In order to use as a new functional food material, we analyzed the chemical components including the organic compounds, minerals and vitamin C of canola honey which were produced in South Korea. The condensed rate of methanol extraction in honey was 90.5% and main organic compounds that extract by organic solvents in GC-MS analysis were propyl carbinol, cyclopentane, trichloromethane, vinegar naphtha and so on. Also, main aromatic compounds that extract by organic solvents in SPME analysis were diisooctyl adipate, furole, furaldehyde, cyclotetrasiloxane, trisulfide and many more. As proximate composition, crude ash content was lower than acacia honey (0.06%) and manuka honey (0.24%) by 0.01%, and crude protein was higher than acacia honey (0.10%) by 0.23%, but the crude fat of canola and manuka honey was lower content than acacia honey (0.44%) by 0.10%. Free sugar that analyze by HPLC consisted of fructose 44.11%, glucose 22.72%, and total sugars was 66.83%. Minerals by ICP analysis were detected total 15 kinds, Na 7.157 ppm>Ca 5.934 ppm>Si 4.049 ppm>K 1.443 ppm>Mg 1.218 ppm etc. Vitamin C was not detected.
The purpose of this study was to investigate the effect of calcium (Ca) and vitamin D (vit. D) levels on metabolism of various minerals such as Ca, P, Mg, Fe, Zn, Cu, and Cr. The comparison was made on the rats that were placed on diet containing powdered skim milk with different Ca and vit. D levels for 5 weeks. A total of 42 5-week-old Sprague- Dawley rats were divided into 7 groups as follows: Control group consisted of normal Ca and normal vit. D (0.5% Ca, 1,000 IU vit. D); Experimental groups were divided into low (0.25%) and high (1.0%) calcium levels; and vit. D group was divided into low (10 IU), normal (1,000 IU), and high (5,000 IU) subgroups. The weight gain and food efficiency ratios of the rats were not significantly different with increasing dietary Ca levels. The absorption rates of 7 minerals (Ca, P, Mg, Fe, Zn, Cu, and Cr) were significantly decreased with increasing dietary Ca levels. Also, fecal excretion of P significantly increased with increasing dietary vit. D levels (p<0.05), and urine excretion of Fe was significantly increased with increasing dietary vit. D levels (p<0.001). The result indicated that higher Ca intake affected on bioavailability of other minerals, due to interactions among minerals in the process of intestinal absorption. However, vitamin D intake had no effect on bioavailability of several minerals. Therefore, it could be suggested that adequate Ca intake is important for balance of the minerals.
The purpose of this study was to estimate usage of vitamin and mineral supplements as over-the-counter (VM-OTC) drugs as well as examine factors associated with VM-OTC usage in Korean adolescents. A total of 1,407 adolescents attending middle or high school in all parts of country were included in the analysis. Prevalence of VM-OTC usage was 56.1%, and it was higher as monthly income, father’s education level, and socioeconomic status of family increased (p<0.001). VMOTC intake was higher in middle school students than in high school students as well as in rural areas or small & mediumsized city residents than big city residents (p<0.01). Subjects mainly received information on VM-OTC mainly from ‘family and relatives’ (46.6%), whereas only 20.3% received information from experts. Subjects took VM-OTC ‘when they are healthy’ (49.1%), ‘when they feel sick’ (17.7%), ‘when they are on a diet’ (17.3%), and ‘when they are stressful’ (15.9%). The effectiveness of taking VM-OTC were mainly ‘fatigue recovery’ (35.0%), ‘health improvement’ (30.6%), and ‘nutritional status improvement’ (13.2%). The most frequently used VM-OTC was vitamin C (49.1%), multi-vitamins (18.6%), multi vitamins & minerals (13.2%), and calcium (9.2%). Among VM-OTC users, only 21.9% replied that they usually check the nutrition facts when they buy products, 62.4% follow the recommended dosage, and 9.7% fully understand the nutrition labels of the products. According to logistic regression analysis, the most influential factor affecting VM-OTC use was parents’ and siblings’ VM-OTC consumption (p<0.001). In addition, school type (middle or high school) (p<0.01), residence (p<0.05), self-concerns about health (p<0.05), father’s education level (p<0.05), and socioeconomic status of family (p<0.05) all influenced VM-OTC use. These results show that VM-OTC use is widespread among adolescents, few users actually check and fully understand the nutrition labels when they purchase VM-OTC, and they are highly dependent on unprofessional advice and information. Therefore, it is necessary to educate adolescents to help them select proper VM-OTC and read nutrition labels.
The purpose of this study was to estimate the consumption prevalence of vitamin and mineral supplements as health functional foods (VM-HFF) and to examine the factors associated with VM-HFF consumption behaviors in adolescents. A total of 1,407 adolescents attending middle or high schools from various cities and rural communities in Korea participated in this study. The prevalence of VM-HFF consumption was 41.7%, with boys showing a higher consumption than girls (p<0.01). VM-HFF consumption was higher in families with higher socioeconomic status and for families with parents that exhibited higher concerns about their child's health, growth, and nutritional intake (p<0.001). Most consumers of VM-HFF consumed HFFs 'when healthy' (50.1%), and acquired nutritional information from 'their families & relatives' (50.9%). Most consumers responded that VM-HFF was 'a little effective' (54.3%), followed by 'no obvious effects' (37.1%), and 'very effective' (7.4%). The effectiveness of consuming VM-HFF was mainly for 'fatigue recovery' (39.0%) and 'health improvement' (28.2%). Most consumers purchased HFFs at 'pharmacies & oriental medicine clinics' (53.8%) and at 'health functional food stores' (18.8%). Most consumers 'occasionally' (51.1%) or 'seldom' (27.3%) checked nutrition facts when purchasing, with 58.9% of consumers understanding the nutritional label for 'the most part', but only 8.7% of them understanding it 'very well'. Among the VM-HFF, consumers preferred calcium- and vitamin C-supplements. Consumers' mini-dietary assessment scores were higher than those of non-consumers. The results above showed that VM-HFF consumption was widely spread among adolescents, but few consumers checked and understood the nutrition label when they purchased VM-HFF, and were highly dependent on the advice and information from non-professional nutritionists, such as families & relatives. Therefore, it is necessary to educate adolescents to help them read nutrition labels and select the proper VM-HFF.
Taking vitamin and mineral supplements is increasingly common with the rapid economic growth. The aim of this study was to determine the prevalence of vitamin and mineral supplement use among adults aged 20 or older from the third Korean National Health and Nutrition Survey data and to explore the effect of sociodemographic and lifestyle factors as well as nutrient intake on taking supplements. People who had participated in both a health questionnaire and a nutritional survey were selected, and 2,871 men and 3,555 women were finally included in this analysis. Both men and women with a higher level of education, those residing in a metropolitan area, and those with higher income were more likely to take supplements. Health behaviors were not significantly associated with taking supplements. Mean nutrient intake of all nutrients except energy intake was not significantly different in men or women taking supplements after adjusting for age, education, marital status, resident area, smoking, and energy intake. Compared to Dietary Reference Intake (DRI) for Koreans, most vitamins and minerals, except vitamin B2 and calcium, were consumed at higher than the Recommended Intake (RI) without supplements. In conclusion, taking supplements such as vitamin B2 and calcium may promote health and prevent disease. However, the type and frequency of other vitamin and mineral supplements consumed should be considered with caution.
We surveyed 821 children (ages 12-15 y) in Daejeon city and Cunngcheong province, Korea for their use of vitamin·mineral supplements (VMS), either over-the-counter drugs and/or health functional foods (HFF). We also considered the significant variables of VMS use, including demographic characteristics, health-related variables, eating habits and nutritional beliefs of VMS by subjects. The frequency of VMS use was 24.8% and, in comparison to counterparts, it was higher in subjects attending middle school (p<0.001), in those living in a large city (p<0.001), in those with a high monthly family income (p<0.05), and in those with high concerns about school performance by parents (p<0.01). Selfhealth concerns by subjects (p<0.05) and concerns about health of offspring by parents (p<0.01) were higher in users than in nonusers. Eating habits of subjects did not affect the use of VMS. Users had a more positive view concerning the potential health benefits of VMS than did nonusers (p<0.05). Most users took VMS when they were healthy (78.9%) and expected ‘disease prevention and health maintenance’ (44.6%). However, most users did not feel any special effects from VMS use (58.8%), and they got their information on VMS through family and relatives (53.9%). Users of VMS preferred vitamin C supplements (44.2%) and Ca-supplements (56.9%). Therefore, the results show that VMS use is widely spread among the subjects, and that use of VMS is influenced by multiple variables and subjective criteria. Therefore, practical guidelines on VMS use for children’s health and growth should be given through nutritional education.
The increase in the total number of cows on farms, which breed Korean Native Cattle (KNC), is associated with many problems. In particular, the services per conception and calving interval have increased. In this study, we examined the effect of dietary supplementation with vitamin and mineral complex on the estrus rate, pregnancy rate, gestation length, and birth weight of KNC calves. Multiparous or primiparous KNC were divided into 3 groups with 40 heads per group. Experimental group 1 was administered a consisting of 35,000 IU vitamin A, 100 IU vitamin E, 200 mg -carotene, 200 mg Zn methionine, and 1.5 mg Se. Experimental group 2 was administered a vitamin complex (100 g/day) consisting of 100 IU vitamin E and 200 mg -carotene. In the case of multiparous KNC, the estrus detection rate in the control group was 90.0% and those in the experimental groups were 75.0% to 95.0%. However, the first-service pregnancy rate after parturition in the control group was 41.2%, which was significantly lower than that in the experimental groups (71.0% to 76.7%; p<0.05). The average duration of pregnancy in the group supplemented with the vitamin complex was days, which was similar to that in the case of the control group. The birth weight of calves from cows fed with vitamin complex was 25.3 to 27.0 kg, which was similar to that in the case of the control group (25.2 to 26.0 kg). In the case of primiparous KNC, no differences in the estrus rate, pregnancy rate, gestation length, or the birth weight of calves were noted between the groups. Thus, dietary supplementation vitamin and mineral complex have no effect on the reproductive efficiency in primiparous cows, but the pregnancy rate was observed to have increased in multiparous KNC with these supplements.
Alfatoxin과 비타민의 상호작용(相互作用)을 구명(究明)하기 위하여 브로이러 병아리 336수(首)를 8구(區)로 나누고 aflatoxin 을 0 또는 0.5 ppm, 비타민를 0, 500, 1,000 또는 1,500 IU/Kg 급여(給與)하는 3주간(週間)의 요인시험(要因試驗)을 실시(實施)하였다. 증체량(增體量), 사료섭취량(飼料攝取量), 사료전환율(飼料轉換率), 정강이 색상(色相), 폐사율(斃死率) 및 각약증발생율(脚弱症發生率)에 있어서 각구간(各區間) 유의차(有意差)를 나타내지 않았다. 건물(乾物), 조단백질(粗蛋白質), 조지방(粗脂肪), 가용무질소물(可溶無窒素物) 및 조회분(粗灰分)의 이용율(利用率)에 있어서 각(各) 구간(區間) 유의차(有意差)를 나타내지 않았다. 조섬유(粗纖維)의 이용율(利用率)에 있어서 대조구(對照區)에 비(比)하여 aflatoxin 급여구(給與區)가 매우 낮은 값을 보였다(P<.01). 그러나 비타민 첨가수준간(添加水準間)에는 유의차(有意差)를 나타내지 않았으며 aflatoxin과 비타민간(間)의 교호작용(交互作用)도 인정(認定)되지 않았다. Ca, P 및 Na의 이용률(利用率)에 있어서 각(各) 구간(區間) 유의차(有意差)를 보이지 않았으나 aflatoxin 급여구(給與區)의 Ca이용율(利用率)이 무급여구(無給與區)보다 약간 높았다. 탈지건조경골(脫脂乾燥脛骨)의 회분함량(灰分含量)은 각처리간(各處理間) 유의차(有意差)가 없었으나 Ca함량(含量)에 있어서도 aflatoxin 0.5 ppm구(區)에서 무급여구(無給與區)보다 더 많았으며(P<.05), 비타민를 더 많이 급여(給與)할수록 조금씩 높게 나타났다. Aflatoxin과 비타민가 경골내(脛骨內) Ca을 가속적(加速的)으로 증가(增加)시킨다는 것을 보여 주었다(P<.01). 그리고 P의 함량(含量)에 있어서도 aflatoxin 급여(給與)로 증가(增加)되었다(P<.05). 그러나 비타민 수준간(水準間)에는 유의차(有意差)가 없었으며 2요인간(要因間)의 교호작용(交互作用)도 없었다. Aflatoxin 급여(給與)는 Na함량(含量)에 영향(影響)을 주지 않았으나 비타민 수준간(水準間)에는 유의차(有意差)가 나타나(P<.01) 1,000 IU/Kg수준(水準)이 가장 높게 나타났다. 2요인간(要因間)의 교호작용(交互作用)은 인정(認定)되지 않았다. 혈청중(血淸中)의 Ca농도(濃度)에 있어서 aflatoxin 급여구(給與區)에서 매우 높게 나타났으며(P<.01), 유의성(有意性)은 없었으나 비타민 첨가수준(添加水準)이 높아질때 조금씩 증가(增加)되는 경향(傾向)을 보였다. 2요인간(要因間)의 교호작용(交互作用)이 인정(認定)되었다(P<.05). P의 함량(含量)은 각(各) 처리간(處理間)에 유의차(有意差)가 없었으며 Alkaline Phosphatase 역가(力價)에 있어서 aflatoxin 급여구(給與區)가 높은 값을 보였다(P<.01). 그리고 비타민 수준(水準)이 높아짐에 따라 조금씩 증가(增加)하는 추세(趨勢)를 보였으나 유의차(有意差)는 없었으며 Aflatoxin과 비타민간(間)에는 교호작용(交互作用)이 없었다.
Antarctic krill (Euphausia superba) is typical of a enormous biomass of marine zooplankton that could provide good nutrition in human body. This study was conducted to identify the nutrition of krill, a live in Antarctic Ocean. The analysis result of fatty acids of krill meal was as follow. The compositions of fatty acid were saturated fatty (SFA) acid 41.41%, monounsaturated fatty acid (MUFA) 21.69%, polyunsaturated fatty acid (PUFA) 36.89%, and p/s ratio was 0.89. The major fatty acids in all parts were eicosapentaenoic acid (EPA, 21.54%), palmitic acid (27.51%), oleic acid (13.35%) and docosahexaenoic acid (DHA, 12.42%). Especially, EPA and DHA were occupied 33.96% of polyunsaturated fatty acid. The mineral contents of krill meal were calcium 24477.21 mg kg-1, sodium 14728.69 mg kg-1, magnesium 6973.49 mg kg-1, potassium 3981.67 mg kg-1, iron 395.33 mg kg-1 and manganese 5.74 mg kg-1. The contents of major vitamin were retinol 86717.37 μg RE, β-carotene 44.87 μg RE, tocopherol 2.60 mg, pantothenic acid 1.61 mg, indicating that krill meal contains large amount of retinol and β-carotene.
The mushroom Agrocybe chaxingu was analyzed to evaluate the nutritional value of this potential food. The moisture content was 88.9% in the fruiting body of A. chaxingu, and the proportions of ash, crude fiber, carbohydrate, crude protein, and crude fat were 0.9%, 1.4%, 7.2%, 2.5% and 0.4% by weight, respectively. A. chaxingu contained 1.29 mg/100 g edible weight of vitamin , and the contents of vitamin , vitamin , and vitamin C were 0.15 mg, 0.32 mg, and 18.4 mg per 100 g of wet mushroom. Potassium (3,318 mg/100 g, dry basis) was found at the highest concentration in A. chaxingu. In addition, the mushroom contained many other minerals (all figures are mg per 100 g of dried mushroom) such as phosphorus (909.7), magnesium (141.3), sodium (12.7), zinc (7.4), iron (6.5), copper (2.8), manganese (0.8), and nickel (0.1). The results indicate that A. chaxingu is a valuable nutrient source.
