본 연구는 영유아교육기관의 부모교육에 대한 부모의 인식도, 선호도 및 요구도를 규명하고자 하였다. 본 연구대상은 경남지역 5개 시·군에 소재한 유치원 및 어린이집 재원 자녀의 부모 1,008명이며, 본 연구 결과는 다음과 같다. 첫째, 영유아교육기관의 부모교육에 대한 인식도는, 부모교육 유형에서 ‘매체 를 통한 교육’을 가장 많이 받은 것으로 인식하고 있고, 부모교육 내용은 ‘자녀와의 효과적인 의사소통에 관한 내용’을 가장 많이 받았으며, 부모교육이 ‘도움이 된다’는 인식이 높았다. 둘째, 부모교육 참여에 대한 부모의 선호도는 부모교육 참여 시 부모가 가장 선호하는 요일은 ‘평일’이고, 교육시간대는 ‘오전 10-12시’ 였다. 또한 부모교육 1회 시 교육시간은 ‘1시간’을 가장 선호하였고, 부모교육 횟수는 ‘한 학기에 1회’를 가장 선호하는 것으로 나타났다. 부모교육 유형은 ‘부모 교육전문가에 의한 초청특강’을 가장 선호했으며, 부모교육 내용은 ‘자녀와의 효 과적인 의사소통’을 가장 선호하는 것으로 나타났다. 셋째, 부모교육 내용에 대한 부모의 요구도는 ‘자녀와 효과적인 의사소통 방법’에 대한 요구도가 가장 높 게 나타났다. 넷째, 영유아교육기관 유형에 따른 부모교육 내용에 대한 부모의 요구도는 공립유치원 부모들이 사립유치원 부모보다 더 높게 나타났다.
To evaluate antimicrobial activities of chongkukjang slime fermented by different strains, growth characteristics were compared using various standard microorganisms with addition of chongkukjang slime. Chongkukgang slime was prepared by fermenting cooked soybean after inoculating with Bacillus circulars K-1, Bacillus spp N-1 and Bacillus subtilis CH-1, respectively. Significant antimicrobial activity was observed by chongkukjang slime on gram positive bacteria (Staphylococcus aureus, Bacillus cereus, Bacillus subtilis, Micrococcus luteus), gram negative bacteria(Escherichia coli O157:H7, Salmonella Typhimurium, Pseudomonas fluorescens), and yeast (Pichia membranaefaciens, Saccharomyces cerevisiae, Candida albicans). In case of B. cereus growth inhibition of 80% was achieved by the addition of chongkukjang slime; on the contrary, to Escherichia coli O157:H7 only 20% inhibition was observed. Slime from Bacillus subtilis CH-1, in parkicular, inhibition of 40% toward bacteria and yeast, whereas slime from Bacillus circulars K-1, Bacillus spp N-1 showed only 20% inhibition.
This research was carried out to improve the utilization of agar by evaluating the effect of agarooligosaccharides on the intestinal microflora. Medium containing 0.2% agarooligosaccharides remarkably enhanced the growth of Bifidobacterium infantis; however, agarooligosaccharides did not influence the growth of Clostridium perJlingens. Agarooligosaccharides affected intestinal microflora to different extent by various pH and NaCl concentration. The growth of B. infantis enhancad over pH 4.5. Within 1 % NaCl concentration, addition of agarooligosaccharides enhanced the growth of B. infantis. In contract, NaCl did not affect the growth of Cl. perflingens at all concentrations tested. Therefore, agarooligosacchariedes improved the benevolent intestinal microflora and depressed to the level of bacteria causing putrefaction and food poisoning.
Agar, one of the most abundant marine products has not been utilized extensively because of low level of processing technology in Korea. This research was carried out to improve the utilization of agar and consequent increase in profit. Antibacterial activity of agarooligosaccharides were evaluated against bacteria causing putrefaction and food poisoning. Addition of 0.4% agarooligosaccharides showed antibacterial activity toward Staphylococcus aureus and Escherichia coli O157:H7; furthermore, autoclave treatment of agarooligosaccharides solution enhanced the antibacterial activity. Agarooligosaccharides showed high stability against the pH change. Addition of amino acid(alanine, lysine, glycine, phenylalanine) in agarooligosaccharides solution enhanced antibacterial activity in E. coli O157:H7, Streptococcus mutans and Staphylococcus aureus.
The modification of rice powder was attempted by treatment of acetic acid and epichlorohydrin to improve the functional properties of baby food. The initial gelatinization temperature of rice powder determined by amylograph was decreased from 79.5℃ to 63℃ by modification. The apparent and maxium viscosity of rice paste at 95℃ before and after modification were increased from 92B.U. to 236B.U. and from 100B.U. to 202B.U., respectively. The light transmittance of modified rice paste was increased from the temperature of 60℃ and by increasing the degree of substitution at the fixed temperature, while decrease more or less by the treatment of epichlorohydrin. The degree of retrogradation of the paste was decreased from 28.7 to 18.0 upon modification. The rate of syneresis of modified rice powder was decreased with increasing the drgree of substitution and ,the extend of epichlorohydrin treatment. Syneresis was not observed when acetylated rice powder whose DS value is 0.048 was treated with 0.25% of epichlorohydrin for the formation of cross-linkage. The addition of modified rice powder in preparation of semi-solid type infant food could improve the quality without lowering overall digestibility.
Total organic carbon(TOC), Total nitrogen(TN), and carbon and nitrogen stable isotopes were measured in the sediment and suspended parties in fresh lake water and saline estuarine water to determine the sources of Particulate organic matter(POM) in the sediments of the Youngsan river estuary.
POM in the freshwater discharge water was mostly phytoplankton origin with little trace of terrestrial plants. POM from phytoplankton blooms formed in estuarine water in response to the nutrient enriched freshwater discharges was the most important sources of POM in the sediment near the dike, comprising more than 40% of the total organic matter.
POM from freshwater phytoplankton and oceanic phytoplankton were also important sources of the sediment POM, and their contributions varied with the distances from the dike. Contribution of freshwater phytoplankton to sediment POM decreased from the dike to the outside of the estuary.
In order to elucidate the polycyclic aromatic hydrocarbon concentration and its origin in arctic area, four arctic brown algae (Laminaria saccharina, L. digita, Alaria esculenta, Desmarestia aculeata), one marine invertebrate (Echinoidea) and sediments were collected from Kongsfjorden in Spitsbergen from the late July to early August, 2003. In case of macroalgae, the young blade part above growth point and the old stipes and blades beneath growth point were separated and analyzed for polycyclic aromatic hydrocarbons (PAHs) in an attempt to check the mechanism of uptake in macroalgae to accumulate PAH. There was no difference in PAH concentrations between sampling sites (Stations B and C), species, and blades beneath and above growth point. PAH concentrations in all samples collected in this study were relatively higher than those reported in other areas of arctic. Especially, station C, which is known as an unpolluted area, showed 10 times higher PAH concentration (8,765 ng/g) in sediment than station A (694 ng/g) around harbor. In addition high PAH concentration, station C had very higher proportion of methylated PAH to parent PAH in sediment than station A. Source analysis using PAH isomer pair ratios as indicators showed that Kongsfjorden area seemed to be relatively contaminated with PAH derived from direct petroleum input.
