This study was performed to evaluate physicochemical properties of model sausages with various levels of pressed cherry fruit extracts alone or in combination with tomato powders as a partial replacement of sodium nitrite. In study 1, physicochemical properties of model sausages were not affected by the addition of pressed cherry fruit extracts(p>0.05), except for Hunter L(lightness) and Hunter a(redness). Model sausages containing pressed cherry fruit extract(T1, 0.5% and T2, 1.0%) decreased lightness, whereas redness of REF(156 ppm sodium nitrite) was not different from T2(p>0.05). However, those with cherry fruit extract at 1% were proper to improve the hunter color values, especially redness values. In study 2, physicochemical properties of model sausages were not affected by the addition of pressed cherry fruit extract and tomato powders in selected nitrite contents, except for color and cooking loss(p>0.05). In color values, REF was the highest level, and T2, T4, and T5 was significantly low level in lightness (Hunter L). T2 was the highest value in cooking loss(%) among other treatments. The redness values(Hunter a) of T5(75ppm, nitrite, 1% pressed cherry fruit extract and 0.5% tomato powder) were not different from REF which had highest redness values(P<0.05). In conclusion, the combination of pressed cherry fruit and tomato powder might be considered as an alternative method to partially replace with sodium nitrite in pork model sausages.
Black tomato (Lycopersicum esculentum) is known to have more β-carotene, lycopene, and vitamin C than general redcolored tomatoes. In this study, we evaluated the quality properties, antioxidant activities and sensory characteristics of black tomato cookies. Cookies were prepared by replacing 0, 1, 3, 5, and 7% of flour with black tomato powder. Density of black tomato cookies tended to be decreased between control (1.20) and 3% added groups (1.12). pH value was decreased from control (6.66) to 7% added group (5.16). Spread factor and loss rate were increased with increasing amounts of black tomato powder. Hardness was gradually increased from 107.77 g/cm2 in control to 170.50 g/cm2 in 7% added group. Color measurement indicated that L-value (brightness) was highest in control (70.46) and lowest in 7% added group (45.23); whereas, a-value (redness) increased while b-value (yellowness) tended to decrease with increasing amounts of black tomato powder. Total polyphenol contents and DPPH radical scavenging activities were directly proportional to the amount of black tomato powder. Consumer preference scores in color and flavor of black tomato powder added group were higher than those of control. Characteristic strength test was not significantly different among the groups. Overall, the results indicated that adding 5% black tomato powder is desirable for making black tomato cookies.
본 연구는 서광 토마토(Lycopersicon esculentum MILL. cv. Seokwang)의 분무경재배시 신소재인 바이오세라믹 분말을 엽면살포(0.2%)와 배양액내에 처리(0.02%)하여 토마토의 생장 및 과실품질 특성을 비교하고자 수행하였던 바 그 결과를 요약하면 다음과 같다. 1. 지상부와 지하부의 바이오세라믹 처리시 대조구에 비해 초장은 감소하였으나 뿌리의 생장은 증가하였다. 2. 바이오세라믹 분말의 엽면살포시 과방의 생장이 대조구에 비해서 약 14% 정도 증가하였다. 바이오세라믹 분말의 지상부와 지하부 처리시 총건물중이 증가하였다. 3. 바이오세라믹 처리시에 T/R율은 대조구에 비해 낮았으며, 순동화율(NAR)과 상대생장율(RGR)은 바이오세라믹을 엽면살포했을 경우에 12.13g/dm2/day와 0.05g/g/day로 가장 높았다. 4. 대조구에 비해 바이오세라믹 분말의 근권처리시에는 총누적생과중 및 건과중이 감소하였으나, 엽면살포시에는 증가하였다. 바이오세라믹 파우더의 근권 및 엽면살포시 대조구에 비해 과실의 수량이 감소하지 않고 당도가 높아졌다.
