서산 6쪽 마늘 중의 inulinase를 추출하여 황산암모늄 침전과 Sephadex G-150여과 등을 통하여 9.1%의 수율로 부분정제하였다. 부분 정제된 inulinase는 40℃와 pH 6.0에서 inulin을 가장 잘 분해시켰고 70℃ 이하와 pH 5.0∼8.0에서 안정하였다. 또한 이 효소는 Al^3+, Mn^2+, Hg^2+, Cd^2+ 및 EDTA에 의하여 심하게 실활되었고 inulin에 대한 K_m값은 0.22%이었다.
A inulinase of garlic(Seosan) was partially purified by ammonium sulfate fractionation and Sephadex G-150 gel filtration chromatography with a recovery of 9.1%. Optimum temperature and pH of the enzyme were 40℃ and pH 6.0, respectively, and the enzyme was stable below 70℃ and in the pH range of 5.0∼8.0. The enzyme was strongly inhibited by metal ions(AL^3+, Mn^2+, Hg^2+, Cd^2+) and EDTA, and the K_m value for inulin was 0.22%.
