AOM and lamp tests were carried out with soybean, corn, palm oil and beef tallow without the addition of antioxidant. The evaluation of rancidity for the stability was determined by changes of peroxide value and acid value, and the correlation between the stability and the composition of fats and oils was examined. The results obtained were as follows. 1. In the AOM test, POV began to rise in the order of corn oil, soybean oil, beef tallow and palm oil. However, the time required to reach POV 100 in beef tallow was faster than other fats and oils. It was found that there was a good correlation between POV and content of tocophrol. 2. In the lamp test by light of main wavelength 253.7nm, beef tallow was stabler than soybean and corn oil. It was because the absorption of light into beef tallow was much smaller than others, since beef tallow was fats. Palm oil was very stable in all the samples during AOM and lamp test.
Our country has been produced much amounts of panax ginseng roots which has a stimulating effects on the metabolism of protein, lipid and nucleic acids in the body. And the leaf trunk of panax ginseng were also produced a considerable amounts as the by - products. Therefore, this study was devised to observe the nutritional effect to rats feeding of rice diet supplemented with by - products of panax ginseng, male Albino rats of pure strain weighing 73.8 ± 0.7 g were used as experimental animal to investigate the changes of cholesterol in heart and testis. The animals were divided into sixteen diet group, they were the protein contents of 9%, 12%, 15% and 18% supplemented with 2% panax ginseng roots and its by - products respectively. The group without the supplements were used as the control. The diet group were again divided into 2 groups according to the feeding terms, 4 weeks and 8 weeks. It is concluded that the free from cholesterol and total cholesterol contents in the heart and testis with the supplements of panax ginseng roots and its by - products showed significant difference compared to the control group.
Correlation among the wax-pigment composites which is base vehicles for the crepas was investigated in terms of fadeness. The base wax synthesized and pigments are compounded with petroleum lubricant and exposed under carbon arc individually. The yellowing phenomenon was appeared on the reference papers coated with the spindle oil which was then exposed. The papers were again extracted with distilled water and pH of them were ranged between 6.2-6.5. Color difference from Adam-Nickerson equation, △E of base wax is 0.15 and that of spindle oil are varied from 0.66 to 15.62. Since the main components of the petroleum lubricant are aromatic hydrocarbons which have absorptions characteric of UV ranging from 240 to 280 nm, fadeness characteristics of the composites are largely depend upon the change of molecular structure of spindle oil by absorbing UV. Thus the spindle oil having the following physical properties has the better resistance of fadness and is recommended to use in compounding the base wax-pigment composites: · main component: paraffinic hydrocarbon · pour point: below - 15℃ · UV absorption characteristics: λmax. : 268-290nm · absorbancy: below 0.1(0.03ml of sample/50ml of CHCl3)
The study was carried out to investigate interrelationships among the acid, peroxide, iodine, thiobarbituric acid values, and changes of fatty acid compositions of some vegetable oils added to soybean milk. A storage temperature of 100℃ was used for the oxidation of the oils, and to determine of variation of the chemical properties and changes of the fatty acid composition, all the samples were carried out in every 8 hours for 40 hours. The changes in fatty acid compositions of the vegetable oils were measured by high performance liquid chromatography. The results obtained were as follow; 1. The acid values of the fresh soybean, corn, and palm oils added to the soybean milk were 0.05, 0.12, and 0.06, whereas those of the oils stored for 40 hours were 0.08, 0.18, and 0.09, respectively. 2. The peroxide values of the fresh soybean, corn, and palm oils added to the soybean milk were 0.3, 1.0, and 0.3, whereas those of the oils stored for 40 hours were 1.1, 1.1, and 0.9, respectively. 3. The iodine values of the fresh soybean, corn, and palm oils added to the soybean milk were 132.7, 124.1, and 57.0, whereas those of the oils stored for 40 hours were 127.3 108.3, and 52.0, respectively. 4. The thiobarbituric acid values of fresh soybean, corn, and palm oils added to the soybean milk were 0.18, 0.05, and 0.02, whereas those of the oils stored for 40 hours were 0.25, 0.19, and 0.07, respectively. 5. The percent content of the major fatty acids of the soybean, corn, and palm oils freshly added to the soybean milk were 2.3%,2.5%,and 25.2%for palmitic acid, 3.2%,3.2%,and 4.8%for stearic acid, 39.7%, 40.7%, and 59.3% for oleic acid, 49.9%, 53.0%, and 10.5% for linoleic acid, and 4.7%, 0.4%, and 0.7% for linolenic acid, respectively. Those of the oils stored for 40 hours were 2.9%, 4,5%, and 36.7% for palmitic acid, 8.5%, 6.8%, and 7.0% for stearic acid, 37.8%, 38.8%, and 49.2% for oleic acid, 46.2%, 49.5%, and 5.8% for linoleic acid, and 4.2%, 0.1%, and 0.1% for linolenic acid, respectively. The fatty acid compositions changed significantly: the amounts of the unsaturated fatty acid decreased considerably. The rsults of the present study demonstrated greater stability of the palm oil as compared with the stability of soybean oil and corn oil added to the soybean milk.
The transesterification reaction between ethanolamine and methyl-methacrylate was kinetically investigated in the presence of various metal acetate catalysts at 110℃. The transesterification was found to obey first-order kinetice with respect to the concentration of ethanolamine and methyl-methacrylate, respectively. By the Arrhenius plot, the activation energy has been calculated as 11.9 Kcal with lead acetate catalyst, 14.7 Kcal without catalyst. The reactivities has highest value where the electronegativity and instability constant (Kij) values for the metal acetate catalysts are about 1.6.

The effects of dietary magnesium, calcium on the serum cholesterol concentration in rabbit was studied for a period of 21 days using isocalorids and isonitrogenous basal diet. It is investigated that the serum cholesterol level lowering by feeding with calcium, magnesium, sesame oil and perilla oil, did not appeared but perilla oil and magnesium feeding group appeared a little bit lowering. There was no effect for the total protein, but there was some sort of effect for albumin and globulin. Particulary, alpa-globulin was increased by calcium, magnesium, sesame oil and perilla oil feeding groups. The esterified cholesterol was increased at the magnesium and perilla oil diet group. It is also, investigate that there is almost no effect for the electrolytes concentration and transport phenomena in the cell through magnesium, calcium, sesame oil and perilla oil diet groups.
Influence of vitamins on the felt and lipid production of Aspergilus niger var. macrosporus, Aspergillus fumigatus and penicillium notatum were investigated after 10 days of incubation at 30℃ under static culture condition. The felt of molds were lower in the media containing vitamins than control medium. The lipids produced by each strains were highest yields in media containing vitamins. Among of these Aspergillus niger var. macrosporus and Aspergillus fumigatus produced. 4.6g and 5.28g in medium containing inositol 2.5mg/l and 0.5mg/l, respectively; while Penicillium notatum produced 1.51g in a medium containing thiamine 10mg/l. The major fatty acid of lipids were palmitic acid, stearic acid, oleic acid and linoleic acid. Aspergillus niger var. macrosporus was lower palmitic acid in media containing vitamins than control medium, While linoleic acid was higher in media containing thiamine and inositol. Aspergillus fumigatus was lower oleic acid in media containing vitamins than control medium, While linoleic acid was higher in media containing vitamins. Peniillium notatum was lower palmitic acid, oleic acid and stearic acid in media containing vitamins but linoleic acid was higher. The composition of fatty acid of lipids changed depending on the media containing vitamins but hardly found a certain tendency except linoleic acid which was higher in a media containing thiamines and inositols. The degree of unsaturation of fatty acids in the lipids were comparatively higher in media containing vitamins than control medium.
In order to investigate the effect of ginseng saponins on the activity of lipoprotein lipase, it was attempted to conform the enzymatic hydrolysis of chylomicron with post-heparin induced plasma lipoprotein lipase of normal rabbit in vitro. And the activity of lipoprotein llipase was determined by the quantitative determination of liberated free fatty acids on the hydrolysis of chylomicron. As the result, it was observed that the ginseng saponins accelerated the hydrolysis of chylomicron by post-heparin plasma in vitro. And the optimum concentration of ginseng saponins for the activity of the lipoprotein lipase in the 2% bovine serum albumin was 10-4%. But ginseng saponins on the hydrolysis of chylomicron was influenced by the presence and the absence of albumin. And the optimum concentration of albumin and Na-cholate on the activity of lipoprotein lipase was each of the 10-6% albumin and 5mM Na-cholate. From these results, it seems that ginseng saponins might stimulate the intravascular hydrolysis of chylomicron.
The present study was designed to compare the effect of soybean oils and corn oils on serum levels of total cholesterol, HDL-cholesterol and free cholesterol in cholesterol-fed rats. The results are as fellows: 1. The average body weight gain in soybean oil diet group was lower than that of the control group. 2. The food efficiency ratio in soybean oil diet group was lower than corn oil diet group. 3. The serum levels of total cholesterol in soybean oil diet group than that in corn oil diet group. 4. The serum levels of free cholesterol in soybean oil diet group was lower than that in corn oil diet group. 5. The serum levels of HDL-cholesterol in soybean oil diet group than that in corn oil diet group. 6. The serum levels of VLDL-, LFL-cholesterol in soybean oil diet group was lower than that in corn oil diet group.
The possible effects of 10% carbohydrate containting diets on the serum glucose and lipids values were studied with normal and alloxan - diabetic male rats for a period of 28 days. The diets were supplemented with either glucose, cornstarch or sucrose, fructose or the basal diet containing no added carbohy drates. After this period, 3 to 4 rats among the each group were killed and samples of serum, liver, spleen and kidney were collected. The others were rendered diabetic by the intraperitoneal injection of alloxan (190mg/wtkg). Then original feeding scedule was continued for 3 days in all five diabetic groups, before the collection of tissue samples and serum. Feeding the nondiabetic rats with glucose and fructose delayed the bodyweight development relatively compared with nonsugar group. The weight deductions after alloxan injection were similar in all feeding groups. All diabetic animals exhibited increased blood glucose triglceride levels but almost unchanged total cholesterol values. Blood glucose values for nondiabetic rats were normal ranges, and then glucose feeding group was the highest. Total - cholesterol values were the highest in nondiabetic rats fed glucose, fructose and in diabetics fed sucrose, glucose. Triglyceride values were the highest in nondiabetic rats fed sucrose, and no difference in diabetic rats. Some cornstarch group exhibited fatty-livers in diabetic and nondiabetic, and more studies need.
The present study was designed to investigate the effects of dietary fiber sources and levels on serum lipids in rats fed a hypercholesterol diet containing 0.5% cholesterol. Male Sprague-Dawley rats weighing 52.7 ± 7.27g were devided into sevel groups by completely randomized block design and fed various dietary fibers which were prepared from Rice bran, Siraegi (The dried green parts of a radish) and Bracken Fern at a level of 5% and 10% respectively. The results obtained in this study are summarized as follows: 1. Body weight gains were not significantly different among the groups and food intake was significantly higher in rats fed a diet of Siraegi 10% than those fed the control diet. 2. Fecal wet weights were significantly increased in all experimental groups. 3. Levels of serum total cholesterol in all experimental groups were significantly lower than that of the control group except the level in the R 10(Rice bran 10%) group. 4. Free Cholesterol levels in the serum were increased in all experimental groups, especially the levels in the R 10 (Rice bran 10%) and S 10 (Siraegi 10%) groups were significantly higher than that of the control group. 5. Ester Cholesterol levels in the serum were significantly lower in rats fed the experimental diets than those fed the control diet. 6. There was a tendency of higher serum HDL-Cholesterol levels in R5 (Rice bran 5%), R10 (Rice bran 10%) and B5(Bracken 5%) groups compared to the control group however no significant differences were found between the control group and all the experimental groups except in the case of the S5 (Siraegi 5%) group. 7. LDL, VLDL-Cholesterol levels in the serum sere significantly reduced in the S5 (Siraegi 5%), B5 (Bracken 5%) and B10 (Bracken 10%) groups. 8. The HDL-C./Total-C. Ratio was increased in all experimental group especially the Ratios in the S5 and B5 groups were significantly higher than that of the control group.
The effects of the vegetable diet on the levels of the serum lipids, particularly the level of the serum total cholesterol which is most concerned with coronary heart disease (CHD) were investigated in 30 male SDA (Seventh Day Adventists) group and 30 male omnivorous group (control group). SDA participated in this study intaked relatively few animal origin foods whereas they intaked plant origin foods largely; they seldom or sometimes intaked meats, fishes, butter, margarine, beverages and coffee, but often unrefined cereals, legumes, vegetables and fruits. In the both systolic pressure and diastolic pressure, there was no difference between two groups. The levels of the serum total cholesterol, triglyceride and phospholipid were lower in SDA group than in the omnivorous group. Among them the difference was statistically significant in the level of the serum total cholesterol. HDL-cholesterol was more or less higher in SDA group than in the omnivorous group, but the difference was no significant. The result that SDA group had lower level of the serum total cholesterol than the omnivorous group suggested that that they might be less prone to CHD than the omnivorous group. Though this possibility, however, was derived from the fact of the lower level of serum total cholesterol of SDA group, it might by partly responsible for their habit that they never smoke and drink alcohols and coffee.
인유, 조제 분유 및 시유의 인 지방질의 지방산 조성을 가스 크로마토그래피로 분석하여 비교하였다. 조제 분유는 인유에 비하여 8 : 0, 10 : 0, 18 : 0, 20 : 0, 22 : 0 등의 지방산들이 유의하게 높았다. 18 : 2Ω6은 조제 분유가 인유에 비하여 2.3배나 많은 18% 수준을 유지하였다. 대체로 보아 Ω9계, Ω6계 및 Ω3계 대사산물들은 조제 분유가 낮은 경향을 보였다. 인유에 비하여 시유도 조제 분유와 유사한 경향을 나타내었다.
인유, 조제 분유 및 시유의 트리글리세리드의 구조를 비교하기 위하여 트리글리세리드의 지방산 조성, 아실 탄소수 및 종을 박충 크로마토그래피 및 가스 크로마토그래피를 사용하여 분석하였다. 인유에서는 단쇄 지방산이 검출되지 않은 반면 조세 분유와 시유에서는 1% 미만의 수준들로 검출되었다. 인유에 비하여 조세 분유는 8 : 0, 22 : 0, 24 : 0 등이 유의하게 높은 반면 10 : 0, 14 : 0 등의 지방산들은 유의하게 낮았다. 시유는 인유에 비하여 8 : 0, 10 : 0, 18 : 0, 22 : 0, 24 : 0 등이 유의하게 높았고 12 : 0, 20 : 0 등이 유의하게 낮았다. 18 : 2Ω6은 인유가 12.0%, 조제 분유가 15.0%로 서로 비슷한 반면 시유는 3.8%로 가장 낮았다. 탄소수 20개 이상의 Ω6계 및 Ω3계 장쇄 고도 불포화 지방산들은 인유에 비하여 조제 분유와 시유에서 유의하게 낮았다. 인유는 아실 탄소수 44-52, 조제 분유는 50-54, 시유는 36-40 을 가진 글리세드가 주종을 이루고 있었다. 조제 분유에서는 아실 탄소수 50과 52, 시유에서는 42만 제외하고 나머지의 탄소수들은 인유의 그것들과 모두 유의한 차이를 보였다. 조제 분유의 saturates 는 인유의 그것에 비하여 2 배 가량 높았을 뿐 기타 종에서는 모두 유의하게 낮았다. 시유에서도 dienes를 제외한 모든 종에서 조제 분유에서와 동일한 경향이 나타났다.
In order to know the quality changes of the fat and oil foods packed in plastics film by the sunlight, we examined the sunlight transmitting rate by the kind of films and measured the acid value and peroxide value according to it. The results obtained were as follows : 1. The sunlight transmitting rate of various films was explained especial permeability under the wavelength of less than 300nm, but it marked a regular form under that of more than 30nm. 2. The vacuum evaporation film with aluminum on the polyester shuts off most of the sunlight, therefore, it has the best effect that keeps the fats and oils off rancidity. 3. The sunlight transmitting rate of the white color printing film drops about 80% as compared with not printing. 4. The preventive power against the rancidity of fats and oils is PET/Al, PET, PE, nylon and OPP film in that order. The changes of peroxide value and acid value were approximately the same as that of the sunlight transmitting rate.
