        Multiple starters consisting of two Bacillus amyloliquefaciens strains (MJ1-4 and EMD17), Pichiafarinosa SY80, and Rhizopus oryzae were used for Doenjang making. Bacillus strains were selected based on their abilities to inhibit toxinogenic fungi and Bacillus cereus, fibrinolytic activity, and their ability to confer good flavor to Cheonggukjang. P. farinosa SY80 and R. oryzae, previously isolated from soy sauce, were selected because they were not inhibited by two bacilli. Doenjang was prepared by inoculation of multiple starters (A1 Doenjang). Control Doenjang was prepared by inoculation of B. subtilis KACC 16750 (Natto strain) and Aspergillus oryzae KCCM 60166 (A2 Doenjang). Another control (A3 Doenjang) was prepared by inoculation of microorganisms present in rice straw. Doenjang samples were fermented for 70 days at 20℃. pH of 3 samples decreased from the initial value of 6.4 to 5.8~6.0 and titratable acidity (TA) increased from 0.6 to 1.1~1.3. The amount of amino-type nitrogen increased during fermentation. There were slight differences in moisture, crude-protein, and crude-fat contents after 70 days. Contamination of fungi was observed only in A3 Doenjang and B. cereus was not detected from all 3 samples. A1 Doenjang showed the highest fibrinolytic activity and A2 Doenjang the second. These results indicate that Doenjang made with carefully selected starters was functionally improved and microbially more safe.

        Background : Recently, hair loss, which has been regarded as a mere means of middle-aged men due to stress and environmental pollution. The market for hair loss in Korea is about four trillion won and it is growing continuously. It is mainly made by mixing natural extracts such as medicinal plant. The purpose of this study was to investigate the effects of ethanol extracts of Houttuynia cordata Thunb. whole plant and Calendula officinalis L. flower extracts on the growth of fibroblasts, dermal papilla cells and lipid precursors, I want to try to make a materialization. Methods and Results : The cytotoxicity of each sample extracts treated with 50%, 100%, and 500 μg to fibroblasts, cell-viability were 107.3%, 109.6%, and 128.2%, respectively. The cytotoxicity of each sample to the dermal papilla cells was not observed. And the lipid differentiation of the lipogenic precursor cells which regulates the hairegeneration by secretion of the platelet derived growth factor. The 70% ethanol extracts of H. cordata whole plant and C. officinalis flower were showed promotes the hair growth activity. The lipolysis rate was significantly increased with increasing treatment concentration Conclusion : As a result of this study, in-vitro hair growth activity of herbal medicines for hair treatment material development was not shown to be toxic to each cell. And 70% ethanol extract of H. cordata whole plant stimulated lipid precursor cells inducing differentiation. As a result, the 70% ethanol extracts of H. cordata whole plant and C. officinalis flower have potential to developing hair-related product.

        Background : Polygonum multiflorum Thunb. is a herbaceous perennial belonging to the Polygonaceae family. And is an herbal medicine which can be used as a raw material for food, which is excellent in immunity enhancement, vocalization and blood transfusion. The purpose of this study was to expand the utility of the P. multiflorum. Also, we fermented P. multiflorum by mushroom mycelial, and analyzed for general components and amino acids before and after fermentation Methods and Results : The moisture content of P. multiflorum and fermented P. multiflorum by mushroom mycelial (FPM) were 7.35% and 59%, respectively. The crude protein content did not show a significant difference between the two samples, crude fat, ash and crude fiber content of FPM were lower than P. multiflorum. The content of soluble nitrogen free extract of P. multiflorum (79.78%) was significantly higher than FPM (31.05%). Sixteen kinds of amino acids were detected in P. multiflorum, and the major amino acid was determined the arginine. The content of arginine and glutamic acid were 586.67 ㎎%, and 283.78 ㎎%, respectively. Sixteen kinds of amino acids were detected in FPM, and the major amino acids were determined the arginine (654.68 ㎎%) and threonine (591.18 ㎎%). The total amino acid contents of P. multiflorum and FPM were 3,469.03 ㎎%, and 3,630 ㎎%, respectively. Conclusion : The content of crude fat, ash, crude fiber, and soluble nitrogen free extract of FPM were lower than the P. multiflorum, and the major amino acids were different in two samples. Total amino acid content of FPM was higher than the P. multiflorum. As the mushroom fermentation progresses, it is confirmed that the amino acid content is increased, and it is expected to develop the product using the P. multiflorum fermented with mushroom mycelial.

        Kenaf (Hibiscus cannabinus L.) is an annual herbaceous crop of the Malvaceae family. Recently, kenaf is being used in many diversified applications such as pulp, animal feed, bioplastics and cellulosic biofuel etc. A new cultivar 'Jangdae' was developed by mutation breeding using irradiated with 300 Gy gamma-rays. Jangdae has a few distinguishable characteristics such as early flowering, high seed yield and palmate leaf, compared to wild type (Jinju). The fresh matter (FM) and dry matter (DM) yield of Jangdae are similar to those of Jinju, their seed yield (833.3 kg/ha) is approximately 4 times higher than that of Jinju. In addition, the FM and DM yield of Jangdae are 40% higher than those of early-maturing cultivar (C11). We performed the nutritive value of four kenaf cultivars (Jangdae, Jinju, C11 and Hongma300) at 100 day after seeding. The crude protein content of Jangdae, Jinju, C11 and Honma300 were 10.5, 11.0, 9.4 and 10.6%, respectively. The crude fiber, neutral detergent fiber and acid detergent fiber contents were no significant difference among the cultivars. Jangdae, which afforded both a high biomass and seed yield in South Korea, may be useful as potential source of feed and industrial materials.

        This study examined radiation damage and the optimal gamma-ray dose for mutation breeding in oat (Avena sativa L. cv. Samhan). The seed germination rate decreased as the dose increased over 500 Gy. The median lethal dose (LD50) was approximately 392 Gy. The median reduction dose (RD50) for plant height, tiller number, root length, and flash weight was 411, 403, 394, and 411 Gy, respectively. The optimal dose of gamma irradiation for inducing oat mutation appears to be in the range 300-400 Gy. We performed the comet assay to observe nuclear DNA damage induced by gamma-ray irradiation. This assay showed a clear difference with gamma-ray treatments. DNA damage increased temporarily 7 days after treatment depending on the dose, while no significant difference was identified in response to 300 Gy 30 days after the gamma-ray treatments. The growth characteristics of the M2 generation decreased as the dose increased over 400 Gy.

        This study was carried out to determine the amount of lignin, cellulose, and hemicellulose in six kenaf cultivars during different harvesting stages. Three mutant cultivars (Jangdae, Jeokbong and Baekma), two original cultivars (Jinju, C14), and one Chinese cultivar (Auxu) were planted on May 14, 2013. Four harvesting times were made at intervals of 20 days from 15 July to 16 September, 2013. The overall growth characters of mutant cultivar ‘Jeokbong’ such as plant height, stem diameter, flowering time, and dry mass were similar with those of the original variety. The mutant cultivar ‘Baekma’ occurred 10-day late flowering in comparison with the original variety and also displayed higher dry mass than the original variety. Jinju, Auxu and Jangdae, mid-late maturing kenaf cultivars, had high dry weight compared to early maturing cultivars such as Jeokbong, Baekma and C14. In all cultivars, the lignin contents were increased by a late harvest. The Mid-late maturing kenaf cultivars showed high lignin content in comparison with those of the early maturity cultivars. There were no significant differences of cellulose, and hemicellulose content between the cultivars, however cellulose content in stems of these kenaf cultivars were significantly decreased by a late harvest. These results may provide valuable information to assist the parental selection of kenaf breeding.

        The change of quality characteristics with storage temperature (room (25°C), low (15°C) and cold (4°C) temperature) and period of unhulled foxtail millet (Setaria italica Beauv. cv. Samdame and Gyeongkwan 1), proso millet (Panicum miliaceum L. cv. Hwanggeum-gijang and Manhongchal) and sorghum (Sorghum bicolor (L.) Moench cv. Hwanggeumchal and Donganme) were evaluated. The 1,000 grain weight, lightness, redness, yellowness and moisture content with storage temperature and period of unhulled foxtail millet, proso millet and sorghum were not showed difference. Germination percent and milling recovery of foxtail millet, proso millet and sorghum decreased with increasing storage temperature and period. Fat acidity of stored foxtail millet, proso millet and sorghum was increased with increasing storage period, and the higher temperature increased more. The results of this study show that the storage of foxtail millet, proso millet and sorghum at the low and cold temperature is better than the room temperature. Especially, in mind of the economics, the storage method is good low temperature than cold temperature.
