인삼엽의 채엽시기별 화학성분에 관한 연구 KCI 등재

인삼엽을 식품소재로서의 이용 가능성을 모색하기 위하여 채엽시기별 인삼엽의 화학적 조성의 변화를 조사하였다. 음건한 인삼엽의 단백질 함량은 17.12∼14.26%로 채엽시기가 늦어지면서 단백질 함량은 점차 감소하였고 지방함량은 1.90∼2.49%로 약간 증가하였다. 인삼엽에 존재하는 유리당으로는 glucose, fructose, sucrose등이었고 maltose는 나타나지 않았으며 특히 sucrose함량은 채엽시기가 늦어지면 급격한 증가현상을 나타내었다. 유리아미노산 조성은 serine이 가장 많았으며 다음으로 valine 순이었고 총 유리아미노산 함량은 채엽시기가 늦어질수록 감소하였다. 인삼엽의 무기질 함량은 Ca가 1.306.1∼1, 923.2mg%, K가 1, 266.9∼1, 216.0mg%로서 특이하게 많았으며 Mg, P, Na, Fe, Mn, Zn, Cu 순으로 풍부하였다. 채엽시기가 늦어짐에 따라 Ca, Mn 등의 함량은 현저히 증가한 반면 K, Mg, Na, Fe, Zn등의 함량은 감소하였다. 총 비타민 C함량은 391.0∼336.1mg%로 매우 풍부하였고 채엽시기가 늦어지면 감소하였다. 인삼엽의 지방산 조성은 palmatic acid가 40% 정도로 가장 많이 함유되었으며 linoleic acid, linolenic acid 순이었고 채엽시기가 늦어짐에 따라 불포화지방산의 함량은 약간 감소하는 경향을 나타내었다.

This study was performed to investigate the changes in chemical composition of Panax gineseng leaf by harvesting in July, August and September. The levels of crude protein of dried ginseng leaf were decreased from 17.12mg% to 14.26mg% by harvesting month, however, crude fat contents of dried ginseng leaf were increased slightly from 1.90% to 2.49%. Three kinds of free sugar, i. e. glucose, fructose and sucrose were found in dried gineseng leaf and maltose was not found. Free sugar contents were increased by delaying harvest, but free amino acid were decreased. Total free amino acid was decreased in delayed harvestion month, serine was revealed superior in free amino acid composition, and valine was revealed next order. In minerals, contents of Ca were from 1, 306.1 mg% to 1, 923mg%. that of K were higher than others particularly as 1, 266.9∼1, 261.0mg%. The contents of minerals were existence in order of Mg, P, Na, Fe, Mn, Zn and Cu, abundantly. Total vitamin C were present of 391.0∼336.1mg%, and the contents were decreased as delayed as harvesting period despite of the plentiful content. In fatty acid composition of ginseng leaf. the palmitic acid content was as 40% higher than other fatty acids, remarkably.
