of the diet and diet-related health problems. A questionnaire was developed and mailed to 30 country members of the International Federation for Home Economics(IFHE) regional representatives. The response rate was 60%; simple descriptive and content analyses indicated that the significant differences of food consumption pattern were existed between western and eastern countries. Traditional food consumption patterns were maintained even though each countries' food consumption patterns have been dramatically changed due to the development of food technology and industrialization. The factors most frequently affecting on the changes in food patterns were nutrition and heallth-related educations. The food pattern changes have considerable effect on the nutritional composition of the diet among countries. The major diet-related health problems with nutrient deficiency were reported by underdeveloped countries such as India. In contrast to the above, in the developed countries, the adult disease related to the nutrition have been increased, while the developing countries such as Korea have the problems with nutrient deficiency and adult diseases simultaneously.
