산마늘 생즙의 생리활성

본 연구에서는 고급  산나물로 수요가 증가되고 있는 울릉도 산마늘의 생리활성을 확인하고, 이를 이용한 가공식품 개발을 위해 산마늘 생즙 및 열처리 생즙의  이화학적인 특성과 다양한 생리활성을 조사하였다. 산마늘은 우수한 영양성분을 가지며, 산마늘 생즙은  저장시 10일  이상 색차변화 없이 안정하게 유지되었다. 그러나 산마늘 생즙의 가열 처리시에는 brix, 환원당, total flavonoid의 변화는  미미한 반면, 총당은 25%, total pol
Wild-garlic  (Allium victorialis L.) is a perennial plant found in worldwide and has been  considered as a favorite vegetable due to its particular smell and taste.  However, the study of biological activity of wild-garlic and the development  of processed food are in rudimentary. In this study, we evaluated several  biological activities, including antioxidant, antimicrobial, and inhibitory  activities against human thrombin, -amylase and -glucosidase,  of Ulrung wild-garlic. Analysis of the composition showed that Ulrung  wild-garlic is nutritive although it is perishable. The color of fresh juice  was stably maintained during 10 days-storage at , but rapidly  discolored by heat treatment at  for 1 h. During heat treatment,  the contents of total sugar and total polyphenol were decreased to 75% and  50%, respectively, and acidity was increased from 0.069% to 0.111%. In a  while, the brix, reducing sugar, and total flavonoids showed minor changes.  The fresh juice showed strong DPPH scavenging activity, reducing power and  antibacterial and antifungal activity, but the heat-treated juice lost the  antioxidant and antimicrobial activities. The inhibitory activities against  human thrombin and -amylase and -glucosidase was negligible  in both fresh juice and heat-treated juice. These results suggested that the  antioxidant and antimicrobial components in wild-garlic are heat-liable and  volatile. Based on our results, we propose non-heat treatment products for  processed wild-garlic, for example, fresh juice-added beverage or fermented  liquors using wild-garlic.
