        This study was conducted to examine contents of total acid and free amino acids in the Demi-glace with added quantity of Omija extracts. Firstly, The level of Total acid content of Demi-glace sauces was 1.08~1.89% and Omija extracts was 2.77~7.24%. The more Omija extracts added, there was the higher total acid contents. Sauces and extracts of 5% Omija was the highest. Secondly, Total free amino acids contents of control was 2518.52mg%, and Omija sauces was 2261.52~2894.14mg%. 2% Omija sauces was the highest among them. Hydroxyproline of total 34 free amino acids was the highest, and Glutamic acid 158.42mg%, Proline 78.90mg% was next in order. Arginine was the highest with 27.40~34.40mg% among 9 essential amino acids contents. Glutamic acid was the highest contents with 123.18~158.42mg%. Compared to control's(0.41mg%), Omija added group was 20.63~27.82mg% and it was the highest increase. While other 15 amino acid was analyzed, Hydroxyproline was the highest contents with 1,737.22~2,205.80mg%. Compared to control group(15.63mg%), proline was 57.01~78.90mg% Omija added group and it was increased with the highest contents. In essential amino acid, flavor enhancing amino acid and other amino acid were increased and the highest contents with 2% added Omija sauce. Thirdly, sensory characteristics of Demi-glace sauces based on overall preference, It was find that 2% added Omija was the best. 2% added was the best for color, flavor, taste, texture, overall acceptability(P〈.001). In terms of Demi-glace sauces' gender preference, male and female people liked 2% added Omija color, flavor, taste, texture, overall acceptability. It was find that there was no significant differences between male and female.

        A variation of free sugar and free amino acid contents of apples during the ripening period was determined by HPLC and amino acid analyzer. The research results are as followes: Fructose, glucose and sucrose were present in the apples. The contents of fructose was the highest, followed by the order of sucrose and glucose. The contents of total sugar in Red fuji was relatively higher than that of Fuji. During the ripening period, the contents of fructose increased conspicuously for the harvesting season and then it decreased gradually. The contents of glucose increased gradually for the harvesting season and then it somewhat decreased. The contents of sucrose increased continually, while, the contents of total free sugar reached the maximum for the harvesting season and then it decreased gradually. A variation in the contents of free amino acid and composition during the ripening period didn't make a significant difference. The major free amino acid of the apples was in the order of aspartic acid, serine, threonine, glutamic acid, histidine, arginine, and alanine. During the ripening period, aspartic acid, threonin, serine, alanine, histidine, and arginine increased gradually. Especially, alanine, histidine, and arginine increased remarkably after the the harvesting season. Glutamic acid, valine, isoleucine, and leucine didn't show much change. The contents of total amino acid increased little by little as the apples ripened, dranstically increased during the harvesting season and slowly increased or slightly decreased after the harvesting seasom.

        The research was investigated to collect basic data in order to consumption expansion and processed product of Erythronium japonicum. Leaves of Allium japonicum were divided into 17 kinds of amino acid and 38 kinds of free amino acid. Total content of amino acid and free amino acid showed 2,342 mg・100g-1 and 225 mg・100g-1, respectively. Reducing DPPH radical scanvenging half, quantity (IC50 value) of Erythronium japonicum. extraxt 1,000 mg・L-1 were showed the methanol extract (30.8 mg・L-1), ethanol extract (34.1 mg・L-1), hot water extraction water (47.5 mg・L-1). Nitrite scavenging activity in 1,000mg・L-1 of Erythronium japonicum leaf extraxt was followed the ethanol extract (75.0%), methanol extract (74.1%), hot water extraction water (70.3%), respectively. Methannol extract of Erythronium japonicum leaf at 400mg・L-1 inhibited over 99% lung cancer cell (Calu-6), breast cancer cell (NCF-7) and colon cancer cells (HCT-116). Likewise, investigated data will be utilized basic material, and intake of Erythronium japonicum will be enhancing physiological activity, and will be considered to prevent and remedy to lung cancer, breast cancer and colon cancer.

        This study was conducted to gather the basic data on the alpine leek (Allium victorialis) for the expand of consumption and the production of its manufactured goods. Amino acid content in alpine leek leaves and various physiological activities were examined. Seventeen component amino acids and 38 free amino acids from alpine leek leaves were analyzed, and the total contents were 2,693.28 mg/100g for component amino acids and 535.39 mg/100g for free amino acids. Total phenolic compounds in the leaves of alpine leek showed the highest level from the methanol extract (37.7 mg/l), and followed by ethanol extract (31.9 mg/l) and hot water extract (25.4 mg/l). Total flavonoid contents in 1,000 mg/l extract was the highest in the methanol extract (22.2 mg/l). DPPH radical scavenging activity at 1,000 mg/l extract was high in the order of ethanol extract (51.6%), methanol extract (47.3%) and hot water extract (37.2%). nitrite radical scavenging activity Methanol extract from Allium victorialis leaves was the highest nitrite radical scavenging activity (79.5%). Hyperplasia suppression of lung cancer cells (Calu-6) and gastric cancer cells (SNU-601) by the methanol extract from the bulb of alpine leek were 99.9% in the extracting concentration of over 200 mg/l. No significant difference in antimicrobial activity among the 3 different solvents and extract concentrations was observed, and the inhibition zones against the gram-positive and negative microorganisms were ranged from 8.23 to 10.15 mm. It was concluded that physiological activities in a human body could be improved by the intake of alpine leek as a pharmaceutical material, and that it would be useful for the prevention of health risk such as lung and gastric cancers.

        Amino acid composition in grain of Korean native rice core collections was evaluated to identify the useful genotypes for quality enhancing rice breeding and value-added food development. Large variations were found in the contents of 16 amino acids among 388 genotypes tested with 14.9% of the minimum coefficient of variation (CV), and the contents of methionine and histidine showed the highest CV and the second high, respectively. The average values of total amino acid, total essential amino acid, lysine and threonine contents of Korean native rice collections were almost similar with those of cultivating japonica rice, Saechucheong. Among 388 native core collections Baekkokna, Daesona and Saducho were identified as high amino acid germplasm in total amino acid, total essential amino acid, lysine and threonine contents. And Seoksanjo and Sodujo were identified as low amino acid collections. Rice collections showing purple apiculus color tended to distribute in lower serine, proline, glutamic acid, glycine, alanine, valine, leucine, phenylalanine, arginine, and total amino acid contents compared with those of yellowish apiculus color collections. The glutinous rice collections showed the tendency of higher contents of serine, glutamic acid, alanine, valine and leucine compared with those of non-glutinous collections.

        Effects of acute anoxia on carbohydrate hydrolytic enzyme activities and free amino acid contents in malt were examined. Malts were prepared with barley grains germinated for 7 days which contained the highest levels of amylolytic and(1-3,1-4)-β -glucanase activities. α -Amylase and β -amylase activities in malts were not significantly affected by anoxia for 5 or 10 h.(1-3,1-4)-β -Glucanase activity, however, decreased about 7 to 10% by anoxia for 5 or 10 h. Alanine and ~gamma -aminobutyric acid content changed drastically. Alanine contents in malts increased by 2.2- and 2-fold, and ~gamma -aminobutyric acid contents by 1.4- and 1.9-fold under anoxia for 5 and 10 h, respectively.

        발아후 일주일간 생육한 보리 유식물체를 이용하여 혐기처리, 저온처리 및 기계적 상처에 대한 보리 식물체의 반응양상을 유리아미노산과 유리당 함량의 변화를 분석하여 조사하였다. 혐기적처리에 반응하여 함량의 변화가 뚜렸하게 나타나는 아미노산은 alanine, GABA, glutamic acid였다. Alanlne과 GABA함량은 10시간까지의 혐기처리에 의해 급속히 증가하였으나 glutamic acid 함량은 크게 감소하는 경향을 나타내었다. 상처에 의한 alanine, GABA, glutamic acid반응 양상은 혐기처리와 유사하였으나, 함량변화 정도는 혐기처리에서 보다 훨씬 낮았다. 저온처리에 의하여 지상부와 뿌리 중의 GABA 함량이 증가하였다. 혐기적 처리에 의하여 지상부의 유리당함량이 변화하였으며, glucose나 fructose보다는 sucrose의 함량변화가 상대적으로 크게 나타났다
