        This study monitored the caffeine content of ready-to-drink coffee and verified the appropriateness of the labeling. The caffeine content was analyzed using HPLC. The average caffeine content of cold brew coffee was 0.31-1.04 mg/mL, with an average of 0.55 mg/mL. The average content of product was 147.27 mg/bottle, and taking into account the recommended daily intake, an adult can consume 2.7 bottles. Americano coffee was 0.15- 0.38 mg/mL, with an average of 0.28 mg/mL. The average content of product was 110.42 mg/bottle, and considering the recommended daily intake, an adult can consume 3.6 bottles. The caffeine content of decaffeinated cold brew coffee was 5.14 mg/bottle and compared to Americano coffee, more than 95% of the caffeine was removed. In addition, we verified the tolerance level of the total caffeine content in ready-to-drink coffee, and none of them exceeded 120%, signifying that all commercial products were effectively managed.

        The aim of this paper is to conceptualise the internationalisation of food and drink SMEs by developing and evaluating a framework specifically for food and drink SME internationalisation. SME internationalisation is an established area of research that has seen a wealth of research since the seminal work of the Uppsala scholars on the stage approach (cf. Johanson & Wiedersheim-Paul, 1975; Johanson & Vahlne, 1977). In recent decades SME internationalisation research has focussed on a range of issues that impact on internationalisation, from company characteristics (cf. Jones & Coviello, 2005; Hsieh et al., 2019) entrepreneur characteristics (cf. Reuber & Fischer, 1997; Ramón-Llorens et al., 2017), network connections (cf. Johanson & Mattson, 1988; Johanson & Vahlne, 2009) and determinants to international growth (Katsikeas et al., 1996; Li, 2018). This wealth of research underlines the complexities in understanding and explaining internationalisation. Thus, the purpose of this paper is to understand and evaluate the critical determinants of internationalisation specifically for food and drink SMEs, through an evaluation of relevant theory and the development of a framework for food and drink SME internationalisation. These aims address three gaps in the literature, namely, limited research on specific industries, limited research on food and drink SMEs, and few efforts to conceptualise the SME internationalisation process.

        The fruit stalk of Hovenia dulcis (H.dulcis) is traditionally used to relieve hangovers in Korea. Theracurmin is a highly absorbable curcumin preparation which increases the bioavailability of curcumin. Curcumin is known for its antioxidant and anti-inflammatory effects. However, the role of this combination in lowering alcohol levels in the body, thereby alleviating the severity of alcohol-induced hangover has not been investigated. Therefore, we conducted a study to investigate the eliminatory effects of a health drink containing the extract of the H. dulcis fruit stalk and theracurmin (theracurmin drink) on ethanol-induced hangover in rats. The theracurmin drink delivered orally to rats 30 mins before the administration of 40% ethanol (5 g/kg body weight), lowered the concentration of ethanol and acetaldehyde in the blood samples collected 1, 3, and 5 h after ethanol administration. Furthermore, the theracurmin drink increased the activities of alcohol dehydrogenase and aldehyde dehydrogenase enzymes. The effectiveness of the theracurmin drink was thus superior to that of other health drink products, suggesting that its consumption may alleviate or prevent an alcohol-induced hangover.

        The purpose of this study was to investigate dietary habits, health lifestyle, preference and intake of beverages of Chinese students in Gyeonggi area. Therefore, we try to identify the factors that affect beverage consumption. According to the analysis of the demographic characteristics of male and female Chinese students, there were 155 male students (49.7%) and 157 female students (50.3%). There were statistically significant differences between the residence period and the time of coming to Korea according to sex (p<0.05), but there was no statistically significant difference between the education level, residence type and Korean ability (p>0.05). Analysis of the differences in health-related lifestyle among Chinese students of both sexes showed statistically significant difference in alcohol drinking, smoking, and exercise according to sex (p<0.05), but no statistically significant difference in computer use time (p>0.05). According to the analysis of the dietary habits of the Chinese students, there was a statistically significant difference in the number of meals per day, breakfast, lunch, dinner, snack frequency and number of midnight snacks, but no statistically significant difference in eating out frequency. As a result of the preference test for general beverages, 4.11 points of water, 3.81 points of milk, 3.64 points of fruit and vegetable juice, 3.58 points of tea, 3.25 points of coffee, 3.22 points of carbonated drinks, 2.92 points of functional drinks, respectively. Male students were more likely to prefer water, tea, and health functional drinks while female students had higher preference for fruit, vegetable juice and vinegar drinks (p<0.05). In general, consumption of regular drinks was 4.95 in water, 3.58 in milk, 3.03 in coffee, 2.92 in carbonated drink, 2.91 in fruit and vegetable juice, 2.63 in tea, 2.07 in functional drink, and 1.44 in vinegar appear. Male students had higher intake of water, tea, carbonated drinks, and health functional drinks while female students had higher intake of fruit and vegetable juice (p<0.05). The results of correlation analysis of factors affecting the general drinking of Chinese students are as follows. The intake of tea was related to the period of residence and dietary habits, the intake of milk for breakfast, the number of snacks and midnight snacks for carbonated drinks, and the fruit vegetable juice were related to dietary habits (p<0.01, p<0.05).         본 연구에서는 약용식물 추출물을 함유한 숙취해소 음료가 항산화 및 알코올 분해에 미치는 영향을 조사하기 위하여, 약용식물 추출물의 총 페놀성화합물 함량, 총 플라보노이드 함량 및 DPPH radical 소거활성 및 ALDH(aldehyde dehydrogenase) 활성을 측정하였고, 약용식물 추출물을 함유한 숙취해소 음료의 복용이 음주 후 호흡 중 알코올 농도에 미치는 영향을 조사하였다. 항산화활성은 빼빼목 추출물 에서 높은 수치(total phenolic compound 97.5.6mg/g, total flavonoid 306.5mg/g, DPPH radical 소거능 80.1%)를 나타냈으며 Acetaldehyde(ALDH)에 대한 활성은 헛개 및 울금 추출물에서 306% 및 292%로 가장 높은 활성을 나타내어, 헛개 및 울금 추출물이 ALDH 제거에 효과적인 것으로 나타났다. 헛개 및 울금 추출물이 함유된 숙취해소 음료를 이용하여, 임상실험을 실시한 결과, 시간경과에 따라 대조군에 비해 숙취해소음료 섭취군에서 알코올 농도가 감소되는 경향을 나타냈으며 흡연자에 비해 비 흡연자가, 남성에 비해 여성에게 숙취해소 음료의 섭취가 더 효과적인 것으로 확인되었다.

        As the hangover relieving drink market has been expanded, there have been efforts to produce traditional drinks that can be easily taken through reducing material costs after finding materials with high alcohol-degrading activity from agricultural products and manufacturing drinks in a way to produce sikhye. Studies were made to know quality, the ability to relieve hangover and preference of drinks for which seven kinds of agricultural products, including shiitake mushrooms, were added in the forms of fresh juice, extracts and powder. Farm products showed the highest acetaldehyde dehydrogenase (ALDH) when they were added in the form of powder before saccharification and shiitake mushrooms showed the highest enzyme activity when they were added in the form of powder. When added in the form of powder, people showed the lowest preference except when radish and hericium erinaceum were added. When bear puree was added to a mixture of powdered shiitake mushrooms, radish, bean sprouts and dadagi cucumber, enzyme activity got higher and people showed higher preference. An experiment of animal behaviors showed that the mixture had a high ability to relieve hangover in one or two hours after 10% or 40% alcohol was orally administered to mice due to long traveling distance of mice.

        This study was conducted to investigate the correlation between frequency of high-caffeine energy drink intake in adolescents and their mental health status using data from the Korean adolescent health behaviors online survey (2014-15). Mental health was classified by the five categories: Perception of stress (PS), Insufficient relief of fatigue after sleep (IRFS), Experience of sadness despair (SD), Suicidal ideation (SI), and Subjective unhappiness (SU). Regarding general characteristics, higher age, height, and body weight of subjects were associated with higher frequency of high-caffeine energy drink (HCED) intake (p< .0001). In the OR analysis, when the lowest group (≤2/wk) and highest group (1≥day) were compared, the highest group showed significantly higher OR in all five categories of mental health. According to gender, males did not show better PS, SD, and SI than females who had a high frequency of HCED (p for trend<.0001). According to school level, middle school students showed a higher risk rate than high school students in PS, IRFS, and SD (p for trend< .0001). Based on the above results, higher frequency of HCED intake among adolescents was associated with more adverse effects on mental health.

        The purpose of this study was to determine factors related to the consumption of energy drinks among male and female high school students in Daejeon. The research data, derived from the self-administered questionnaire method, was collected from 664 students in fifteen high schools during the spring of 2016. A total of 542 complete questionnaires were analyzed (response rate: 79.8%). Approximately 73% of the students self-reported having consumed energy drinks, with a greater percentage of male (as opposed to female) students self-reporting as having done so. The most common reasons given for the consumption of energy drinks were to stay awake (54.8%), the good taste of the drink (28.0%), to concentrate during studying (17.2%), and to relieve fatigue (16.9%). The adverse effects were palpitation (59.3%), insomnia (35.6%), and experiencing difficulty in waking up (30.5%). More than two in three (67.8%) students who experienced adverse effects still consumed energy drinks. The average level of health consciousness was lower than 3 out of 5 points. The results of the logistic regression analyses indicated a positive relationship between monthly allowance (OR=1.01 for male and female students) and the consumption of energy drinks by both male and female students. Among the male students, freshmen (OR=0.23) were less likely to have consumed energy drinks than juniors. Male students’ sleeping hours (OR=0.65) and perceived school life satisfaction scores (OR=0.63) were negatively associated with the consumption of energy drinks. In the case of female students, study hours (OR=0.83) and energy drinks consumption were negatively related. These factors affecting energy drinks consumption could be considered in the development of dietary education programs aimed at protecting high school students from the adverse health impacts of energy drinks

        땅콩을 발아시켜 새싹으로 키우게 되면 땅콩에 함유되어 있는 resveratrol과 asparagine 성분이 크게 증가된다는 보고가 있다. 이러한 사실을 바탕으로 땅콩새싹 추출물을 이용한 숙취해소음료를 개발하였 다. 본 연구에서는 땅콩새싹 추출물을 이용한 숙취해소 음료가 항산화 및 알코올분해효소 활성에 미치는 영향을 조사하기 위해서, 총 페놀 함량과 DPPH radical 소거활성 및 ADH와 ALDH 효소활성을 in vitro 및 in vivo 실험을 통하여 확인하였다. in vitro 실험결과 총 페놀 함량과 DPPH radical 소거활성에 있 어서는 두 가지 모두 땅콩새싹 숙취해소음료가 제품A보다는 약 6배, 제품B보다는 약 2배 정도로 높은 활성을 보였으며, ADH와 ALDH 효소활성은 제품A 보다 각각 약 40배와 약 7배 정도로 높게 나타났으 며, 제품B 보다는 약 20배와 약 2배 정도로 높게 나타났다. in vivo 실험을 통한 혈중 알코올농도는 시 간이 경과함에 따라 빠르게 감소하는 경향을 보였고, 아세트알데히드는 시간이 경과함에 따라 대조군에 비하여 빠르게 분해되는 것을 확인할 수 있었다. 따라서 땅콩새싹을 이용한 숙취해소 음료는 시중에 판 매되고 있는 숙취해소음료와 비교해 볼 때 항산화 및 알코올분해효소 활성에 효과적이라 판단된다.

        본 연구에서는 인진쑥 배지에서 배양한 노루궁뎅이버섯 균사체 배양 추출물의 간세포 독성 및 간세포 보호 효과와 이 배양 추출물에 흑마늘 추출물을 혼합한 혼합액의 간세포 보호 효과와 항산화력을 측정하였다. 배양 추출물의 세포 독성을 농도별로 측정한 결과, 0.05 mg/mL의 농도 이상에서는 세포생존율이 유의적으로 감소하는 것으로 나타났으며, 배양 추출물의 간세포 보호 효과를 측정한 결과, 물과 ethanol의 비율 5:5, 80˚C의 조건에서 추출한 추출물이 상대적으로 가장 좋은 간세포 보호 효과를 나타내었다. 이 조건에서 추출한 배양 추출물에 흑마늘을 혼합(배양 추출물:흑마늘 추출물=9:1, 8:2, 7:3)하여 간세포 보호 효과와 항산화력을 측정하였다. 측정 결과, 간세포 보호 효과는 흑마늘 추출물 첨가 시 유의적인 차이가 나타내지 않았으며, 항산화력 측정 결과에서는 오히려 흑마늘 추출물 첨가 비율이 낮을수록 상대적으로 높은 항산화 활성을 보여, 흑마늘 추출물의 경우, 적은 농도에서는 간세포 보호 효과 및 항산화력에 영향을 주지 않는 것으로 추정되었다. 배양 추출물만으로(1.9 Brix, 15%) 액상과당 농도를 달리하여(10, 15, 20%) 제조한 음료의 관능검사 실시 결과, 액상과당 농도 차이가 단맛에서는 유의적 차이를 나타내었으나, 쓴맛, 향, 농도 및 전반적 기호도에 있어서는 유의적 차이를 나타내지 않았다.

        In terms of awareness of Korean traditional food, elementary students are most affected by their parents. The objective of this study was to analyze upper grade elementary students’ parental awareness and preference of Korean traditional foods in the Chungnam Area. In a survey of 126 parents, 58% of subjects were interested in Korean traditional foods, but there was no significant difference according to age. About 87% of parents thought that inheritance of knowledge on Korean traditional foods was needed. The reasons for inheritance of knowledge on Korean traditional foods were ‘To stick to style of Korean traditional foods’ (68.2%), ‘Palatable’ (21.8%), ‘Education for children’ (6.4%), and ‘Beautiful and fine custom’ (3.6%). The awareness point of ‘Korean traditional foods are easy for cooking’ increased with increasing age (p<0.01). In all age groups, subjects highly recognized that Korean traditional foods are good for health. There were significant correlations between overall preferences for Tteok and Hankwa (r=0.351, p=0.001), Hankwa and Korean traditional drink (r=0.374, p=0.001), and Korean traditional drink and Tteok (r=0.406, p=0.001). As a result, preferences for other items also increased when preference for one of the three traditional foods increased. Therefore, education on Korean traditional foods is necessary in order to satisfy parental preferences.

        본 연구에서는 홍삼음료의 다양화 및 기능성 강화와 여러 기능성을 가진 황기의 식품으로의 활용에 역점을 두고, 기존의 증점제를 대신하여 동결건조 천년초열매를 첨가한 새로운 기능성 홍삼음료을 개발하고자 하였다. 먼저 높은 항산화활성을 지닌 황기추출물을 얻고자 추출용매의 지용성정도를 달리하면서(100(증류수) : 0(95% 에탄올), 75 : 25, 50 : 50, 25 : 75) 80oC에서 추출한 추출물의 항산화활성을 측정한 결과, ABTS 및 DPPH radical 소거능 실험에서 증류수의 비율이 증가할수록 추출물의 항산화력이 증가하는 것으로 나타났다. 추출용매의 온도에 의한 황기추출물의 항산화활성 차이를 알아보고자 추출용액의 온도를 달리하면서(60, 80oC) 추출한 추출물의 항산화활성을 비교해 본 결과, 80oC에서의 추출물이 증류수와 에탄올혼합비율과는 상관없이 대부분 60oC 추출물보다 높은 값을 나타내었다. 기존의 점증제를 대신하여 다양한 기능성을 함유한 천연물 소재인 천년초분말을 선택하였으며, 구아검용액과 농도별 점도를 비교해 본 결과, 구아검 0.1%(w/v) 용액과 비슷한 점도를 나타내기 위해서는 천년초분말의 경우 1-2%(w/v)의 농도가 필요한 것으로 분석되었다. 황기와 천년초 첨가가 홍삼용액의 저장성(35oC)에 미치는 영향을 조사하기 위하여 이들 용액의 pH와 총미생물수를 7일 동안 측정하였다. 홍삼용액에 황기와 천년초를 첨가한 경우, 저장 1일째부터 pH가 급격히 감소하기 시작하였으며, 저장 3일째에는 pH가 약 3.6까지 떨어진 다음, 저장 6일 이후에는 다소 pH가 증가하였으며, 천년초분말을 첨가한 용액에서는 황기의 농도증가에 의한 유의적 pH 감소는 나타나지 않았다. 천년초를 첨가한 홍삼용액의 경우 황기의 농도와는 상관없이 저장 7일째 미생물의 성장을 관찰할 수 없었으며, 천년초를 첨가하지 않은 시료에 비해 6 log cycle 이상의 큰 살균효과를 나타내었다. 황기(3, 5%, w/v), 천년초(1.2%, w/v)를 함유한 홍삼용액(5%, w/v)이 대장암 및 뇌종양세포 증식에 미치는 영향을 각각 0.5 mg/mL과 1 mg/mL의 농도에서 살펴본 결과, 종양세포에 대한 의미 있는 증식억제효과는 나타나지 않았다.

        This study was performed to investigate the effect of extract mixture(IPGE) drink from Inonotus Obliquus, Phellinus Linteus and Ganoderma Lucidum on hematopoietic stem cells and lymphocyte subset[lymphocyte, CD4+ T cell, CD8+ T cell, Natural Killer(NK) cells] of blood in 37 participants who were healthy and about 40~70 years old. They were divided into two groups; extract mixture drink administration group(n=27) and placebo administration group(n=12). They were given the test drink daily for 4 weeks. Blood was obtained from the subjects every two week in the beginning of administration day to evaluate the CD34+ hematopoietic stem cells and immune cells. As results, CD34+ hematopoietic stem cells were significanly increased after taking IPGE drink for 4 weeks compared to that before taking the drink (p < 0.001). There was no significant changes in number of lymphocytes, CD4+ T cells, CD8+ T cells, NK cells and in the ratio of CD4+/CD8+ cell after taking the test drink. From these results, it was suggested that IPGE have a good health effect by promoting the proliferation of the hematopoietic stem cells.

        본 연구에서는 연근의 건강식품 소재로서의 활용가능성을 확인하기 위하여 연근의 성분분석 및 연근을 이용하여 만든 연근음료 및 연근 발효음료의 항산화효과를 비교하였으며, 고지방식이를 공급한 흰쥐에게 연근음료 및 연근발효음료를 7주간 공급하여 혈청의 지방대사에 미치는 영향을 검토하여 다음과 같은 결과를 얻었다. 연근음료 및 연근발효음료는 1%에서 각각 25.55%, 23.88%의 항산화 활성을 나타내었고, 10%에서는 각각 87.5%, 95.81%로 항산화 활성이 매우 높게 나타났다. 또한 아질산염 분해활성은 pH 3.0 및 pH 6.0에서 연근음료의 경우 24.97%, 23.73%의 아질산염 분해활성을 나타내었으며, 연근발효음료도 음료의 농도에 비례하여 아질산염 분해활성이 증가하는 경향을 보였다. 고지방식이를 먹인 흰쥐에게 연근음료 및 연근발효음료를 7주간 병행 공급하였을 때 1일 체중증가량은 고지방식이 급여 대조군에 비해 감소하였으나 유의적이지는 않았다. 식이효율은 고지방식이를 급여한 실험군 모두가 정상군에 비해 유의적인 증가를 나타내었다. 체중 100g당 간의 무게는 고지방식이 급여 대조군에 비해 연근음료 투여군은 11.6%, 연근발효음료 투여군은 9.9% 감소하였으나 유의적이지는 않았다. 혈액 중 총 지방함량과 중성지방 함량은 연근음료와 연근발효음료 급여 시 고지방식이 급여 대조군에 비해 유의적인 차이가 나타나지 않았다. 혈액 중 총콜레스테롤 함량은 연근음료 및 연근발효음료 공급 시 고지방식이 급여 대조군에 비해 유의적인 감소를 나타내었으나 음료 종류에 따른 유의적인 차이는 나타나지 않았다.

        숙취해소용 음료로 개발된 건강음료를 각각 알코올(5 g/kg B.W, 40%) 투여 30분 전과 후에 경구적으로 섭취시키고(10 mL/kg) 시간(1, 3 및 5)에 따라 미동맥으로 채혈하여 혈액 중 알코올 농도와 아세트알데히드 농도, 간 조직 중 알코올 대사효소 alcohol dehydrogenase (ADH) 및 aldehyde dehydrogenase(ALDH)의 활성과 간기능 지표 효소(ALT, AST)의 활성 변동을 측정 비교하여 다음과 같은 결과를 얻었다. 알코올 투여 30분 전에 건강음료를 공급하였을 때 혈액 중 알코올 농도는 알코올 투여 1시간 후부터 모든 군에서 급격하게 감소하였으며 알코올 투여 5시간째에 알코올 대조군(EC)에 비해 건강음료 투여군(BE)은 48.4%정도 감소하는 경향을 나타내었다. 또한 아세트알데히드 농도는 알코올 대조군(EC)에 비해 건강음료 투여군(BE)은 15.6%, 타사제품 투여군(P)은 20.3% 낮았다. 알코올 투여 30분 후 숙취해소 음료를 공급하고 5시간 경과 후 건강음료 투여군(AE)의 알코올 농도는 알코올 대조군(EC)에 비해 65.2% 낮은 수치를 나타내었다. 아세트알데히드 농도는 알코올 대조군에 비해 건강음료 투여군(AE)은 36.4% 낮은 0.21 mg/dL 타사제품투여군(P)은 24.2% 낮은 0.25 mg/dL를 나타내었다. 간 조직 중 ADH 활성은 정상군과 알코올을 섭취 한 모든 실험군 사이에 별다른 변동을 관찰할 수 없었다. 숙취해소 음료의 1회 섭취와 체중 1 kg당 5 g의 알코올 1회 투여가 알코올 대사 효소의 활성에 영향을 미치지 못함을 시사하고 있다. 혈청 ALT, AST 활성은 정상군과 알코올 투여 실험군간에 유의적인 차이를 보이지 않았으며 또 건강음료의 음용이 정상적인 간 기능에 영향을 미치지 않는 결과를 볼 때 안전성이 인정된다고 생각된다.

        As an attempt to develop new functional health beverage by using medicinal herb, green ginger(Zingiber officinale Roscoe), we investigated the effect of Zingiber officinale on blood pressure and regional cerebral blood flow (rCBF) of rats with Zingiber officinale extracts. Zingiber officinale extract increase rCBF significantly. The drink produced consisted of Zingiber officinale extract 1.825%, maltitol syrup 17.0%, citric aicd 0.06%, ascorbic acid 0.02%, stevioside 0.001%, ginger flavor 0.11% and water. Brix, pH and acidity of product were 13.7, 4.4 and 0.09, respectively. This drink had good score by the sensory evaluation. The above results showed that development of such functional beverage using Zingiber officinale can used as a functional material improving blood circulation in beverage industry.
