        In this study, we determined the effect of different concentrations of Cd on the growth of Pleurotus ostreatus mycelia, which was confirmed using PDA, PDB, and a column test. The efficacy of treatment was evaluated using Cd at two concentrations, 10 ppm and 100 ppm. The extent of mycelial growth on PDA and PDB was similar to that observed in the untreated groups and those treated with 10 ppm Cd. However, it was found that the mycelial growth was suppressed in a system treated with Cd at concentrations of 100 ppm. Moreover, the extent of mycelial growth observed upon conducting a column test was similar to that obtained using PDA and PDB. When the composition of free amino acids in PDB was determined, their levels in the group treated with 100 ppm Cd were found to be similar to those of the control. However, the amounts of 15 amino acids in the group treated with 10 ppm of Cd had increased compared to those detected in the control.

        Our research on juvenile Oncorhynchus masou masou in oyster mushroom supplemented diet was studied to investigate the effect of feeding. Mixing of feed ingredients for dried oyster mushrooms, 3.5, 7.0, 10.5, 14.0 (%) was added to the amount of oyster mushroom dietary beta-glucan content of the more abundant. After the weight of feed given to salmon survey oyster mushrooms diet for 3.5 to 7.0% was similar to the formula feed and the weight of the fish ate oyster mushroom feed over 10.5% were reduced. The oyster mushroom of the experimental diets containing 3.5 to 7.0 percent hepatosomatic index and feed coefficient figure was similar to those of the formulated diets. Therefore we have juvenile cherry salmon fed diets containing 3.5 to 7.0% was considered good to eat and additional research on the immune response will be carried out was necessary.

        This study was carried out to investigate optimum wind velocity for growth of Pleurotus ostreatus. In the chamber experiments, the divergence of pileus was 63° in 0.3m/s, and it showed the tendency that the more the air velocity was increased, the more the divergence became small. And the ratio of commercial yields was 96% in the air velocity of 0.3m/s. In the cultivation room experiments, the divergence of pileus was 64° in 0.3m/s, and it was the tendency that the more the air velocity was fast, the more the divergence became larger. And the commercial yields was similar to the trend of the chamber experiment as 94.8% in 0.3m/s, and the quality characteristics of the fruit-body showed the uniform quality in comparison with other treatment because the standard deviation of the size of the pileus, etc. was the lowest in 0.3m/s like the chamber experiment.

        표고 시설재배에 있어 적정 상대습도를 구명하여 고품질 버섯생산 데이터를 제시하기 위해 상대습도를 달리 처리한 결과는 다음과 같다. 상대습도에 따른 생육특성을 조사한 결과, 갓의 명도값은 RH65%에서 높았고, 적색도는 RH95%에서 높았으며, 황색도는 상대습도 간 유의적 차이가 나타나지 않았다. 갓의 경도는 RH95%에서 높은 경향이었다. 갓직경은 RH95%에서 높게 측정되었고, 갓두께는 RH95%에서 높았다. 대길이의 경우 유의적 차이가 나타나지 않았지만 상대습도가 증가할수록 대길이가 증가하는 경향을 보였으며, 대직경은 RH95%에서 높게 측정되었다. 수량은 RH95%에서 유의적으로 높게 측정되었다. 화고발생률은 상대습도가 낮아질수록 높게 조사되었다. 위의 결과를 통해 RH95%에서 표고 자실체의 크기, 수량이 높게 조사되었지만 버섯의 갓색이 어둡고 화고 발생 비율이 낮은 결과를 나타내어 시설재배에서 고품질의 화고 버섯을 생산 할 수 있는 상대습도는 65%와 85%인 것으로 판단되었다.

        Lentinula edodes mushrooms cultivated under different relative humidities were wrapped at 4℃ and the results of storage characteristics were investigated. Changes in water content of fruiting bodies during the storage period showed the highest water content in fruit bodies harvested from the treatment with the highest relative humidity. The luminosity of the fresh fruiting bodies showed no significant change during the storage period, and the redness was higher in the relative humidity 95% treatment than in the other treatments. According to this study, the relative humidity of the pileus was 65%, and the content of Ergosterol was 0.67 ± 15 g / L at relative humidity of 65%, 80% and 95%. In addition, amino acid analysis and Principal Component Analysis (PCA) confirmed that methionine was the main cause of changes in storage time and relative humidity.

        This study analyzed the quality characteristics of black garlic made from Seosan Yukjok Garlic and elephant garlic in Seosan, Chungnam province. Of the inorganic components, Mg content was the highest in all treatment groups, and the Ca content was high in each of the 15 day treatments. The content of K was high after 10 days aging in Yukjok garlic and after 15 days in the elephant garlic. The Fe, Na, K, and Mg content was high in Yukjok black garlic after 15 days, and Na, K, Ca, and Mg were high in the elephant black garlic aged for 15 days. The crude fat content was high in both Yukjok black garlic and elephant black garlic after 15 days. Vitamin C content was highest in both types of garlic after aging for 15 days. An analysis of four kinds of organic acids showed that citric acid was the only organic acid to appear in raw garlic of Yukjok garlic and elephant garlic. Black Yukjok garlic and elephant black garlic had a greater total amino acid content than the raw garlic of either type. However, among the tested amino acids, 13 kinds of amino acids were at their highest after five days of ripening in Yukjok black garlic, while 15 kinds of amino acids were abundant in elephant garlic after the same period. Eight kinds of amino acids were high after aging for 15 days. Through this study, it was confirmed that, in the process of making black garlic, changes in the main components of the garlic occur through different routes, and these changes vary depending on the garlic species. Therefore, this study provided basic data for the processing of Seosan's Yukjok black garlic and elephant black garlic.
