        본 연구에서는 단무지 가공초기인 탈염과정에서 온도변화(5oC, 25oC) 및 CaCl2 첨가(0.6%, w/w) 유무가 탈염 단무지의 품질에 미치는 영향을 조사함으로서, 단무지 품질 변화를 최소화 할 수 있는 기초자료를 제공하고자 하였다. 5oC에서 탈염한 경우 25oC 탈염과 비교하여 탈염기간이 증가하였으며, 특히 탈염기간 후반부에 상대적으로 탈염속도가 늦어지는 것으로 나타났다. 미생물(위생)적 측면에서 5oC 탈염이 바람직하였으며, 탈염시 CaCl2 첨가가 단무지의 총균수를 감소시키지는 않았다. pH 변화의 경우 5oC 탈염에서 감소폭이 적었고, 색깔의 경우 탈염기간동안 전반적으로 큰 변화는 나타나지 않았다. 조직감(굳기)은 5oC에서 CaCl2 처리하지 않고 탈염한 단무지에서 변화(감소)가 가장 적었으며, 25oC, CaCl2 처리한 탈염단무지에서 가장 큰 변화(감소)가 나타났다. 미세구조를 관찰한 결과, 탈염과정에서 CaCl2 처리 시 공극이 커져 구조가 상대적으로 엉성해 짐을 확인하였으며, 온도차에 의한 미세구조차이는 육안으로 구별할 수 없었다. 관능검사결과, 조직감 측면에서는 CaCl2 처리하여 탈염한 단무지를 다소 선호하였으나 비처리시료와 유의적 차이는 나타나지 않았다.

        과채류 공정육묘에서 접목작업 후 버려지는 재사용 상토의 이화학적 특성을 개선할 목적으로 재사용상토와 perlite의 혼합비율이 상토의 이화학적 특성과 과채류 묘소질에 미치는 영향을 조사하였다. 재사용 상토의 적정 혼합비율을 구명하기 위한 시험구는 신규상토(NPM: new plug media)와 1회 사용상토구(UPM: used plug media)및 용적대비 재사용상토의 첨가비율을 25, 50 및 75%로 첨가한 5개의 처리구를 설계한 뒤, 각 처리구별 이화학적 특성과 오이 및 토마토 묘의 묘소질에 미치는 영향을 조사하였다. 또, 재사용 상토의 물리성 개선을 위한 적정 펄라이트 첨가 비율을 구명하기 위한 시험구는 UPM에 용적대비 펄라이트를 0, 5, 10 및 20% 첨가구와 NPM과 UPM을 1 : 1(v : v)로 혼합한 혼합상토(Mixed Soil)에 펄라이트를 0, 5, 10 및 20%를 첨가한 8개의 처리구를 설계하여 각 처리구별 이화학적 특성과 오이 및 토마토 묘의 묘소질에 미치는 영향을 대조구(NPM)와 비교하였다. UPM에 NPM의 혼합비율이 증가할수록 상토의 물리적 특성이 개선되는 경향을 보여 50% 이상 첨가구에서는 신규상토와 공극율, 용적밀도, 보수력은 물론 전반적인 묘소질도 NPM과 유의적인 차이를 나타내지 않았다. 상토의 이화학적 특성, 플러그묘의 근권형성 정도, 묘소질 등을 종합적으로 고려한 UPM의 물리성 개선을 위한 펄라이트의 적정 혼합비율은 UPM 단용구에서는 20%, NPM과 UPM을 1 : 1(v : v)로 혼합한 상토에서는 10%인 것으로 판단되었다.

        본 연구는 사과 홍로 품종의 고품질 과실 생산을 위한 최적 토양환경 요인을 구명하기 위해 수행되었다. 토양환경조건들은 전국의 사과 주산지 충주, 문경, 영주, 안동, 예산, 영천 지역에서 각각 농가당 10농가를 대상으로 총 60농가에서 토양 및 과실특성을 조사하였다. 과중에 영향을 미치는 토양환경요인은 포화수리전도도가 33.3%로 가장 기여도가 높았고, 양이온이 24.6% 기여하였다. 용적밀도, 토성 및 고상역시 비교적 높았다. 토양물리성요인이 화학성 요인보다는 과중에 영향을 주었다. 과실의 당도에 미치는 토양환경요인들에서는 토성이 21.9%로 가장 높은 기여도를 나타냈다. 양이온치환용량(CEC)와 용적밀도의 기여도가 매우 낮았다. 과실의 착색은 인산함량이 20.4%로 매우 높은 기여도를 나타냈다. 반면에 포화수리전도도와 유기물함량은 낮았다. 토양물리성 보다는 화학성이 크게 기여하였다. 최종적으로 과중, 당도, 과실착색을 종합적으로 고려한 과실품질에 대한 상대적 기여도에서는 작토층깊이 25.8%, 토성 22.2%, 토양산도 21.0%로 높았다. 고상 및 용적밀도는 낮았다. 사과 홍로 품종은 토양화학성과 매우 밀접한 관련이 있으며, 따라서 고품질의 과실을 생산하기 위해서는 과원의 배수관리 및 시비관리가 중요하다. 이 결과를 바탕으로 과원의 토양관리 요인들을 계량화 하여 과학적 토양관리 기초 자료로 활용이 가능할 것으로 판단된다.

        본 연구에서는 국내에서 유통되고 있는 청국장을 수집하고 품질 특성을 분석하였으며, 우수한 품질의 청국장 제조를 위한 종균 개발의 기초 자료로 활용하고자 한다. 먼저 국내에서 시판 되는 청국장을 수집하여 분석한 결과, 수분함량은 56.3∼62.1%, 염도는 0.23∼11.51%, 총질소 함량과 아미노태 질소 함량은 각각 5.82∼8.76%, 173.71∼2,700.66 mg%를 나타내었다. 총질소에 대한 아미노태 질소 함량의 비를 나타내는 질소분해율은 2.88∼26.93%를 나타내었다. 수집된 청국장의 최대 히스타민과 티라민 함량은 각각 755.40, 1913.51 mg/kg로 나타냈다. 청국장의 최대 생균수는 9.6 × 109 CFU/g이었다. 이상의 결과로 국내 청국장은 종류가 매우 다양하며 제품마다 풍미와 영양성분이 현저한 차이가 있음을 확인하였다. 이는 지역마다 다른 품종의 원료대두의 사용 및 균일화·체계화되지 못한 발효공정에 기인한 것이라 사료된다.

        The quality properties of peeled ginger (PG) were investigated during CA storage at different CO₂concentrations. O₂ concentration was kept constant at 5% while CO₂of 6%, 14%, 22% and 30% were used. It was found that the weight loss rate tended to decrease with an increase of CO₂. In the case of fixed 10 ℃ storage, the Lvalue and a-value of the exterior color in treatment increased more than that of control with respect to time, while the b-value of the exterior color and the cutting plane color showed no significant difference. In the exterior color, the results of PG-25 ℃ showed similar with PG-10 ℃ except b-value of the exterior color which showed not a little change. The cutting plane color did not showed significantly difference in the PG samples between 25 ℃ and 10 ℃ . Hardness of the PG during storage was found to decrease most severely at 6% of CO₂concentration regardless of storage temperature. The growth of microorganisms during storage of the PG tended to be restrained as CO₂concentration increased. However, microorganisms, when maintained at 25 ℃ storage, multiplied rapidly to 10^8 CFU/g within 4 days regardless of concentration.

        Steamed rice is usually used as an essential ingredient when Takju or Yakju is brewed in Korea. Alternatively, non-steamed rice can be used to keep thermolabile nutrients and fresh tastes richer in Takju or Yakju. In this study, therefore, the physicochemical properties (ethanol and sugar contents, pH, total acidities, and turbidities)and the fermentative microbial profiles (aerobic mesophillic bacteria (AMB), fungi, lactic acid bacteria (LAB), acetic acid bacteria (AAB), and Escherichia coli and coliforms) have been compared among 4 Takju and 1 Yakju samples brewed using steamed or non-steamed rice. Yakju brewed using non-steamed rice has approximately 2-3 times higher ethanol and sugar contents than other 4 Takjus brewed using steamed or non-steamed rice. The pH and total acidity values of all the 5 samples ranged 3.77-4.30 and 0.12-0.35, respectively. As for turbidities, Yakju brewed using nonsteamed rice was transparent, but other 4 Takjus were not. The AMB and fungal counts for Yakju brewed using nonsteamed rice were approximately 104-fold less than those for 4 Takjus. The LAB counts for Takju and Yakju brewed using non-steamed rice were 103-fold less than those for Takjus brewed using steamed rice. The AAB counts ranged 2-6 log10CFU/mL for all the 5 samples. E.coli and coliforms were not detected. Overall, there was no significant difference in microbial counts among 4 Takjus brewed using steamed or non-steamed rice, but Takju has higher microbial counts than Yakju. All the 5 samples were conclusively considered to be hygienically brewed and processed containing plenty of beneficial microorganisms.

        In order to optimize the supercritical fluid extraction (SFE) conditions of ginger oleoresin (GO), we conducted an evaluation of quality properties such as yield (%), color, volatile flavor compounds and gingerol components. The extraction yield gained by SFE increased as extraction pressure and temperature increased. The highest yield was 8.96 ± 0.68% at 500 bar 65℃ extraction condition. The total color difference (ΔE) values decreased at high pressure. In case of the 100 bar pressure conditions, ΔE-values increased as the temperature went up. The analysis of the 6-gingerol, 8-gingerol, 10-gingerol, 6-shogaol and curcumin contents decreased at high temperature conditions of identical pressure and increased at high pressure conditions. The volatile flavor compounds were detected in zingiberene,β-sesquiphellandre, β-phellandre, αγ-curcumene, 2,3-butandiol, β-bisabolene and so on. Also volatile component contents showed difference in each of extraction conditions.

        육성년대 및 생태형에 따른 품종군별 생육형질과 수량관련 형질, 품질관련형질에 대한 특성의 품종변이와 상관을 분석한 결과는 아래와 같다. 1. 출수일수 및 간장은 2000년대 이후에 육성보급 품종군은 1970년대 이전에 육성 보급된 품종군보다 유의성 있게 단축되었고 통일형 품종군은 육성 년대 어떤 품종군의 일반형 품종군보다 출수일수 및 간장이 짧았고 단축되었다. 2. 2000년이후 최근에 육성 보급한 품종일수록 수량이 증가했으며 이는 수수 및 수당립수증가에 기인한 것으로 판단된다. 3. 최근 육성한 품종일수록 현미 길이는 짧아졌고 폭이 좁은 단원립의 형질 특성을 가졌으며 단백질함량도 낮아졌으며 품질평가치의 개선이 뚜렷하였다. 4. 육성보급 년대에 따른 품종군별 수량에 미치는 영향이 수량구성요소 형질에 따라서 상이하였다. 5. 육성년도에 따른 모든 일반형 품종군과 통일형 품종군에서 품질평가치는 단백질함량 및 아밀로스함량과는 부의 상관을 보였다.

        본 연구는 하수처리수의 농업용수 재이용에 따른 벼의 미질특성을 파악하기 위하여 시험포장을 조성 하여 쌀의 아밀로스 및 단백질 함량, 완전미 도정수율을 분석하고 유의성을 고찰하였다. 시험포장의 수 질 및 토양환경을 조사하였으며, 근적외선 분광분석법을 통해 미질 특성을 분석하였다. 하수처리수로 재 배된 쌀의 미질 특성치는 일반미와 큰 차이가 나지 않는 것으로 나타났으며, 통계분석 결과 5% 유의수 준에서 각 처리구별 유의차가 있는 것으로 나타났다.

        Bamboo leaf powder was added to Chiffon cake to increase its neutraceutical effects and storage periods. Specifically, 0, 7, 10 and 13% leaf powder was added to the cakes. The content of total dietary fiber in the bamboo leaf powder was 65.57%. The moisture content did not differ significantly among groups. The cake containing 10% bamboo leaf powder had the greatest volume, whereas the control group (0% bamboo leaf powder) had the lowest volume (p〈0.05). The Hunter's L and a values decreased significantly as the amount of bamboo leaf powder increased. The b value of the control was lowest among the groups (p〈0.05). Evaluation of the consumer acceptance of flavor revealed that the cakes containing the added bamboo leaf had greater consumer acceptance than the control. However, when the color was evaluated, the 13% group showed the lowest acceptance (p〈0.05). Other factors such as texture, taste and overall acceptance did not differ significantly among groups. Additionally, the elasticity did not differ among groups, while the air cells were most uniform in the control. The strength of bamboo leaf aroma, bitter taste and aftertaste increased as the amount of bamboo leaf powder added increased. Cakes containing 10% and 13% added powder had the greatest moisture content, while the control had the lowest content (p〈0.05). As in previous studies, the results of this study indicated that 10% bamboo leaf powder was the optimal level for the preparation of Chiffon cake. To evaluate the storage of cakes, the 10% group and the control were inoculated with Aspergillus oryzae and then incubated at 30℃ for 6 days. The microbial colony counts in the control group were dramatically increased after 48 hrs; however, the fungal concentration of the 10% group did not increase for 4 days. In conclusion, the addition of 10% bamboo leaf powder to Chiffon cake increased the storage time while maintaining adequate consumer acceptance.

        The objective of this study was to investigate the effects of different amounts of pumpkin powder on the quality characteristics of hobakpyeon using physicochemical and sensory properties, as well as on its retrogradation rate during storage. As the amount of pumpkin powder increased, the following effects on the quality characteristics were observed: moisture and amylose contents decreased while protein content increased (p<0.05), and in vitro protein digestibility (IVPD) decreased (p<0.05). Levels of slowly digestible starch and resistant starch fractions increased, while the content of rapidly digestible starch decreased. The starch digestion index and rapidly available glucose content also decreased. Among the physical properties, the L-value decreased while the b-value increased (p<0.05). Texture profile analysis revealed that all textural properties except adhesiveness decreased, and presented significant differences in hardness and chewiness (p<0.05). Sensory properties such as color, flavor, and sweetness increased while others such as wetness and chewiness decreased (p<0.05). Effects on the physicochemical properties during refrigerated storage were also compared between the control and 9% hobakpyeon (9%HP). According to the results, moisture content gradually decreased in the 9%HP compared to the control. Amylose content significantly increased in 9%HP whereas no significant changes were observed in the control. In both types of hobakpyeon, IVSD decreased significantly, showing higher values in 9%HP, whereas mechanical hardness increased, showing lower values in 9%HP. The L-value decreased significantly in the 9%HP whereas no significant changes were observed in the control. In conclusion, the above results suggest that hobakpyeon with low IVSD may be obtained by the addition of 9% pumpkin powder, and also showed that pumpkin powder delayed the rate of retrogradation in 9%HP during storage.

        This study was carried out to develop and characterize a drinking extract of disk abalone to keep the price level and to raise a added value of disk abalone. Fresh raw disk abalone was composed of 29.3% of the shell part, 17.7% of the intestinal part, and 43.9% of the flesh part. and the amount of nutritive substances in the intestinal part were higher those in the flesh part. Arginine was the most abundant amino acid both in raw and drinking extract of disk abalone. Drinking extract prepared with 250 g of the flesh of disk abalone at 100℃ for 2 hours was better in color and overall taste than those made with 150 g or 200 g of the flesh. As the extracting temperature was gradually increased or the extracting period was gradually extended, the extracting effect was slightly improved but the color of the extract turned out to undesirable one. The desirable sea tangle extract could be made when 15 g of sea tangle was extracted in 1 l of water at 100℃ for 2 hours, and which was accorded well with the color of drinking abalone extract. From these results the best drinking extract of disk abalone can be manufactured with 250 g of the abalone flesh extracted in 1 l of water at 100℃ for 2 hours.

        This study aims to investigate the quality characteristics of breads with the addition of sweet pumpkin powder. Farinogram showed that the absorption rate of the dough decreased, the development time and stability became shortened, and the degree of attenuation tended to be grown along with increasing the amount of pumpkin powder. From the amylogram, it was found that the gelatinization starting temperature and the maximum viscosity of pumpkin powder added dough seemed to be decreased as the amount of pumpkin powder was increased. Extensogram showed that there was a decrease in the degree of extension of the dough added with increasing the amount of pumpkin powder, while an increase in the degree of resistance and resistance/extensibility. The lightness (L value) and redness (a value) of bread was found to be decreased with increasing the amount of pumpkin powder, while the yellowness (b value) increased. In terms of the dough texture, for which the hardness, cohesiveness and gumminess of the dough were measured, there were no significant differences between groups, while the dough added with 8.0% pumpkin powder showed a significant decrease in the elasticity. The results of sensory evaluation showed that the highest score of color (p<0.05) and taste (p<0.05) were obtained from the bread added with 6.0% and 8.0% pumpkin powder, while the highest score of texture in control and 3.0% pumpkin bread. In addition, the highest score of flavor (p<0.05) and overall acceptance (p<0.05) were observed in bread added with 6.0% pumpkin powder. Upon the results of this study, it was assumed that the development of food products using pumpkin are prospective in response to health-oriented consumers.
