        서울 시내 유통점과 온라인 쇼핑몰에서 구입한 홍삼함 유식품 66건과 건강기능식품 홍삼제품 35건의 기능 성분 인 진세노사이드 함량을 비교·분석하였다. 홍삼함유식품 66건 중 전통시장에서 구입한 2건은 진세노사이드가 검출 되지 않았고 64건의 제품에서는 진세노사이드 함량에 대 한 기준은 없지만 일일 섭취량 기준 0.55-71.56 mg을 함 유하고 있었다. 건강기능식품의 홍삼제품은 진세노사이드 평균 함량이 분말형 제품을 제외하고 일일 섭취량 기준 18.23 mg으로 홍삼함유식품의 8.80 mg 보다 약 2배 정도 가 많았다. 홍삼과 흑삼 비교 시 진세노사이드 함량은 홍 삼 제품이 흑삼 제품보다 많거나 비슷하였으나 분말형 제 품의 경우 흑삼 제품이 2배 많았다. 제형별 진세노사이드 평균 함량은 일일섭취량 기준 농축액 21.95 mg으로 가장 많고 분말 형태 12.54 mg, 스틱형 7.36 mg, 파우치형이 4.10 mg 순이었다. 흑삼제품은 고기능성으로 알려져 있으 나 대부분 일반 식품으로 판매되고 있어 건강기능식품 수 준의 관리와 규제가 필요할 것으로 보이며 흑삼의 규격기 준 설정 이후에는 흑삼제품의 기능성분 함량 재평가가 필 요할 것으로 판단된다. 스틱형이나 농축액 제품의 경우 건강기능식품뿐만 아니라 일반식품인 액상차, 홍삼음료로도 널리 판매되고 있어 식품유형 표시를 명확히 해야 할 것 으로 보인다. 최근 면역력 향상을 위한 소비자의 관심 증 가로 다양한 건강기능식품의 수요가 늘어나고 있다. 따라 서 홍삼을 함유한 식품을 섭취 목적에 맞게 선택할 수 있 도록 정확한 함량정보 제공을 위해 다양한 제품에 대한 지속적인 품질평가가 필요하다.

        산양삼은 산림청 특별관리 임산물로 지정되어 관리되고 있지만 체계적인 연구 나 표준 재배지침이 현장의 재배 현실과는 상이한 부분이 많은 실정이다. 이에 본 연구에서는 평창지역의 산양삼 재배지 환경조건에 따른 진세노사이드 함량이 어 떠한가를 알아보기 위하여 산양삼 시료를 각각 10본씩 채취하여 실험을 통해 확 인하였다. 산양삼 입지환경은 경사, 사면 방향, 해발고, 나무 종류, 흉고 직경과 수 고 등 모두 6가지를 조사하여 국립산림과학원의 분류기준을 참고하여 침엽과 활 엽으로 구분하였다. 산양삼 재배지의 토양산도를 포함한 9가지 토양이화학성 분석 에서는 전체적으로 침엽지역보다 활엽지역에서 높은 함량을 보였다. 통계분석 결 과에서는 A, B, C, 재배지에서 침엽과 활엽지역 간 통계적 유의성이 있는 것으로 나타났으며, D 재배지는 침엽과 활엽지역의 유의차가 거의 없는 것으로 나타났다. 진세노사이드 함유량 분석 결과에서는 Re, Rb1, Rg1의 순서로 높은 함량을 나타 내고 있어서 평창 산양삼의 주성분을 확인할 수 있었다. 연구 결과로 산양삼은 산 삼이 잘 생육할 수 있는 환경과 비슷한 곳을 재배지로 선정하여야 고품질의 제품 을 생산할 수 있다고 예상할 수 있다. 향후 본 연구 결과가 임업인 소득증대에 도 움을 줄 수 있는 자료로도 활용될 수 있기를 기대한다.

        The purpose of this study is to investigate the physicochemical properties of jelly made from fermented red ginseng concentrate (FRGC) that can be easily absorbed and digested for the health promotion of the elderly. The pH of the jellies tended to decrease with increasing concentration of FRGC. Soluble solid content has significantly higher value when added more than 2%, and the water content of the sample was significantly lower when the FRGC was added 4%. As the amount of FRGC was increased, the total color difference increased, and the hardness of samples decreased significantly. On the other hand, the total ginsenoside contents of the FRGC was 45.50 mg/g. As the concentration of FRGC increased, the content of polyphenol and flavonoids increased. The increasing pattern of polyphenols and flavonoids showed a similar trend. As the content of FRGC increased, ABTS free radical scavenging activity significantly increased (p<0.05), and in the control, the minimum value (62.6 AEAC) and the 4% sample were highest (116.2 AEAC). DPPH radical scavenging activity was like that of ABTS radical scavenging activity. However, there was no significant difference in DPPH radical scavenging activity of 3% and 4% red ginseng jelly.

        Red ginseng is a widely used dietary supplement and medicinal herb, and there are so many forms of ginseng products including tea, extract, capsule and jelly. The purpose of the present study was to propose some amendments on ginsenoside content of red ginseng products in Korea. For this purpose, we analyzed red ginseng products for simultaneous determination of 26 ginsenosides by ultra performance liquid chromatography with diode array detector. Some developmental aspects of Korea’s ginsenoside content standard regulations for red ginseng products are needed to be examined as follows : Firstly, we proposed that four ginsenosides (Rb1, Rg1, Rf and Rg3) would be detected in red ginseng products. Secondly, in case of red ginseng extracts, the sum of Rb1, Rg1 and Rg3 would be 4.0 mg/g. The two proposals are helpful to comprehensive evaluation of quality of red ginseng products. In conclusion,the scientific studies on amendment scheme of ginsenoside content standard regulation of red ginseng product are very important to fortify quality control.

        This study was conducted to investigate the difference of general feature and ginsenoside content of 6 years old ginseng root among different grade of roots. Total weight of a 1st grade-6 years old ginseng root was 115.1g and weight, length, diameter and specific gravity of main root were 64.68g, 8.39cm, 3.31cm and 0.96, respectively. Main root of 1st grade ginseng root was larger in size and specific gravity and more heavy than that of End or 3rd grade of the roots. Though crude saponin contents were not so different among the different grade of roots, but ginsenoside Rb1, Rg1 and Re content were higher in 1st grade of root than that of 2nd or 3rd grade of root. Those ginsenosides were located mainly in periderm and cortex.

        Background: Ginseng produced by hydroponics can be cultivated without using agricultural chemicals; thus, it can be used as a raw materials for functional foods, medicines, and cosmetics. This study aimed to determine the optimal harvesting time to obtain the highest levels of ginsenoside and ginseng, as this was not previously unknown. Methods and Results: One-year-old organic ginseng seedlings were transplanted and cultivated using hydroponics for 150 days in a venlo-type greenhouse, using ginseng nursery bed soil and a nutrient solution (NO3 −-N; 6.165, P; 3.525, K; 5.625, Ca; 4.365, Mg; 5.085, S; 5.31 mEq/ℓ). Ginsenoside content and fresh and dry weights were higher at 120 days after transplanting than at 30, 60, 90, and 150 days. Total ginsenoside content was 11.86 times higher in the leaf and stem than in the root at 120 days after transplanting. Ginsenosides F1, F2, F3, and F5 were detected in ginseng leaves and stems. These chemical compounds are known to be effective in altering skin properties, including whitening, anti-inflammation, and anti-aging. Conclusions: Optimal harvesting time for ginseng cultivated using hydroponics was 120 days after transplanting when the biomass and ginsenoside content were highest.

        새싹삼의 유효성분 및 진세노사이드를 함유한 발효주 제조를 위해 3단계로 나누어 각 2일씩 발효 증량하면서 발효주를 제조 한 후 전처리 방법을 달리한 새싹삼(CO, 무첨가 대조군; GP 새싹삼 분쇄물 첨가; WEP, 새싹삼 물추출물; EEP, 새싹삼 효소분해 추출물)을 발효주의 총 무게 대비 6%씩 함유하도록 첨가하여 6일간 숙성시키면서 이화학적 특성을 분석하였다. 3단계까지의 담금 과정에서 알코올 함량은 담금 단계가 이어질수록 높아졌으며, pH는 낮아지고, 산도는 증가하는 경향이었다. 3단계 담금 후 6일간의 숙성 동안 알코올 함량은 서서히 높아졌으며, pH는 서서히 낮아지고 산도가 증가하였다. 숙성 6일 동안 환원당 함량은 감소하는 경향이었는데, 특히 숙성 2일에 급격하게 함량이 감소하였다. 총페놀화합물의 함량은 숙성이 진행됨에 따라 점차 증가하는 경향이었다. 발효주의 숙성 중 진세노사이드는 Re가 가장 높은 함량이었으며 다음으로 Rg1과 Rh1의 순으로 함량이 높았고, 그 외의 진세노사이드는 일부 시료에서만 검출되었으며, 그 함량도 낮았다. 숙성 초기의 진세노사이드 함량은 GP와 EEP가 WEP에 비해 더 높았으나 숙성기간의 경과와 더불어 점차 감소하여 숙성 6일후에는 WEP에서 총진세노사이드의 함량이 가장 높았다. 숙성기간 중 ABTS 라디칼 소거활성은 숙성 기간의 경과와 더불어 증가하는 경향이었으며, 숙성 6일에는 62.64-64.71%로 서로 간에 유의적인 차이가 없었다. 이상의 결과로부터 볼 때 담금이 진행 된 후 첨가된 새싹삼은 전처리 방법에 관계없이 발효주의 기초 품질에는 영향을 미치지 않았으나 진세노사이드 함량을 기준으로 볼 때 50℃ 정도의 저온에서 추출한 물추출물을 첨가하는 것이 가장 적절할 것으로 판단된다.

        Background: This study was carried out to determine the best time for collecting ginseng berries without reducing the ginsenoside- Re content of ginseng roots, which are used as food, medicine, or cosmetic materials. Methods and Results: The test variety of ginseng used in this study was is Chunpung, which was collected from a 4-year-old ginseng field. Ginseng berries were collected at 7, 14, 21, 28, 35, 42, 49, and 56 days after flowering. The number of berry bunches per 1.62㎡ ranged from 43.4 to 61.4, while the weight of berries per 1.62㎡ was the greatest when they were collected 49 days after flowering. The root fresh weight per 1.62㎡ was increased by 0.21 - 1.00 ㎏ compared with that before the test, but root weight gain was decreased as the berry collection time was delayed. Total ginsenoside content of 4-year-old ginseng was the highest when berries were collected 7 days after flowering, while the ginsenoside-Re contents was the highest when collection was done 14 days after flowering. Conclusions: The most suitable period for ginseng berry collection was proposed to be from 14 to 21 days after flowering, as this is when the content of ginsenoside-Re, which is useful as a medicinal or cosmetic material, is still high and the ginseng root has not yet decreased in weight.

        Background: Since the revised Ginseng Industrial Act was passed, ginseng sprouts have become a new medicinal vegetable for which there is high consumer demand. However, the existing amount of research and data on ginseng production has not kept pace with this changed reality. Methods and Results: In this study we analyzed the changes in the amounts of ginsenosides in different parts of growing ginseng sprouts during the period from when organic seedlings were planted in nursery soil until 8 weeks of cultivation had elapsed, which was when the leaves hardened. In the leaves, ginsenoside content increased 1.62 times with the panaxadiol (PD) system and 1.31 - 1.56 times with the panaxatriol (PT) system from 7 to 56 days after transplantation. During the same period, the total ginsenoside content of the stems decreased by 0.66 - 0.91 times, and those of the roots increased until the 21st day, and then underwent steep declines. The effect of fermented press cake extract (FPCE) and tap water (TP) on the total amount of ginsenoside per plant were similar, and could be represented with the equations y = 1.4330 + 0.2262x - 0.0008x2 and y = 0.9555 + 0.2997x - 0.0031x2 in which y = ginsenoside content x = amount of and on the total amounts of FPCE or TP, respectively after 26.4 days, however, the difference between ginsenoside content with FPCE and TP widened. Conclusions: These results suggested that the amounts of ginsenosides in different parts of ginseng varied with the cultivation period and nutrient supply. These findings also provide fundamental data on the distribution of ginsenosides among plant parts for 2- year-old ginseng plants in the early- growth stage.

        Background : This study was conducted to determine the optimal ginseng greenhouse shading material for minimizing heat injury and maximizing the yield of ginseng plants in an effort to develop a stable ginseng cultivation technology and contribute to popularizing ginseng greenhouse farming. Methods and Results : Three different types of greenhouse shading material were used: polyethylene (PE) film + black screen (95%), light scattering film + black screen (75%), and blue-white vinyl. Important experimental details were implemented in accordance with the Analysis Standard of Agricultural Test and Research set out by the Rural Development Administration. The average greenhouse temperature for the period of May through October was 20.0℃ under the PE film + black screen, 20.2℃under the light scattering film + black screen, and 19.7℃ under the blue/white vinyl. High average photosynthesis rates of ginseng plants were demonstrated by light scattering film+black screen (2.35 μmole CO2/㎡/s) and blue-white vinyl (2.38 μmole CO2/㎡/s), with the PE film + black screen showing a considerably lower photosynthesis rate (1.55 μmole CO2/㎡/s). Heat injury occurred in 0.3%, 10%, and 0.1% of the plants grown under the PE film + black screen, light scattering film + black screen, and blue-white vinyl, respectively. As for the roots, the blue-white vinyl outperformed the other shading materials in root length (25.7 ㎝), taproot length (5.9 ㎝), and the number of fine roots (23.2). The blue-hite vinyl also yielded the greatest root fresh weight (30.2 g), followed by the light scattering film + black screen (29.1 g), with the PE + black screen yielding by far inferior average weight (22.0 g). The highest crude saponin content was yielded by the light scattering film+black screen (16.61 ㎎/g), followed by blue-white vinyl (11.36 ㎎/g) and PE + black screen (11.0 ㎎/g). Conclusion : Comparing the effects of three different shading materials on greenhouse-cultivated 3-year-old ginseng plants, the blue/white vinyl outperformed two other shading materials in most of the growth characteristics, whereas the and the light scattering film + black screen yielded the highest ginsenoside content.

        Background : Ginseng is a cold-adopting plant that likes cold climate. As the temperature of korea is increasing to the extent that makes it unsuitable for growing ginseng, there is a need arising for developing ginseng breed that can adapt to higher temperature. Out of 76 genetic lines of 4 years old ginseng owned by our research lab, 5 lines with good and high ginsenoside contents were selected. The test was performed to compare their ginsenoside contents and growth characteristics to the existing ones. Methods and Results : A study was done on the growth of 5 lines of ground part with high ginsenoside contents such as GS97-24-2. The results show that the growth of leaf length and width was best for GS98-4-5 and Geumsun. The root weight of the underground part was good, with the growth of 27.8g per ginseng. The root length did not vary across lines. Geumsun and GS97-24-2 showed the same total length. The growth of rootlet was best for GS98-4-5 lines, showing 5.4 rootlets. The total ginsenoside contents of the underground part was highest for American ginseng with 54.31mg/g, followed by GS98-4-5, GS97-24-2, and Geumsun. American ginseng was high in ginsenoside Re and Rb1 in contents compared to Korean ginseng. Although total ginsenoside contents were high, Rg2 and Rf were not detected in American ginseng while Korean ginseng contained good amount of Rg2 and Rf. Conclusion : Base on the results above, the best ground part among the high ginsenoside lines was GS98-4-5. For underground part, the growth of Americal ginseng and Gopoong were the best. American ginseng, which has good underground part growth even in hot season, contained high ginsenoside contents too. On the other hand, Korean ginseng had more variety of ginsenoside compared to American ginseng.

        Background: The photosynthetic efficiency cool-season, semi-shade ginseng is normal at low morning temperatures, but drops at high afternoon temperatures. Therefore, optimal plant performance would be ensured if it were possible to control daily light transmission rates (LTR). Methods and Results: Plants were grown in a controlled light environment that replicated 11 AM conditions and comparatively analyzed against plant grown under normal conditions. Growth in the controlled light environment resulted in a 2.81 fold increase in photosynthetic efficiency with no change in chlorophyll content, although LTR were high due to low morning temperatures. Increased aerial plant growth was observed in the ginseng plants adapted to the controlled light environment, which in turn influenced root weight. An 81% increase in fresh root weight (33.3 g per plant on average) was observed in 4-year-old ginseng plants grown in controlled light environment compared to the plants grown following conventional practices (18.4 g per plant on average). With regard to the inorganic composition of leaves of 4-year-old ginseng plants grown in controlled light environment, an increased in Fe content was observed, while Mn and Zn content decreased, and total ginsenoside content of roots increased 2.37 fold. Conclusions: Growth of ginseng under a favorable light environment, such as the condition which exist naturally at 11 AM and are suitable for the plant's photosynthetic activity creates the possibility of large scale production, excellent-quality ginseng.

        Organic ginseng farming has rapidly increased in response to consumer demand for a safe product which improves health. Differences in soil nutrient concentration and ginsenoside content between organic and conventional ginseng farming have, however, not yet been properly studied. Therefore the aim of the present study was to compare soil nutrient concentration and ginsenoside content between these two farming systems. NO3-N, P2O5, and K were significantly different between organic and conventional ginseng farming. The total content of ginsenoside and individual ginsenoside components were higher in organically grown ginseng than in ginseng from conventional farming, although there is no significant difference. Particularly, protopanaxadiol saponins were higher than protopanaxatriol saponins in ginseng from organic farming compared to ginseng produced by conventional farming. NO3-N content in soils showed a negative correlation with the content of ginseno-sides Rb2 and Rd. In addition, P2O5 showed a negative correlation with ginseno-sides Rb1, Rc, and PD/PT ratio. Organic matter showed a positive crrelation with ginsenosides Re. To increase the ginsenoside content of ginseng, we recommend increasing organic matter and decreasing NO3-N and P2O5 contents in the soil.

        An LED plant factory farm is an alternative way to grow crops regardless of weather, season, and blight in such times of climate change. In recent years, it is a currently active and vibrant research field. The industry, which ranges from leaf vegetables to high value products, is expanding. This study was conducted to test tthe response of LED (Lightemitting diode) irradiation on the growth characteristics and ginsenoside levels indoors, in order to find out suitable light conditions. Ginseng seedling was transplanted from a styrofoam pot (L×W×D:495×315×215 mm, inside diameter) into a closed plant production system in four blue LED (BL) and red LED (RL) different ratios of 1:1, 1;2, 1:3, 1:4 in a temperature range of 20~25℃, relative humidity of between 55 and 65%, and a 12-hour photoperiod. The LED irradiation shows the highest levels were found at 1:1 of BL and RL ratio at 61.21 μmol s-lm-2, 1:2 ratio 68.55 μmol s-lm-2, 1:3 ratio 63.85 μmol s-lm-2 and 1:4 ratio 62.41 μmol s-lm-2 from highest to lowest respectively. After analyzing from shoot and root 2 yers old ginseng plant which were cultivated under 1:3 irradiation of BL and RL ratio, it generally showed a positive effect under a 1:3 ratio of BL and RL.
