짜장면은 남북한 모두에서 사랑받지만, 상이한 방식으로 재현되는 대 표적 음식이다. 짜장면을 분단 이후 북한의 이념·정치·경제·사회·문화적 맥락에서, 특히 그람시의 ‘헤게모니론’과 푸코의 ‘통치성론’ 시각에서 분 석하였다. 짜장면이란 개별 음식에 관한 연구로 북한 식문화, 북한 사회, 김씨 체제 통치, 한반도 분단을 입체적으로 이해하고자 한다. 짜장면은 김일성-김정일-김정은으로 이어지는 김씨(氏) 가계 통치의 구조적 산물 이다. 김일성 시대에는 ‘짜장면의 구조적 배제’, 김정일 시대에는 ‘짜장면 의 주변부에서 제한적 허용’, 그리고 김정은 시대에는 ‘짜장면의 관리된 일상화’가 진행되었다. 특정 공간과 계층에서만 제한적으로 소비되는 짜 장면은 북한 체제가 외부 문화를 관리하면서 체제를 유지하는 동시에 계 급 구조를 은폐하는 방식을 상징적으로 보여주는 사례다. 짜장면은 식량 부족의 예외적 산물이 아니라, 부족 구조 속에서 의미를 획득한 음식이 다. 배급 체계 밖에 위치함으로써 계급적 차이를 드러내고, 시장화된 생 존 전략과 결합해 체제의 결핍 관리 전략을 상징적으로 보여준다. 짜장 면은 소비의 희소성을 통해 사회적 위계를 드러내며, 선전 담론을 통해 체제의 성과를 재현하고, 외부 세계에 대한 욕망을 국가가 관리하는 수 단으로 활용된다. 일상 식문화의 정치화를 보여주는 대표적 사례로서 짜 장면은 북한에서 ‘먹는 문제’가 아니라 ‘통치의 문제’로 관리된다. 짜장면 은 체제가 허용한 외부성이며, 일상에서 이념과 계급, 통치 전략을 드러 내는 사회문화정치적 장치이기도 하다.

As a representative example of how everyday food culture becomes politicized in North Korea, Jajangmyeon is managed not as a "matter of eating" but as a "matter of ruling" and a symbolic example of how the North Korean regime manages external culture to maintain the system while simultaneously concealing its class structure. During the Kim Il-sung era, there was the "structural exclusion of jajangmyeon"; during the Kim Jong-il era, the "limited allowance of jajangmyeon in the periphery"; and during the Kim Jong-un era, the "managed normalization of jajangmyeon." Jajangmyeon is not an exceptional product of food shortages, but rather a food that acquires meaning within that very structure of scarcity. By being situated outside the rationing system, jajangmyeon reveals class differences and, combined with marketized survival strategies, demonstrates the system's strategy for managing scarcity. Jajangmyeon reveals social hierarchy through the scarcity of consumption, reproduces the achievements of the system through propaganda discourse, and is utilized as a means for the state to manage desires for the outside world.
