        Grapes (large seed strains)were treated with fumigation using SO\ulcorner and seal-packaged by PE film, then storage at 0 at 90 RH for the test of storage life. The fruits weight loss and abnormal fruits increased with storage. The abnormal fruits were rapidly produced after 80 days, however, these rates of Rubel muscat and Shingyoku were only 8.0 and 8.3%, respectively. After 90 days, the rate of Rubel muscat was 19.1%, resulting in the least rate. Moisture content of Kaiji and Honey black slightly increased and that of other grapes decreased. Soluble solids content and acidity decreased except Shingyoku and Honey black, however, sugar/acid ratio increased with these strains. The external appearances were depressed with storage but sensory test value of Shingyoku, Honey black, Rubel muscat were ranged from 7 to 9, showing good evaluation. The hardness of Honey black after 90 days resulted in the highest value 0.51 and that of Izunishiki and Kaiji were 0.23-0.25, showing the least value.

        Bulkogi(roast beef) seasoning stored without cap at 5 and 23 and within capped boule at 5, 23, 38, 48 and heat cycling(38-1 week and 5-1 week) and investigated sensory quality, pH, VBN, amino-N, surface color, and viable cell counts during 6 month storage. Nonpackaged Bulkogi seasoning was deteriorated by molds after 2 weeks at 23 but did not showed any significant quality changes at 5 for 1 month. Sensory scores of packaged sample rapidly declined with the temperature increase but chemical criteria was not significantly changed depending on temperature and storage time. Correlations between sensory scores and chemical parameters was not found, but sensory scores on color was correlated with lightness(L. value) of surface color(r=0.899). Heat cycle storage resulted in similar changes in quality to 38 storage. Ql0 values calculated by sensory evaluation results as a quality index was 6, and the shelf-life of packaged Bulkogi seasoning was predicted 88 months at 23.

        The stowage effects of Satsuma mandarin(Citrus unshiu Marc. var. miyagawa) were investigated by selecting various pretreatmnents; non-tested, wax-coating, paper packaging, 0.02mm cryovac film packaging. Weight loss of film packaging was the lowest among that of others, but decay radio was increased highly at late stages of storage. Soluble solids, moisture content of peel and total sugar were maintained almost constant, but acid content, vitamin C and firmness were reduced gradually during storage at room temperature. For 100 days storage, losses from weight and decay of ton-treated, paper packaging, wax-coating and film packaging were 15.9%, 18.5%, 17.4% and 12.9%, respectively. Acid content was decreased loom 1.28% to 0.81∼0.91% after 100 days storage. Ethylene evolution was increased in a degree after 65 days storage, and the amount was increased repidly afer 115 days. it seemed to be derived from decayed fruits and physiological activities. CO2 content of inner part of fruits was increased between 40∼100 days after storage. Optimum storage period of early variety of Satuma mandarin was regarded for 100days on the basis of appeareance and taste.

        This experiment carried out to find the storage life according to the kinds of packaging material. Sheridan(Grape) which was fumigated SO2 were wrapped with polyethylenes(Bio-PE and PE) and stored at under 90% RH modified condition. The resorts were summarized as follow. Natural weight loss was increased according to the storage time during the 135days storage that was only 1.0-1.7% in sealing section while 10% in non-sealing section. Abonrmal fruits were increased as the storage time was increased and it was 6.6-6.7% in sealing section while 100% in non-sealing during the 135days storage. Quality of appearance and taste are better in sealing section than non-sealing section and it was good in Bio-PE sealing section between packaging materials. Moistrue content was de creased as the storage range was increased and the decreasing rate of that during the storage was 4.9-5.2% in sealing section between treatments. During the storage range increased, the soluble solid degree was increased in non-sealing section but decreased in sealing section.

        This study was conducted to estimate the shelf-life of 'Fuji' apples (Malus domestica Borkh) after CA storage. Apples stored In 1%O2+3%CO2, 2%O2+3%CO2 and 3%O2+3%CO2 at 2 and 4 for 8 months were stored in air at 10, 80-85% RH for 16days. As a result of objective analysis, apples stored at 2 wert mort effective in retarding the loss of weight flesh firmness, titratable acidity and peel color than those stored at 4, but not the loss of soluble solid. Among storage atmospheres, 1%O2+3%CO2 at 2 was more effective in retarding the loss of flesh firmness and green color than other atmospheres. Shelf-life of apples kept at 2 estimated above 16 days. The contents of acetaldehyde and ethanol were not observed tn make large difference between storage conditions, but ethanol content of apples stored in 3%O2+3%CO2 at 4 was Increased slightly for 16 days. According to sensory evaluations, apples stored at 2 were significantly harder, juicier and more acid than chose stored at 4. Particularly, high scores of apples stored in 1% and 2%O2+3%CO2 at 2 Persisted for 16 days. Juiciness, hardness acidity and sweetness were related to the flesh firmness and titratable acidity. Overall acceptability was closely related to juiciness and hardness.

        To study the shelf-life of cut cabbage kimchi, we examined the several quality characteristics of cabbage kimchi under various storage temperatures and packing materials. The pH of kimchi extracts were decreased to 4.0 in the condition of storage at 8 during 6 days, at 4 during 18days, 0 during 42 days. The increase patterns of the organic acid were reverse to the changes of pH under the all conditions. The contents of reducing sugar were continuously decreased at 8 , but increased gradually at 0 and 4 storage conditions. The contents of vitamine C were decreased at the early storage but increased to optimum ripening stage of pH 4.2-4.4 and after decreased continuously. The total bacterial cell counts of cabbage kimchi were increased suddenly at the early storage and after decreased gradually. And at the higher storage temperature, the more lactic acid bacteria were. On the results of sensory evaluation of cabbage kimchi at marketable shelf-life, sour taste and sour smell were significant under all experimental conditions by Duncan's multiple range test. On the above all results, we concluded that the marketable shelf-life of cut cabbage kimchi were 42 days, 19 days, 6 days at 0, 4, 8 storage condition respectively.
