The purpose of this study was to determine antioxidant and physiological activities of water and 70% ethanol extracts from Ligularia fischeri by extraction methods. The yield of water and ethanol extracts from Ligularia fischeri was 15.23% and 17.45%, respectively. The polyphenol and flavonoid contents of ethanol extracts of Ligularia fischeri (LEE) were 17.17±4.38 mg/g, 35.06±6.69 mg/g, respectively. The electron donating ability and SOD like activity, and ABTS radical ability of all Ligularia fischeri extracts were increased in a dose dependent manner, and those was the highest in LEE. Nitrite scavenging ability was higher in pH 1.2 than that in pH 3.0, and ethanol extract showed higher ability in pH 1.2 and 3.0. The xanthine oxidase and inhibition effect of all Ligularia fischeri extracts on tyrosinase were dose-dependently increased, and those was the highest in ethanol extracts of Ligularia fischeri. Reducing power was 1.2 at extract concentration 1,000 μg/mL in water and ethanol extracts of Ligularia fischeri and the highest in water extract of Ligularia fischeri at concentration of 62.5-500 μg/mL. These results may contribute to development of processed food and health functional food with Ligularia fischeri.
The aim of this study was to investigate the characteristics of paprika dried by various methods. Moisture content of dried paprika was higher in vacuum freeze-dried red paprika (DRP) (11.85%) than in vacuum freeze-drying of osmotic dried red paprika in sugar (RPS), vacuum freeze-drying of osmotic dried red paprika in fructose (RPF) and vacuum freeze-drying of osmotic dried red paprika in corn syrup (RPCS). Carbohydrate content of DRP was the lowest among the dried groups, but fat, protein, and ash contents were the highest in DRP. The pH of paprika was the highest in RPF (5.34), while it was the lowest in DRP (5.05). Reducing sugar and sugar contents of RPF were 28.59 g/100 g and 5.03 °Brix, respectively, which are the highest level among the groups. All color values in inside of paprika were the highest in RPCS, while in outside of paprika, L value is the highest in RPCS, and the value of a, b were the highest in RPS. Regarding the texture characteristics of paprika, strongness, hardness, adhesiveness, chewiness and brittleness were the highest in RPS (p<0.05).
The purpose of study was to evaluate quality, physicochemical and sensory characteristics of acorn Sulgidduk by addition of acorn powder. Acorn Sulgidduk was processed rice powder which added 0, 5, 10, 15, and 20% of acorn powder. The moisture, crude lipid, and crude ash contents of Sulgidduk added with acorn powder was increased by addition amount of acorn powder, but carbohydrate and crude protein contents were decreased. By addition amount of acorn powder, soluble protein content of Sulgidduk were increased, but reducing sugar content were decreased. The L values of Sulgidduk were decreased by addition amount of acorn powder, but increased the a and b values. The hardness, adhesiveness, cohesiveness, springness and chewiness were decreased by addition amount of acorn powder. The sensory test of Sulgidduk added 10% of acorn powder showed the best score in overall preference. Therefore, these results suggested that Sulgidduk added 10% of acorn powder could be applied for produce of acorn Sulgidduk.
도토리를 이용하여 도토리 차의 제조방법을 개발하고 개발된 도토리 차의 이화학적 및 품질특성을 평가하였다. 도토리 차는 네 가지 제조방법으로 제조하여 그 특서의 변화를 조사하였다. 제조방법을 달리한 도토리 차의 일반 성분을 분석한 결과 수분함량은 13.48~39.77%로 볶은 도토 리 차(RAT)에서 가장 낮았고, 3회 증제한 도토리 차(TSAT) 에서 수분함량이 가장 높았다. 탄수화물 및 조지방, 조회분 함량은 볶은 도토리 차(RAT)에서 가장 높았고, 조단백질 함량은 도토리(NA)에서 가장 높았다. 수용성 단백질 함량 은 도토리 보다 증제하거나 볶은 도토리 차에서 높았고, 3회 증제한 도토리 차(TSAT)에서 12.74 mg/g로 가장 높은 함량을 보였다. 환원당 함량 결과 도토리(NA)에서 64.3 mg/g로 가장 높은 함량을 보였다. 색도 측정 결과 L값은 도토리(NA)에서 가장 높게 나타났으며, 도토리를 증제하 거나 볶음에 따라 L값은 감소함을 보였고, a, b값은 도토리 (NA)에서 높았다. 총 폴리페놀 및 플라보노이드 함량은 3회 증제한 도토리 차(TSAT)에서 각 41.15 mg/g, 2.78 mg/g 으로 가장 높은 함량을 보였다. 관능검사 결과 색은 볶은 도토리 차(RAT)에서 가장 높게 평가되었고, 맛과 향은 3회 증제한 도토리 차(TSAT)에서 가장 높게 평가되었다. 떫은 맛은 도토리(NA)에서 가장 떫고, 볶은 도토리 차(RAT)에서 떫은 정도가 가장 낮은 것으로 평가되었다. 전반적인 기호 도에서는 3회 증제한 도토리 차(TSAT)에서 5.42로 가장 높게 평가되었으며, OSAT, RAT, NA순으로 평가되었다. 따라서 본 실험의 결과를 바탕으로 도토리를 이용한 도토리 차의 제조방법을 확립하고 도토리 차의 이화학적 및 품질특 성을 통하여 다양한 식품소재 및 식품개발에 활용할 수 있을 것이다.
The purpose of this study was to evaluate the antioxidant activity of Metaplexis japonica by using hot-water and ethanol extracts of its leaf and stem. Yields of hot-water and ethanol extracts of M. japonica leaf were high at 6.89 and 6.23%, respectively. The polyphenol and flavonoid contents in ethanol extracts of M. japonica leaf (ALEE) were high (86.96 and 60.73 mg/g, respectively). The electron-donating ability of all M. japonica extracts increased with an increase in extract concentration, with the highest electron-donating ability of 36.20~68.19% shown by hot-water extracts of M. japonica leaf (ALWE). The superoxide dismutase (SOD)-like activities of ALWE and ALEE increased with an increase in extract concentration. The nitrite-scavenging ability of the extracts was the highest at pH 1.2 and that of ALWE was higher than that of ALEE. The reducing power of 62.5 μg/mL ALEE was 0.09 and that of 1,000 μg/mL ALWE was 0.44. The inhibitory effect of an ethanol extract of M. japonica stem (ASEE) on tyrosinase was 13.81% at a concentration of 62.5 μg/mL and that of 1,000 μg/mL ALEE was 57.04%.
본 연구는 산지에 자생하는 참취와 밭에서 재배하는 참취의 품질과 기능성을 평가하기 위하여 에탄올 추출물의 항산화 물질 및 항산화성에 대하여 조사하였다. 참취의 에탄올 추출물의 수율은 블랜칭 건조한 시료에서 높았고, 폴리페놀 함량은 야생 및 재배 블랜칭 건조한 시료에서 각각 35.59, 26.83 mg/g으로 야생 조에서 높은 함량을 보였다. 전자공여능은 농도가 증가함에 따라 모든 군에서 활성이 증가했고 블랜칭 건조가 가장 높은 전자공여능을 보였다. SOD 유사활성능은 야생 참취는 생채에서 높은 활성을 보였고, 재배 참취는 블랜칭 건조에서 높았다. 아질산염 소거능 pH 1.2에서는 생채와 재배 추출물의 농도가 높을수록 높은 소거능을 보였고, 재배보다 생채 참취 추출물이 더 높았다. Xanthine oxidase 저해효과, tyrosinase 저해효과 측정 결과에서는 추출물의 농도가 증가할수록 저해효과가 높았으며 야생 참취에서 높은 저해활성을 보였다. 환원력은 추출물의 농도가 증가함에 따라 환원력은 증가함을 보였고 블랜칭 건조가 높은 환원력을 보였으며 야생 참취 추출물에서 높은 환원력을 나타내었다. 이상의 결과에서 참취 에탄올 추출물의 항산화 활성은 재배 참취의 추출물에 비해 야생 참취의 추출물에서 높았다. 참취 추출물의 항산화 활성은 생채 및 블랜칭 건조 참취 추출물의 항산화 활성이 자연건조 참취 추출물에 비해 전반적으로 높았다. 따라서 참취는 영양성과 항산화 활성이 우수하여 항산화 및 노화 예방에 우수한 식품이며, 참취를 이용한 다양한 가공식품의 개발은 국민 건강과 더불어 참취의 소비확대 및 부가가치 창출에 이바지할 수 있을 것으로 기대된다.
본 연구는 참취를 이용한 가공식품의 개발을 위하여 참취 착즙액 및 참취 분말을 첨가한 참취 국수의 개발과 더불어 이들 첨가량에 따른 수분함량, 재흡수률, 색도, 물성 등 이화학적 특성과 조리국수의 관능적 특성을 조사하였다. 참취 국수의 품질특성 결과, 참취 국수의 조리 후 중량은 대조군과 착즙액을 첨가한 국수에서 높았고, 수분흡수율은 참취 첨가량이 많을수록 낮게 나타났다. 참취 국수의 생면과 조리면의 색도 측정 결과 L값은 참취 첨가량이 증가할수록 감소했고, a값은 모두 음의 값을, b값은 모두 양의 값을 보여 녹황색임을 의미하였다. 참취 국수 생면의 pH는 대조군 및 분말 첨가 국수에서 pH 5~6을 보였으며, 착즙액을 첨가한 국수에서는 보다 낮은 pH값을 보였다. 참취 국수 생면의 물성 측정 결과 탄력성은 참취의 첨가량이 적을수록 높았고, 응집성은 대조군에서 가장 높았으며, 씹힘성은 참취 분말을 첨가한 국수에서 높았다. 참취 국수 조리면의 관능 평가는 대조군에 비해 참취 착즙액과 분말첨가 국수의 기호도가 비교적 높았으며, 특히 참취 착즙액을 첨가한 국수가 분말첨가 국수보다 기호도가 더 높았다. 따라서 참취 착즙액과 분말을 첨가한 참취 국수는 대조군에 비해 기호성 등이 우수하였으며, 참취를 이용한 다양한 가공식품의 개발은 국민 건강과 더불어 참취의 소비확대 및 부가가치 창출에 이바지할 수 있을 것으로 기대된다.
본 연구는 인공 재배 산채의 생산량 및 산채의 가공제품의 개발의 증대함에 따라 야생 및 재배 참취의 품질 특성을 비교하고자 재배 및 야생 참취의 건조방법에 따른 항산화성을 비교 분석하였다. 참취의 열수 추출물의 수율은 야생참취에 비해 재배 참취에서 수율이 높았고, 블랜칭 건조추출물의 수율이 높았다. 야생 참취 추출물의 총 폴리페놀과 플라보노이드의 함량은 재배 참취 추출물보다 높았으며, 건조방법에 따른 총 폴리페놀의 함량은 블랜칭 건조추출물에서 높았고, 플라보노이드의 경우에는 생채 추출물에서 높았다. 참취의 열수 추출물의 전자공여능은 농도가 증가함에 따라 증가하였고, 블랜칭 건조의 열수 추출물에서 높은 전자공여능을 보였다. 참취 열수 추출물의 SOD 유사활성능은 추출물의 농도가 높아질수록 증가하였으며, 생채 열수 추출물에서 다른 추출물에 비해 높았다. pH 1.2에서의 아질산염 소거능은 야생 및 재배의 생채, 블랜칭건조, 생채건조 열수 추출물 순으로 높았다. Xanthine oxidase 저해활성은 열수 추출물의 농도가 증가할수록 저해효과가 높았으며, 생채건조 추출물에서 가장 높았다. Tyrosinase 저해활성과 환원력은 농도가 증가함에 따라 블랜칭 건조 열수 추출물에서 높게 나타났다. 따라서 참취의 재배 및 건조 방법에 따른 열수 추출물은 항산화성이 우수하여 천연 항산화 소재 및 기능성 식품소재로서의 활용 가능한 약용식물자원이며, 이를 활용한 가공산업 발전의 기초자료가 될 것으로 생각된다.
This study was conducted to analyze the polyphenol contents and antioxidant activities of small-black-bean- Chungkukjang-added black food (SBCB) and soybean Chungkukjang (SC) extracts for the development of functional materials. The yields of the hot-water-and-ethanol SC extracts were higher than those of the hot-water-only SC extracts, which were higher than those of the ethanol-only SC extracts. The total phenol contents of the hot-water-and-ethanol SBCB extracts were higher than those of the other extracts. The EDA values of the hot-water-and-ethanol SBCB extracts were higher in the 0.625~5.0 mL/mL extract concentration than those of the other extracts, and those of the SC extracts were high in the 10 mg/mL extract concentration. The SOD-like activities of the hot-water- and ethanol-only SC extracts were higher than those of the other extracts. The nitrite scavenging ability of the ethanol-only SC extracts was higher at pH 1.2 than that of the hot-water-only SC extracts. The xanthine oxidase inhibitory activities of the hot-water- and ethanol-only SBCB extracts were higher in the 0.625 mL/mL extract concentration than those of the other extracts, and increased along with the extract concentration. The inhibitory activities of tyrosinase also increased along with the extract concentration, and the reducing power increased along with the extract concentration and was high in the hot-water-only SBCB and SC extracts.
This study was conducted to investigate the antioxidant and antimicrobial activities of the hot-water and methanol extracts of raw and black Doraji to increase its utilization. In order to prepare the black Doraji, it was steamed for 15 days at a temperature of 60℃ and then it was dried at a temperature of 30℃ for 3 hr. The methanol extract from the black Doraji (BM) contained the highest levels of total polyphenols among the extracts, and the total polyphenol content of the extract from a black Doraji was higher than that of the extract from a raw Doraji. The total flavonoid contents of the hot-water extract from a black Doraji (BW) was the highest (7.94 mgQE/g) among the samples. The DPPH and ABTS radical scavenging activities increased according to the increase in the concentrations of the Doraji extracts. The BM has the highest radical scavenging activity among the extracts. Each extract showed a slight difference in the antibacterial activity according to the tested strains. The Black Doraji showed a higher antimicrobial activity compared to the raw Doraji. The hot-water extracts demonstrated higher activities than the methanol extracts, and the BW revealed the strongest activity. In this study, the black Doraji showed more effect of the antioxidant and anti-microbial activities than the raw Doraji. These results will provide fundamental data for improving the sitological value and the black Doraji can be used as a valuable resource for the development of nutraceutical foods.
This study was conducted to analyze the antioxidant activities of fermented black jujube and to compare these with those of dried jujube, for the development of functional materials. The antioxidative activities of dried jujube and fermented black jujube extracts were analyzed by electron-donating ability (EDA) using 1,1-diphenyl-2-picryl hydrazyl (DPPH), superoxide-dismutase-(SOD)-like activity by pyrogallol, nitrite-scavenging ability, and xanthin oxidase. The yield of the fermented black jujube extracts was higher than that of the dried jujube extracts, and that of the ethanol extracts was higher than that of the hot-water extracts. The total phenol contents of the hot-water extracts from fermented black jujube were higher. The EDA values of the hot-water and ethanol extracts from fermented black jujube and dried jujube increased with an increase in extract concentration, and were about 85% in a 1000 ㎍/mL extract concentration. The SOD-like activity increased with an increase in extract concentration. The SOD-like activity of the hot-water extract from fermented black jujube was higher than that of the other extracts. The nitrite-scavenging ability at pH 1.2 of the hot-water extracts from dried jujube was higher than that of the other extracts. The xanthine oxidase inhibitory activities of the hot-water and ethanol extracts from fermented black jujube were higher than those of the other extracts, and increased along with the concentrations of the extracts.
The physicochemical properties and nutritional components of fermented black jujube (FBJ) were compared with those of dried jujube (DJ) to improve their utilization as food materials. The moisture contents and brix of the DJ and FBJ were 22.6% and 6.07 brix, and 10.36% and 7.23 brix, respectively. Their L values were 34.78 and 31.82, and the a and b values of DJ were higher than those of FBJ. DJ had a lower water activity level (0.75) than FBJ (0.45), but FBJ had a higher amount of reducing sugar and soluble protein than DJ. The major free sugars in the two types of jujube were fructose and glucose, and their potassium content was highest (about 90%) among minerals. Their unsaturated fatty acid contents were 51.0% and 59.83%, respectively, and the major fatty acids myristoleic acid, palmitic acid, and palmitoleic aid were detected in them.
The physiochemical property, nutrient composition, and functionality of apple juice sterilized at a low temperature (LT, 70℃, 30 min) or a high temperature (HT, 100℃, 20 min) were analyzed. The pH of the apple juice that was sterilized at LT (pH 4.72) was higher than that of the apple juice that was sterilized at HT (pH 4.57), and the acidity of the apple juice that was sterilized at HT (8.90%) was higher than that of the other sample. The sugar content of the two apple juice samples was 15 °Brix, and the apple juice samples had high potassium, malic acid, and glutamic acid contents. The total polyphenol contents of the apple juice samples that were sterilized at LT and HT were 27.39 mg/100 mL and 23.24 mg/100 mL, respectively. The apple juice that was sterilized at LT had a significantly stronger DPPH radical scavenging activity than the apple juice that was sterilized at HT (p<0.01), and the apple juice that was sterilized at LT had a lower hydroxyl radical scavenging activity level than the other apple juice. Finally, the apple juice that was sterilized at LT showed significantly stronger activities that inhibit enzyme-related oxidation than the apple juice that was sterilized at HT (p<0.05).
This study was carried out to investigate the physicochemical characteristics of maturating and dried jujube. The moisture contents of the unripe and ripe jujube were found to be 84.66 and 66.45%, respectively, but that of the dried jujube was 31.48%. The crude-fat and crude-ash contents of the dried jujube were much higher than those of the maturing jujube. The carbohydrate contents of the unripe, ripe, and dried jujube were found to be 13.51, 27.94, and 61.70%, respectively, and the soluble-protein contents were 0.88, 1.73, and 3.71%. The reducing-sugar content of the dried jujube was 18.82%, higher than that of the ripe jujube. The sucrose contents of the unripe and ripe jujube were 10.15 and 16.66 g/100 g, respectively, and that of the dried jujube was 33.46 g/100 g. The major fatty acids that were found to compose jujube were palmitic, oleic, pamitoleic, linoleic, and linolenic acid. The myristoleic and arachidonic acid contents were higher in the dried jujube than in the ripe jujube, but the palmitoleic acid content was lower in the dried jujube than in the ripe jujube. The major minerals of jujube were found to be Ca, K, Mg, and P, and the total mineral contents of the unripe, ripe, and dried jujube in this study were 343.38, 584.94, and 331.56 mg/100 g, respectively. The polyphenol contents of the unripe, ripe, and dried jujube were 309.12, 248.80, and 23.34 mg/100 g, respectively, while the vitamin C contents were 610.04, 310.22, and 423.27 mg/100 g.
