Muck (Korean traditional starch jelly) is very unique and the one of the oldest starch processing traditional food. The typical ingredients for making muck such as acorns, mungbean and buckwheat have been eaten since the new stone age or even before that era. This study was for investigation on the history of muck and its processing methods in the ancient and the modern culinary literatures from the 1400’s to 1900’s. The summary of the reviews was as follows. In the ages from the 1400’s to 1700’s, using starch powder, Se-myon and Chang-myon were made and their shape were like noodles instead of cubical shape. It was after the 1700’s that muck making methods were revealed in the literature, like 「Gyeong-do-jabji」 (1730) and「Go-sa-sib-e-jib」 (1737). The naming of muck might be from the time after 1800’s, in「Myoung-mul-kiryak 」 (around 1870) the basis of the names of Choeng-po (white mungbean jelly) and Whang-po (yellow mungbean jelly) could be found. One of the most well-known muck dish, Tang-pyeong-chae, was recorded many old literatures, so it was found that Tang-pyeong-chae was very popular and governmental policy of Tang-pyeong-chak influenced the food of the common people. In 「Shi-eui-jeon-seo」 (late 1800’s) there were records of several types of muck and starch powder making methods in detail which were handed down to the modern ages.

To understand the traditional knowledge of botanical taxa in Jeju Island, a diachronic study was carried out by comparing the archaic and modern names of the native plants in Jeju Island. To identify the archaic names of the plants, five old documents (Sejongshillokchiriji, Shinjŭngdonggukyŏjisŭngnam, T'amnaji, Namhwanbangmul and Jejugyerok) that were written during the Joseon Dynasty between the 15 th and 19 th centuries were closely examined. A total of 131 taxa (65 families, 112 genera, 118 species and 13 varieties), 7.3% of the native plants known to be currently present in Jeju Island, was identified. Out of these, 21.4% was the plants found in the southern area. Among the five old documents analyzed for this study, Namhwanbangmul recorded the largest number of plants, 89 taxa. We closely examined the consistency between the modern and archaic names of each plant, and discussed the problems in matching the names of some plants analyzed in this study.

This study examined the current status of the types of edible flowers used domestically and overseas and the discovery and utilization methods of edible flowers naturally growing in Korea, analyzed the types of edible flowers that have been reported until present in order to seek a development method to strengthen competitiveness in the edible flower industry. Domestic and overseas records contain records of 406 species in 80 families of edible flowers. There were 38 species in 18 families of edible flowers appearing in at least 50% of the records, and per family, the Asteraceae, and per type, the Viola spp. type appeared most frequently. A total of 127 species in 36 families appeared in overseas records. There were 27 species in 15 families of edible flowers appearing in at least 60% of the records, and per family, the Asteraceae, and per type, Borago officinalis, Dianthus spp., Lavandula spp., Tropaeolum majus sp. and Viola spp. appeared most frequently. A total of 381 species in 78 families appeared in domestic records. There were 62 species in 26 families of edible flowers appearing in at least 60% of the records, and per family, the Asteraceae and Lamiaceae appeared most frequently, while per type, Dendranthema spp., Hemerocallis fulva, Rosa spp., Taraxacum platycarpum Dahlst., and Viola spp. appeared most frequently. Thus, in order for the edible flower industry to achieve development in the future, there would be a need to make efforts to expand consumption of edible flowers, such as through discovery of naturally growing flowers, research on production and storage technology, promotional activities and research on its functionality, and development of various processed goods through mass industrialization.
