        Vegetable oils are a rich source of bioactive substances. Phytosterols in those have been known for many years for their properties for reducing blood cholesterol levels, as well as their other beneficial health effects. Phytosterols are triterpenes that are important structural components of plant cell membranes just as cholesterol does in animal cell membranes. The aim of this study was to provide consumers with information about phytosterol contents in vegetable oils in Korea market. The contents of major phytosterols (campesterol, stigmasterol, β-sitosterol) in 50 vegetable oils of 10 kinds (perilla oil, peanut oil, avocado oil, olive oil, pine nut oil, sesame oil, canola oil, coconut oil, grape seed oil, and sunflower oil) were analyzed by gas chromatography with flame ionization detector. The average contents of vegetable oils containing 5 or more samples were in the order of sesame oil (334.43 mg/100 g), perilla oil (262.16 mg/100 g), grape seed oil (183.71 mg/100 g), and olive oil (68.68 mg/100 g). Phytosterol content of sesame oil and perilla oil was high among vegetable oils.

        경기도에서 유통되고 있는 건조수산물 95건에 대하여 유해중금속인 납, 카드뮴, 수은 및 미량영양소인 셀레늄 함량을 조사하였다. 금아말감법의 수은분석기, 유도결합플 라즈마 질량분석기를 사용하여 측정하였으며, 각 항목별 평균함량은 납 0.062±0.071(0.002-0.428) mg/kg[평균값±표 준편차(최소값-최대값) mg/kg], 카드뮴 0.083±0.100(0.004- 0.540) mg/kg, 수은 0.012±0.012(N.D-0.054) mg/kg, 셀레 늄 0.839±0.371(0.362-2.124) mg/kg으로 나타났으며, 유해 중금속인 납, 카드뮴, 수은 모두 기준규격 이하로 나타났다. 멸치 크기에 따른 중금속 및 셀레늄 함량은 수은이 대멸치에서 통계적으로 유의하게 높게 나타났으며(P<0.05), 셀레늄은 잔멸치와 대멸치의 크기에 따른 유의적인 함량 차이를 나타냈다(P<0.05). 새우 종류에 따른 중금속 및 셀레늄 함량을 비교한 결과 보리새우가 납, 카드뮴, 수은에서 유의적으로 높게 나타났다(P<0.05). 대멸치, 밴댕이의 부위별 중금속 및 셀레늄 함량은 내장부위가 가장 높았고, 새우는 머리부위가 중금속 및 셀레늄 함량이 높게 나타났다. 건조수산물을 통해 섭취하는 수은, 카드뮴의 주간 및 월간섭취량은 JECFA에서 설정한 PTW(M)I의 0.712%와 2.978%로 조사된 건조수산물 내 중금속 함량은 안전한 농도수준으로 판단된다.

        The use of microwave-assisted extraction and an acid-base clean-up process to determine the amount of methylmercury (MeHg) in marine products was suggested in order to improve the complicated sample preparation process. The optimal conditions for microwave-assisted extraction was developed by using a 10% NaCl solution as an extraction solution, setting the extraction temperature at 50℃, and holding for 15 minutes to extract the MeHg in marine products. A NaOH solution was selected as a clean-up substitute instead of L-cysteine solution. Overall, 670 samples of marine products were analyzed for total mercury (Hg). Detection levels were in the range of 0.0006~0.3801 μg/kg. MeHg was analyzed and compared using the current food code and the proposed method for 49 samples which contained above 0.1 mg/kg of Hg. Detection ranges of methylmercury followed by the Korea Food Code and the proposed method were 75.25 (ND~516.93) μg/kg and 142.07 (100.14~244.55) μg/kg, respectively. The total analytical time of proposed method was reduced by more than 25% compared with the current food code method.

        본 연구에서는 경기도 내 유통되고 있는 다소비 생선류 100건을 대상으로 납, 수은(메틸수은 포함), 카드뮴의 오염도 및 셀레늄의 함량을 알아보았다. 금아말감법의 수은 분석기, ICP-MS, GC-ECD를 사용하여 측정하였으며 각 항목별 평균함량은 Pb 0.0915(0.0021-0.4490) mg/kg, Cd 0.0084(ND-0.1773) mg/kg, Hg 0.0412(0.0013-0.3032) mg/kg 으로 모두 기준규격 이하로 나타났다. 셀레늄은 수은과 결 합하여 수은의 독성을 감소시키는 것으로 알려져 있는데 본 연구에서 조사된 생선류에서는 셀레늄의 평균함량이 0.4044(0.1981-1.0227) mg/kg이었다. 규격 외 항목인 메틸 수은은 100건 중 갈치와 대구 2개 시료에서 각각 0.0677 mg/ kg, 0.2941 mg/kg로 나타났다. 이러한 결과를 바탕으로 다소비 생선류를 통한 납, 수은 및 카드뮴의 총 섭취량은 JECFA에서 설정한 PTWI 및 PTMI의 0.97%, 3.42% 및 0.45%로 조사되었다. 따라서 도내에서 유통되는 생선류의 섭취는 납, 수은, 카드뮴 등의 위해에서 안전하다고 판단된다.

        The purpose of this study was to compare hand washing awareness and microorganism contamination on the hands for evaluating the difference between awareness and conditions of hand hygiene. The average number of total aerobic bacteria and coliform was 2.7 log CFU/hand and 1.8 log CFU/hand, respectively. Coliform bacteria were detected in all of the students tested in this study. The questionnaire survey data obtained via a direct interview were collected from 100 university students with microorganism analysis. A majority (90%) of the students recognized that good hand hygiene is important in order to prevent food poisoning. In the hand washing survey data, the responses suggesting “always washed” from “before eating food”, “after handling money”, “after finishing study” and “after visiting patients” were observed in 18, 13, 15 and 33 out of the 100 students, respectively. The questionnaire data of hand washing frequency and time duration showed that 14 students and 6 students answered “more than 8 times of hand washing per day” and “more than 30 seconds of hand washing time”, respectively. These results indicated that improper hand washing practices and poor hand hygiene were identified in the majority of the students. This emphasizes the difference between awareness and conditions of hand hygiene. Repeated hand washing education about the frequency, time duration and methods is constantly required to improve hand hygiene. Installation of hand washing equipment in the space of a restaurant and cafeteria is suggested for enhancing hand hygiene before eating food.

        The aim of this study was to determine total mercury and methyl mercury level in fishes (Deepsea Fish, Tuna, Billfish) and fishery products. A total of 101 fishes and 44 fishery products samples collected from commercial market in Gyeonggi-do. Total mercury were analysed by mercury analyzer and methyl mercury were analyzed by gas chromatography with electron capture detector. In the fishes, total mercury was detected in all samples and methylmercury was detected in 92 samples of them. The detection rate of methylmercury was 91.1% in fishes. The mean concentration (mg/kg) of total mercury and methylmercury were 1.968 ± 0.505/0.496 ± 0.057 for Billfish, 0.665 ± 0.091/0.252 ± 0.033 for Deep-sea Fish and 0.577 ± 0.085/0.218 ± 0.025 for Tuna, respectively. The Swordfish contains the highest level of total mercury (1.968 mg/kg) and methylmercury (0.496 mg/kg). In Mabled rockfish, the ratio of methylmercury’s contents about total mercury’s contents was the highest as 66.5%. In case of fishery products, frozens made of 100% of raw material contained the highest level of total mercury and methyl mercury. The weekly intake of total mercury and methylmercury was calculated in 4.72% and 5.24% of Provisional Tolerable Weekly Intake (PTWI) respectively. This study showed that the weekly intake of methylmercury from Deep-sea Fish, Tuna and Billfish was less than the PTWI recommended by the Joint FAO/WHO expert committee on food additives.

        본 연구는 효소식품과 효소표방식품 (기타가공식품, 음료베이스, 기타발효음료, 액상차) 98건에 대한 α-아밀라아제, β-아밀라아제 활성과 당 함량을 조사하였다. 효소식품과 기타가공품의 α-아밀라아제 활성은 각각 4.9~53,854.6 U/g, 2.9~1,182.7 U/g으로 같은 유형간에 큰 차이가 있었다. 발효식품의 α-아밀라아제 활성은 각각 0.1~1.7 U/g이었다. 효소식품, 기타가공품 그리고 발효식품의 β-아밀라아제 평균 활성은 각각 126.0 U/g, 5.6 U/g, 10.5 U/g으로 효소표방식품은 효소식품보다 훨씬 낮은 활성을 나타냈다. 평균 당 함량은 효소식품 22.4 g/100 g, 기타가공품 14.8 g/100 g, 음료베이스 46.9 g/100 g, 기타발효음료류 41.1 g/100 g, 액상차 39.5 g/100 g으로 발효식품에서 높은 당 함량을 나타냈다. α-아밀라아제 활성과 유당 함량은 효소식품에서 통계적으로 강한 상관관계(r = 0.644)를 나타냈고 기타가공식품에서는 매우 강한 상관관계(r = 0.903)를 나타냈다. β-아밀라아제 활성과 유당 함량은 효소식품에서 통계적으로 강한상관관계(r = 0.648)를 나타냈고 기타가공식품에서는 강한상관관계(r = 0.757)를 나타냈다. 효소식품과 기타가공품에서 α-아밀라아제 활성과 β-아밀라아제 활성 사이에는 매우 강한 상관관계(r = 0.869, r = 0.760)를 나타냈다. 즉, α-아밀라아제 활성과 β-아밀라아제 활성 사이에 비례관계가 성립함을 알 수 있었다.

        2009년부터 2013년까지 경기지역 농산물도매시장으로 유입된 채소류에 대해 농약 잔류량을 조사한 결과 허용기 준초과 빈도가 높은 5개 품목은 엽채류 중 쑥갓 48건5.8%), 근대 28건(5.1%), 시금치 28건(3.4%), 깻잎 25건3.4%), 참나물 24건(3.7%) 순으로 나타났다. 쑥갓과 근대는 6~9월에 높게 나타났고 시금치는 10~11월과 12~1월에높게 나타났다. 깻잎은 7~8월 사이와 1월에 높게 나타났으며 참나물은 8~9월에 허용기준초과율이 높게 나타났다. 월별 단가와 잔류농약 검출률 간의 상간관계를 분석하고자 Pearson``s correlation을 수행한 결과 참나물, 시금치, 깻잎의 경우 양의 관계(Pearson r = 0.337, 0.316, 0.297)를 나타내어 통계학적으로 유의적 차이를 나타내었다. 품목별월별 단가와 잔류농약 허용기준초과률율 간의 상호관계를 분석하고자 Pearson``s correlation을 수행한 결과 참나물, 쑥갓은 양의 관계(Pearson r = 0.259, 0.256)를 나타내어 통계 학적으로 유의적 차이를 보였다(p < 0.05). 5종의 엽채류중 참나물, 시금치, 깻잎, 쑥갓에서 월별 단가와 잔류농약 검출률 또는 허용기준초과율 중 한 가지 이상에서 상관관계를 나타내었다. 향후 월별 단가와 농약 잔류에 대한 전국단위의 연구조사가 필요할 것으로 판단되며 잔류농약 허용기준초과 빈도를 저감화하기 위해서는 각각 농산물에 대한 농약 안전사용기준 준수와 수확 전 농약 사용 금지기간을 준수하여야 할 것으로 판단되었다.

        Surveys on the consumption of caffeinated beverages by high school students (n=886) were performed. Of the students, 97.0% consumed a variety of caffeinated beverages, including carbonated drinks (90.0%), processed milk and cocoa (79.0%), coffee (63.0), teas (52.1), energy drinks (16.4%) and nourishment drinks (15.5%). The frequency of intake per student was 8.2 times per week. Caffeine intake through the caffeinated beverages was 41.53 mg/day, which was accounted for by coffee (51.5%), carbonated drinks (19.6%), processed milk and cocoa (11.5%), teas (11.4%), energy drinks (5.0%) and nourishment drinks (1.1%). Students with high levels of stress, those who consumed snacks twice a day, and those who used a computer (or smart phone) for more than 3 hours per day showed significantly higher caffeine intake. The groups with high caffeine intake experienced heart palpitations, insomnia and pollakiuria. Students indicated that they consumed the caffeinated beverages for the taste (57.9%), waking up (18.0%), thirst (13.2%), etc. (10.9%). They tended to consume drinks with a high content of caffeine to sleep less. In addition, they rarely checked the label, and showed a lack of awareness of the caffeine contents in the beverages, which calls for education.

        어린이집 유아들이 공용으로 사용하는 수건의 미생물 오염도와 분리된 식중독 미생물의 장독소 유전자 및 장독소 생산 특성을 분석하여 어린이집 유아 사용 수건의 위생 안전성을 확보하고자 어린이가 손 씻은 후 공용으로 사용 하는 수건 22개 (사용 전 7개, 사용 중 15개)를 연구대상으로 하였다. 일반세균수는 평균 6.2 log CFU/100 cm2로 검출되었고 진균수는 평균 4.1 log CFU/100 cm2로 검출되었 으며 대장균군은 사용 전 수건의 경우 7건 중 4건 (57.1%), 사용 중인 수건의 경우 15건 모두에서 (100%) 검출되었 다. 어린이 사용 수건의 미생물 오염도가 높게 나타나 수 건의 위생적인 살균 세탁 및 상대습도가 낮은 곳에 보관하는 등의 보관 방법 개선이 필요한 것으로 판단되었다. Salmonella spp.의 경우 실험에 사용된 모든 수건에서 검출되지 않았으나, Staph. aureus는 22건 중 5건 (22.7%), B. cereus는 11건 (50.0%)에서 검출되어 B. cereus 오염이 가장 심각한 것으로 나타났다. Staph. aureus 장독소 유전 자와 독소 단백질은 모두 불검출 되었으나 분리 동정된 11균주의 B. cereus 장독소 유전자 실험 결과 hblC, hblD, hblA 유전자가 각각 72.7, 72.7, 54.5% 검출되고 nheA, nheB, nheC 유전자가 각각 81.8, 72.7, 54.5% 검출되었으며 cytK, entFM 장독소 유전자는 각각 45.5, 90.0% 검출 되었다. B. cereus 장독소 실험결과 HBL 장독소는 11균주 중 8균주 (72.7%), NHE 장독소는 5균주 (45.5%) 검출되었고 HBL과 NHE 장독소 중 하나 이상을 생산하는 B. cereus 균주는 10균주 (90.9%)로 나타났다. 수건에 오염된 B. cereus 균주의 교차오염에 따른 식중독 위험성이 상존 하는 것으로 나타나 개인별 수건 또는 종이 타올 사용을 고려하여야 할 것으로 판단되었다.

        This study was conducted to evaluate the microbiological hazard on nursery school children's hands and to investigate the reduction effect of hand washing education. A total of 59 nursery school children's hands were tested. The average number of total aerobic bacteria was 3.72 ± 0.38 log CFU/hand. Five children's hands(2 male and 3 female) were positive(14.3%) for the coliform bacteria. These results showed that hand washing education are required repetitively. Among the pathogenic bacteria tested in this study, Staphylococcus aureus and Bacillus cereus were detected in 9(25.7%) and 16(45.7%) out of 35 their hands, respectively. Twelve out of sixteen B. cereus isolates(70.0%) produced enterotoxin. The results indicate that the hand hygiene of nursery school children needs to be improved. Comparing before and after hand washing in educated and non-educated group, the reduction effect of total aerobic bacteria on their hands was 0.42 and 0.60 log CFU/hand, respectively. The educated group showed 0.18 log CFU/hand higher reduction effect than non-educated group but microorganism did not eliminate perfectly. From the results, using a hand sanitizer after washing with soap and the continuous hand washing education are required to control the contaminated bacteria on nursery school children's hands.

        This study was designed to investigate the formation of ethyl carbamate (EC) during the ripening of Maesil with sugar and Soju (19.5~35% alcohol contents) using a homemade method. Maesil, sugar and Soju were purchased at ordinary market in June of 2012. The preparation of sample for analysis was conducted by method of Henry et al. The analysis of GC/MS was used SIM mode (m/z 89, 74, 62). Quantification was performed in terms of the 62 ion and was based on an internal standard procedure. Good linearity was obtained with a regression coefficient (r2 = 0.993). Low detection limits (LOD) was achieved 4.31 ug/kg and recovery for alcohol was 74.8%. During 90 days, fermentation with sugar was not detected EC (under LOQ). 15 days ripened Maesil wine contained EC between non detected~32.7 ug/kg and 90 days ripened Maesil wine was 19.7~87.4 ug/kg. Higher proportion of Maesil and Soju increased EC contents. EC levels were increased 32.7 ug/kg to 87.4 ug/kg in the ratio of Maesil to 35% alcohol-Soju (1:1). In the ratio of Maesil to 35% alcohol-Soju (1:3) was increased non detected to 69.7 ug/kg. After 90 days, Maesil wine was filtered Maesil through a seive and ripened by 180 days to investigate the formation of EC compared with non filtered. Treatment of filtered, EC contents was much higher level compared with non filtered. Therefore, this result showed that alcohol contents contribute to increase EC formation more than Maesil.
