        We performed a study to examine the association between diet quality and nonalcoholic fatty liver disease (NAFLD). Our study included 3,586 women aged 40-64 years who participated in the sixth Korea National Health and Nutrition Examination Survey. The study subjects were classified into the NAFLD group (n=816) and the normal group (n=2,770) using the hepatic steatosis index. The anthropometric indices, blood profiles, and dietary intake data of the subjects were obtained. The waist circumference, body mass index, and the serum levels of triglycerides, fasting blood sugar, HbA1c, and systolic and diastolic blood pressures were higher in the NAFLD compared to the normal groups (p<0.001, respectively). The intakes of protein (g/kg body weight, p<0.001), potassium (p<0.001), and vitamin A (p=0.006) were significantly lower in the NAFLD group. It was observed that the higher the total Korean Healthy Eating Index score, the lower the risk of NAFLD. A reverse relationship was shown between the NAFLD risk and the intakes of total fruits, total vegetables, vegetables excluding Kimchi and pickled vegetables, meat, fish, eggs and beans. Therefore, it is recommended that middleaged women in Korea increase their intakes of fruits, vegetables, and foods high in protein for the proper management of NAFLD.

        재래벼와 잡초벼 등 국내 고유 유전자원을 밥쌀용 벼 품종 개발에 활용하기 위한 기초자료를 얻기 위하여 전분 호화특성 분석과 함께 식미 관련 물리·화학적 특성의 연차 간 변이를 분석하여 환경 변화에 대한 안정성을 검토하였다. 1. 76개 유전자원을 이용하여 전분 호화특성 및 식미관련 특성에 대한 조사를 연차간 수행하여 그 변이를 상관분석으로 비교한 결과 고도로 유의한 상관관계를 확인하였다. 2. 수집 특성에 따라 유전자원을 4그룹으로 나누고 조사항목의 연차간 평균값을 비교한 결과 상관계수와 관계없이 기상 변화에 따라 항목별로 연차간 유의한 차이를 확인하였다. 3. 호화특성 기반의 군집분석 결과 76개 자원이 6개의 그룹으로 각각 분류되었으며, 약 55% 이상의 유전자원이 III, IV 그룹에 분포되었고, 국내 품종(C그룹)과 국내 잡초벼(B그룹) 유전자원의 경우 군집분석결과 5개의 그룹에 걸쳐 가장 넓게 분포하였다. 4. 전분 호화특성 및 식미특성을 기준으로 밥윤기치가 높았던 국내 재래벼 2품종(왜도와 구도)과 국내 잡초벼 3품종(달성앵미10-2, 남제주앵미6, 완도앵미6) 우량품종으로 선발되었다. 5. 특히, 완도앵미6의 경우 밥윤기치 평균 값이 85.1로 매우 높았으며, 이화학적 특성 등이 수광 수준으로 양호하였는데, 이는 국내의 고유 유전자원으로부터 우수한 자원을 확보하여 유용 유전자를 도입하는 육종연구에 활용가치를 높일 수 있을 것으로 생각된다.

        본 연구는 국내 잡초벼인 완도앵미6의 식미관련 유용인자를 자포니카벼 품종에 도입하여 식미가 개선된 새로운 품종을 개발하기 위한 기초 육종연구로 수행되었다. 식미개선을 위하여 국내 자포니카 벼 품종인 화영과 윤기치가 우수한 국내 잡초 벼인 완도앵미6를 교배하여 재조합 자식계통을 육성하였으며 이 조합으로부터 고품질 품종 개발에 활용 가능한 우량계통을 육종에 이용하고자 수행한 결과는 다음과 같다. 1. 화영과 완도앵미6 조합의 교배립을 생산하여 SSD법으로 8세대까지 계통전개 하였으며 초형 등을 고려하여 최종 224계 통의 RIL을 육성하였다. 2. 육성된 RIL집단의 주요 농업특성 특성을 3년(2016-2018) 간 평가하여 연차간 변이를 확인하였으며, 육성된 집단으로부터 작물학적 특성과 식미관련 특성이 우수한 10계통을 선발하였다. 3. 선발된 계통에 대한 아밀로스 함량, 단백질 함량, 알칼리 붕괴도 등의 이화학적 특성을 분석하였는데, 특히 선발된 계통 모두가 수여친인 완도앵미6의 수준에서 윤기치가 개선된 것을 확인하였다. 4. 식미와 관련이 높은 것으로 알려진 밥의 질감과 관련하여 관능평가와 기계적 물성 측정값에 대한 비교에서 두 방법 간에 상관이 확인되지 않아 이에 대한 보완 연구가 필요할 것으로 사료된다.

        This study aimed to assess the nutritional quality of breakfast among Korean school-aged children and adolescents depending on eating together as a family, based on the 2013-2014 Korea National Health and Nutrition Survey. One day 24-hour recall data of 1,831 children and adolescents aged from 6 to 17 years were collected. The nutritional quality of breakfast was analyzed and compared between Family Breakfast Group (FBG, n=1,410) and Eating-alone Breakfast Group (EBG, n=421). The results showed that age, family structure, number of family members, and frequency of breakfast were associated with eating breakfast as a family. The calorie intake from breakfast explained 19% and 16% of the daily intake for FBG and EBG, respectively. The percentages of children and adolescents consuming Vitamin A, Vitamin B1, Vitamin B2, Vitamin C, Niacin, and Iron less than 1/4 of the Estimated Average Requirements were significantly lower in FBG than in EBG. The average numbers of serving for “Grains” and “Vegetables” food groups and the average Dietary Diversity Score were significantly higher in FBG than in EBG. Overall, the results indicated that eating breakfast as a family is positively associated with nutritional quality of breakfast among Korean school-aged children and adolescents.

        The objective of this study was to develop a palatability index for evaluating taste quality of pork through correlation and causality between fatty acids and taste related factors. Results of analysis of the components and taste evaluation among varieties showed that the taste quality of Duroc pork was the best. A correlation was found between fatty acids and taste evaluation factors. Saturated fatty acids (SFAs) and oleic acid increased the sweetness and savory taste, the preferred flavors, while sourness and bitterness, the non-preferred flavors, decreased, and thus positively affecting the taste. Polyunsaturated fatty acids (PUFAs) have been shown to have a negative effect on taste by decreasing their preferred taste while increasing their non-preferred taste. In addition, multiple regression between fatty acid and five taste factors showed that stearic acid and oleic acid increased the sweetness and savory taste, while myristic acid decreased the bitterness. Linolenic acid was found to be negatively affecting the taste by increasing non-preferred flavors. In conclusion, SFAs, oleic acid and linolenic acid were found to be the major factors affecting the taste of pork. Therefore, the results of this study can be used as an index to produce delicious pork for pig producers as well as help consumers to trust and purchase high quality domestic pork.

        In this study, we analyzed seed storage proteins in order to investigate the main factors related to the eating quality of japonica and tongil-type rice varieties. Sensory evaluation was performed by a trained panel to assess the appearance (color and glossiness), flavor, taste, stickiness, texture, and overall score of nine japonica and three tongil-type rice cultivars. Moreover, the pattern of variation in rice storage proteins was examined by electrophoresis of protein extracts. The electrophoretic pattern of rice proteins showed 16.4 kDa albumin, 26.4 kDa globulin, 34-39 kDa and 21-22 kDa glutelin, and 14.3 kDa prolamin. In terms of storage protein, the varietal differences between japonica and tongil-type rice were found in albumin, globulin, and the α-1, and α-2 sub-units of acidic glutelin. Furthermore, the overall sensory evaluation score was observed to be positively correlated with albumin (0.495 ** ) and globulin (0.567 ** ), and negatively correlated with α-1 glutelin (-0.612 ** ). Therefore, the results indicated that albumin, globulin, and α-1 glutelin can affect the eating quality of japonica and tongil-type rice varieties, with the latter having lower eating quality than the former.

        Eating and cooking qualities are the most important trait in japonica rice breeding program in Korea. More improvements in grain quality to meet the demand of consumers are needed to develop new rice germplasm of high grain quality. In this study, we performed genetic analysis and grain quality evaluation in 96 Korean japonica rice germplasm including 26 varieties with 4 Japanese japonica high eating quality, 24 landraces, 22 weedy rices, and 14 breeding lines. These germplasm were analyzed using 13 DNA markers related to eating quality to conjecture the palatability of cooked rice (Lestari et al. 2009). Most varieties of high eating quality were clustered with germplasm of high expected quality (eq) varieties of similar genetic background of pedigree. The expected quality (eq) values of high eating quality varieties, Gopum, Ilpum, Samgwang, and Sugwang were 99.6∼104.5, and Koshihikari was 103.5. The eq of two weedy rices, Hoengseongaengmi 3 and Namjejuaengmi 6 were 101.9 and 101.6, respectively. However, Haiami of high eating quality was clustered with 15 weedy rice and 11 landrace germplasm of low eq value. The eq values of Haiami and Wandoaengmi 6 were 66.9 and 40.8, respectively, but they has 2 and 3 of palatability of cooked rice, and 73.6 and 78.6 of glossiness of cooked rice, respectively. We expect these germplasm would be new source for rice grain quality to develop japonica rice of high eating quality.

        An increasing preference for good eating quality of rice among consumers has become one of the important considerations in rice breeding. Amylose content of starch is one of the important factors of rice eating quality. Amylose composition is determined by the relative activity of soluble starch synthase (SSS) and granule-bound starch synthase (GBSS). This study focuses on modifying the expression of SSS1 gene which is responsible for amylopectin and amylose synthesis in rice by using RNA interference (RNAi) and antisense technology. The transgenic rice plants showed various amylose content (9-17%) in rice seed. Candidate rice lines were selected according to PCR, RNA expression and amylose contents analyses. A semi-quantitative RT-PCR was carried out to determine the expression level of SSS1 gene at several time points after the flowering of transgenic plants. Downregulation of SSS1 gene in transgenic rices was evident in the decreasing expression in rice grains over time. Accordingly, SEM micrographs analysis revealed uniform size with smooth curves starch granules in downregulation rice lines, in contrast with the non-uniform granules in wild type.

        Rice (Oryza sativa L.) is one of the most important staple foods that feed more than 50% of the world’s population. With the improving of people’s living standard, eating quality of rice become the most important aims in current breeding programs. Amylose content (AC) and gelatinization temperature (GT) are the two main measures to estimate the rice grain quality. In rice, a total of 27 genes directly involved the rice starch biosynthesis effecting on the rice eating quality. It clearly identified chromosome 6 to be rich in the genes related to AC and GT properties (GBSS I, SSIIa and SBE I) along with other genomic regions scattered in rice genome. Rice blast, caused by the fungal pathogen M. oryzae, is the most devastating disease of rice and severely affects crop stability and sustainability worldwide. Many fungal genes involved in pathogenicity and rice genes involved in effector recognition and defense responses have been identified over the past decade. A total of 99 and 22 blast resistance genes have been identified and cloned; in which 45% were found in japonica cultivars, 51% in indica cultivars, and the rest 4% in wild rice species. Among them, three major resistance gene clusters have been characeterized: the Pik locus on Chromosome 11, and the Pita locus on Chromosome 12, the Piz locus on Chromosome 6 closely to the starch synthesis-related genes. These results could be important clues for studying the relationship between resistance / susceptible materials and eating quality.

        Rice eating quality is considered to be one of the top priorities in determining the agronomical value of rice. Thus the rapid evaluation of eating quality at early breeding generations in breeding programs for better eating quality is of great importance. However, it has been limited due to the complex nature of eating quality and the absence of standard evaluation method. In our previous study, we developed a evaluation method with a set of DNA markers that allows to predict the eating quality for japonica rices. Here we successfully developed another marker set for the eating quality of indica rices. We used multiple regression analysis to test 54 markers, which were preselected for their possible association with eating quality, using 24 indica varieties with different palatability scores. Of these markers, eighteen markers were found to be significantly associated with palatability according to sensory evaluation. Accordingly, a marker set in the model regression equation with a high R2 (0.997) was formulated to estimate indica rice palatability. Validation suggests that markers and the statistical parameters formulated by the equation could be a potential tool to predict the palatability of cooked Indonesian indica rice and could be reliable in developing country-dependent model equations for eating quality.         도정도에 따른 식미의 품종간 차이를 구명하기 위해 우선 식미 관능평가를 통해 상, 중, 하로 구분하여 각각 3개 품종씩 총 9개 품종을 이용하였다. 9개 품종들은 도정도 5.5∼13.5%별 이화학특성 및 식미 관능평가를 분석하였다.식미 관능검정에 의한 식미총평은 도정도 90.5%와 88.5%에서 가장 좋았다. 품종별 식미총평이 도정도 90.5%에서 높은 A 유형과, 88.5%에서 높은 B 유형, 그리고 90.5%와 88.5%에서 유사한 C 유형과 같이 3가지 유형으로 구분이 되었다. 식미총평이 상인 일미벼, 고시히까리는 도정도 90.5%에서, 중인 추청벼, 동진벼 등은 88.5%에서 최고식미를 보였던 반면, 식미가 하인 팔공벼, 농호벼는 90.5%와 88.5%에서 모두 최고식미를 보여 도정도에 따른 식미 차이가 없는 것으로 평가 되었다. 3가지 유형별 식미총평과 이화학특성과 상관분석 결과, A유형은 Mg 함량이, B유형은 단백질 함량이, C유형은 K 함량이 상관의 유의성의 높았다. 유형별 식미총평과 관능평가 5가지 항목과의 상관 분석 결과, A유형은 찰기, B유형은 밥맛, C유형은 외관모양이 상관의 유의성에 크게 영향을 미친 것으로 나타났다. 따라서 A유형은 Mg 함량에 따른 밥의찰기와, B유형은 단백질 함량에 따른 밥맛과, C유형은 K 함량에 따른 밥의 외관모양에 각각 영향을 준 것으로 고찰 된다.

        ‘구슬옥’(수원단55호)은 자식계통 KSE19를 종자친으로 하 고 KSE7를 화분친으로 하여 교잡된 단옥수수 단교잡종으로 Sugary enhancer (se) 인자를 가지고 있어 당도가 높고 옥수 수 립의 색은 흰색과 노란색, 두 가지색을 나타낸다. ‘구슬옥’ 은 2005년 생산력검정시험을 거쳐, 2007년부터 2009년까지 3년 동안 전국 5개 지역에서 지역적응시험을 실시한 결과 그 우수성이 인정되어 2009년 농작물 직무육성 신품종으로 결정 되었다. ‘구슬옥’의 출사일수는 65일로 조생종에 속하며 이삭 길이가 18.0 cm로 대조군인 ‘GCB70’과 비슷하다. ‘구슬옥’ 은 당도가 20.5%로 ‘GCB70’보다 높으며 경도가 낮아 씹힘 성이 부드러우며 전체적 기호도가 우수하였다. ‘구슬옥’은 깨씨무늬병, 조명나방, 도복에 강하였다. ‘구슬옥’의 ha당 이삭 수는 ‘GCB70’보다 많지만 이삭중은 비슷하였다. ‘구슬옥’의 모본 출사기와 부본의 화분 비산기간이 잘 일치하였으며 채 종량은 재식비율 모, 부본 2:1에서 1.39 ton/ha, 3:1에서 1.43 ton/ha이였다.

        ‘Hyeonpum’ is a new japonica rice variety developed by a cross breeding between Iksan469 having a good canopy architecture and Sindongjin and Musashino 7 having a good eating-quality with a view to develop a new variety having high quality of grain and palatability by the rice breeding team of Rice Breeding and Cultivation Research Division, Department of Rice and Winter Cereal Crop, NICS, RDA in 2012. The heading date of this variety is August 18 and later than that of check variety, Nampyeongbyeo, by four days. ‘Hyeonpum’ has 74cm of culm length and 101 spikelets per panicle. This variety showed resistance to bacterial leaf blight and rice stripe virus, but susceptible to leaf blast and planthoppers. The milled rice of this variety exhibits translucent and very clear non-glutinous endosperm. ‘Hyeonpum’ has much better palatability of cooked rice than that of Nampyeongbyeo. The whole grain rate of milled rice and milled rice recovery of ‘Hyeonpum’ are slightly higher than those of Nampyeongbyeo as 91.8% and 75.2% respectively. The yield of ‘Hyeonpum’ is 5.6 MT/ha in milled rice. ‘Hyeonpum’ could be adaptable to the southern part plain area of Pyeongtaek and southwestern costal areas in Korea.

        In this study, we were conducted the construction of the framework map using SSR markers in the F2 population derived from a cross between waxy corn inbred line (02S6140) and sweet corn inbred line (KSS22), and also identifying of QTLs associated with eating quality traits by employing genetic linkage map of F2:3 population. The linkage map was constructed using 295 SSR markers on the 158 F2 individuals derived from a cross of 02S6140 and KSS22. The map comprised a total genomic length of 2,626.5cM in ten linkage groups and an average distance between markers of 8.9cM. Chi-square test revealed that 254 markers (86.1%) associating with all ten chromosomes exhibited a segregation of 1:2:1 Mendelian ratio. A total of 10 QTLs each for pericarp thickness (PER), amylose content (AMY), dextrose content (DEX), and sucrose content (SUC) were detected in the 158 F2 families. The number of QTL per each trait was ranged from 2 to 4, and also phenotypic variance was ranged from 4.26 to 30.71%. For PER, 4 QTLs were found to be controlled by four genomic regions at locations chromosomes 4, 5, 8, and 9 contributing 10.43, 6.71, 6.74, and 7.79% of phenotypic variance, respectively. While 2 QTLs for AMY, DEX, SUC traits, were found to be controlled by two genomic regions at locations chromosomes 4, 6, 8, and 9 contributing between 4.26 and 30.71% of phenotypic variance, respectively. Among them, 4 QTLs, such as qAMY4 (10.43%), qAMY9 (19.33%), qDEX4 (21.31%), and qSUC4 (30.71%), may be considered as a major QTLs, while the remaining six QTLs might be regarded as minor QTLs. In our study, qAMY9 for amylase content was detected on chromosome 9 in marker intervals phi027-umc1634, which was the same locus as encoding wx1 gene. Thus qAMY9 may be thought very useful molecular marker for selecting amylase content trait. The other QTLs may be thought very useful molecular marker for eating quality traits. The resulting genetic map will be useful in dissection of quantitative traits and the identification of superior QTLs from the waxy hybrid corn, and also this study may provide valuable information for the further identification and characterization of genes responsible for eating quality-related traits in waxy corn and sweet corn.

        Allele mining in starch synthesis-related genes (SSRGs) has facilitated the discovery of desired natural sequence variations for eating quality in rice. This study investigated the sequence variations from 10 SSRGs, and further evaluated their relationship with the amylose content (AC) and rapid viscosity analysis profiles in a global collection of rice accessions by association mapping (AM). In total, 83 sequence variations were found in 10 sequenced amplicons, including 73 single nucleotide polymorphisms (SNPs), eight insertion-deletions (InDels) and two polymorphic simple sequence repeats (SSRs). Four subpopulations were identified by population structure analysis based on 170 genome-wide SSR genotypes. AM revealed 11 significant associations between three phenotypic indices and three sequence variations. One SNP with a g/c transversion at the 63rd nucleotide downstream of the OsBEIIb gene termination codon on rice chromosome 2 was significantly associated with multiple trait indices in both the general linear and mixed linear models (GLM and MLM), including the final viscosity (p < 0.001, R2 = 23.87%) in both 2009 and 2010, and AC (p < 0.01, R2 = 11.25%) and trough viscosity (p < 0.01, R2 = 20.43) in 2010. This study provides a new perspective of allele mining for breeding strategies based on marker-assisted selection.

        Geneally, rice seeds regardless indica or japonica are showing low germination ratio or completely lost germination ability together with lost of good eating quality under high temperature and humidity conditions. Thus, this study was designed to evaluate a longevity for conservation of good eating quality during long term storage in rice. For the longevity evaluation, germination ability was studied after 5 days of high temperature and humidity stress (50℃/RH 95%). Dharial, originated from Bangladesh and showing weedy type with red pericarp, was selected as a good donor for longevity genes. A mutant was developed from Dharial through EMS mutagenesis and two populations of Dharial/4*Ilmibyeo and Dharial/4*Gopumbyeo were also developed for genetic study. In the 2-DE analysis followed by MALDI-TOF MS with wild and mutant lines, several candidate genes were identified. In the longevity test of two populations, a few lines showing good germination ability after high temperature and humidity stress were selected and subjected to confirm the relationships between longevity and conservation of good eating quality under long term storage.

        고령화 사회로 접어들면서 만성 신부전증 환자는 증가되고 있으며, 저단백질 식품에 대한 수요도 증가되고 있다. 중국173/주남벼 재조합 집단을 이용하여 저Glutelin 고품질 벼 품종개발의 육종효율 증진을 위해 DNA마커의 이용성을 검토하였으며, 밥맛향상을 위해 미질관련 형질들과 상관분석을 수행하였다. 중국173호/주남벼 재조합 집단에서 SDS PAGE결과 얻어진 저Glutelin 표현형과 functional DNA marker의 유전자형이 일치하여 DNA marker를 이용한 선발이 가능함을 확인하였다. 밥맛향상을 위해 미질관련 형질들과 상관분석을 수행한 결과, 윤기값과 Amylose 함량은 유의한 부의 상관을 나타내었으며, 단백질 함량은 윤기값에 많은 영향을 미치지 않았다. 반면, 단백질 조성에 따른 저Glutelin 계통군과 정상계통군의 비교에서 저Glutelin 계통군은 정상군에 비해 유의하게 윤기값이 낮았으며, 저Glutelin-저Amylose 계통군과 정상계통군은 대등한 윤기값을 유지하였다. 따라서 고품질 저Glutelin 품종개발을 위해 저Amylose 유전자의 활용이 바람직한 것으로 판단되었다. 이들 분석결과와 주요 농업적 특성을 고려하여 저Glutelin-저Amylose인 유망계통 밀양262호를 육성하였으며, 금후 고품질 저Glutelin 품종개발에 활용될 것으로 기대된다.
