        The antioxidant effects of freeze-drying acorn were examined to find how much the freeze-drying acorn can reduce peroxidized corn oil poisoning, which influenced cholesterol, triglyceride, phospholipids, lipidperoxides, GOT(glutamate oxaloacetate transaminase), GPT(glutamate pyruvate transaminase) in serum, and cholesterol, triglyceride, lipidperoxides, fatty acid of phospholipids, SOD(superoxide dismutase), catalase in liver. In this experiment, male rats of Sprague-Dawley strain were used. The rats were divided into 6 groups, which were fed differently for 5 weeks : basal diet, 10% peroxidized corn oil added to basal diet, 1% acorn flour and 10% peroxidized corn oil added to basal diet, 5% acorn flour and 10% peroxidized corn oil added to basal diet, 10% acorn flour and 10% peroxidized corn oil added to basal diet, and 0.25% tannic acid and 10% peroxidized corn oil added to basal diet. The results were as follows : It was found that the peroxidized corn oil-fed 5 weeks induced the elevation of cholesterol, triglycerides, lipid peroxides, GOT, GPT in serum, and cholesterol, triglycerides, lipid peroxides in liver as compared to the basal diet-fed rats, but the acorn flour-fed rats reduced the elevation of these components. In addition, saturated fatty acid in rat liver phospholipids induced the elevation by feeding of peroxidized corn oil and, on the other hand, the acorn flour-fed rats reduced the elevation of saturated fatty acids. The acorn flour-fed rats reduced the activity of SOD in liver while they enhanced the activity of catalase in liver as compared with the peroxidized corn oil-fed rats.

        Acornic powder was extracted with methanol and ethylacetate to obtain a crude acornic compounds. And they were examined concerning their antioxidant activities for linoleic acid. The results were as follows: 1. Hydrogen donating activity for DPPH was higher in 100ppm acornic compound than 100ppm BHT and 100ppm α-tocopherol. 2. When the 100ppm acornic compound was added to linoleic acid, which was heated at 50℃ for 48 hours, antioxidant activities by POV and TBA was higher than that of 100ppm α-tocopherol, but the effect was almost the same as the 100ppm BHT. 3. Antioxiodant activity of acornic compound showed synergistic effect along with malic acid, citric acid, tartaric acid, alanine, arginine, histidine, lysine-HCl, galactose, maltose, glucose and sucrose. 4. Acornic compound inhibited peroxidation of linoleic acid induced by heavy metals.

        This study aimed to search for separate and identify of Quercus acutissima CARRUTHERS tannins. Tannins were extracted with methanol and ethylacetate from acorn powder and identified TLC, UV spectrum, HPLC, IR, GC/MS, and 1H NMR. Three spots(Rf 0.94, 0.84 and 0.29) detected on TLC. These spots gave dark blue color fairly on spraying with 0.3% potassium ferricyanid·0.3% ferricchloride reagent, and these tannins identified as gallic acid, caffeic acid and ellagic acid by UV spectrum, HPLC, IR, GC/ MS, and 1H NMR.

        This study was performed observe the effect of vegetable oil on the liver of 0.5% cholesterol-fed rats. In this experiment, male rats of Sprague-Dawley strain were used. The rats were divided into 5groups which were fed differently either for 8 weeks: basal diet, 20% sunflower oil diet, 20% soybean oil diet, 20% rapeseed oil diet.,20% coconut oil diet. The total cholesterol, triglyceride level in the liver were showed tendency of increase with increasing of P/S ratios. Bile acid excretion in the fecal increased with increasing of P/S ratios. The value of TBA in the serum and liver were increased in proportion to the amount of polyunsaturated fatty acid. The liver fatty acid of coconut-fed group showed larger variation than fatty acid of the cocount oil. The fat chang of sunflower oil diet in the liver showed the largest change.

        This study was performed observe the effect of edible oil on the serum lipid of 0.5% cholesterol-fed rats. In this experiment, male rats of Sprague-Dawley strain were used. The rats were divided into 5groups which were fed differently eigher for 8 weeks : basal diet, 20% sunflower oil diet, 20% soybean oil diet, 20% rapeseed oil diet, 20% coconut oil diet. The followings are the results of this experiment. 1. The total chol., free chol., TG, PL level in the serum were showed tendency of decrease with in creasing of P/S ratios. 2. HDL-chol. level was increased with increasing of P/S ratios but LDL-chol. level was decreased. 3. GOT, GPT, TBA level in the serum were increased with increasing of P/S ratios.

        The natural antioxidant such as e-tocopherol and synthetic antioxidant BHT were used to compare antioxidative effects of those antioxidants from the physico-chemical properties and fatty acid composition changes in the soybean oil due to number of frying. The composition of frying oil were consisted of a group(Fresh oil), B gorup(Fresh oil added with 0.05% α-tocopherol), C group(Fresh oil added with 0.2% α-tocopherol), D group(Fresh oil added with 0.1% BHT), E group(Tocopherol removed oil from oil by active alumina column chromatography The results obtained were as follws : 1. The color was determined by the Lovibond colorimeter color intensity increased number of frying oil. 2, The acid value, TBA value and Carbonyl value were increased number of frying oil. 3. Natural antioxidants less effective than BHT but effect of α-tocopherol was very similar to that of BHT. 4. The order of antioxidative effect was 0.1% BHT, 0.2% α-tocopherol, 0.05% α-tocopherol, fresh oil, tocopherol remove oil.

        Frog legs were stored before and after 30, 60, 90, 120 days at -30℃ and -70℃. The amounts of triglycerides, glycolipide and phospholipids by TLC and composition of fatty acids by GC were shown in this experiment, there fore, I have got these following results. 1. The amount of PL in frog legs consisted of 80% of the total lipids before storage. As the days of storage was longer, the amount of TG was increased, while PL and GL were decreased. 2. TG and ES & HC were composed of 66% to 77% of the neutral lipids composition before storage. As the days of storage was longer, the amount of MG, DG. FFA and ES & HC were increased, while FS and TG were decreased. 3. PE and PC were composed of 78% to 81% of the phospholipids composition before storage. As the days of storage was longer, the amount of FA and PS were increased, while PC and PE were decreased. 4. The composition of fatty acids in neutral lipids of frozen frog legs at -30℃, 120 days was studied, Capric acid. Stearic acid, Behnic acid. Oleic acid and Linoleic acid were increased as compared with initial neutral lipids.

        This study was carried out to study influence of antioxidants on serum and tissue of rats fed with thermally oxidized oil. The experimental animals used 30male rats of sprague-dawley weighting 150±25g. They are divided into 5 groups and fed to experimental diets which are composed of 15% thermally oxidized oil in addition to ascorbic acid, Vitamin E, Ethylendintrioteraaceticacid(EDTA) and none added oxidized oil by heat and fresh soybean oil group. Thermally oxidized oil was prepared from the soybean oil by heating at 180℃ for 30 hours. After feeding for 4 weeks, the result are as follows; 1. Body weight gain were lower B diet group than A diet group. 2. Total cholesterol levels in serum of all experimental diet groups except B diet group were higher than that of A diet group. 3. HDL-cholesterol levels of all experimental diet groups except E diet group were lower than that of A diet group. 4. The activities of GOT, GPT in serum of all experimental diet groups except B diet group and D diet group were higher than that of A diet group. 5. Vitamin E levels in serum of E diet group were highest than that of all experimental diet groups, and Vitamin E levels in liver of A diet group were highest than that of all experimental diet groups. 6. Lipid peroxide in Serum were highest B diet group than that of all experimental diet groups and the other experimental diet group significantly lower than that of the A diet group. 7. Lipid peroxide in liver of all experimental diet group except E diet group were significantly higher than that A diet group and lipid peroxide in kidney of all experimental diet group except B diet group were lower than that of A diet group. Four these results, as Vitamin C, Vitamin E, and EDTA added diets have effect of thermally oil by antioxidants, it could be suggested that thermally soybean oil diet has required to add antioxidant because it has not sufficient Vitamin E for antioxidant and intake and overtake level of thermally soybean oil diet should be studied to go ahead.

        The purpous of the study was to find an effect of oral administered medium chain triglyceride(MCT) diet on the serum and enzyme activities of Spraque-Dawly rats when they were oral fed with MCT, soybean oil and palm oil. The result was as follow. 1) The body weight gains in MCT diet group was lower than that of the all experimental group. 2) Total cholesterol levels in serum and liver of MCT diet group were very lower than that of the all experimental groups. 3) HDL-cholesterol level of MCT diet group was higher than that of the all experimental group except normal group and VLDL, LDL-cholesterol levels was very higher. 4) TG and PL levels of MCT diet group higher than that of the control group. 5) The activities of GOT with soybean oil diet group and of GPT with MCT diet group were lower than that of the all experimental group. 6) HDL-levels in the serum lipoprotein of MCT diet group was increased and LDL levels was decreased.
