        국내 유통 주류 95점에 대하여 에틸카바메이트 잔류실태 조사를 실시하였다. 탁주, 약주, 청주, 과실주를 비롯하여 소주, 브랜디 그리고 에틸카바메이트 잔류가 많이 보고되고 있는 리큐르 등을 대상으로 하였다. 액액분배를 통하여 정제하였으며, GC/MS/MS 분석법을 정립하였다. 카트리지(cartridge)나 농축 과정이 없기 때문에 식품공전에등재되어 있는 GC/MS 분석법보다 분석시간이나 소요비용 면에서 매우 효율적이었다. 정성한계는 1.3 ug/L이었으며, 정량한계는 4.0 ug/L이었다. 탁주, 약주, 청주에 대하여각각 0.63, 7.01, 14.11 ug/L의 평균 잔류량을 나타내 캐나다의 청주 허용기준 200 ug/L나 약주, 청주에서 논의되고있는 허용기준치 200 ug/L와 비교하여 보았을 때 안전한수준인 것으로 나타났다. 복분자주, 포도주에서는 각각 평균 1.66, 2.64 ug/L 검출되어 현재 캐나다, 체코에서 포도주허용기준치로 설정되어 있는 30 ug/L와 비교하여 보았을 때역시 안전한 것으로 나타났다. 과실주 중 매실주의 경우 평균 79.18 ug/L로 본 연구를 통하여 평가된 모든 주종 중 가장 높은 잔류량을 나타내었으나, 외국의 다른 유사 주종에대한 허용기준치 (예로서 캐나다의 경우 400 ug/L 과실 브랜디)와 비교하여 보았을 때 안전한 수준으로 평가할 수있었다. 증류식 소주, 일반증류주, 리큐르도 논의되고 있는기준치와 비교하여 보았을 때 안전한 것으로 조사되었다. 이러한 조사결과는 우리술의 에틸카바메이트 잔류실태가위험한 수준이 아니라는 근거 자료로 활용할 수 있을 것이며, 향후 이러한 유해물질의 지속적인 잔류조사 및 위해평가를 통하여 우리 술 및 전통발효식품의 품질 및 안전성을 확보해 나가야 할 것이다.

        The effects of part of plum, alcohol content and addition of t-resveratrol on the formation of ethyl carbamate during the fermentation for wine were investigated at a time interval (45 days) for 6 months. The concentration of the ethyl carbamate in plum wine was determined according to KFDA guideline for ethyl carbamate analysis. In the plum wine with 16% or 30% alcohol content, the concentrations of ethyl carbamate were increased with time of fermentation periods. The maximum concentrations of ethyl carbamate in 16% and 30% plum wines after the fermentation for 6 months were 0.071 μg/g and 0.188 μg/g, respectively. When t-resveratrol was added at the level of 10 μg/g in both 16% and 30% plum wine, the concentrations of ethyl carbamate at 6 months were 0.078 and 0.216 μg/ g, respectively. The addition of t-resveratrol at the level of 300 μg/g in both 16% or 30% plum wine, the concentrations of ethyl carbamate at 6 months were 0.078 and 0.169 μg/g, respectively. The ethyl carbamate in the plum wine was not formed during fermentation for 6 month as using the flesh of plum, but 0.588 μg/g of ethyl carbamate was formed as using plum with plum seed. The addition of 300 μg/g of t-resveratrol actually increased the concentration of the ethyl carbamate by 0.088 μg/g as fermented for 6 months using plum with seed. These results suggest that the flesh of plum should be used to reduce the formation of ethylcarbamate for production of plum wine and that the addition of t-resveratrol during fermentation of plum wine can not reduce the concentration of the ethyl carbamate.

        This study was designed to investigate the formation of ethyl carbamate (EC) during the ripening of Maesil with sugar and Soju (19.5~35% alcohol contents) using a homemade method. Maesil, sugar and Soju were purchased at ordinary market in June of 2012. The preparation of sample for analysis was conducted by method of Henry et al. The analysis of GC/MS was used SIM mode (m/z 89, 74, 62). Quantification was performed in terms of the 62 ion and was based on an internal standard procedure. Good linearity was obtained with a regression coefficient (r2 = 0.993). Low detection limits (LOD) was achieved 4.31 ug/kg and recovery for alcohol was 74.8%. During 90 days, fermentation with sugar was not detected EC (under LOQ). 15 days ripened Maesil wine contained EC between non detected~32.7 ug/kg and 90 days ripened Maesil wine was 19.7~87.4 ug/kg. Higher proportion of Maesil and Soju increased EC contents. EC levels were increased 32.7 ug/kg to 87.4 ug/kg in the ratio of Maesil to 35% alcohol-Soju (1:1). In the ratio of Maesil to 35% alcohol-Soju (1:3) was increased non detected to 69.7 ug/kg. After 90 days, Maesil wine was filtered Maesil through a seive and ripened by 180 days to investigate the formation of EC compared with non filtered. Treatment of filtered, EC contents was much higher level compared with non filtered. Therefore, this result showed that alcohol contents contribute to increase EC formation more than Maesil.
