This survey was carried out to investigate the effect of the daily average nutrient intakes, self-consciousness of nutrition knowledge and health on the nutrition knowledge and food habits between college women and their own mothers. Questionnaires were completed by 214 college women who do major in nutrition and by 173 their mothers. The college women scored significantly higher than that of their mothers in the nutrition knowledge. And their mothers scored significantly higher than that of college women in the food habits. Most of the subjects belonged to `Fair` food habit group. which was considered to be relatively good. The correlation of the scores between nutrition knowledge and food habits of the college women and their mothers was low. The daily average nutrient intakes of all women were higher than the recommended dietary allowance except for that of Iron. There was a significant and negative correlation between the nutrition knowledge score and daily average nutrient intakes in college women. But there was not a significant correlation in the nutrient intakes in their mothers. And also there was a significant and positive correlation between food habits score in their mothers but there was not a significant correlation score in college women. The higher the women had a self-consciousness of health. the higher their mothers had a food habit score, but they had daily average nutrient intakes were lower than their daughter`s(college women). And the women that had a self-consciousness of health were healthier. daily nutrient intakes in their own mothers were higher in the food habits scores than that of the college women. The main curriculum for a good food habits is that it is important that one has a responsible nutrition education. For the improvement of nutrition education program we should transmit the nutritional information through an effective mass media(i.e. Radio, TV, Newspaper).
‘대립자미벼’는 한국방송통신대학교 농학과에서 2009년도에 육성한 종실이 크고 C3G 함량이 높은 복합기능성 유색미 품종이다. 주요 특징으로 중부평야지 평균 출수기는 8월 18일로 중만생종이며, 간장은 80.6 cm 정도이고, 종피색이 흑자색인 유색메벼 품종이다. 현미 장폭비는 1.88로 단원형이고, 현미천립중은 27.9 g으로 무거운 대립 품종이다. 종피의 안토시아닌 주색소인 C3G (Cyanidin 3-glucoside) 함량이 ‘흑진주벼’ 보다 3.6배 높은 품종으로 건강기능성 소재 및 가공용으로 활용가치가 높은 것으로 기대된다. 중부평야지역 보통기 보비재배 2개소에서 평균 450 kg/10a 수준으로 ‘흑진주벼’ 대비 16% 증수 되었다.
‘큰눈자미벼’는 한국방송통신대학교 농학과에서 2009년도에 육성한 쌀눈이 크고, C3G 함량이 높은 복합기능성 유색미 품종을 개발하였다. ‘큰눈자미’의 중부평야지 평균 출수기는 8월 13일로 중생종이며, 간장은 87 cm 정도이고, 종피색이 흑자색인 유색메벼 품종이다. 현미천립중은 18.9 g 정도이고, 장폭비는 2.14로 중원형이며, 현미에서 쌀눈의 비율이 8.2% 수준으로 ‘흑진주벼’의 2.5배 정도이며, 현미 1립 기준 쌀눈의 무게가 ‘흑진주벼’의 2.8배 수준인 거대배아미 품종이다. 현미의 지방함량과 Lysine 함량이 ‘흑진주벼’ 보다 높고, 종피의 안토시아닌 주색소인 C3G 함량이 ‘흑진주벼’에 비해 2배 정도 높은 품종으로 건강 기능성 소재로서 활용가치가 높을 것으로 기대된다. 중부평야지역 보통기 보비재배 2개소에서 평균 410 kg/10a 수준으로 ‘흑진주벼’ 대비 5% 증수 되었다.
We evaluated the anti-allergic effect of black colored rice (Oryza sativa L.) and its main constituents, cyanidin 3 glucoside (C3G) and cyanidin (Cy) on scratching behavior in mice. The black rice extract (BRE) and its constituts inhibited the scratching behavior induced by compound 48/80 and histamin.
To understand the role of intestinal microflora in the anti-allergic effect of C3G, which was suspected to play a key role in depressing scratching behavior, C3G was incubated with human fecal bacteria. Protocatechuic acid (PCA) was found within the 30 min and its concetration sharply increased. Vanillic acid (VA) was also detected in the incubated sample mixture. The anti-allergic effect of these compounds, C3G, Cy, PCA and VA, were investigated. PCA and Cy potentely reduced scratching behavior in mice induced by compound 48/80 and histamin.
These findings enable us to conclude that intestinal bacterial metabolites, PCA and VA, produced by intestinal micro flora contributed to suppressing the scratching behavior induced by compound 48/80 and histamin.
The anti-allergic effect of C3GHi rice breeded from the cross of ‘Heugjinjubyeo’ and ‘Suwon 415’ was investigated. Antiscratching behavioral effects of the water extract of C3GHi was higher than Heugjinjubyeo. Orally administered BCRs’ extracts exhibited potent inhibitory activity against scratching behaviors which were induced by compound 48/80. The inhibitory effect of C3GHi against the passive cutaneous reaction was more potent than that of Heugjinjubyeo. These finding suggest that black colored rice, especially C3GHi, may inhibit scratching behaviors and passive cutaneous reaction, and its anti-allergic activities were increased by means of selecting high C3G rice seeds.
Identification and quantification of allantoin in rice grain of selected varieties were investigated. Allantoin was isolated from Jeokjinjubyeo, and its structure has been elucidated on the basis of spectral data. Allantoin was extracted with a 70% acetone and analyzed by high performance liquid chromatographic methods without a previous chemical derivatization. The concentration of allantoin in selected rice varieties was in a narrow range from 2 to 18 mg per 100 g of brown rice. The highest content was detected in Heugkwang with 18.6 mg per 100 g brown rice, while the lowest was 2.59 mg in Yeomyung.
Cyanidin 3-glucoside (C3G) content contained in the grains of blackish purple rice varieties, Heugjinjubyeo, Kilimheugmi, Heugnambyeo, Sanghaehy-anghyeolla, and the progenies derived from their crosses was evaluated by HPLC and UV-Vis spectroscopy. C3G content was higher in the range of 10-30% by using UV-Vis method compared to HPLC method. A significant linear relationship was, however, observed between two analytical methods. The correlation coefficient was 0.98. Thus, this results suggested that it would be able to use UV-Vis spectroscopy to determine C3G content which does not demanded precise value like selection.
