        The objective of this study was to develop a palatability index for evaluating taste quality of pork through correlation and causality between fatty acids and taste related factors. Results of analysis of the components and taste evaluation among varieties showed that the taste quality of Duroc pork was the best. A correlation was found between fatty acids and taste evaluation factors. Saturated fatty acids (SFAs) and oleic acid increased the sweetness and savory taste, the preferred flavors, while sourness and bitterness, the non-preferred flavors, decreased, and thus positively affecting the taste. Polyunsaturated fatty acids (PUFAs) have been shown to have a negative effect on taste by decreasing their preferred taste while increasing their non-preferred taste. In addition, multiple regression between fatty acid and five taste factors showed that stearic acid and oleic acid increased the sweetness and savory taste, while myristic acid decreased the bitterness. Linolenic acid was found to be negatively affecting the taste by increasing non-preferred flavors. In conclusion, SFAs, oleic acid and linolenic acid were found to be the major factors affecting the taste of pork. Therefore, the results of this study can be used as an index to produce delicious pork for pig producers as well as help consumers to trust and purchase high quality domestic pork.

        본 연구는 2006년부터 2011년까지 6년동안 전남 영광소재 N종돈장에서 검정된 23,213두의 산육형질을 활용하여 유전모수 및 유전적 추세를 추정하므로서 돼지 개의 기초자료로 활용하기 위하여 실시하였다. 본 연구에서 추정한 유전모수는 다형질 개체모형을 이용하여 추정하였다. 본 연구에서 추정한 품종별 성장형질에 대한 유전력의 범위를 살펴보면, 일당증체량은 0.30~0.31로 추정되었고, 등지방두께는 0.39~0.60 및 90kg 도달일령은 0.37~0.45로 추정되었다. 일당증체량과 등지방두께 및 90kg 도달일령의 유전상관의 품종별 범위는 각각 -0.07~0.13과 -0.98~-0.90으로 추정되었다. 등지방두께와 90kg도달일령은 -0.16~0.04로 추정되어 저도의 상관도를 보였다. 특히 일당증체량과 등지방두께는 2009년 이후에 태어난 개체들이 증가하는 경향을 보였고, 90kg도달일령은 감소하는 경향을 보였다.

        After spermatogenesis, spermatozoa come in contact with fluids in the epididymis where they mature. During ejaculation, spermatozoa are mixed with secretions from prostate gland, vesicular glands, and bulbourethral glands. During natural mating, seminal plasma is deposited in the female reproductive tract eliciting various physiological and immunological responses. With the advances in proteomics, the components of seminal plasma have been identified and the information may be valuable in identifying markers for fertility. Components of seminal plasma that affect fertility have been discovered and the mechanism of action of these factors has been determined. The objective of this study was to determine the specific seminal plasma proteins from Korean native cattle, Hanwoo, and Korean native brindle cattle (KNBC) with the long term goal of improving fertilization rate. After SDS-PAGE and 2-dimensional gel electrophoresis, proteins were identified by Q -ToF analysis. They include plasma serine protease inhibitor precursor and platelet-activating factor acetylhydrolase after SDS-PAGE. Number and density of the spots in 2-dimensional gels were higher in KNBC than Hanwoo. Proteins identified from the paired spots of both breeds include chain A, bull seminal plasma PDC-109 Fibronectin Type II module, BSP-30 kDa precursor, and Spermadhesin Z13 or its precursor. Interestingly, some proteins were identified from multiple spots. The functional differences of these diverse forms of the proteins may require further studies. With their previously reported roles in sperm capacitation by these proteins, the studies on the mechanism of action, ligand interaction and the variation in the genome may help improving fertility in cattle.
