        The present study hypothesized that ratio between carcass traits components could be applied for the understanding of yield index in Hanwoo steer. A thousand data was generated based on average carcass weight (CW), loin area (LA) and backfat thickness (BT) of Hanwoo steer in December 2018 for analysis 1. Then yield index (YI) was calculated using newly established yield index equation. The correlation between yield index and each carcass traits was visualized. In the interaction between carcass traits components (LA, CW, BT) and YI, only the interactions including BT showed a regular pattern to YI. Then changes of YI according to ratio of carcass traits components were investigated. The observed interactions between LABT and CWBT were similar with Monod equation model. The changes of YI to LABT and CWBT were fitted to Monod equation, and yield constants (K1 for LABT; K2, CWBT) of each equation were calculated as 0.47 and 2.20, respectively. Carcass traits from 5 commercial Hanwoo steer farm were then employed in the second analysis. Yield constants of each farm were estimated. In estimation, R2 value for K1 (LABT) showed greater than the K2 (CWBT). Finally, each farm was plotted based on their K1 and K2 values and it was found that greater yield index of Hanwoo steer was found as increased K1 and K2. As conclusion, the present study suggested the possibility of K1 and K2 values for understanding of yield grade equation and their application in the evaluation of new model for yield grade estimation and feeding strategy.

        In this study, the effect of probiotic supplementation on growth performance, blood metabolites, and meat quality of Hanwoo steer was investigated. A total of 32 Hanwoo steers (15-17 months, average body weight 462±37.9 kg) were randomly allotted to 4 dietary treatments (0, 0.5, 1.0, and 1.5% mixed probiotics), with four Hanwoo steers per pen (two replicates per treatments), and reared for 12 months. There were no differences among treatments in growth performance of Hanwoo steer (P>0.05); however, feed intake decreased linearly with increasing levels of mixed probiotics. Growth hormone and Blood Urea Nitrogen (BUN) levels responded linearly with increasing levels of dietary mixed probiotics (P<0.05), but not insulin and blood glucose did not. In particular, total cholesterol was significantly lower for the 1% mixed probiotic treatment in comparison with that of the other treatments (P<0.05). The pH, Thiobarbituric Acid Reactive Substances (TBARS), cooking loss, and meat color were influenced by increasing levels of mixed probiotics (P<0.05), but the carcass characteristics and shear force were not. Regarding sensory evaluation, the addition of mixed probiotics resulted in significant difference in meat color, tenderness, aroma, off-flavor, juiciness, and marbling score, but not in overall acceptability. In addition, fatty acid profiles indicated no differences between control and mixed probiotic treatments. In conclusion, mixed probiotic treatment at 1% levels can enhance consumer preferences possibly by reducing cholesterol and TBARS.

        We inoculated a spent mushroom substrate from Flammulina velutipes (SMSF) with a microbial additive and assessed the effects on chemical composition, ruminal fermentation parameters, and total-tract nutrient digestibility. In Exp. 1, three cannulated Hanwoo steers were used in an in situ trial to determine the degradation kinetics of dry matter (DM) and crude protein (CP). In Exp. 2, three Hanwoo steers were randomly assigned to experimental diets according to a 3 × 3 Latin square for a 3-week period (2 weeks for adaptation and 1 week for sample collection). Experimental diets included the control diet (3.75 kg/d formulated concentrate mixture + 1.25 kg/d rice straw), SMSF diet (3.19 kg/d formulated concentrate mixture + 1.25 kg/d rice straw + 0.56 kg/d SMSF), and inoculated SMSF (ISMSF) diet (3.19 kg/d formulated concentrate mixture + 1.25 kg/d rice straw + 0.56 kg/d ISMSF). The chemical composition of ISMSF did not differ from that of SMSF. Microbial additive inoculation decreased pH (P<0.05) and improved preservation for SMSF. The percentages of DM, neutral detergent fiber (NDF), and acid detergent fiber (ADF) in ISMSF were slightly lesser than those in SMSF. Ruminal fermentation characteristics and total-tract nutrient digestibility were not affected by diet. Overall, microbial additive inoculation improved preservation for SMSF and may allow improved digestion in the rumen; however, the total digestible nutrients (TDN) of SMSF and ISMSF diets were slightly lesser than the control diet. The ISMSF can be used as an alternative feedstuff to partially replace formulated concentrate feed.

        This study was conducted to compare among bull, steer and heifer on growth performance, blood composition and carcass traits according to fattening phase in Hanwoo. 12 month of aged 4 bulls (339.8±18.5 kg), 4 steers (309.8±13.2 kg), and 3 heifers (290.0±16.7 kg) were allocated in the stalls with individual feeding system during 20 months. Average daily gain was not different among the treatment groups during early fattening phase, but higher in the bulls and lower in the heifers after mid-fattening phase (p<0.05). The difference of body size by animal groups appeared from 24 month of age, and wither height and body length of Hanwoo heifer were the smallest (p<0.05) among treatment group. But wither height was not difference among treatment groups at 32 month of age. At 12 month of age, concentrations of serum cholesterol, triglyceride, glucose and total protein were higher in the heifers compared to other groups, and serum GPT (Glutamic pyruvic transaminase) was the highest (p<0.05) in the bulls, and serum GOT (Glutamic oxaloacetic transaminase) was the highest (p<0.05) at late fattening phase in the bulls. Meat yield index was similar between the bulls and the heifers, and the lowest (p<0.05) in the steers. Marbling score was significantly higher (p<0.05) in the steers and the heifers than in the bulls, and meat quality was the best in the steers among treatment groups. The results of this experiment might be used as a basal data on difference between gender in revision of Korean feeding standard for Hanwoo.

        The present study was conducted to evaluate the effects of dietary formulated feed additive on growth performance and carcass traits of Hanwoo steers. A formulated feed additive reported to reduce heat load in the rumen in our previous research was used (Cho et al., 2014). Total 32 herds of Hanwoo steers were assigned into two groups of control and treatment. Total mixed ration was provided as basal diet for cattle and 100 g of additive was supplemented on diet for treatment. Feeding trial was performed during 120 days before slaughter. For growth performance, 3 periods (0~90 days; 90~120 days; 0~120 days) were allotted and average daily gain, feed requirement and final body weight were determined. Loin meat between 12th and 13th rib was used for meat quality analysis after slaughtering. Only 1st period showed significantly improved growth performance of treatment (P<0.05) and there were no significant difference in other periods. At 3rd periods (overall), a trend of increased average daily gain was found at treatment (P=0.075). Carcass performance and quality did not show significant differences between treatment and control (P>0.05). In meat quality, treatment showed significant increment in all measured meat colors (P<0.05) and significantly less sharing force compared to the control (P<0.05). Although no significant difference in growth performance and carcass yield were found, remarkably improved economic status was detected in treatment group. In conclusion, it could be suggested that application of a formulated feed additive specialized in reduction of heat load in the rumen was able to increase economical balance through enhancing heat stress condition of ruminant and growth.

        This study was conducted to investigate the productivity of Hanwoo steers by feeding self-product organic rice straw and concentrates(conventional, T1 and organic T2). Sixteen Hanwoo steers(8 months on the average) were randomly assigned to two treatment groups. Feeding trail was carried out in 2 treatment(8 heads/ treatment) by Hanwoo steers for 600 days form 8 to 28 months in age. The range of average daily gains of T1 and T2 were 0.76 to 0.77㎏ in the growing stage, 0.93 to 0.90㎏ in the first fattening stage, 0.99 to 0.84㎏ in the middle fattening stage, and 0.59 to 0.64㎏ in the latter fattening, respectively, and the gains for overall period was higher in T1 than in T2. Concentrates and total digestive nutrients(TDN)(T1) intakes per unit of kg gains were higher than T2 without significant difference. In carcass characteristics, the carcass weight in T1 were higher about 5% than in T2. According to the above results, it may be concluded that dry matter(DM) intakes, crude protein(CP) and TDN contents of feedstuff between treatments was no significant difference. but marbling in T2 score was higher than in T1 about 20%. There were no significant differences rib-eye area, back fat thickness and fat color(p>0.05).
