This study was a qualitative investigation into the food security and food variety among the rural elderly. For the qualitative data collection, nineteen elderly people who lived in Yangpyeong-gun were interviewed individually. Food security and variety was evaluated based on accessibility and affordability. The participants seemed to have difficulty preparing their own meals and eating with their families or others. The frequency of vegetable intake was found to be high, as vegetables were available through cultivation. However, in terms of diversity, the intake of meat and milk, which are sources of protein and calcium, was found to be significantly low. This has to do with very poor physical accessibility. A lack of nutrition education was identified as the biggest reason for not following dietary therapy despite having a pre-existing disease condition. Therefore, for the elderly in Yangpyeong-gun, it is suggested that a basic nutrition policy for food supply that can increase their actual intake is more essential than education on cooking and nutrients. Moreover, periodic nutrition education or a regular counseling system for dietary therapy through local public health centers may help improve the health of the elderly.
Sun-cuisine is a traditional Korean side dish. This study examined the methods used to prepare Sun-cuisine in 11 Korean recipe books published over the last 100 years. The main ingredients of Sun-cuisine were typically vegetables, fins, fur, feathers, meat, legumes and mushrooms dipped in wheat flour or mung bean starch powder and stuffed with various minor ingredients known as “so”. These dishes are highly seasoned and boiled in meat stock or steamed in a double boiler, after which they were sprinkled with toppings. Various materials are used as the main ingredients. When vegetables were used as the main ingredients, they were sprinkled with salt, sliced and stuffed with beef or mushrooms. Meat stock was then poured on top of the vegetables and they were steamed. A total of 38 food materials were used as the minor ingredients, while 25 materials were used as seasonings and six foods were used as toppings. Pine nuts were widely used as a minor ingredient, seasoning and topping. Sun-cuisine is generally made using various powders such as starch or wheat flour. Sun-cuisine was a kind of royal court food in the past that was served as a side dish. Recently, Sun-cuisine is eaten less often because its cooking process is too delicate and complicated. Therefore, additional studies to enable the modernization of the Sun-cuisine cooking process should be conducted with the goal of revitalizing the beauty and taste of this traditional food.
콩우유와 우유를 혼합한 고단백음료의 제조를 위하여 콩우유 단백질의 열처리에 대한 안정성을 밝히고 혼합비율을 달리하여 제조된 혼합유의 가용성 단백질에 가열온도, pH, 당과 Ca의 첨가량이 미치는 영향을 조사하였다. 100℃에서 시간별로 열처리시킨 콩우유를 830×g∼29, 900×g의 범위에서 30분간 원심분리 시킨 상등액의 가용성 질소를 정량한 결과 11, 200×g가 적절한 조건으로 선택되었다. 콩우유를 70∼100℃에서 4시간까지 가열시켜 위의 원심분리조건으로 가용성 질소를 측정한 결과, 70℃에서는 28.0%, 100℃에서는 43.2%가 열에 의한 변성으로 침강되었음이 밝혀졌다. 혼합비율별 콩우유 및 우유의 혼합유를 80℃ 및 100℃에서 가열하였을 때 20 %의 콩우유 첨가구가 15% 내외의 변성이 일어나 빠른 혼합유보다 변성이 많았으며 1시간 가열로 대부분의 변성이 일어났다. 또한 혼합유의 pH를 3∼8의 범위로 100℃에서 30분간 가열하였을 때 pH 4.0에서 14.6 ∼ 20.5 %의 %SN이 측정되어 가장 많은 침강을 보였으며 pH 8.0까지 증가하면서 침강된 변성단백질의 양은 지속적으로 감소하였다. 당의 첨가영향은 sucrose를 9%까지 증가시켰을 때 혼합유의 %SN에 큰 영향을 주지는 않았으나 콩우유(100%)는 단백질의 침강정도가 약간 증가하는 경향을 보였다. Ca의 첨가에 의한 콩우유(100%)의 %SN은 약 55%로 가장 많은 단백질의 침강을 보였으며 우유의 혼합비율이 많아지면서 침강단백질이 감소하였다.
