        서울시 유통 건강기능식품 중 츄어블제품 66건과 인삼 홍삼제품 60건을 수거하여 분석하였다. 시료 전체의 1일 섭취량당 당함량 평균은 1.95 g이었고 범위는 N.D. ~ 12.61 g 이었다. 제품 유형별로는 츄어블 제품의 평균은 1.26 g 이었고 범위는 N.D. ~ 10.39 g이었다. 인삼홍삼제품의 평균은 2.70 g이었고 범위는 N.D. ~ 12.61 g이었다. 츄어블제품중 1 일 섭취량당 당함량은 어린이용 제품이 평균 2.10 g으로 가장 높았고 영양소제품은 평균 1.43 g, 기능성원료 제품은 평균 0.35 g이였다. 어린이용 제품은 1일 섭취량당 당함량이 1.03 g ~ 5.33 g, 영양소 제품은 N.D. ~ 10.39 g, 기능성원 료 제품은 N.D. ~ 2.61 g의 범위를 보였다. 인삼홍삼제품중 1일 섭취량 당 당함량은 액상 제품이 평균 4.25 g으로 가장 높았고 농축액 제품은 평균 1.51 g, 분말제품은 평균 1.49 g이었다. 액상 제품의 1일 섭취량당 당함량의 범위는 N.D. ~ 10.80 g, 농축액 제품의 범위는 N.D. ~ 12.61 g, 분말 제품의 범위는 0.06 g ~ 5.64 g의 분포를 보였다. 인공감미료를 분석한 결과 3건에서 인공감미료가 검출 되었다. 인삼홍삼제품에서는 인공감미료가 검출되지 않았으며 츄어블제품 중 영양소 제품 2건과 기능성원료 제품 1건에서 검출되었다. 검출된 인공감미료는 아스파탐으로 영양소 제품에서 3.09 g/kg, 기능성원료 제품에서 1.09 g/kg 검출되었고 3건 모두 허용량 이내였다.

        This study investigated the current status and needs for nutrition education to help reduce children’s sugars intake at the Center for Children’s Foodservice Management (CCFM, n=115), and Child Care Facilities (CCF, n=646) through an online survey conducted from October 5th to 30th 2015. A total of 14.8% of CCFM respondents and 31.9% of CCF respondents provided nutrition education on sugars intake to young children as a main topic (p<0.001). A higher percentage (CCFM 47.8%: CCF 42.4%) delivered nutrition education on sugars intake to young children as a sub-component (p<0.001). Over 90% of the CCFM and CCF participants agreed on the necessity of providing nutrition education on sugars intake to children. The most common reasons given for delivering nutrition education on children’s sugar intake were “there are many more urgent nutrition education topics” for CCFM, and “insufficient nutrition education information and materials” for CCF. The percentage of nutrition education on children’s sugar intake provided to the children’s parents was low showing about 20% in the both groups. The percentage of CCFM participants providing nutrition, education on children’s sugar intake to the teachers in CCF was also low, showing about 14.8%; however, 68.0% of the CCF participants wanted to received teacher's education on guiding children’s sugar intake. Regarding ideas about a nutrition education program on children’s sugar intake for young children, most respondents in both groups answered “sugar intake and dental cavities or obesity” for appropriate education contents, “story telling or puppet show” for appropriate education methods, and “dietitian from CCFM and class teacher together” for appropriate educator. For appropriate education time, there was a significantl difference between the CCFM responses (average 2.7 times) and the CCF responses (average 4 times). Based on the above results, we found that implementing nutrition education on children's sugar intake at the CCFM and CCF, was low; however, awareness of the need for nutrition education on children’s sugar intake and the program development and supply was very high. Also, the opinions of CCFM and CCF participants about a nutrition education program on children’s sugar intake for young children can provide foundation data to develop and implement the CCFM-based nutrition education program.

        This research analyzedconsumer culture and usage of sugar in modern times based on 12 modern popular Korean cooking books with sugar recipes. Procedures were formed via textual analysis. The outcomes of the study can be summarized in brief statements. According to「Banchandeungsok」,「Booinpilj」, and「Chosunmoossangsinsikyorijebeob」, sugar was utilized in 34 out of 663 or 5.1% of cooked foods during the 1910s to 1920s. According to books such as 「Ganpyounchosunyorijebeob」,「Ililhwalyongsinyoungyangyoribeob」,「Chosun’s cooking of the four seasons」,「Halpaengyoungoo」, 「Chosunyorijebeob」, and 「Required reading for housewife」, sugar was added to 165 out of 998 or 16.5% of cooked foods during the 1930s. According to the books like「Chosunyorihak」,「Chosunyoribeob」, and「Woorieumsik」, sugar was an ingredient in 241 out of 756 or 31.9% of cooked foods during the 1940s. Sugar depicted within the 12 modern popular Korean cooking books primarily functioned as an alternative sweetener, starch, sweet enhancer, preservative, and seasoning. Similar to illustrated sugar from modern popular Korean cooking books, sugar has continually been favored by Korean cooks starting from the 1910s with 5.1% usage, the 1930s with 16.5% usage, and the 1940s with 31.9% usage. Despite its short history, sugar’s culinary importance in Korea has been on the rise ever since the early 1900s. Although sugar is an exotic spice in Korea, it has gained social, cultural, and symbolic recognition as well as practicality within Korean food culture. Thus, it has become more internalized and familiarized as an inseparable sweetness that characterizes current Korean food.

        Differences in sugar and salt penetrarion rates of radish depending on size and concentration of solution were examined. 2x2x2 and 4x4x4 cm cube-shaped radish examined in different pickling condition (salt 2, 4, 6, 8% and sugar 5, 10, 15, 20% brix). After 12hr storage, Salt penetration rate of radish cut into 2x2x2 cm was faster than that of 4x4x4 cm in all salt solution. Size dependent sugar penetration showed same tendency with size dependent salt penetration. Also, increase in salt and sugar concentration led to increase in salt and sugar permeation rate.

        In this study, we investigated and compared some chemical properties of Korean natural honeys and sugar-fed honeys for their quality characteristics. The natural honey samples were monofloral from chestnut and acacia flowers, and the sugar-fed honey samples were collected from honeybees feeding on sugar cane and sugar beet. The chemical properties of the honey samples, such as moisture, total protein, total lipids, ash, carbohydrate, minerals, vitamins, and free amino acids were determined. The moisture content was 18.5±0.9% in natural acacia honey, 17.2±0.9% in natural chestnut honey, 19.6±0.9% in sugar cane-fed honey, and 24.8±% in sugar beet-fed honey. The total protein and ash contents were the highest in natural chestnut honey. Maltose and sucrose were not detected in natural honeys but were detected at 2~7% in sugar-fed honeys. The vitamin, mineral, and free amino acids contents of natural honeys were higher than sugar-fed honeys. The natural chestnut honey is the highest in honeys. These results confirmed that the quality of natural honey was better than that of sugar-fed honey. Also, the vitamin, mineral, and free amino acids contents are potential characteristics for distinguishing between natural and sugar-fed honeys.

        This study was to evaluate the characteristics of bread and the rheology of flour dough containing sugar alcohols, after addition of fructose. In the farinogram tests, the addition of sugar alcohol changed the stability and mixing tolerance index. The stability and mixing tolerance index of farinogram increased as the amount of sugar alcohols increased. Amylograms revealed that the increase in gelatinization temperature and maximum viscosity of wheat flour dough with sugar alcohols was more than that of controls. Extensogram of dough with sugar alcohols exhibited higher extensibility and resistance. After fermentation treatment, the dough volumes prepared with only sorbitol and xylitol were lesser than those prepared after addition of fructose. The volume of loaf and specific volume of bread containing sugar alcohols with fructose significantly increased. The breads containing sugar alcohols showed greater taste, flavor and texture scores, for breads prepared with either sorbitol with fructose or xylitol with fructose, compared to breads without fructose. Overall preference scores by sensory evaluation of bread containing sugar alcohols with fructose were higher than bread with only sugar alcohols. These results indicate that the addition of fructose improves the flavor of bread containing sugar alcohols.

        본 연구에서는 염 용액과 당 용액의 농도를 달리하여 적합한 소라 중간수분식품을 제조하기 위해 삼투 침지 후 열풍 건조 시 건조 특성 및 소라 중간수분식품의 품질을 분석하고자 하였다. 그 결과 다음과 같은 결과를 얻었다. 건조온도가 높을수록 건조속도가 빨랐지만, 가열로 인해 시료의 경도가 높아졌기 때문에 50℃에서 건조하는 방법이 중간수분식품의 제조에 가장 적합하였다. 또, 염침지와 당침지 공정으로 인해 소라의 건조 시 수분함량 및 수분활성도를 감소시켜 건조속도가 높아졌고, 전단가가 감소하였으며, 삼투작용을 통해 소라내부의 물질이동 즉 수분이동을 통해 수분의 확산을 유발하고, 건조 시 표면의 피막 생성을 억제시켜 시료가 내부까지 균일하게 건조되도록 하였으며 조직의 경화를 억제하였다. 소라의 건조시 지수함수식의 모델식을 통한 수분활성도와 수분함량의 관계에서 당과 염을 동시에 침지 시 동일한 수분활성도에 해당하는 수분함량이 증가하였다. 또 당침지와 염침지 공정을 통해 수분보유력의 증가와 더불어 근원섬유단백질이 붕괴하여 조직이 연화되었으며, 특유의 질긴 조직감을 개선함과 동시에 향미가 부여되어 관능적 기호도가 높게 나타났다. 결론적으로 염침지 공정 및 당침지 공정을 통해 우수한 품질을 지니는 소라 중간수분식품을 제조할 수 있었고, 단독으로 침지시 보다 병행하여 침지한 경우 더 나은 전체적인 결과를 가져왔다. 특히 5% 염 + 5% 당침지액을 이용하여 침지한 후 50℃에서 180분간 건조하여 소라 중간수분식품을 제조할 경우 품질이 우수한 중간수분식품을 제조 할 수 있었다.

        본 연구는 흑자색 알곡 품종으로 등록된 색소 2호 옥수수 알곡의 일반성분 및 색소 함량을 분석하여 기초자료로 제공하고자 수행되었다. 색소 2호 알곡의 일반성분 분석결과, 수분, 조회분, 조지방, 조단백질은 각각 8.84%, 1.44%, 5.46%, 10.31%이었다. 색소 2호 알곡의 유리당 성분으로 fructose, glucose, maltose 및 sucrose가 검출되었으며, 함량은 sucrose (1.00%) > glucose (0.63%) > maltose (0.52%) > fructose (0.44%) 순이었다. 색소 2호 알곡의 지방산 분석결과 총 11종의 지방산이 검출되었으며 포화 지방산과 불포화 지방산의 비율은 16.09 : 83.91로 linoleic acid가 50.86%로 가장 높게 나타났다. 색소 2호 알곡 추출물의 총 안토시아닌 함량은 0.24%였고, 알곡 추출물을 HPLC-MS/MS로 분석한 결과 색소 2호 알곡에 함유된 안토시아닌 색소는 C-3-G, Pg-3-G, Pn-3-G인 것으로 확인되었다.

        This study was conducted to develop and validate the Sugar Intake Reduction Test (SIRT) for young children, and included eating behaviors, attitude, and nutritional knowledge about sugars. A draft version of the SIRT was developed after literature review. The final draft of the SIRT was established after two pilot tests of 5 year old children and an expert group’s review, and is comprised of a one on one test between an investigator and a child using picture tools. It contained of 20 questions which included 3 components: eating behaviors (5 items), preference for sugar sweetened food (10 items), and nutritional knowledge about sugars (5 items). The final SIRT was conducted on 181 children 5 (n=100) to 6 (n=81) years old, to examine its item and test adequacies. The passing rate of most items significantly increased with increasing age, and most of the item discrimination also differed significantly between the below and upper score groups. The content validity was given a high score by professionals (mean score 3.9 out of 4). Reliability of all the items in the SIRT was high (Cronbach’s α=0.82). Moreover, the total component and the sub-component scores of the SIRT correlated significantly. Our results indicate that the SIRT is a valid tool to measure sugar intake reduction in young children aged 5~6 years.

        In this study, we investigated the effects of pre-soaking in salt and sugar solution prior to air drying at 50℃ on the characteristics of dried apples. Pre-soaking solutions included single solutions of salt 2% and sugar 2%; and combined solutions of salt 2%+sugar 2% and salt 2%+sugar 5%, respectively. The effects of pre-soaking condition and drying were evaluated in terms of moisture content (MC), water activity, color, antioxidant activity determined by DPPH radical scavenging activity, shear force, microbial contents, and sensory evaluation of apple slices. The control sample without pre-soaking showed the most rapid drying rate; in addition, the single solutions showed higher MC and water activity after drying time of 120 min, as compared to combined solutions. In all samples, MC and water activity showed high correlation coefficients of 0.91 to 0.97; whereas, shear force was negatively correlated with MC and water activity. The single solution of salt 2% showed decrease in change of color, including L, a, and b values, and the number of aerobic bacteria during drying. In addition, highest antioxidant activity and values of sensory preferences were observed in the dried apple pre-soaked in single solution of salt 2%.

        Cryopreservation of miniature pig sperm is essential because of high demand of organ transplant in mass production. However, miniature pig sperm are vulnerable to oxidative stress more than other mammals. Erythritol is a naturally occurring sugar alcohol with powerful antioxidant property. Thus, the aim of our study is to verify if erythritol could reduce lipid peroxide and enhance viability of frozen thawed miniature pig sperm. Ejaculated semen samples were frozen with cryoprotectant subjected to erythritol treatment (0, 10, 100, 500 mM). After frozen thawed, spematozoa viability were examined using the computer assisted sperm analysis (CASA) system. The product of lipid peroxidation, malondialdehyde (MDA) were quantified using spectrophotometer with DPPH and ABTS assays as ROS scavenger markers. Our result showed that erythritol enhanced sperm viability (p<0.05), reduced lipid peroxides significantly (p<0.05), proving the concentration of 100 mM erythritol to be an effective for lowing oxidative damage. Data from our study suggest that erythritol exhibits significant lipid peroxidation scavenging characteristics which may prevent oxidative damage, enhance viability of frozen thawed sperm and thus could be a effective additive as cryoprotectant.

        Cryoprotectant is a substance used to protect biological tissue from freezing injury. However, there was few research paper on application of cryoprotectant in food stuff although its benefits was approved from the biological cell tissues. The objective of this study was to investigate the effect of the sugar addition as a cryoprotectant on the properties of frozen soybean sprouts. Before freezing process, the samples were blanched at 100°C for 1 min to observe the influence of blanching treatment. The blanched or non-blanched soybean sprouts was immersed in sugar solution as cryoprotectant, and continuously, the samples were frozen at -18°C for 24 h. Their physicochemical properties such as drip loss, hardness, color and cellular tissue were analyzed after thawing in running water. In our study, the drip loss of blanched sample without sugar was 43%, and comparatively, blanched one with sugar was 20% which was the lowest value among all samples. There was no significant difference of hardness between sample with sugar and without sugar. From our results, it was supposed that sugar can protect the soybean sprouts during freezing process regardless blanching process.

        Differences in sugar and salt diffusion rates of cabbage depending on size and part were examined. Whole, 3x3 and 5×5 cube sliced cabbage examined indifferent pickling condition (salt 2, 4, 6, 8% and sugar 5, 10, 15, 20% brix). After 12hr storage, salt absorption depending on part was determined to be higher in leaf, followed by stem in all salt solution. Sugar distribution was also determined to be higher in leaf, followed by stem, showing same trend with salt diffusion. Salt diffusion was found to be highest in 3×3 sliced cabbage. Where as 5×5 sliced cabbage and then whole cabbage showed lower diffusion rate in all brix sugar solution. Size dependent sugar diffusion showed same tendency with size dependent salt diffusion. Also, increase in salt and sugar concentration led to increase in salt and sugar permeation rate.

        2016년 4월 7일, 식품의약품안전처에서 [제1차 당류 저감 종합계획]을 발표하였다. 발표 내용에 의하면 당류의 과잉 섭취는 국민 건강을 위협하고 과도한 사회비용을 야기할 수 있고, 우리 국민의 가공식품을 통한 당류 섭취량이 증가 하고 있어 선제적 관리가 필요하다고 한다. 우리 국민의 평균 당류 섭취량은 섭취기준 이내이지만 증가 추세이며 일 부 계층(어린이, 청소년, 청년층)의 가공식품을 통한 당류 섭취량은 기준을 초과한다고 밝혔다. 가공식품 중 당류 주요 급원식품은 음료류이며 음료류를 통한 당류 섭취비율은 증가추세에 있다고 한다. 따라서 식품의약품안전처는 ‘우리 국민의 당류 적정 섭취 유도 - 가공식품을 통한 당류 섭취량을 1일 열량의 10% 이내로 관리’를 2020년까지의 목표로 설정하고, 1) 덜 달게 먹는 식습관 유도, 2) 당류 저감식품 선택환경 조성, 3) 당 류 저감정책 추진기반 구축이라는 3대 핵심전략을 바탕으로 세부 과제를 추진하기 시작하였다. 이어서, 한국식품산업협회는 식품의약품안전처의 발표에 대하여 ‘식품산업계는 정부의 당류 저감 정책에 적극 참여 할 것’이라는 제목의 성명서를 발표한 바 있다. 식품산업계는 국민의 요구와 식품업계 수용 역량에 맞게 추진될 수 있 도록 적극 참여하고자 한다고 밝히고, 특히 우리나라 당류 섭취 수준이 다른 국가에 비해 아직 심각하지 않으나, 당류 과잉 섭취와 비만이 문제되고 있는 국제적인 상황에 선제적으로 국가적 노력을 추진코자 하는 정부의 발표에 식품산 업계의 뜻을 같이 하고자 한다고 하였다. 이에, 식품산업계는 다양한 제품 개발에 힘써 소비자들의 선택 폭을 넓히도 록 돕는 한편, 소비자들의 올바른 식생활 형성을 위한 과학적이고 객관적인 정보 전달과 건강한 생활을 지속할 수 있 도록 안전하고 균형잡힌 영양의 식품을 제공하기 위한 노력을 지속하겠다고 성명하였다. 현재, 식품산업협회에서는 음료류 제조업체들이 중심이 되어 ‘음료업계 공통의 당류 저감 계획(안)’을 마련하기 위 하여 활발한 협의가 진행되고 있으며, 논의가 되고 있는 당류 저감 전략은 다음과 같다. 음료업계의 당류 저감 전략은 1) 기존 제품의 당류 함량 저감 (Reformulation), 2) 저당 제품 개발 확대 (Innovation), 3) 소용량 포장 제품 확대 (Smaller Package), 4) 당류 저감 제품의 광고/홍보 증대 (Promotion)로 논의 되고 있다. 기존 제품에 대하여 저감화 우선 순위을 설정하여 순차적으로 당류 저감을 진행하는 한편, 저당 제품 개발의 확대를 위하 여 새로운 고감미료 및 무열량 당류 등의 신소재 원료 식품(첨가물)의 개발에 연구 및 투자를 하고 있다. 또한 기능성 워터 제품, 탄산수 제품, 블랙 커피 제품과 소용량 포장 제품을 확대하여 판매/공급하면서 이러한 당류를 줄인 제품에 대한 광고/홍보비를 증대하는 등의 과제를 계속 시행 및 추가 계획하고 있다. 음료업계는 소비자의 기호에 맞는 제품을 제공하는 것 뿐만 아니라 우리 국민의 균형된 식생활을 돕기 위해 당류의 적정 섭취에 도움이 되는 제품들 개발/판매에 노력을 더 할 것으로 기대한다. 결과적으로, 음료업계를 포함한 식품산업계는 우리 국민이 당류 적정 섭취를 통한 건강한 식생활을 유지할 수 있도 록, 당류를 줄인 제품을 어디서든 쉽게 선택할 수 있도록 하는데 노력하는 것이 바람직할 것이다.

        The purpose of this study was to investigate the chemical contents (sugar, nitrogen, and amino acids) and sensory characteristics of traditional soy sauce according to three different methods. The samples were taken from four different periods (0, 20, 40, and 60 days after fermentation). Total sugar contents increased in all groups according to ripening period, and Gyupjang (G) showed the highest sugar content among the groups. Total nitrogen and amino acid contents of all groups increased after 60 days of ripening, and Gyupjang (G) and Gyupjang mixed with salt water (SG) had higher total nitrogen content compared to Chungjang (S) at the same period. The results from the sensory evaluation show that preferable sensory characteristics, such as color preferences, sweetness, umami taste, and overall preference, were significantly higher in Gyupjang (G) and Gyupjang mixed with salt water (SG) than in Chungjang (S). Preferable sensory characteristics had significantly high positive correlation with most amino acids, total nitrogen, and sugar contents, except for glutamine. Based on the significant difference in preferable sensory characteristics between Gyupjang mixed with salt water (SG) and Chungjang (S), Gyupjang mixed with salt water (SG) can be used to improve sensory characteristics. This research implies that adding salt water during the manufacturing Gyupjang process is advisable to yield high quality soy sauce.

        국내외에서 수집한 표고 품종을 대상으로 영양성분 및 β-glucan 함량을 분석한 결과 수집한 표고의 유리당 함량 을 분석한 결과 총 4종의 유리당이 검출되었으며, 그 중 trehalose 함량은 시료별로 0.83 ~9%까지 큰 차이를 보였 다. 구성아미노산 함량을 분석한 결과 총 아미노산함량은 중국 톱밥배지 표고 JMI10050에서 17,672 mg%로 가장 높게 나타났으며, 필수아미노산의 함량은 국내 원목재배 표고 JMI10059에서 6,211 mg% 가장 높게 나타났다. 유 리아미노산 함량을 분석한 결과, 총 16종의 아미노산이 검출되었으며, 주요 유리아미노산으로는 histidine, glutamic acid 및 arginine으로 나타났다. 필수 유리아미노산인 threonine, valine, methionine, isoleucine, leucine, phenylalanine, histidine 및 lysine의 함량은 중국 톱밥배 지 표고 JMI10052에서 521.06 mg%로 가장 높게 나타 났다. 중국에서 수집한 표고에 비하여 국내에서 재배된 표고 의 β-glucan이 약 10% 가량 높게 검출되었고, 그 중 국내 원목재배 표고 JMI10066이 31.74%로 가장 높은 함량을 나타냈다.

        Taro is an alkaline food containing a lot of protein, vitamin C, and minerals. Matang is a food prepared by frying a starch-containing material in oil and glazing with honey or starch syrup and it is widely enjoyed as simple snack or dessert in Asian countries including Korea. In this study, to increase the usability of taro having high nutritional values, taro matang was prepared by varying the types of starch while the physical and sensory properties were investigated. The taro matang was prepared by mixing corn starch, sweet potato starch, potato starch, and sticky rice starch with taro. The chromaticity of taro matang samples were measured, and the results showed that the corn starch taro matang was the brightest (L=40.48±1.17) and the potato starch matang was the darkest (L=33.81±1.33). The pH of the taro matang samples were within the range of 6.16-6.26 with no significant difference. The physical properties of the prepared taro matang samples were measured. The hardness and fracturability of the sweet potato starch taro matang were the highest at 3,414.79 and 1,570.03, respectively. The springiness and chewiness of the corn starch taro matang were the highest at 0.95 and 1,773.24, respectively. With regard to sensory properties and preference, the taro matang samples having lower hardness and brighter chromaticity were preferred. The preference for the flavor, crispness, softness, taste, and overall preference of the potato starch taro matang were the highest. Therefore, taro matang prepared as snack or dessert by mixing with potato starch may satisfy consumers’ demand.

        Increasing sugar intake of population has become a nutritional issue in Korea. Sweet taste perception may be related to behaviors such as eating sweet food including high sugars and total sugar intake. This study aimed to evaluate objective and subjective sweet taste perception and the association among objective sweet taste perception, dietary behaviors related to eating sweet snack food including high sugar, and total sugar intake from the snacks. Participants were 261 healthy female college students (mean age: 21.0±1.6 years), who were divided into three subgroups based on oral sweet taste evaluation using a sweet taste assessment tool provided by Ministry of Food and Drug Safety: sweet-seeker group (n=139), medium sweet-seeker group (n=54), and unsweet-seeker group (n=68). There was no significant difference in weight and body mass index (BMI) among the three groups; however, the sweet-seeker group had significantly higher sweet taste preference than that of the other groups. Though more people in the sweet-seeker group thought they tended to eat sweet foods than the medium sweet-seeker and unsweet-seeker groups, over half of the sweet-seekers did not think they tended to eat sweet foods. The sweet-seeker group was more likely to eat sweet snacks such as breads, chocolate products, sugar-sweetened milk, and so on than the unsweet-seeker group. Total sugar intake from the selected sweet snacks was 44.4 g for the sweet-seeker group, 34.4 g for the medium sweet-seeker group, and 28.0 g for the unsweet-seeker group with a significant difference. These results indicated the absence of relationship between objective sweet taste perception and the obesity index; however, significant associations were detected among objective sweet taste perception, eating sweet snacks and total sugar intake from the snacks. We also found high disagreement between objective and subjective sweet taste perception of the subjects. The present study provided the novel insight that measuring objective sweet taste perception may be useful for assessing the risk of high sugar consumption and undesirable dietary behaviors.
