The Ideological Expansion of Lotus and Its Use for Food in the Choseon Dynasty
연(蓮)은 불교와 밀접한 관련을 가지고 있는 식물로, 인도 불교문헌에 서 연은 종교적 상징이나 의미를 나타내는 중요한 요소이다. 진흙 속에서 도 때묻지 않는 연의 물리적 속성은 번뇌 속에서도 깨달음을 구하는 의 미로 사용되거나 연화대를 통해 붓다를 상징하기도 한다. 인도 불교문헌 은 또한 우유와 같이 하얗고 꿀처럼 달콤한 맛을 가진 식재료로서의 연 의 수승한 점은 언급하기도 한다. 인도 불교문헌이 담고 있던 연에 관한 상징과 의미는 한국불교에도 전 해져 고려와 조선의 승려문집에도 인도 불교문헌이 묘사하는 연에 관한 내용이 계승되고 있으며, 연이라는 단어는 또한 불(佛)이나 승(僧)을 대체 하는 용어로 사용되어 붓다, 사찰, 정토세계를 나타내는 의미로 사용되기 도 한다. 연은 고려나 조선시대에 인도 불교문헌이 담고 있는 상징과 의미를 계 승하였으며 연근 등은 불교사찰의 중요한 식재료로서 기능하였다. 이와 더불어 고려후기에 수용된 북송 주돈이(周敦?, 1017-1073)의 「애련설(愛 蓮說)」은 조선시대에 들어와 더욱 유가사대부 사회에서 애호되면서 연 관련 문화가 조선사회에 확대되는 요소로 작용한다. 연을 감상하는 관연 절이나 연잎과 줄기를 술잔으로 사용하는 벽통배의 문화는 조선 유가사 대부의 중요한 문화로 자리잡는다. 또한 다양한 연 관련 음식들이 조선사 회의 음식문화로 자리잡게 된다. 연 문화는 불교적 상징과 의미로 주로 소비되던 조선 이전의 토양에서 조선시대부터는 유가문화에 열렬히 수용되면서 불교와 유교 문화 모두에 게 유의미한 상징과 의미로 착근하게 되었다.
The paper aims at investigation the comparison between the viewpoints of the lotus in the Buddhist texts and Confucian poems and the use as food in the respective areas. The lotus in the Indian Buddhist texts is connected to the Buddha and the Enlightenment and it is used as the image in which the lotus has the purity not soiled in the mire. The lotus is mentioned as excellent foodstuff which has white color as milk and sweet taste as honey. It is considered that lotus was used as quite popular foodstuff in the ancient India as the Indian Vinaya texts frequent quoted the lotus as popular foodstuff. It is said that the lotus was used as medicine and the story about Sariputra related to the use of lotus in which Sariputra was ill and recovered after he consumed the lotus. The image of Lotus in Korean Buddhist texts is inherited as religious symbol and meaning which represent what Indian Buddhist texts mention about lotus. The letter, 'lotus' in Korean Buddhist texts is used as word for meaning the Buddha(佛) and the Buddhist Monk(僧) and the Buddhist temple and the Pure Land(淨土) are expressed by the word, lotus(蓮). The Àiliánshuō(愛蓮說) written by the Confucian scholar, ZhōuDūnyí(周敦頤, 1017-1073)greatly influenced the Korean Confucian society and the lotus culture were popularized in the society. Korean Confucian scholars enjoyed lotus culture in which the scholars appreciated the lotus flower and enjoyed a drinking party with a lotus leaf glass. The Choseon Confucian society used lotus as foodstuff and the lotus was used various foodstuffs for wine, steamed rice, porridge, Kimchi, noodle and side-dishes. The lotus was welcomed by Korean Buddhist and Confucian society and the lotus functions as religious symbols and meaning and food culture in the Choseon society.
