        This study aims to investigate the physical properties of extruded psyllium husk upon the addition of emulsifiers. Three different emulsifiers−glycerol monostearate (GMS), polyglycerol ester (PGE), and sugar ester (SE)−were added to the mixture of psyllium husk and rice powder before extrusion. Extrusion was performed using a twinscrew extruder at 140°C die temperature, 200 rpm screw speed, and 16% feed moisture content. The physical properties of psyllium husk extrudates including expansion ratio, specific length, piece density, texture profile, color properties, water soluble index, and water absorption index were evaluated. It was observed that the expansion ratio was the highest while the specific length and piece density were the lowest in the control which had no emulsifiers. Texture profile analysis showed that the apparent elastic modulus and breaking strength were highest in the extrudate with a PGE of 0.1%. The adhesiveness was found to be lowest in the extrudates with an SE of 0.1% and GMS of 0.5%. Lightness value was highest in the extrudate with a PGE of 0.1%. Color difference, water soluble index, and water absorption index were highest in the control. The results reveal that some physical properties of extruded psyllium husk were improved with the addition of emulsifiers. This finding provides useful information for the development of psyllium snacks with good physical characteristics.

        PURPOSES : The purpose of this study is to examine the manufacturing method for emulsified asphalt and its bond performance by analyzing the properties of the emulsifier used to produce cold recycled asphalt mixtures. METHODS: In this study, four types of slow-setting cationic emulsifiers, a microsurfacing emulsifier, and six types of nonionic emulsifiers were used to manufacture emulsified asphalt. Because each emulsifier requires its own unique effective dose to provide the best performance, the optimum asphalt content for each effective dose was determined. Then, the optimum asphalt content for the emulsified asphalt mixture was determined by the tests to check its basic physical properties. By using the determined optimum content, asphalt mixtures were manufactured and dynamic immersion and tensile strength tests were conducted on the mixtures to analyze the influence of the emulsifier on the physical properties of the mixtures. RESULTS : The dynamic immersion test results showed a coating ratio of 54-85%, which is considerably higher than that of using ordinary straight asphalt. The tensile strength test yielded noncompliant values less than 0.4 N/mm, which is the standard requirement for dry indirect tensile strength. The correlation analysis between the dynamic immersion and tensile strength ratio tests showed very high correlation of 0.78. The correlation between the emulsifier content and water resistance performance was low, between -0.55 and -0.24. CONCLUSIONS : While the storage stability improves with increasing emulsifier, the effectiveness proportional to the increase is weaker as the emulsifier increases. The performance testing of asphalt residues before and after manufacturing the emulsified asphalt showed no significant change. It is proved that the emulsified asphalt maintains high coating resistance according to the dynamic immersion test results. In addition, according to the results of tensile strength ratio, cold recycled asphalt mixtures manufactured by the materials normally and commercially used are not compliant with the national standard specification; thus, additional effective materials will be needed for quality compliance. In conclusion, it is evident that the dynamic immersion and tensile strength ratio tests have good correlation, but the quantity of emulsifiers used is not related to the level of moisture resistance.

        Retinol is a type of vitamin A that helps the skin's epidermal cells maintain their original function and plays an important role in visual acuity. However, retinol cannot simply be incorporated into foods in its pure form because of limited solubility and chemical instability. In this study, retinol was encapsulated within lipid droplets of oil-in-water (O/W) emulsion and the photo stability of retinol loaded in O/W emulsion was examined. O/W emulsions containing retinol were prepared using Tween 20, Decaglycerine myristate and WPI, respectively, at different oil concentrations (0.1, 0.5, 1.0, 2.0, and 4.0 wt%). Photo stability of retinol was determined by measuring retention rate (%) of retinol loaded in O/W emulsions after exposure to UV light for 24 h and compared to that of retinol dissolved in ethanol. The retinol retention rate was higher for O/W emulsions than retinol in ethanol and the retention rate increased as the oil concentration of emulsions increased, which might be attributed to the opaqueness of emulsions. As the oil concentration of emulsions increased, the turbidity of emulsions also increased. In terms of the type of emulsifier, decaglycerine myristate-stabilized emulsion had the highest retinol retentions rate than other emulsifier-stabilized emulsions after exposure to UV light. This study provides important information for designing effective emulsion-based delivery systems for improving the stability of retinol.

        Curcumin is a natural polyphenolic phytochemical, which has a number of potential benefits in biological activities. However, curcumin has extremely low water solubility and low bioavailability, which makes it difficult to incorporate into many food products. In this study, we investigated the effects of biopolymer emulsifier type and environmental stress on the physical stability of nanoemulsions containing curcumin. Nanoemulsion containing curcumin stabilized by sodium caseinate (SC), whey protein isolate (WPI), modified starch (MS), and gum arabic (GA) were prepared using microfludizer. The droplet size of nanoemulsions decreased significantly from 1028 nm to 169 nm as emulsifier concentration increased (p<0.05). The optimum concentration of emulsifiers for stable curcumin nanoemulsions were determined to be 1% of SC and 1% of WPI, respectively. The storage study showed that the nanoemulsions were physically stable for 5 weeks at 25oC. In addition, nanoemulsions were physically stable against heat, freeze-thaw, pH, and NaCl solution. However, extensive droplet aggregation occurred in protein-stabilized nanoemulsions at CaCl2 solution, which was attributed to hydrophobic interaction between droplets.

        이 연구에서는 계면활성제에 작용기를 첨가하여 유화제 뿐만 아니라 합성에서의 모노머로 작 용할 수 있는 반응성 계면활성제를 합성하였다. 반응성 계면 활성제는 메타아크릴 산, 아크릴산과 비이 온성 계면 활성제인 폴리 옥시 에틸렌 라우릴 에테르 (POE 23)를 사용하여 합성되었으며 벤젠을 용매 로서 사용하였고, P-TsOH를 촉매로서 사용 하였다. 합성된 계면 활성제는 FT-IR, 1H-NMR 스펙트 럼, 원소 분석을 하였다. 물성 평가는 HLB, Cloud point, 표면 장력, 임계 미셀 농도를 측정 하였다. HLB 값은 11.62∼12.09 범위로 평가 하였다. cmc 값은 표면 장력 법으로 측정하였을 때 1×10-4~5×10-4 의 값을 가졌다. 실험을 통해 측정된 Cloud point은 35, 39℃ 이었다. 합성 계면 활성 제의 유화 특성은 polyoxyethylene lauryl ether보다 낮았다. 또한, 유화력은 벤젠에서 보다 대두유에서 더 좋았다. 실험결과 합성 수율은 93.27 ∼ 94.49%로 확인되었다.

        이 연구는 슈크로오스디스테아레이트(Sucro-DS)를 사용하여 친수형 O/W 에멀젼을 만들고, 이 에멀젼의 드로플렛(droplet)은 다중층의 구조를 가지는 액정생성에 관한 것이다. Sucro-DS 의 물리화 학적 특성을 알아보았고, 이를 이용한 유화성능에 대하여 연구하였다. 액정을 형성하기 위하여 3wt%의 Sucro-DS, 5wt%의 글리세린, 5wt%의 수쿠알란, 5wt%의 카프릭/카프릴릭트리글리세라이드, 3wt%의 세토스테아릴알코올, 1wt%의 글리세릴모노스테아레이트, 78wt%의 정제수의 혼합계에서 안정한 다중층 의 라멜라구조가 형성됨을 알 수 있었다. 이를 응용하여 불안정한 활성물질을 봉입한 크림을 만드는 방 법에 대하여 기술하였다. 또한, 이 기술을 이용한 크림의 보습효과에 대하여 연구하였다. 인체 임상시험 을 통한 피부개선효과에 대하여 연구한 결과를 보고한다. Sucro-DS 를 사용하여 안정한 액정상을 생성 하는 pH 범위는 5.2~7.5 에서 안정한 액정구조를 유지하고 있었다. 액정의 안정성이 우수한 농도는 3wt%의 베헤닐알코올을 함유할 경우의 경도는 13kg/mm,min 이었다. 동일 함량의 점도는 25,000 mPas/min 이었다. 유화제의 영향에 대하여 실험한 결과, Sucro-DS 의 농도는 5wt%가 적합하였고, 안정 한 액정의 입경분포는 4~6mm 이었다. 이를 현미경분석을 통하여 관찰하였고, 3 개월동안 액정변화의 안 정성은 4℃, 25℃, 45℃에서 안정함을 알 수 있었다. 임상시험으로, 바르기 전의 보습력은 13.4±7% 이 었다. 액정이 형성되지 않은 크림의 보습력은 14.5±5%로 바르기 전보다는 약 8.2% 보습력이 상승하였 다. 반면, 액정크림의 경우 19.2±7%로, 도포 전보다는 43.3%보습력이 상승하였다. 응용분야로 Sucro-DS 유화제를 사용한 액정크림, 로션, 아이크림 등 다양한 제형개발이 가능하고, 화장품산업은 물 론 의약품산업 및 제약산업에서 피부외용제의 유화기술로 폭넓게 응용이 가능할 것으로 기대한다.

        The purpose of this study was to introduce the toxicological study review to evaluate the safety of PDMS on the 69th JECFA meeting. Polydimethylsiloxane is a polymer and its ADI was established at 23rd JECFA meeting in 1979. The ADI was maintained although the specification was expanded at its 26th, 29 th, 37 th meetings. Recently, it was reported that PDMS with low molecular weight and viscosity has high absorption rate and different toxicity, so it was submitted at 69th meeting. Toxicological studies of PDMS were submitted from the sponsor and additional information is collected from a document searching. The toxicological studies were reviewed in accordance with the 'Guidelines for the preparation of toxicological working papers for the Joint FAO/WHO Expert Committee on Food Additives'. In the available acute, sub-chronic and chronic toxicity studies on PDMS, dose-related increases in incidence and severity of ocular lesions(corneal crystal, inflammation of the corneal epithelium etc.) were consistently observed after oral dosing. It seems to be a local irritant effect, but the mechanism by which the ocular lesions arose is unclear, although the lack of absorption of PDMS indicates that it is unlikely to be a direct systemic effect. Consequently, the relevance of the ocular lesions for food use of PDMS could not be determined. The ADI of PDMS was re-established from 0-1.5 mg/kg bw/day to 0-0.8 mg/kg bw/day by applying additional safety factor 2 based on its ocular toxicity. The result of 0-0.8 mg/kg bw/day is a temporary ADI until further data are provided to 2010.

        활성글루텐을 첨가한 쌀가루에 검의 첨가가 쌀가루의 신속점도측정기(RVA) 호화양상과 farinograph 반죽특성에 미치는 영향을 조사하였다. 검의 첨가에 의해 쌀가루의 RVA 최고점도는 증가한 반면 setback은 약간 감소함을 나타내었다. 활성글루텐을 첨가한 쌀가루에 검의 첨가는 farinograph 수분흡수율을 증가시키고 반죽의 안정도를 증가시켜 반죽을 강하게 하는 효과를 부여하였다. 쌀가루에 활성글루텐을 14% 첨가하고 검, 유화제 및 효소제를 복합처리하여 쌀빵을 제조한 후 쌀빵의 부피와 저장 중 경도변화를 조사하였다. 쌀가루에 첨가하는 활성글루텐의 양이 감소함에 따라 쌀빵의 부피가 감소하였지만 검, 유화제 및 효소제를 복합첨가 함으로써 쌀빵의 부피를 현저히 개선시킬 수 있었다. 활성글루텐만을 첨가한 쌀빵은 저장 중에 경도가 급격히 상승하였으나 검, 유화제 및 효소제를 복합첨가하여 제조한 쌀빵은 저장 중에 경도의 증가 폭이 현저하게 감소함을 나타내었다. 따라서 적절한 검, 유화제, 효소제의 복합처리는 쌀빵의 부피와 경도 변화 등 쌀빵의 품질에 매우 긍정적인 영향을 주는 것으로 평가되었다.

        This study was performed to know effect of Yackwa quality when sucrose fatty acid esters(S-570, S-970, S-1570) were added as an emulsifier. In mechanical characteristics, the Yackwa of sucrose fatty acid esters did greatly decrease the hardness, cohesiveness, springiness and gumminess, respectively, and increase the brittleness compared to the Yackwa of non-emulsifier and egg yolk. This tendency showed at the above level of 1.0% S-570, and 0.5% S-970 and S-1570, respectively. In sensory evaluation, the Yackwa of sucrose fatty acid esters increased the softness compared to the Yackwa of non-emulsifiers and egg yolk. There were significantly differences in the preference at 0.5% level of S-970 and 1.5% level of S-1570, respectively compared to other treatments. In conclusion, the 0.5% level of S-970 would be mostly useful level of emulsifier for making Yackwa.

        We investigated the property of formation of mono-vesicle(designated nano-some) with using of the combined co-emulsifiers and phospholipid. Nano-some was prepared with hydrogenated lecithin(HL) and diethanolamine cetyl phosphate(DEA-CP) by swelling reaction. Kojic acid and kojic dipalmitate could be made stabilization by nano-some system using microfluidizer(MF). Nano-some has a good affinity to skin by means of this system. The composition was compounded by 2% of hydrogenated lecithin (phosphatidyl choline contained with 75%, 0.5% of DEA-CP and 0.5% of diglyceryl dioleate (DGDO). To make nano-some, several conditions of MF have to be considered as follows. The optimum pH was 6.0. The pressure was 10,000psi and passage temperature was at 306℃. The nano-some base was passed to homogenize continually 3 times through MF. The Particle size distributions of the vesicles were with in 57~75.7nm(mean 66nm) by measuring the Zetasizer-3000. Zeta potential of vesicles with 3 times passage through MF was -24.8mV. Formations for nano-some vesicle certificated photograph by scanning electric magnification (SEM). Stability of nano-some was very good for 6months. The turbidity was very good transparency compared nano-some with liposome. It was formed the mono vesicle in the opposite direction to be formed the multi-lamellar vesicle of liposome.

        본 연구에서는 친수성 계면활성제와 친유성 계면활성제가 조합된 다양한 HLB (Hydrophilic Lipophilic Balance) 값을 갖는 유화 시스템의 조건에서, required HLB 값이 각기 다른 오일들을 적용하여 제조한 O/W 및 W/S 에멀젼들의 특성 및 유화 안정성을 조사해 보았다. 그 결과 O/W 에멀젼은 유화제의 HLB 값이 낮을수록 점도가 높고, 유화입자는 작고 조밀한 경향을 나타내었으며, 원심분리에서도 더 안정한 경향을 나타내었다. W/S 에멀젼은 유화제의 HLB 값이 높을수록 유화입자는 작고 조밀해지는 경향을 나타내었으며, 원심분리에서도 더 안정한 경향을 나타내었다. 그러나 W/S 에멀젼은 시간이 경과할수록 모든 유화제의 HLB 조건에서 점도가 낮아지는 경향이 나타나 장기 안정도에서는 불안정한 특성을 나타내었다. 이번 연구의 결과는 O/W 에멀젼은 HLB 값이 높은 비이온 계면활성제의 적용이 적합하며 W/S 에멀젼은 HLB 값이 낮은 비이온 계면활성제의 적용이 적합하다는 기본 이론과 상반되는 결과로서 앞으로의 화장품 연구 개발 시 유용한 연구 자료가 될 것으로 사료된다.

        w/o 에멀젼은 내수성이 뛰어나고 보습 효과를 오랫동안 지속시킬 수 있으므로 화장품에 많이 사용하지만 안정도가 좋지 않기 때문에 안정한 w/o 에멀젼을 만들기 위해서는 전해질의 농도, 오일의 극성 정도, 수상의 비율, 유화제의 농도 등을 조절하는 것이 매우 중요하다. 안정도에 영향을 주는 여러 가지 요소 중에서 유화제의 구조에 따라 유화가능여부와 안정도가 어떻게 달라지는지에 초점을 맞추고, 유화제를 구조적으로 polyglyceryl ester 계열, silicone 계열,sugar 계열 유화제 등으로 나누어서 실험을 진행하였다. 또한 유상에 사용되는 오일의 실리콘 함량을 다르게 하여 유화제의 유화 능력을 검토하였다. 실험 결과를 참고하여 유화제에 따른 에멀젼의 입자, 점도의 경시 변화 등의 w/o 에멀젼의 특성을 찾아내고, 여러 조건에서 에멀젼의 안정도를 관찰하였다.
