        우리나라의 밀가루 소비 실태를 1986년과 1987년도를 대상으로 조사하였다. 아울러 제분공업의 현황도 간단히 서술하였다. 밀가루 소비 실태는 연도간에 큰 차이를 보이지 않았으므로 1986년도를 중심으로 분석하였다. 제분회사에서의 밀가루 총판매량은 1,556,891톤이었고 이 중 51.1%는 대리점으로, 나머지는 대량생산업체로 판매되었다. 밀가루의 주용도는 제면, 제과, 제빵, 막걸리, 일반(가정용, 수퍼마켓, 소매점)이었다. 다목적 밀가루의 1등급과 2등급은 제면과 막걸리용으로 이용되었고, 제빵에는 강력밀가루 1등급이 주로 사용되었다. 제과용 밀가루로는 다목적 밀가루 1등급이 주로 사용되었다.

        Macrophomina phaseolina균(菌)을 이용(利用)하여 살균제 Triadimefon의 밀 품종 Kharchia와 Lal Bahadur에 있어서 수확후의 잔류량을 조사한 결과 살포식물의 밀짚에서는 Triadimefon이 검출되었으나 밀 종자에서는 검출되지 않았다. 잔류량 조사를 위해 개발된 박층(薄層) 크로마토그라피에 의하여도 동일한 결과를 얻었다. 기주체내에서 Triadimefon은 Triadimenol로 전환되었다.

        소맥(小麥) 집단(集團)에 있어서 조숙(早熟) 다수성(多收性) 계통(系統)의 효율적(效率的)인 선발(選拔)에 관(關)한 기초자료(基礎資料)를 얻고자 중숙(中熟)조숙(早熟)(올밀/새밀), 만숙중숙(中熟)(Naphal/청계밀) 두 조합(組合)을 공시(供試)하여 집단(集團)의 유전적(遺傳的) 변이(變異)를 조사(調査)하고 경로분석(徑路分析)을 한바 얻어진 결과(結果)는 다음과 같다. 유전변이계수(遺傳變異係數)는 올밀새밀 조합(組合)에서는 수획지수(收獲指數), 립수(粒數), 수량(收量), 간장(稈長)의 순(順)으로, Naphal청계밀 조합(組合)에서는 수획지수(收獲指數), 간장(稈長), 1,000 립중(粒重)의 순(順)으로 높았다. 유전력(遺傳力)(협의(狹意))은 양조합(兩組合)에서 출수기(出穗期), 성숙기(成熟期), 간장(稈長), 수획지수(收獲指數)가 높았고(0.525~0.808) 립수(粒數), 수량(收量)은 낮았다. 유전획득량(遺傳獲得量)(%)은 출수기(出穗期), 성숙기(成熟期)가 양조합(兩組合)에서 모두 높았고 수량(收量)은 낮았다. 1,000립중(粒重)의 유전획득량(遺傳獲得量)(%)은 Naphal청계밀 조합(組合)에서는 높게 나타났다. 수량(收量)과 수수(穗數) 및 립수(粒數)와는 높은 정(正)의 유의상관(有意相關)을 보였고 수량(收量)에 대(對)한 직접효과(直接效果)는 수수(穗數)가 가장 컸고 다음은 립수(粒數)였다.

        우리나라의 보리와 밀품종에 보리줄무늬 모자이크 바이러스(Barley Stripe Mosaic Virus)병이 발생하는지의 여부를 조사하기 위하여 국내에서 수집한 겉보리 쌀보리, 맥주맥, 밀등 51개 품종 또는 계통을 공시하여 Hamilton과 Carroll의 혈청학적배아검정법으로 이들의 BSMV검정을 실시하여 다음과 같은 결과를 얻었다. 1. 겉보리, 쌀보리, 맥주맥 그리고 밀을 포함한 34개 수집종에서 BSMV가 검출되므로서, 우리나라의 보리와 밀품종에 BSMV가 발생하고 있음이 처음으로 확인되었다. 2. BSMV가 검출된 품종의 종자감염율은 최저 에서 최고 를 나타낸다. 전체적으로는 총검정립수 2448립중 157립에서 BSMV가 검출됨으로서 감염율은 약 를 나타낸다. 3. 혈청학적배아검정시 비특이반응은 관찰되지 않았다. 4. 혈청학적배아검정법은 사용하기에 간편하고 결과 판정을 신속, 정확하게 할수있어 대량의 종자와 유묘를 대상으로 BSMV를 검정하는데 매우 유용한 방법으로 생각된다.

        맥류마름병이 1977년에 격발하여 심한 피해를 가져왔다. 본 병해에 대한 피해상황을 검토하기 위해 시험을 실시하여 다음과 같은 결과를 얻었다. 1. 수원지방을 비롯하여 유성, 예산, 용인에서 약 가 맥류마름병에 감염되어 있었다. 2. 우리나라 우수 육성계통 자연감염된 것 중 저항성계통은 없었으며 중도저항성계통은 육성 3호인 반면에 S. 155호의 2계통이 이병성계통으로 나타났다. 농림 외 15계통은 중간성 및 중도이병성이었다. 3. 9개의 국내 장려품종에 대하여 인공접종을 하였던 바 대부분 품종이 고사하였고 자양각은 약 가 형성되었다. 4. 파종기별 발병율은 파종기가 빠를수록 발병이 심한 경향을 보였고 수량조사는 본 병에 감염되었을 때 약 의 감소를 가져왔다.

        Early in the growing season of 1976, rain and cool weather favored the blighting of leaves of young plants of barley by Fusarium nivale. The fungus was recovered in culture from infected foliage, and the perithecia of Calonectria nivalis were demonstrated to be present as well as the Fusarium state. On 22 April 1976, in Suweon, plants pulled at random revealed stem lesions from which F. nivale was cultured. On S May 1976 near Kwangju. Perithecia were found embedded within leaf sheaths and blades of mature wheat and barley plants. It was evident in the 1976, 1977 season that Fusarium(Calonectria) nivale was common but unrecognized as an early season pathogen of barley in Korea. The probable source of primary inoculum was the infected refuse from the previous season's barlry and wheat crops. Stem lesions caused by this fungus were considered to he detrimental to the maximum yield of barley or wheat,

        산지별로 채취된 쌀, 보리, 밀에 함유된 잔류농약(유기수은제 및 유기감소제)을 Dithizone법과 GLC법으로 비교분석한 바 이에서 얻은 결과를 요약하면 다음과 같다. 1. Recovery는 유기수은에 있어서 TLC법.에 비하여 GLC법이 양호했고, 유기감소제는 GLC법으로 평균 약 였다. 2. 시료중 유기수은의 잔류수준은 Dithizone법으로 쌀에 있어서 ND-0.053, .보리는 ND-0.051, 밀은 ND-0.033pm이었고, GLC법으로는 쌀은 trace(less than 0.002ppm)-0.036, 보리는 trace-0.030, 밀은 trace-0.025ppm으로 GLC법이 다소 낮은 수치였다. 3. 유기감소제의 잔류수준은 GLC법으로, 쌀에 있어서 BHC(trace-0.0090ppm), DDT(ND-0.0001ppm), Aldrin(trace-0.0032ppm), Heptachlor(race-0.0031ppm), Dieldrin(ND-0.0092ppm), Endrin(ND-0.0057ppm)이었는데, 수은화합물과 모두 공인최대허용량에 월등히 미달되는 안전수준이었다. 4. Column packing은 유기수은분리에는 -DEGS/chromosorb-W,A,W., 유기감소제에는 -DC-200/chromosorb-W,A.W.,가 적당하였는데, 유기수은제의 injection sample의 조제에 있어서 ?를 겸한 정제와 reduced glutatione에 의한 유출처리는 ghost peak의 소거와 성분 peak의 완전분리에 효과가 컸으며 검출감도도 높았다.

        1. 본 시험은 이병된 식물의 잔재물 또는 토양중에 있는 맥류적미병균(Gibberella zeae (Mont.) Sacc.)이 14종의 작물유묘에 미치는 병원성을 검정하고자 하였다. 2. 이들 작물은 병원균을 인공적으로 접종한 토양, 그리고 맥류적미병의 발생이 자연적으로 심했던 곳과 경했던 곳의 토양에 공시하여 본균에 대한 이병성을 검정하였다. 3. 인공접종시험에 있어서 보리, 밀, 호밀, 콩, 벼, 메밀, 옥수수, 목화, 녹두는 이병성이었고, 팥, 참깨, 수수, 무, 배추 등은 저항성을 나타내었다. 4. 인공접종시험에 있어서, 이병성작물의 발아율은 벼, 옥수수, 목화를 제외하고 접종토양과 배접종토양에 있어 현저한 유의차가 있었다. 아시전립고는 보리, 옥수수에서만, 아시후립고는 호밀, 밀, 벼, 메밀, 보리, 옥수수에서 일어났다. 이병성작물의 대부분은 제2차근이 거의 부패하였고 제1차근도 부패 내지 변색되어 있었다. 이병성작물은 초장이 접종토양과 비접종토양에 있어 현저한 유의차가 있었다. 5. 자연상태에서 맥류적미병의 발생이 심했던 곳과 경했던 곳의 토양에 보리, 밀, 호밀을 파종하였으나 본균에 의한 침해나 영향을 발견할 수 없었다.

        This study was undertaken to find out national level changes in area, production and yield of two major staple crops wheat and potato in Bangladesh. The time series of secondary data was collected from yearbook of agricultural statistics under Bangladesh Bureau of Statistics (BBS) and used for the statistical analysis during the thirty-year period of 1989/90-2018/19. Moreover, selected data were divided into two groups and regarded as segment (1989/90-2003/04, 2005/06-2018/19) to examine the significant level in each crop. The results of different statistical techniques showed that wheat cultivated area and production were satisfactory level but yield was not too much standard in context of country demand. In the case of potato, yield as well as cultivated area and production were crossed the significant level and fulfilled the demand of population. In recent few years, the ratio of potato production rapidly increased, compared with the cultivation area. Based on segment (period) analysis, at the first half wheat production was always below, compared with the area but second half nine years saw slightly improved. On the other hand, in both segment potato growth rate in area, production and yield were increased throughout the study period. The highest instability was also shown in area, production and yield of potato during whole as well as segmented period. There was always a positive relationship between country’s demand and supply. Both wheat and potato are considered as staple crops and based on the productive capability over cultivated area, potato showed the higher productivity for the country of Bangladesh. In consequences, potato consuming demand also rapidly increased all over the country, compared with past respectively.

        Wheat is an economically important cereal worldwide and is a staple food in many countries. Extensive researches have been performed on the nutritional value and antioxidant potentials of sprouts of legumes like soybean, however very limited studies have been carried out on the sprouts of Korean wheat cultivar. The objective of this study was to investigate the phytochemical and antioxidant potentials of Korean wheat sprouts. The sprouts were grown for 10 (WS-10), 20 (WS-20), and 30 (WS-30) days at room temperature. The pH, color, chlorophyll, free amino acid, 1,1-diphenly- 2-picrylhydrazyl (DPPH), and total polyphenol content of the sprout samples were determined. The pH of sprouts was increased in the older sprouts. Color values were significantly influenced by the age of sprouts. The chlorophyll content was lowest but the total free amino acid content was highest in WS-30. On the other hand, the DPPH free radical scavenging potential and total polyphenol content were lower in WS-30. The results suggested that Korean wheat sprouts could be a potential source of nutrients and natural antioxidants.

        This study investigated the relationship analysis between wheat cultivated area and the climate data in Sindh province of Pakistan. The extraction of wheat cultivation area is detected using the remote sensing technique. The analysis of the study area reveals the annual mean maximum and the mean minimum temperature tends to risen with a large range of changes. The trend of average annual precipitation showed a large change, thus it was confirmed that the increase and decrease yield of wheat were depend on the various growth periods of wheat crop. The most influential factors are the annual mean precipitation and the annual mean minimum temperature at the seedling stage of wheat crop. The annual precipitation, annual mean maximum, and the annual mean minimum temperature are significant at the growth period. The annual mean maximum and the annual mean minimum temperatures are significant during the ripening stage of wheat crop in the study area. The results of the study showed that wheat production varies with climate change in the Sindh province. In addition, this study will be used as an important basis for solving crop cultivation areas and production problems caused by climate change in the region.

        This study examined the efficiency of satellite images in terms of detecting wheat cultivation areas, and then analyzed the possibility of climate change through an correlation analysis of time series climate data from the western regions of Gyeongnam province, Korea. Furthermore, we analyzed the effect of climate change on wheat production through a multiple regression analysis with the time series wheat production and climate data. A relatively accurate distribution was achieved on the wheat cultivation area extracted through satellite image classification with an error rate of less than 10% in comparison to the statistical data. Upon correlation analysis with time series climate data, significant results were displayed in the following changes: the monthly mean temperature of the seedling stage, the monthly mean duration of sunshine, the monthly mean temperature of the growing period, the monthly mean humidity, the monthly mean temperature of the ripening stage, and the monthly mean ground temperature. Accordingly, in the study area, the monthly mean temperature, precipitation, and ground temperature generally increased whereas the monthly mean duration of sunshine and humidity decreased. The monthly mean wind speed did not display a particular change. In the multiple regression analysis results, the greatest effect on the production and productivity of wheat as climate factors included the annual mean humidity of the seedling stage, the annual mean temperature of the wintering period, and the annual mean ground temperature of the ripening stage. These results demonstrate that there is a change in wheat production depending on the climate change in the study area. in addition, it is determined that this study will be used as important basic data in the resolution of food security problems based on climate change.

        Burdock powder (BP) has shown diverse functional activities; thus, it seems a good way to increase its consumption by incorporating BP into suitable food products such as cookies. Studies were carried out on cookies prepared by incorporating BP (2%, 4%, 6%, and 8%) into wheat flour. The cookie dough and cookies were evaluated for their physical, chemical, and sensory characteristics. The pH and density of cookie doughs ranged from 6.70-6.85 and 1.19-1.21, respectively, with no remarkable differences. Moisture content and spread factor of cookies appeared to increase with higher content of BP in the formulation but did not show significant differences (p>0.05). For color values of cookie surface, L*, a*, and b*-values significantly decreased as a result of BP substitution (p<0.05). The cookies became crispier as indicated by the reduction in the breaking strength value from 26.71 to 17.83 N. 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly increased (p<0.05) with higher substitution of BP, and they were well correlated. Hedonic sensory results indicated that cookies supplemented with 2% BP received the most favorable acceptance scores for all sensory attributes evaluated. Overall, cookies with BP could be developed with improved physicochemical qualities as well as consumer acceptability.

        Hexaploid wheat (Triticum aestivum L.) exceeds about 30% of the world’s cereal production and cultivated over 220 million ha worldwide. Heat stress during the grain filling period gives detrimental effect on crop yields and has emerged as a serious problem throughout the world. Korean wheat cultivars that were released since 1960s were developed for various aims such as winter hardness, earliness, and pest resistance, etc. However, heat stress resistance is an emerging target for wheat breeding nowadays. Selected 11 Korean wheat cultivars (“Baegjoong”, “Dajung”, “Goso”, “Hanbaek”, “Jokyung”, “Joeun”, “Jopum”, “Keumgang”, “Olgeuru”, “Sinmichal”, “Uri”) were exposed to high temperature from DAF (days after flowering) 9~13. In this study, plant responses to heat stress as measured by reduction ratios of total chlorophyll contents, 100 seed weight, shoot dry weight can be translated into degree of tolerance. Therefore, these parameters can be used in wheat breeding for heat tolerance during grain filling period. The obtained results allow us to classify cultivars for heat stress tolerance. Pedigree information of Korean cultivars was shown that wheat line of either tolerant, moderate tolerant, or susceptible trait is succeeded to their descendent, which enable breeders to develop heat stress tolerant wheat by appropriate parental choice.

        Yellow alkaline noodles were prepared with various Korean wheat cultivars including different protein and amylose contents and made from two types of noodle machines. Korean food companies and restaurants generally used noodle machine made in Korea, whereas research institutes mainly practiced with noodle machine made in Japan. Noodle dough sheet from Korean machine showed 5% higher water absorption and 30 min shorter resting period than the noodle dough from Japanese machine because of the difference of size and weight of roller in two types of the machines. In 15 Korean wheat cultivars, thickness of noodle dough sheet was positively correlated with protein content and mixograph water absorption regardless of both types of the machines. Cooked noodles from Korean machine showed higher hardness and lower springiness than noodles from Japanese noodle machine, but difference in cohesiveness of cooked noodles was not found between two different noodle machines. In the three Korean wheat cultivars with different protein content, thickness of noodle dough sheet was also positively correlated with protein content, SDS sedimentation volume and mixing time of mixograph in both types of the machines. The more protein content increased, the more hardness of cooked noodles increased regardless of both types of the machines. However, springiness and cohesiveness of cooked noodles were not significantly correlated with protein content. In waxy and partial waxy wheat cultivars, lightness of noodle dough sheet from Korean noodle machine positively correlated with amylose content. Amylose content and setback in pasting properties were positively correlated with hardness, springiness, and cohesiveness of cooked noodles while both damaged starch and breakdown were negatively correlated with those.

        Eleven RAPD primers were assessed to analyze genetic diversity of Korean wheat varieties and to develop DNA marker for cultivar identification. The average of the number of polymorphic bands was 5.2 and PIC values showed 0.48, respectively. Ten major clades were presented by phylogenetic analysis. Three cultivars containing Uri, Hanbeak and Jonong were distinct from the others in the phylogenetic dendrogram. Seven cultivar-specific fragments were detected from 11 RAPD fingerprinting among 35 wheat cultivars and they were sequenced. Four Korean wheat cultivars, Eunpa, Jopoom, Yeonbaek and Jeokjoong, were identified newly by four markers, 84, 173, 174 and KWSM011. We convince that these new DNA markers are useful for cultivar fingerprinting and are applied to marker-assisted selection in wheat breeding program.

        Wheat is one of major crop and wheat flour is used to various end-use products such as bread, cookies and noodles due to its unique characteristic of it as elasticity and viscosity. Wheat consumption has been generally increasing in not only US and Europe but also Korea. Nevertheless, gluten proteins in wheat endosperm are cause of allergy by food ingestion. Hence, studies on the allergy have been conducting and have been attracting public attention. Herein, we report studies on research trend of the issue with research papers over the last decade for suggestion of future research direction. Since 2012, studies on allergy of gluten proteins have been dramatically increased based on the number of published papers related to the issue. As results of research activities by country, the Europe accounted for 60% corresponding to the number of papers. Next US (13%), Japan (9%), China (5%), and Korea (2%) came. In Korea, studies on allergy of gluten protein are less studied. In the field of studying of gluten allergy, there are two major technologies as preclinical technology and genome research accounted for 58% and 26%, respectively. In Korea, the study on glutenin proteins which is closely related to wheat allergy is actively performed. Therefore, it can be expected that research will be become more active.

        Mixolab is suitable to evaluate mixograph and farinograph for testing dough rheology and amylopgraph for properties of starch pasting with a view to analyze protein and starch quality at the same time. Mixolab analysis revealed that water absorption and dough development time of Korean wheat cultivars were similar to it of soft wheats and flour while dough stability and protein weakening of Korean wheat cultivars were similar to it of hard wheat and strong flour. Also, starch properties of Korean wheat cultivars showed similar properties of hard wheats. There was a significantly positive correlation between mixolab and mixograph in the water absorption of dough, whereas no correlation was observed between them in dough development time and stability. Furthermore, maximum viscosity of starch and breakdown in amylopgraph were correlated to stabilities of pasting and cooking and setback in mixolab. Resultantly, in mixolab, properties of dough and protein highly and positively correlated to loaf volume, hardness of noodles, and size of cookies i.e. diameter. Moreover, positive correlation was identified between viscoelasticity of noodles and properties of protein, pasting, and setback in mixolab.

        This study was executed to establish a basis of evaluation of starch properties of Korean wheat cultivars e.g. damaged starch, swelling, and pasting properties for Korean wheat breeding program. Damaged starch is critical evaluation factor for flour milling related industry because it influences water absorption and color of dough for processing quality and preference of end-use products. The present results revealed that there was significantly high positive correlation between the results of damaged starch analysis by amperometric (SD-matic) and enzymatic (Megazyme assay) methods. Evaluation of damaged starch must be considered as one factor to evaluate properties of starch due to its accuracy and a stable efficiency for the wheat breeding program. Properties of swelling and pasting of dough were important for cooking time and texture. Nevertheless, it was impossible to evaluate starch extracted from flour in the wheat breeding program i.e. small amount of flour or small number of spikes Comparison of results of evaluation of properties of swelling and pasting with starch or flour, the evaluation using flour positively correlated with the other evaluation using starch. In addition, swelling evaluation must be considered to apply for the wheat breeding program because the result of evaluation of swelling property, which possible to evaluate with low efficiency, and the quantity of a sample is highly under positive correlation with paste peak viscosity. In the future, studies using NIR (Near Infrared) analysis must be necessary to evaluate starch properties with grains in early generation lines for improvement of wheat breeding program.
